Sakura-Hugging Teddy Bear and Bunny Cookies (Tbsp Measurement Recipe) - Video Recipe

Sakura-Hugging Teddy Bear and Rabbit Cookies

Difficulty: Easy
Time: 1.5 hr
Number of servings: 20 Cookies Using 2 Inch Cookie Cutters

Ingredients:
10 tbsp. all purpose flour
2 tbsp. corn starch
2 tbsp. honey *vegan people can use syrup
3 tbsp. vegetable oil
red food coloring

Directions:
1. Place flour, corn starch, honey and vegetable oil in a large Ziploc bag. Make sure it is zipped, then mix well.
2. In 1/4 of the batter, mix in red food coloring to create a pink dough.
3. Roll out the dough to 5mm (0.2 inch) thick. Wrap in plastic wrap then refrigerate for at least 1 hour to set and chill.
4. Preheat the oven to 170C (338F). Cut out the dough with cookie cutters. Place the cookies on a cookie sheet lined with parchment paper. Roll out scraps, and repeat.
5. Bake at 170C (338F) for about 10 minutes. Cool the cookies on the sheet or a wire rack.

Edible Snowman (Tamago Boro/Egg Biscuits/小饅頭) - Video Recipe

Tamago Boro (Egg Biscuits) are very popular snack in Japan, especially among kids (from 7 month babies to toddlers)!

One day, my daughter attached two pieces together and said "Yukidaruma (snowman)"! So I glued them together and drew eyes on it.

Happy 2nd Birthday!!! (Anpanman Shortcake for 2-year-old Toddlers) - Video Recipe

Anpanman Shortcake

Difficulty: Very Easy
Time: 1hr
Number of servings: 4

What You Need:
Pigeon Microwave Shortcake Kit
100ml milk
cocoa powder
chocolate pen
strawberry jam
strawberries

Directions:
((Sponge Cake))
1. Place 50ml milk and the cake mix in the cake pan, and mix with a spoon for a minute. *do not over-mix
2. Drop the pan lightly on the counter for about 5 times to raise the air bubbles out of the batter.
3. Microwave at 500w for 1 min 40 sec OR 600w for 1 min 30 sec. *do not cover
4. Remove from the pan and place it on a wire rack. Cover with plastic wrap then cool.
5. Meanwhile, cut the strawberries.
((Decoration))
1. Slice the sponge cake crosswise into 2 layers.
2. In a bowl, place 50ml milk and whipped cream mix. Mix for about 2-3 minutes until it forms a stiff peak. *do not use an electric mixer
3. Transfer 1/4 of the cream to the pastry bag with a star tip.
4. Place one layer of the sponge cake on a plate. Coat the surface of the sponge cake evenly with the cream. Place cut strawberries over the creamed surface. Place another layer of sponge cake, and frost top and side with the cream. Pipe out the cream and garnish with strawberries.

You can cool the cake in the fridge for 1 or 2 hours. It is free from preservatives, so eat on the day you make it.

WAKODO Microwave Pancakes (for Babies)

Number of servings: 4 mini pancakes

What you need:
1 Box WAKODO Microwave Pancake Mix (for Babies)
4 tbsp. milk or soy milk
Kewpie Fruit Jelly *any flavor you like is OK
banana *any fruit you like

Directions:
1. Put 1 package of cake mix and 1 tbsp. of milk in a small bowl, then mix well until smooth.
2. Pour the batter into the mold. Drop the mold lightly on the counter to raise air bubbles out of the batter.
3. Microwave at 500w for 50 sec.
4. Remove the pancake from the mold. Repeat the steps to make the rest of the pancakes.
5. Leave to cool, then decorate with jelly and fruit of your choice.

Okonomiyaki for Toddlers (1~3 years) - Video Recipe

Okonomiyaki for Toddlers (1~3 years)

Difficulty: Easy
Time: 20min
Number of servings: 4 mini Okonomiyaki

Ingredients:
100g (3.5oz.) shredded cabbage
1 egg
2 tbsp. Dashi broth (Kombu or bonito)
a dash of soy sauce
4 tbsp. flour
2 tsp. chopped Sakuraebi (small dried shrimp)
sesame oil

Directions:
1. Mix egg, Dashi broth, and soy sauce in a bowl. Add flour, chopped dried shrimp and shredded cabbage, and mix well.
2. Heat sesame oil in a small frying pan. Spread 1/4 of the batter in a circular shape, cover, and cook on low for about 1.5 minutes. Then flip it over, cover, and cook the other side for 1.5 minutes.
3. You can serve it as is or serve with a sauce your kids' like.

You can stock the pancakes in the freezer for a week.

Microwave Mini Animal Pancakes for Babies

Difficulty: Very Easy
Time: 5min
Number of servings: 4 mini pancakes

Directions:
1. Separate the molds.
2. Pour water up to the line indicated in the cups.
3. Put the cake mix, then mix for about 1 minute each until smooth.
4. Pour the batter into the mold up to the line indicated. You can use chopsticks to change the colors of the details.
5. Microwave at 600w for 1 min 40 sec.
6. Drop lightly onto the counter to remove the air bubbles.
7. Leave to cool for about 2 minutes. Then push out from the mold.

Happy 1st Birthday!!! (Microwave Shortcake for 1-year-old Babies) - Video Recipe

Microwave Shortcake for 1-year-old Babies

Difficulty: Very Easy
Time: 1hr
Number of servings: 4

What You Need:
Pigeon Microwave Shortcake Kit
100ml milk
some fruits of your choice

Directions:
((Sponge Cake))
1. Place 50ml milk and the cake mix in the cake pan, and mix with a spoon for a minute. *do not over-mix
2. Drop the pan lightly on the counter for about 5 times to raise the air bubbles out of the batter.
3. Microwave at 500w for 1 min 40 sec OR 600w for 1 min 30 sec. *do not cover
4. Remove from the pan and place it on a wire rack. Cover with plastic wrap then cool.
5. Meanwhile, cut the fruits.

Microwave Steamed Buns for Babies

Difficulty: Very Easy

Number of servings: 2

Ingredients:
ピジョン レンジで蒸しパン かぼちゃ&にんじん 9ヶ月頃から (Pigeon Microwave Steamed Buns Kabocha and Carrot from 9 months)
キューピーベビーフード かぼちゃのプリン 7ヶ月頃から (Kewpie Baby Food Kabocha Pudding from 7 months)

Directions:
1. Place the cake mix and 1 tbsp. of water in the provided cake cup.
2. Mix with chopsticks for about 30 times. *do not over-mix or the cake will get dense
3. Microwave at 500w for 1 minute.
4. Cover with plastic wrap to keep it moist, then cool.
5. Top with Kabocha Pudding to finish.

How to Make Juicy Turnip and Carrot Miso Soup (Family Recipe into Baby Food) - Video Recipe

Juicy Turnip and Carrot Miso Soup

Difficulty: Easy
Time: 30min
Number of servings: 2

Ingredients:
100g (3.5oz.) turnip
40g (1.4oz.) carrot
400ml Dashi broth
1 tbsp. or more Miso

Directions:
1. Cut round slices of turnip and carrot into quarters. *Peel the skin of turnip thick because the inner part is soft and perfect for baby food.
2. Put Dashi broth in a pot and bring to a boil. Add turnip and carrot, remove the foam if necessary, then cook until tender. *Remove a few pieces of turnip and carrot, then mash them up in a mortar with a pestle, then mix a bit of Dashi broth to make it smooth.
3. Turn down to low then dilute Miso with a little hot broth and mix it into the soup. Heat until hot to finish.

You store the mashed vegetables in the freezer for a week! Wrap a thin layer of the mashed vegetables in plastic wrap and make marks so that you can break it into small pieces when frozen.

How to Make Very Basic Dashi Broth (Perfect Soup Stock for Japanese Food) - Video Recipe

This video will show you how to make the very basic Dashi broth, the base of many Japanese dishes, as well as Japanese baby food ;)

This is one of a few ways to make Dashi!
You can make vegetarian Dashi by using only Kombu (kelp).
Dashi does not mean fish btw... it means "Soup Stock".

Kombu (kelp), Hana-katsuo (large bonito flakes), and/or Niboshi (small dried sardines) can be used to make the broth. The combination is up to you.

Very Basic Dashi Broth (Perfect Soup Stock for Japanese Food)

Difficulty: Easy
Time: 15min + soaking time
Number of servings: 4 cups

Ingredients:
800ml water
20cm/8inch-long Kombu (kelp)
handful of Hana-katsuo (large bonito flakes)

Directions:
1. Cut Kombu in half, then clean it with moistened towel. Soak in 800ml water for 30 minutes.
2. Heat the pot on medium, before it starts to boil, remove the Kombu, add Hana-katsuo, mix, stop the heat and wait until they soak completely.
3. Strain the Dashi soup with a strainer (with a clean cloth or a paper towel if you have). *Do not squeeze the bonito flakes too much since they can add bad smell.

For baby food, you can store it in the freezer for a week!

You can make homemade Furikake (rice seasoning) with leftover Dashi ingredients!

How to Make Rice Porridge (Congee) - Video Recipe

Rice Porridge (Congee)

Difficulty: Super Easy
Time: 20min
Number of servings: 1

Ingredients:
3 tbsp. cooked rice
150ml water

Directions:
1. Put cooked rice and water in a pot.
2. Bring to a boil then turn down to low and cook for 10 minutes. *if you want the rice water, skim the liquid.
3. Stop the heat, cover, then steam for 10 minutes. *you can grate the congee for baby food.

You can eat with Umeboshi (pickled plum), Shio-Kombu (salted kelp), salmon flakes, or any kind of rice seasoning of your choice!

Okuizome (100th Day Baby Celebration) お食い初め

Okuizome (the first meal) is one of the traditional celebration events for Japanese babies. It is a tradition that babies are made to pretend to eat their first meal on the 100th day to wish they will have enough food throughout their lives.

March 8th was my daughter's 100th day after birth :)

Ozen (a set of small dishes) is served on this day:

((MENU))
鯛の塩焼き Tai: salt-grilled red sea bream
赤飯 Sekihan: red bean rice
はまぐりのお吸い物 common orient clam clear soup
煮物 simmered dish
香の物 pickled vegetables
紅白もち mochi in red and white (the lucky color combination)
歯固め石/梅干し stone/pickled plum (to ensure the growth of healthy strong teeth, also the head)

My mom bought the dishes for my daughter.
She bought them at 河善陶器 (Kawazentouki) at 錦市場 (Nishiki Market) in Kyoto.
