Quick Sunomono (Japanese Cucumber Salad Recipe)


Difficulty: Very Easy
Time: 5min
Number of servings: 2

Ingredients:
1 Japanese cucumber (fresh one is better)
a dash of sesame oil
toasted white sesame seeds

Directions:
1. Rub cucumber with salt and wash with water to smooth out the prickly surface of fresh cucumber. Simply washing is OK.
2. Cut cucumber into thick slices and add 1 tbsp. Mild Vinegar with Dashi and 1 tbsp. Mizkan Shiro Dashi Sauce Professional Taste, and a dash of sesame oil. You can serve it immediately, but I always leave overnight till the cucumber slices absorb the flavor.
3. Sprinkle with toasted white sesame seeds to finish.

Maguro Zuke Don (Marinated Tuna Fish Rice Bowl) Recipe | Japanese Cooking Video


Maguro means Tuna, Zuke means to marinate, and Don is short for Donburi which means rice bowl. Marinated fresh Sashimi-grade tuna served on a rice bowl. Quick yet delicious!


You can of course use Salmon, scallop, or any other Sashimi-grade fish instead! Enjoy :)


Hachibiki (Japanese Rubyfish)

BTW, you can eat Chrysanthemum. For Sashimi you float the petals on soy sauce. For rice bowl, you can sprinkle with the petals if you like.

Maguro Zuke Don (Marinated Tuna Fish Rice Bowl)


Difficulty: Very Easy
Time: 15min
Number of servings: 1

Ingredients:
90g (3.2oz) Sashimi Grade Yellowfin Ahi Tuna
1/2 tbsp. Sake
1/2 tbsp. Mirin (sweet Sake)
1 tbsp. soy sauce
Wasabi if you like
1 bowl of rice
Kizaminori (shredded Nori sheet)
green onions and/or Shiso leaf
toasted white sesame seeds

Directions:
1. In a small pot, boil down Sake and Mirin to reduce the alcohol content.
2. Add soy sauce and Wasabi, then mix well. (Wasabi will be not spicy if you mix and leave for a while, so kids can eat it with only nice Wasabi aroma.)
3. Marinate tuna Sashimi and put in the fridge for about 10 minutes. (Do not marinate too long or tuna will be salty.)
4. Meanwhile, put rice in a rice bowl and leave to cool. (Cold rice is better because it won't warm up the fish.)
5. Put Kizaminori on the rice, arrange Tuna sashimi, garnish with green onions or Shiso leaves, and sprinkle with toasted white sesame seeds. You can place a bit of fresh Wasabi on top if you like.

Ingredients:
200g(7oz.) bean sprouts
70g (2.5oz.) canned tuna
2 tbsp. Japanese Mentsuyu soup base 
1 tbsp. sesame oil
1 tbsp. sesame seeds

Directions:
1. Wash and place the bean sprouts in a microwavable bowl. Add drained canned tuna and Japanese Mentsuyu soup base. Cover with plastic wrap then microwave on medium (600W) for 3 minutes.
2. Toss with sesame oil and sesame seeds to finish.

Brussels Sprouts Namul (Korean-Style Vegan Salad 나물 Recipe) | Japanese Cooking Video

We Japanese also love Korean-style dishes. I did not make it spicy for kids btw. I love dishes seasoned with simple salt, sesame seeds and sesame oil. Smells really good and appetizing. MUST TRY, really good 😋

Brussels Sprouts Namul (Korean-Style Vegan Salad 나물 Recipe)


Difficulty: VERY EASY
Time: 5min
Number of servings: 2

Ingredients:
200g (7oz.) brussels sprouts
1/4 tsp. salt
1 tbsp. sesame oil
1 tsp. toasted white sesame seeds

Directions:
1. Wash brussels sprouts, trim off the dirty end, then slice down the middle lengthwise.
2. Boil water in a large pot. Add a teaspoon of salt in the water, cook brussels sprouts for about 3 minutes. Drain well in a strainer.
3. Toss with salt, sesame oil, and sesame seeds to finish.

You can keep it in the fridge for 3 days.

Brussels Sprouts Ohitashi (Vegan Salad Recipe) | Japanese Cooking Video

Juicy, Tasty yet delicious 😋 Even kids will love them.


Ohitashi is a vegetable side dish (usually made with spinach) soaked in Dashi soy sauce. Perfect for any meal (breakfast, lunch, or dinner) and Bento lunch box. 



Brussels Sprouts are in season in January/February in Japan. Highly nutritious vegetable. Let's enjoy them in a simple and healthy way 🍀

Brussels Sprouts Ohitashi (Japanese Vegan Recipe)

Ingredients:
200g (7oz.) brussels sprouts
salt
* 100ml water
* 1 tbsp. soy sauce
* 1/3 tsp. sugar
ground white sesame seeds

Directions:
1. Wash brussels sprouts, trim off the dirty end, then slice down the middle lengthwise.
2. Boil water in a large pot. Add a teaspoon of salt in the water, cook brussels sprouts for about 3 minutes. Drain well in a strainer.
3. In a sauce pan or microwave, heat water, Kombu kelp Dashi powder, soy sauce, and sugar mixture until it comes to a boil.
4. Soak brussels sprouts in Dashi soy sauce.
5. Sprinkle with some fresh ground white sesame seeds just before you serve.

You can keep it in the fridge for 3 days.

Japanese Pickled Daikon Radish (Tsukemono) | Japanese Cooking Video Recipe

Japanese radish (non-spicy) recipe is the perfect compliment to any dish because it's salty-sweet, sour, and crunchy.



Use fresh Daikon when preparing pickles. I used purple Daikon which my daughter grew at kindergarten. You can use regular white Daikon radish, too.

Japanese Pickled Daikon Radish (Tsukemono)


Difficulty: Easy
Time: 10min

Ingredients:
250g (9oz.) Daikon radish
2 tbsp. vinegar
1 tbsp. sugar
salt
1.5inch (5cm) Kombu kelp

Directions:
1. Wash and cut Daikon (with skin is ok) into 1/2 or 1/4 slices. Rub with 1/2 tsp. salt and leave for 20 min. Rinse and drain well.
2. In a sauce pan or microwave, heat vinegar, sugar and a pinch of salt until it comes to a boil.
3. Wipe and clean dirts from Kombu kelp.
4. Put all the ingredients in a Ziploc bag and keep in the fridge overnight or more.

Ingredients:
200g (7oz.) Miso (Awasemiso)
3 tbsp. sugar
3 tbsp. milk/soy milk
((Vegetables I used))
cucumber (partially peeled)
Daikon radish
carrot
sugar snap peas (2min parboiled)
avocado slices
grape tomatoes
boiled eggs
((Other Ingredients Recommended))
celery
radish
asparagus
renkon (lotus root)
Tofu (drained)
cooked meat
cooked fish
etc...

Directions:
1. In a bowl, mix Miso, sugar, and milk/soy milk very well.
2. Place half of the Miso mixture in a flat container with a lid or without a lid is okay. Place the prepared vegetables.
3. Place another half of the Miso mixture then cover with a lid or plastic wrap is okay. Leave for 30 minutes.

Scrape off Miso then serve in a dish. You don't want to leave more than 30 minutes or too much water comes out from the ingredients. Use the leftover Miso for other Miso dishes.

450g~550g(1~1.1lb) Chinese Napa Cabbage
1/2 tsp. salt
1 (80g=2.8oz) canned tuna
1/2 tbsp. Dashi powder
2 tsp. sugar
2~3 tbsp. mayonnaise
1 tbsp. ground white sesame seeds

Directions:
1. Wash and slice the cabbage, place it into microwavable bowl, and microwave at 600w for 4 minutes.
2. Sprinkle with salt, when cool enough to handle, drain well with paper towels.
3. Toss with drained tuna, Dashi powder, sugar, mayonnaise, and ground white sesame seeds.

Spinach Ohitashi (Japanese Spinach Salad Side Dish Recipe)


Difficulty: VERY EASY
Time: 5min
Number of servings: 4

Ingredients:
200g (7oz.) Spinach
salt
* 2 tbsp. Dashi broth
* 1&1/2 tbsp. Soy Sauce
* 1 tsp. Mirin (Sweet Sake) *1/3 tsp. sugar is OK
Katsuobushi (bonito flakes)

Directions:
1. Cut off the root of the stem and make a cross cut (if the stem is dirty), then wash. In this way you can wash away soil easily but if your spinach is clean then you can simply wash.
2. Boil water in a large pot. Add a pinch of salt in the water (salt removes oxalic acid - bitter taste, and makes the spinach nice and green).
2. Add spinach in the boiling water from the stem side.
3. Boil spinach for about 15~30 seconds. Drain and wash with running water to cool. Squeeze the spinach to remove excess water (use paper towel if you have).
4. Cut into 1.5 inch (4cm) long pieces.
5. Mix Dashi broth, Soy Sauce, and Mirin, then soak spinach for a while.
6. Serve on a dish, garnish with Katsuobushi (bonito flakes) to finish.

Ingredients:
1 Japanese cucumber
4 tbsp. well drained canned tuna
1 tbsp. mayonnaise
1/3 tsp. salt
pepper

Directions:
1. Slice the cucumber into thin rounds (you can use a vegetable slicer if you have). Sprinkle with a bit of salt. When they become limp, drain well and gently squeeze with a paper towel. *Removing excess water from the cucumber will keep the salad from becoming wet.
2. Combine cucumber slices, tuna, mayo and pepper in one bowl to finish.

Spinach Shiroae (Traditional Creamy Tofu Salad - Vegan Recipe Idea) - Video Recipe

Very creamy, rich, and delicious Tofu salad with spinach, with hint of sesame flavor :) It is a traditional Tofu dish we make at home. Of course you can find it at stores or restaurants, too. Homemade one is superb!!!

Difficulty: Easy
Time: 20min
Number of servings: 4

Ingredients:
300g (10.6oz.) cotton Tofu
200g (7oz.) spinach
50g (1.8oz.) carrot
100g (3.5oz.) Shimeji mushrooms
A
* 100ml Kombu Dashi
* 1 tbsp. sugar
* 1 tbsp. soy sauce
B
* 1 tbsp. sugar
* 1 tbsp. soy sauce
* 1.5 tbsp. white sesame paste (or 3 tbsp. ground white sesame seeds are OK)

Directions:
1. Put water and cotton Tofu (break it into chunks) in a pot, bring to a boil, then simmer for 1-2 minutes. Then drain well in a strainer.
2. Cut carrot into thin strips. Remove the tough base of Shimeji mushrooms and break into pieces.
3. Put A in a pot, add carrot and Shimeji mushrooms, then simmer until the liquid is gone.
4. Cook spinach in a boiling water (with salt) for a minute, drain and soak in cold water, then drain and squeeze the spinach to remove the excess water (use paper towel if you have). Cut into an inch long pieces.
5. Place the Tofu in a mortar then mash it up with a pestle until creamy. Season with B, then add the vegetables (3&4) and toss.

Harusame Noodle Salad - Video Recipe

Harusame Salad is a very refreshing noodle salad with lots of vegetables. Perfect dish during the hot and humid summer season. However it can be served all year long ;)

Vegetarian people can remove the ham and egg (seasonings are just fine, so you don't have to add anything to substitute them)!

Harusame Noodle Salad

Difficulty: Easy
Time: 30min
Number of servings: 4

Ingredients:
40g (1.4oz.) Harusame noodles (cellophane noodles)
4 slices ham
1/2 cucumber
50g (1.8oz.) carrot
1 egg
a pinch of salt
cooking oil
Seasonings
* 1 tbsp. vinegar (rice or cereal)
* 1 tbsp. soy sauce
* 1 tbsp. ground toasted white sesame seeds
* 1/2 tbsp. sesame oil
* 1 tsp. sugar
lemon juice if you like

Directions:
1. Cut ham and cucumber into thin strips.
2. Cut carrot into thin strips, place them on a microwavable dish, cover with plastic wrap, then microwave at 500w for 1 minute to make them soft.
3. Season an egg with a pinch of salt, then mix well. Heat cooking oil in a frying pan and make 1 or 2 thin omelets (depending on the size of your frying pan). Leave to cool on a plate, then cut into thin strips.
4. Cook Harusame noodles in boiling water, wash with cold water, cut into bite size pieces if necessary, then drain well.
5. In a large bowl, mix the seasonings. Add cucumber, ham, carrot, egg, and Harusame, then toss well to coat. If you like, you can mix in some lemon juice to finish to add more refreshing flavor ;)

The bitter taste of watercress and the spicy flavor of Wasabi matches very well!!!

How to Make Wasabi Marinated Watercress

Difficulty: Very Easy
Time: 5min
Number of servings: 2

Ingredients:
100g (3.5oz.) watercress
3g (0.1oz.) Katsuobushi (dried bonito flakes)
A
* 1/2 tsp. sugar
* 1/2 tbsp. soy sauce
* a bit of Wasabi in tube (freshly grated Wasabi is perfect)

Directions:
1. Mix A in a bowl.
2. Wash watercress in cold water and drain well. Separate stalks and leaves. Bring a pot of water to a boil. Cook the stalks for a few seconds, then add the leaves and cook for another few seconds. Soak in cold water and drain well with paper towels.
3. Put the watercress and Katsuobushi in the bowl (1.) and toss lightly.
