TAKOYAKI Party (Octopus Balls) | Japanese Cooking Video Recipe

How you make the batter is the key. My mom uses Takoyaki flour and tasty Dashi broth, then makes the batter bit loose and less salty. In this way we can eat Takoyaki forever with No Sauce 😂👍



Serving Takoyaki with Dashi broth is our typical family style. Sometimes we put sauce then pour over the Dashi but this time, no one used the sauce because the batter was a success. Making the batter from scratch is not easy for the beginners, so I recommend using Takoyaki flour for No Sauce like this one 😉 https://amzn.to/3nKsbDG


Takoyaki is a popular Japanese ball-shaped snack made of batter, diced octopus, tenkasu (tempura scraps), beni shoga (red pickled ginger), and aonegi (green onion), topped with okonomiyaki sauce, mayonnaise, aonori (green laver), and katsuobushi (bonito flakes). Slightly crispy on the outside and creamy inside.

How to Make Takoyaki


Difficulty: Easy
Time: 30min
Number of servings: 40 pieces

Necessary Equipment:
Takoyaki pan
spouted measuring cup
oil brush (you can make it with paper towel, chopsticks, and rubber band)
steel pick (long bamboo pick is ok)

Ingredients:
200g (7oz.) takoyaki flour
2 egg
600cc water
cooking oil
Fillings
* diced boiled octopus
* chikuwa (fish cake) if you like
* beni shoga (red pickled ginger)
* tenkasu (tempura scraps)
* aonegi (green onion)
Sauce
* okonomiyaki sauce
* mayonnaise
* katsuobushi (bonito flakes)
* aonori (green laver)

Directions:
1. In a bowl, mix takoyaki flour, eggs, and water (add little by little).
2. Heat takoyaki pan and grease the molds with cooking oil. 
3. Pour batter into the molds to the full.
4. Put beni shoga, tenkasu, aonegi, and octopus or chikuwa in each mold.
5. Wait a little until batter on the edge of the molds become cooked. 
6. Flip takoyaki with a pick, fix the form by flipping, and cook until golden brown.

How to serve:
1. Place on a plate and top with okonomiyaki sauce, mayonnaise, katsuobushi, and aonori.
2. With dashi broth. (boil 200cc water and 2 tbsp. Kamada dashi soy sauce)
3. With grated radish and ponzu sauce.
4. With sausage. (cut sausage into half. finely cut outer curve of the sausage and cook. place takoyaki and draw face with nori and ketchup.)

Ankake Yakisoba (Fried Noodles with Thick Savory Sauce Recipe) | Japanese Cooking Video

Crisp brown fried noodles with a thick savory sauce with a lot of meat and vegetables. It is a very popular Japanese dish, served as a school lunch as well.



You can add seafood if you like. You can use any vegetables available in your fridge. Take it easy. It is a delicious lifesaver dish super quick to prepare 👍

Ankake Yakisoba (Fried Noodles with Thick Savory Sauce Recipe)

Number of servings: 2 servings

Ingredients:
2 servings Yakisoba noodles
150g (5.2oz.) thin sliced pork
150g (5.2oz.) baby bok choy
150g (5.2oz.) vegetables of your choice (onion, bean sprouts, carrot, mushrooms, etc...)
* 1 tsp. chicken broth powder
* 2 tsp. oyster sauce
* 1 tsp. soy sauce
salt and pepper
cooking oil
1 tbsp. Katakuriko (corn starch is ok)
1 tsp. sesame oil

Directions:
1. Cut the meat and vegetables into bite-size pieces.
2. Heat 1 tbsp. of cooking oil in a frying pan and cook the noodles 3 minutes each on both sides until crisp golden. Place them on serving plates.
3. Heat 1 tbsp. of cooking oil in a frying pan and cook the meat until crisp golden. Add the vegetables and cook until tender. Add 1 US cup (240ml) of water, then add chicken broth powder, oyster sauce, and soy sauce.
4. Bring to a boil, stop the heat, and add starch diluted with double the amount of water. Heat again until thick. Stop the heat and finish with sesame oil. Season with salt and pepper if needed. 
5. Cover the noodles with Ankake sauce to serve.

Yakisoba Pan (Japanese Stir-Fried Noodles in a Hot Dog Bun Recipe) | Japanese Cooking Video

Yakisoba Pan (Japanese Stir-Fried Noodles in a Hot Dog Bun Recipe)


Difficulty: Easy
Time: 15min
Number of servings: 4~6 servings

Ingredients:
100g(3.5oz) thin sliced pork or sausages
100g(3.5oz) vegetables of your choice (cabbage, bean sprouts, carrot, green pepper, etc...)
1 tsp. cooking oil
salt and pepper
1 serving Yakisoba noodles
2 tbsp. Tonkatsu sauce or Japanese Worcestershire-style sauce
1 tsp. soy sauce
4-6 hot dog buns *depending on size
butter, mayonnaise, and/or mustard
Aonori (green laver)
Benishoga (Red Pickled Ginger)

Directions:
1. Cut the meat and vegetables into small pieces.
2. Heat cooking oil in a frying pan and cook the vegetables until tender.
3. Add the meat, and cook until no longer pink, then season with salt and pepper.
4. Add the Yakisoba noodles (cut short, easy to eat).
5. Season with Tonkatsu sauce and soy sauce, then stop the heat.
6. Split the top of the bun, apply some butter, mayonnaise, and/or mustard.
7. Place Yakisoba and top with Aonori and Benishoga if you like.

7 Tips to make Kyaraben (character Bento lunch box)


#1 Find the image easy to work with: Opened eyes are sometimes difficult to make, so choosing the character with smiling eyes or winked eyes saves time.
#2 Make rough sketch of Bento: detailed ideas are better because you may run out of energy to go easy.
#3 Shop ingredients based on your sketch: if you have detailed ideas with you, you may luckily find better ingredients.
#4 Use vivid colors for the egg crepes. Egg white is easy to break, so you can mix starch and water to prevent it from breaking(1 tsp. starch & 1 tsp. water for 1 egg white).
#5 Start from larger parts, trace them on a parchment paper, and cut out the ingredient with a design  knife.
#6 Make sure you don't put eyes on top of ham (face). Face parts must be at the same level or eyes will look like popping out and scary...
#7 Cut Nori seaweed lines as thin as possible. Thick lines look sloppy...

Basic ingredients you need to make Kyaraben:
egg
food coloring
cheese slices
ham slices
Kanikama (fish cake)
Kamaboko (fish cake)

Time you need may depend on the character and your concentration. Please take time to make it. You can make the character a day before and keep it in the fridge.

*You can make rice or noodle dish with a lot of vegetables to save time making side dishes.

Chicken Mince Simmered Ebi-Imo (Shrimp-Shaped Taro Potatoes) | Japanese Cooking Video Recipe

No-fuss family dish kids and adults will love 😋


You can arrange this dish with regular taro potatoes, or regular potatoes or a radish kind. Perfect for everyday meal and Bento box!



Because its shape and pattern are like a shrimp, we call this taro potato Ebi-Imo (shrimp potato). It is in season from November through January. My neighbor gave me some beautiful Ebi-Imo, so I decided to make this dish for my family. I hope this idea helps 👍

Chicken Mince Simmered Ebi-Imo (Shrimp-Shaped Taro Potatoes) Recipe


Difficulty: Easy

Ingredients
600g (1.3lb.) Ebi-Imo (shrimp potato)
300g (0.7lb.) minced chicken
3 tbsp. green peas (cooked/frozen/canned)
salt
400ml Dashi broth
A
* 4 tbsp. soy sauce
* 2 tbsp. Sake
* 2 tbsp. sugar
* 1 tbsp. ginger juice
1 tbsp. cooking oil
B
* 1 tbsp. corn/potato starch
* 1 tbsp. water

Directions:
1. Peel and cut Ebi-Imo in bite-size chunks. Parboil in salted water to remove bitter taste then rinse to remove slimy texture. *When you use regular potato, this procedure is not necessary but it improves flavor.
2. Heat cooking oil in a pot, and cook minced chicken until no longer pink.
3. Add Ebi-Imo and Dashi stock, and bring to a boil. When it comes to a boil, remove the foam.
4. Add the seasonings (A), and cook until the potatoes are soft for about 10~15 minutes.
5. Stop the heat, add starch diluted with water, then heat again until thick.
6. Lastly, add green peas, and cook until hot.

Brussels Sprouts Ohitashi (Vegan Salad Recipe) | Japanese Cooking Video

Ohitashi is a vegetable side dish (usually made with spinach) soaked in Dashi soy sauce. Perfect for any meal (breakfast, lunch, or dinner) and Bento lunch box.

Brussels Sprouts Ohitashi (Japanese Vegan Recipe)


Difficulty: VERY EASY
Time: 5min
Number of servings: 2

Ingredients:
200g (7oz.) brussels sprouts
salt
* 100ml water
* 1 tbsp. soy sauce
* 1/3 tsp. sugar
ground white sesame seeds

Directions:
1. Wash brussels sprouts, trim off the dirty end, then slice down the middle lengthwise.
2. Boil water in a large pot. Add a teaspoon of salt in the water, cook brussels sprouts for about 3 minutes. Drain well in a strainer.
3. In a sauce pan or microwave, heat water, Kombu kelp Dashi powder, soy sauce, and sugar mixture until it comes to a boil.
4. Soak brussels sprouts in Dashi soy sauce.
5. Sprinkle with some fresh ground white sesame seeds just before you serve.

You can keep it in the fridge for 3 days.

Okonomiyaki Cup Set (Fluffy Savory Japanese Pancake) | Japanese Cooking Video Recipe

Cup noodle-like Okonomiyaki Set by Nisshin Flour Milling Inc. It says you don't need many cooking utensils but actually you need a lot of ingredients to get 😅 At least it contains mayo and sauce in addition to the dry ingredients. Anyway, the direction was interesting. Using 14cm (5.5inch) frying pan, no pressing with spatula, resulted satisfying fluffy soufflé texture! I would vote for this trick 👍

Number of servings: 2 (14cm/5.5inch) pancakes

Ingredients:
120ml water
220g finely chopped cabbage
100g (3.5oz.) thinly sliced pork rib
1 egg
cooking oil

Directions:
1. Make Batter: In the cup, put Okonomiyaki flour and water. Mix with a spoon, a bit crumbled is okay, do not overmix.
2. Mix: Add chopped cabbage, Agedama (crunchy bits of deep fried flour-batter) and egg, then mix well. *Thinly sliced cabbage is not easy to mix with a spoon, so this is why chopped cabbage is recommended.
3. Cook: In a 14cm/5.5inch frying pan, heat cooking oil, put half of the batter, and place pork slices. Uncover and cook on medium for 4 minutes. Flip it over, COVER, and cook on medium for 5 minutes. Again, flip it over, uncover, and cook on low for 5 minutes.
4. Finish: Put Okonomiyaki sauce, mayonnaise (if you like), Katsuobushi (bonito flakes) and Aonori (green laver) to finish.

Daikon Radish Leaves Furikake (Rice Seasoning Recipe) | Japanese Cooking Video Recipe

Furikake is rice seasoning comes in many different flavors and textures. Soft or crunchy is pretty common. In this video, I want to share with you amazingly delicious soft Furikake using Daikon radish leaves. You can use any similar kind of leaves of course.



Adding Katsuobushi (bonito flakes) or canned tuna is OK. Very tasty yet delicious. Perfect rice topping. My kids (6 years & 4 years) eat very well.

You can keep this dish for 5 days in the fridge. Nutritious lifesaver for daily Bento lunch box 👍

Daikon Radish Leaves Furikake (Rice Seasoning Recipe)


Difficulty: Easy
Time: 10min

Ingredients:
120g~150g (5oz.) Daikon radish leaves
1 tbsp. sesame oil
1 tbsp. soy sauce
1 tsp. sugar
1 tbsp. white sesame seeds
1 package (2.5g) bonito flakes OR 70g (2.5oz) small canned tuna

Directions:
1. Wash Daikon radish leaves very well then Chop (parboil or microwave to reduce the amount to fit in the pan).
2. Chop into small pieces. Using kitchen shears is easier. 
3. Heat half the amount of sesame oil in the pan then cook Daikon leaves until soft.
4. Add Katsuobushi or tuna, then quickly cook until combined.
5. Season with soy sauce and sugar. Then cook until the liquid is gone.
6. Add sesame seeds and remaining sesame oil. Mix and cook quickly until fragrant then stop the heat.
