How to Make Baby Penguin Onigiri Rice Balls (One Plate Lunch / Bento Idea) - Video Recipe

Directions:
((Baby Penguin Onigiri Rice Balls))
1. Wet and set the lower mold in the scooper. Put some rice in the mold and place the upper mold. Press the upper and lower molds tightly to form a penguin-shaped rice ball, then remove the rice ball.
2. Cut penguin body parts with Nori seaweed sheet cutters (press until Nori doesn't make tearing sounds).
3. Attach the cut out Nori pieces on the rice ball.

How to Make Maleficent Bento Lunch Box - Video Recipe

I liked the movie, so I decided to make this bento box even if there was no request for it. hehe I think Angelina Jolie in this movie was stunning beautiful!!!

I happened to find the "Maleficent bento box" online. It was well made and gorgeous. Dishwasher safe & microwavable!!! Nice and calm black color is perfect for Japanese-style bento for every day use. Worth to buy quality!!!

1. Draw Maleficent on a piece of paper.
2. With a permanent marker (Sharpie), trace the illustration on the parchment paper
3. Place Nori seaweed sheet on a flexible cutting board. Then place the parchment paper on top. Secure them with paper clips.
4. Cut out the image with a design knife. Make sure you don't lose any of the parts you cut out (keep them in a box).
5. Place them on a sliced cheese.
6. Put cooked rice in a bento box, layer salmon flakes, then cover with the cooked rice. Place the decorated cheese on top

Tips:
You can make the deco cheese the night before. Wrap it securely in plastic wrap and keep it in the fridge till the next morning when you pack your bento box :)

RED and BLUE EGG CREPES
1. Dilute each gel color with a little milk (or water) to give a thin consistency.
2. Put 1/2 egg white in 2 small bowls. Mix in each color and a bit of salt. Heat cooking oil in a small pan on low heat, pour the egg mixture in the pan and spread over the surface. ‪Cook the egg until the edges begin to dry, then ‬flip it over and cook the other side‪.‬
YELLOW EGG CREPES
1. Beat egg yolk in a small bowl and season it with a bit of salt.
2. Heat cooking oil in a small pan on low heat, pour the egg mixture in the pan and spread over the surface. ‪Cook the egg until the edges begin to dry, then ‬flip it over and cook the other side‪.‬
SAILOR MOON
1. With a permanent marker (Sharpie), trace your favorite Sailor Moon illustration on the parchment paper and cut all parts into pieces.
2. Place the stencil pieces on the egg crepes, sliced cheese and sliced ham, then cut them out using a design knife. Cut out Nori seaweed sheet to make her eye lashes and nose.
3. Use a bit of mayonnaise to attach the cutouts onto a sliced cheese.
4. Put cooked rice in a bento box. Then top with some rice seasoning of your choice and place the decorated cheese on top.
5. Arrange with side dishes.

How to Make Easy Gluten Free Okonomiyaki (and the Sauce from Scratch) - Video Recipe

Okonomiyaki is Japanese savory pancake.

I know ingredients are hard to get overseas, so here I will show you how to enjoy Okonomiyaki using the ingredients available overseas :)

Instead of using flour, I used a lot of cabbage. Perfect for those who are on gluten free diet :)

Of course, you can add more fillings if you like!!!

Easy Gluten Free Okonomiyaki (and the Sauce from Scratch)

Difficulty: Easy
Time: 20min
Number of servings: 2

Ingredients:
2-3 (70g=2.5oz.) bacon strips
300g (10.6oz.) shredded cabbage
1/2 long onion
4 eggs
salt and pepper
cooking oil
((toppings))
* Okonomiyaki sauce
* mayonnaise
* Katsuobushi (bonito flakes)
* Aonori (green laver)

Okonomiyaki Sauce from scratch:
2 tbsp. Worcestershire sauce + 2 tbsp. ketchup + 1 tsp. honey (or sugar)

Directions:
1. Thinly slice the cabbage, bacon, and long onion.
2. Pan fry the bacon, then add cabbage and long onion, and cook until they are wilted. Then stop the heat and cool.
3. Beat eggs in a bowl, season with salt and pepper, add the vegetables (2.), then mix well. *or you can do this in 2 separate bowls
4. Heat cooking oil in a large frying pan. Spread 1/2 of the batter in a circular shape.
5. Cover, and cook on low for 3 minutes. Then flip it over, cover, and cook the other side for 3 minutes until golden brown.
6. Serve on a plate, and sprinkle with toppings.

How to Make Nikujaga (Stewed Beef and Potatoes) - Video Recipe

Nikujaga (Stewed Beef and Potatoes) is a very popular Japanese home cooked meal which everyone wants to make 💖

You can make it with Ito Konnyaku (or Shirataki) and other vegetables (such as carrots) but simple is better!!!

Nikujaga (Stewed Beef and Potatoes)

Difficulty: Medium
Time: 1hr
Number of servings: 4

Ingredients:
800g (1.8lb) Irish Cobbler potatoes
200g (7oz.) thinly sliced beef
1 (200g=7oz.) onion
400ml water
4 tbsp. sugar
4 tbsp. soy sauce
8 frozen green beans *if you like

Directions:
1. Peel and cut potatoes into 4~6 pieces, then do Mentori (plane off the corners) to prevent crumbling while cooking. Soak in water for 10 minutes (this prevents the color from changing and removes starch). Change the water if it becomes cloudy.
2. Slice onion into bite-size wedges and separate into pieces. Cut thinly sliced beef into bite-size pieces.
3. Put potatoes and onions in a pot. Add water and put on medium.
4. When it becomes to a boil, turn down to low, and remove any foam. Then simmer on low for 3 minutes until the onions become tender.
5. Add 2 tbsp. of sugar, tilt the pot to mix (do not mix with chopsticks or a ladle or the potatoes will become mushy), then simmer on low for 3 minutes.
6. Add 2 tbsp. of soy sauce, tilt the pot to mix, then add beef little by little. *adding the seasonings half at a time allows the flavor to soak in well.
7. Put on medium, and remove any foam.
8. When the meat is no longer pink, add 2 tbsp. of sugar and 2 tbsp. of soy sauce (tilt the pan to mix), then cover with Otoshibuta (drop-lid) and simmer on medium low for 10 minutes. *add a bit more soy sauce and/or sugar as needed.
9. When the potatoes are cooked, tilt the pot and cook until the liquid is almost gone.
10. Serve in a small bowl and garnish with boiled green beans if you like.

Irish Cobbler potatoes soak the flavor very well and won't become soggy.
May Queen potatoes are okay, too.

Olaf Bento Lunch Box (FROZEN)

Ingredients:
((Olaf Rice Balls‪))‬
‪cooked white Japanese rice‬
Nori sheet
sliced cheese
carrot
Oshaburi Kombu (chewing Kombu kelp snack)
mayonnaise
((Heart-Shaped Tamagoyaki: Egg Omelette‪))‬

* 2 eggs
* 1/2 tbsp. sugar
* a pinch of salt
cooking oil
((Snowflake Sausages‪))‬
sausages
((Nikujaga: Stewed Beef and Potatoes))

Directions:
((Olaf Rice Balls‪))‬
1. Season the rice with a bit of salt. Use plastic wrap and form the rice to make the face and body parts of Olaf.
2. Cut out Nori sheet, sliced cheese, and carrot (cook if you want) to make his face parts. Attach them with bits of mayonnaise with tweezers.
3. Cut Oshaburi Kombu (chewing Kombu kelp snack) to make his hair and arms, then attach them.
((Heart-Shaped Tamagoyaki: Egg Omelette‪))‬
1. Mix A. Heat cooking oil in a Tamagoyaki Nabe (rectangular omelet pan) on low heat, pour 1/5 of the egg mixture in the pan and spread over the surface. ‪Cook the egg until the edges begin to dry, then ‬start rolling‪.‬ Move the rolled egg to one side, pour another 1/5 of egg mixture in the space and under the rolled egg. Cook it until ‪the edges begin to dry‬ then roll the egg again. Repeat this until all the egg mixture is gone.
2. Cut the egg into an inch pieces (just about the depth of your Bento box).
3. Place the cut side up, cut diagonally, then turn one of them upside down, and attach to make a heart shape.
((Snowflake Sausages‪))‬
1. Cut Sausages in half.
2. Make a cross incision, then make another incision in each section.
3. Pan fry the sausages (snowflake pattern starts to open).

How to Make Ikanago no Kugini (Sand Eel Boiled Down in Soy Sauce) - Video Recipe

Last weekend was a 3-day weekend, so my darling and I went to Kobe to visit my grandma to make Ikanago no Kugini (my favorite dish) together!!!

Ikanago no Kugini is a specialty in Hyogo prefecture. It can be cooked and eaten during a specific period of time around March. Thanks to the holiday, I could finally visit my grandma :)

Ikanago no Kugini (Sand Eel Boiled Down in Soy Sauce)

Difficulty: Medium
Time: 1hr
Number of servings: N/A

Ingredients:
2kg (4.4lb) Ikanago (sand eel)
A
* 440g (1lb) Kizarame (coarse crystal medium soft sugar) *400g (0.9lb) when Ikanago is small
* 400ml soy sauce *360ml when Ikanago is small
* 160ml Mirin (sweet Sake)
* 160ml Sake
260g (9oz) ginger
2 tbsp. Mizuame (starch syrup)
white peeled sesame seeds if you like

Directions:
1. Thinly slice ginger to the size of Ikanago.
2. Wash and drain Ikanago. *cook Ikanago as soon as you get or it can get bad easily. the fish gets white and water becomes cloudy when it gets bad.
3. Put A in a large aluminum pot, then put on high and bring to a boil. Tilt the pan and make sure the sugar is melted.
4. Sprinkle with hands full of ginger. Sprinkle with hands full of Ikanago. Then sprinkle with some ginger again. When the bubbles start to cover Ikanago toward the center (that means Ikanago is cooked), add hands full of Ikanago and some ginger again. Repeat this until the ingredients are gone. *do not mix with chopsticks or a ladle or the fish will fall apart.
5. Remove the foam if necessary. *to remove a fishy smell
6. Cover with a lid made with aluminum foil with a few holes. Put on high, make sure it won't boil over. Then simmer for about 1 hour.
7. Add starch syrup, cover and simmer until the liquid is almost gone. Now toss Ikanago in the pot to mix. *again, do not mix with chopsticks or a ladle or the fish will fall apart.
8. When the fish is caramelized, drain with a strainer.
9. Transfer to a tray, and fan like cooling sushi rice. Then leave to cool completely. *1.2kg (2.6lb) Ikanago after cooking.

You can keep Ikanago in a large container BUT I recommend to store it in small quantity (in a Ziploc bag is okay), since it can easily get bad if you open and close the container frequently.

How to Make Kuki Wakame no Tsukudani (Wakame Seaweed Stems Boiled Down in Soy Sauce) - Video Recipe

Fresh Wakame (seaweed) is in season in spring in Japan!
My mom bought it as a souvenir. wow

I love Kuki Wakame no Tsukudani (Wakame Seaweed Stems Boiled Down in Soy Sauce) which my grandma makes, so I decided to make it with the stems.

It goes great with white rice and perfect for bento box :)

You can blanch the fresh Wakame in boiling water (which will turn the natural brown color to the green) and freeze up to a year. When you use, you can just defrost at room temperature or soak in water.

There are many ways to enjoy fresh Wakame. Leaves can be used for Shabu Shabu (enjoy leaves changing color in hot water and eat with Ponzu sauce), Miso soup, salad, etc… Stems can be used for Tsukudani (simmered dish), Kinpira (stir-fried dish), etc…

Kuki Wakame no Tsukudani (Wakame Seaweed Stems Boiled Down in Soy Sauce)

Difficulty: Easy
Time: 30min
Number of servings: N/A

Ingredients:
200g (7oz.) fresh Wakame seaweed stems
200g (7oz.) Enokitake (Enoki mushrooms)
100g (3.5oz.) Shimeji mushrooms
80g (3oz.) boiled Zenmai (Osmunda japonica)
2 dried Shiitake mushrooms
150ml hot water
A
* 3 tbsp. Sake
* 3 tbsp. Mirin (sweet Sake)
* 3 tbsp. sugar
* 6 tbsp. soy sauce
3 tbsp. ground toasted white sesame seeds

Directions:
1. Blanch the fresh Wakame stems in boiling water (which will turn the natural brown color to the green we are familiar with).
2. Soak dried Shiitake mushrooms in 150ml hot water until they become soft (after 15 minutes or so). Then thinly slice them. Reserve the soaking liquid.
3. Thinly slice Wakame stems. Remove tough base of Enoki mushrooms and cut in half. Remove tough base of Shimeji mushrooms and break into pieces. Cut boiled Zenmai into bite-size length.
4. Place the reserved Shiitake soaking liquid and A in a pot, and bring to a boil. Add the cut ingredients, then cook on medium (stirring once in a while) until the liquid is almost gone for about 15 minutes.
5. Mix in ground toasted white sesame seeds to finish.

You can keep it in the fridge for a week. Or in the freezer for 1-2 months but it may get soggy. In that case, you want to simmer it again to dry out the excess liquid.

Hinomaru Bento (in Kawaii Panda Bento Lunch Box) - Video Recipe

Hinomaru Bento (日の丸弁当) is the most simple Bento lunch in Japan! What you do is you place a red Umeboshi (pickled plum) in the center of the plain white rice. It looks like Japan's flag, Hinomaru (literally, disk of the sun).

Ebi Furai (Deep Fried Prawn) - Video Recipe

Ebi Furai (Deep Fried Prawn) is Japanese-invented Western-style deep fried dish, such as Tonkatsu.


It is a very popular deep fried main dish in Japan as well as Japanese restaurants worldwide.

Ebi Furai (Deep Fried Prawn)


Difficulty: Easy
Time: 15min
Number of servings: 6 pieces

Ingredients:
6 large black tiger prawns
salt and pepper
Batter
* flour
* beaten egg
* Panko (bread crumbs)
vegetable oil for deep frying
Bull-Dog Tonkatsu sauce if preferred
lemon wedge
shredded cabbage
tomato wedges
Tartar Sauce
* 1 chopped hard-boiled egg
* 2 tbsp. minced onion
* 1 chopped dill pickle
* 3 tbsp. mayonnaise
* salt and pepper

Directions:
1. Wash, peel (leave the tails on) and devein the prawns. Make 4-5 incisions (about 1/3 depth) in the stomach side to straighten them. Cut the tip of the tail off and remove the water inside to avoid splatters when deep frying. Season with salt and pepper.
2. Flour the prawn lightly, dip in beaten egg, then coat with Panko. Use one hand for coating flour and Panko, and use the other to dip in egg to keep one of your hands dry.
3. Deep fry in oil at 170C (340F) for 2-3 minutes until cooked through and golden brown. Remove from the oil and drain.
4. Mix Tartar Sauce ingredients well. Serve along with Ebi Furai, with shredded cabbage and tomatoes. Eat with lemon juice, tartar sauce and/or Tonkatsu sauce. Any way you prefer!

How to Make Sushi Burrito - Video Recipe

My darling was reading a newspaper the other day and found "Sushi Burrito" is very popular overseas.

Well… we don't have it in Japan and I never tried it, so I thought it is very weird. BUT my recipe turned out amazing XD

The lucky direction of the year 2024 is East Northeast slightly East. (2024年 令和6年の恵方は 東北東やや東).


If you eat Eho-Maki facing in that direction it will bring you a good luck. But just remember you have to close your eyes and eat all without speaking! You can speak after you complete it ;)

Sushi Burrito


Difficulty: Easy
Time: 15min
Number of servings: 4 rolls

Ingredients:
4 (16cm=6.5inch) flour tortillas
150g (5.3oz.) cooked Japanese rice (short-grain rice)
1 tbsp. Sushi vinegar*
toasted white sesame seeds
lettuce
Shiso leaves (green perilla leaves)
Wasabi Guacamole Japonés (video recipe available)
shredded cheese
chopped green onions

* Ingredients to make sushi vinegar from scratch.
1 tbsp. rice vinegar
1/3 tbsp. sugar
1/3 tsp. salt

Directions:
1. Place cooked Japanese rice in a bowl. Add Sushi vinegar while the rice is hot and slice through rice using rice paddle to separate the grains. Cool the rice before you use.
2. Make Wasabi Guacamole Japonés (video recipe available).
3. Divide the sushi rice into 4 portions. Spread the sushi rice on a flour tortilla using your finger tips, little bit moistened with water. Then sprinkle with toasted white sesame seeds.
4. In the center of the wrapper, layer lettuce, Shiso leaves, Wasabi Guacamole Japonés, shredded cheese, and chopped green onions. Then roll tightly.
5. Wrap with parchment paper to serve.

*If you use large tortillas, you can fold two sides before you roll :)

How to Make Umaki (Japanese Eel Rolled Omelette) - Video Recipe

Umaki is broiled eel wrapped in Japanese rolled omelette (called Tamagoyaki, Dashimakitamago, or Atsuyakitamago). Egg is juicy and eel makes it very tasty. It tastes great even when it is cold, so it is a perfect side dish for bento lunch box!

FYI: Broiled eel on skewers is called "Unagi no Kabayaki".

Umaki (Japanese Eel Omelette)

Difficulty: Easy
Time: 15min
Number of servings: 2

Ingredients:
1/2 Unagi no Kabayaki (broiled eel on skewers)
eel sauce if attached
4 eggs
A
* 50ml Dashi broth (you can use Dashi powder to make it)
* 1 tsp. soy sauce
* 1 tsp. sugar
* a pinch of salt
cooking oil
Daikon Oroshi (grated Daikon radish)
soy sauce

Directions:
1. Cook the eel as directed on its package. Cut into thin portions. Pour some eel sauce over the eel if available. (I found Hamanako Broiled Eels at a supermarket and it also tasted great! You can maybe get it online since it has a long expiry date!)
2. Beat eggs in a bowl, add A and mix well.
3. Coat a Tamagoyaki Nabe (rectangular omelette pan) with a bit of cooking oil - you can use folded paper towel but Takoyaki oil brush is very convenient to use! Put on medium, and pour a thin layer of egg mixture in the pan. Place the eel strips, cook the egg until half done, then roll the egg. Move the rolled egg to one side, coat the empty space with a bit of oil, pour a thin layer of egg mixture in the space and under the rolled egg. Cook it until half done and roll the egg again. Repeat this until the egg mixture is gone.
4. Wrap the rolled egg while hot in a bamboo sushi roll mat to even out the shape. Allow it to cool and cut it into bite-sized pieces.
5. Garnish with grated Daikon radish (grate the top part of Daikon because it is sweeter) and a few drops of soy sauce: this is called "Someoroshi" because the radish is dyed with soy sauce.

How to Make Kobumaki (Salmon and Pork Kelp Roll) - Video Recipe

Kobumaki is kelp roll, one of the Japanese new year's dishes.

It makes a play on words with "喜ぶ (Yorokobu)" which symbolizes pleasure or delight.

Of course, it can be a regular bento side dish :)
It goes great with white rice!!!



For vegetarian people, you can substitute the filling with Gobo (burdock root), carrot, or/and other vegetables of your choice.

Kobumaki (Salmon and Pork Kelp Roll)

Difficulty: Easy
Time: 2hrs
Number of servings: 25-30 pieces

Ingredients:
10 ten-inch-long (25cm) Hidaka Kombu (this type cooks quick and tender)
800ml water
150g (5.3oz.) salmon fillet
6 thinly sliced pork (I used thigh but any part is okay)
30g (1.0oz.) Kanpyō (dried gourd strips)

* 1 tbsp. Mirin (sweet Sake)
* 2 tbsp. Sake
* 3 tbsp. sugar
4 tbsp. soy sauce

Directions:
1. Clean each Kombu with moistened towel. Soak in 800ml water for 5 minutes. Save the water.
2. Wash Kanpyō, rub 1/2 tbsp. of salt on Kanpyō (to remove bad smell and cook tender), then wash and drain well.
3. Cut salmon into about 0.7-inch-wide strips.
4. Place a salmon strip on the end of the Kombu close to you and roll securely. Wrap a strip of Kanpyō round the Kombu roll for 2 times (not too tight but not too loose), make double knot, then trim off the uneven ends. You may want to tie up 2 or 3 places.
5. In a large pot, place the rolls without overlapping each other. Pour the reserved soaking water just until it barely covers the ingredients. Bring to a boil, then remove the foam if necessary.
6. Add A, turn the heat down to low, cover with Otoshibuta (drop lid), and cook for 30 minutes.
7. Add soy sauce, cook on low for another 30 minutes until the cooking liquid is almost absorbed.
8. Turn off the heat. Leave to cool in the pot. Cut into 2 or 3 pieces.

You can store in the fridge for a week :)

How to Make Kiki & Lala Little Twin Stars Bento Lunch Box - Video Recipe

Ingredients:
((Kiki Lala Rice))
cooked white Japanese rice
a pinch of salt (or rice seasoning)
1 egg
Hagoromo Deco Furi Rice Sprinkles (Pink and Blue)
cooking oil

sliced ham

Directions:

1. Put steamed rice in a bowl. Add a pinch of salt (or rice seasoning) to season it. Place it in a bento box.
2. Put 1 tbsp. of egg white in 2 small bowls. Mix in a bit of Pink and Blue Rice Sprinkles (leave them for a while to dissolve). If the egg yolk is thick, mix in a bit of milk, then season it with salt to taste. Heat cooking oil in a small pan on low heat, pour the egg mixture in the pan and spread over the surface. ‪Cook the egg until the edges begin to dry, then ‬flip it over and cook the other side‪.‬
3. With a permanent marker (Sharpie), trace your favorite Kiki Lala illustration on the parchment paper and cut it out.
4. Place the stencil on the yellow sheet of egg and cut out a star (use a design knife).
5. Cut off the star from the stencil, then cut all parts into pieces.
6. Place the stencils, cut out pink and blue egg to make their hair (use a design knife). Cut out cheese to make their clothes (use a design knife). Cut out ham to make their faces, hands, and feet (use a design knife). Cut out Nori sheet to make their eyes and mouths (use eyebrow scissors).
7. Arrange the parts with tweezers. Garnish with chopped okra stars.

1. Put steamed rice in a bowl. Add a pinch of salt to season it.
2. Use plastic wrap and form the rice into a teardrop shape.
3. Open Kanikama (imitation crab stick) to make a hat. Cut out sliced ham to make his face and nose. C‪ut out‬ Nori sheet‪ ‬to make his eyes and mouth. Attach them with tweezers. *If you like, you can put some mayonnaise under the Kanikama. It tastes good with rice!

NO EGG Marmalade Meatballs

Difficulty: Super Easy
Time: 40min
Number of servings: about 20 meatballs

Ingredients:
A
* 400g (14.1oz.) lean ground pork (chicken or beef is good, too)
* 1/2 minced long onion (or onion)
* 2 tbsp. Katakuriko (potato starch) (or corn starch is ok)
* 2 tbsp. toasted white sesame seeds
* 2 tbsp. grated ginger
* 1/2 tsp. salt
* pepper
B
* 2 tbsp. marmalade
* 2 tbsp. soy sauce
* 2 tbsp. sake (or white wine)
* 2 tbsp. water
1 tbsp. cooking oil

Directions:
1. In a large bowl, put A and mix very well with hand until all ingredients are combined and sticky (this consistency will help make juicy and fluffy meatballs) .
2. Divide the mixture into 20 portions and roll each into a ball (you can adjust the sizes while rolling them).
3. Heat cooking oil in a frying pan. Place the meatballs and cook them gently on medium low heat, turning frequently, until golden-brown on all sides (about 10 minutes). Then add B, cover, and cook on medium, shaking the pan lightly from time to time, until the sauce gets thick.

You can put the meatballs in a freezer safe ziplock bag or a container and store in the freezer for up to 1 month.

She also teaches many other exercise classes at the gym. In September, she published a dance exercise book called "Age Age Dance". Microwave Chicken Roll-Up

Difficulty: Very Easy
Time: 30min
Number of servings: 2

Ingredients:
1 (300g=10.5oz.) chicken breast
2 slices ham *bacon is ok
2 sliced cheese
6 frozen green beans *defrosted
2 tsp. whole-grain mustard
salt and pepper

Directions:
1. Remove the skin from the chicken if desired. Open out the meat from the center like a book. Lightly pound with the back of a knife to make it thin. Then season both sides with salt and pepper.
2. Place the chicken skin side down, spread whole-grain mustard, place ham, cheese, and green beans along one edge of chicken. Then roll up the chicken tightly.
3. Wrap with plastic wrap, then twist the ends like a candy to seal it securely.
4. Place it on a microwavable dish, microwave at 600w (medium) for about 7 minutes. Leave it in the microwave and cool down in the microwave for 10-20 minutes until you can touch it.
5. Slice the chicken into pieces.

you can also steam in a frying pan or cook in the oven (220C=428F), both for about 15 min. tie the roll-up with kitchen string or secure with toothpicks or wrap with aluminum foil when cooking.
