How to Make Totoro Onigiri (Rice Balls) - Video Recipe

This video will show you how to make Totoro Onigiri (Rice Balls).

Rice ball is called "Onigiri" in Japanese. Mostly it's shape is triangle and you can mix ingredients into rice and/or fill your favorite ingredient in the rice ball.

It is perfect for Bento box!

Totoro Onigiri

Difficulty: Very Easy
Time: 5min
Number of servings: N/A

Ingredients:
cooked white Japanese rice
ground black sesame seeds
salt
Shio-Kombu (salted kelp) *optional
Karaage (Japanese Fried Chicken) *optional
spaghetti pasta
sliced American cheese
Nori sheet

Directions:
1. Put steamed rice in a bowl. Then mix ground black sesame seeds until you reach the desired Totoro color.
2. Place the rice in plastic wrap so that the rice won't stick on your hands.
3. Make a hole in the center of the rice and place the filling (Shio-Kombu & Karaage). *optional
4. Form the rice into a triangle by pressing lightly with your palms.
5. Make Totoro's ears using a small amount of rice.
6. Attach Totoro's ears with bits of spaghetti pasta. (pasta will absorb moisture from rice and gets soft after few hours, so you can eat it by lunchtime!)
7. Cut sliced cheese with a toothpick to make Totoro's face parts and body parts. Cut Nori sheet with scissors or use Nori punch to make Totoro's face parts and body parts. Attach them on Onigiri.

California Roll for Hinamatsuri (Girl's Festival) - Video Recipe

Japanese Doll Festival (Hinamatsuri), or Girls' Day, is held on March 3rd.
On this day, we set up hina dolls (hina-ningyo) since they are believed to protect girls from bad luck.

Hishi Mochi (diamond shaped rice cake) is usually presented with hina dolls. Hishi Mochi commonly consists of three layers: pink, white, and green, from top to bottom. It is said that pink represents peach flowers, white represents snow, and green represents grass. Those colors have a meaning to get the power of nature. Therefore, I used these three colors for my California roll :)

California Roll for Hinamatsuri

Difficulty: Easy
Time: 20min
Number of servings: 2 rolls (16 pieces)

Necessary Equipment:
makisu (bamboo sushi-roll mat)

Ingredients:
1/2 avocado
6 Kanikama (imitation crab sticks)
((Pink Sushi Rice))
* 110g (3.9oz.) cooked Japanese rice (short-grain rice)
* 2 tsp. Sushi vinegar
* 2 tsp. Sakura Denbu (pink colored seasoned shredded codfish)
((White Sushi Rice))
* 110g (3.9oz.) cooked Japanese rice (short-grain rice)
* 2 tsp. Sushi vinegar
((Green Sushi Rice))
* 110g (3.9oz.) cooked Japanese rice (short-grain rice)
* 2 tsp. Sushi vinegar
* 1 tsp. Aonori (green laver)
1 nori sheet
soy sauce
Wasabi (Japanese Horseradish Paste) if desired
pickled ginger if desired

Directions:
((Pink Rice))
Place cooked Japanese rice in a bowl. Add Sushi vinegar and Sakura Denbu while the rice is hot and slice through rice using rice paddle to separate the grains. (Cool the rice before you use.)
((White Rice))
Place cooked Japanese rice in a bowl. Add Sushi vinegar while the rice is hot and slice through rice using rice paddle to separate the grains. (Cool the rice before you use.)
((Green Rice))
Place cooked Japanese rice in a bowl. Add Sushi vinegar and Aonori while the rice is hot and slice through rice using rice paddle to separate the grains. (Cool the rice before you use.)
1. Cut 1/2 avocado into 4 strips.
2. Cover a bamboo sushi-roll mat with plastic wrap. Cut nori sheet in half and place it on the bamboo sushi-roll mat, shiny side down.
3. Spread 3 different colored sushi rice (pink, white, and green) alternately on a sheet of nori sheet using your finger tips, little bit moistened with water. Turn it over so that the nori sheet facing you.
4. Place avocado and imitation crab sticks lengthwise on the nori sheet. (cut them if too long.)
5. Roll the bamboo mat forward, hold the line of ingredients firmly with your fingers, stop and leave about 1/3 inch of sushi rice, make sure all the ingredients are pressed in, roll it completely, gently press the mat around the roll to shape it (do not squeeze).
6. With a moistened knife (bread knife cuts well!) cut the roll into 8 pieces (re-wet as needed. don't push but pull to cut!).
7. Serve with soy sauce, Wasabi, and pickled ginger.

Ingredients to make sushi vinegar from scratch.
* 3 tbsp. rice vinegar
* 1 tbsp. sugar
* 1 tsp. salt

How to Make Lucky Bean Rice (Fukumame Gohan) - Video Recipe

I cooked flavored rice using Fukumame (lucky beans) which were leftover from the bean scattering of Setsubun.

Lucky Bean Rice (Fukumame Gohan)


Difficulty: Easy
Time: 1hr
Number of servings: 4

Ingredients:
2 cups uncooked Japanese rice (you can mix white and brown rice)
A
* 30g (1.0oz.) Fukumame lucky beans (roasted soy beans)
* 25g (0.9oz.) Shio-Kombu (salted kelp)
* 40g (1.4oz.) short and thinly sliced carrot

Directions:
1. Wash rice if needed. If you are using pre-washed rice (musenmai) you don't have to wash it.
2. Place the rice in a pot and add water to the appropriate level indicated in the pot.
3. Add A and mix well. Place the pot into the rice cooker. Cover it, and press the button to start.
4. When it's done, do not open and let it steam for about 15 minutes. Using a rice paddle, toss the rice lightly.
5. Serve in a rice bowl.

How to Make Noriben (Nori Bento Lunch Box Recipe) - Video Recipe

Noriben (海苔弁) is the simplest type of bento, containing only soy sauce, Nori seaweed, and rice.

You can find this bento almost anywhere in japan, and it is usually the least expensive bento.

Side dishes differ from store to store, but the most popular ones are fish fries and chikuwa tempura.



If you know Hotto Motto (famous takeaway bento shop in Japan), their Noriben is pretty typical in Japan.

How to Make Noriben (Nori Bento Lunch Box)

Difficulty: Medium
Time: 45min
Number of servings: N/A

Ingredients:
((Kinpira Gobo))
200g (7oz.) Gobo (burdock root)
100g (3.5oz.) carrot
2 tbsp. Mirin (sweet sake)
1 tsp. sugar
2 tbsp. soy sauce
1 tbsp. sesame oil
1/2 tbsp. sesame seeds
((Fish Fries))
white fish (I used swordfish)
salt and cracked black pepper
A
* flour
* 1 beaten egg
* Panko (bread crumbs)
B Tartar Sauce
* 4 tbsp. mayonnaise
* 2 tbsp. chopped onion
* 1 chopped hard-boiled egg
* 1 tbsp. chopped dill pickle
* 1 tsp. lemon juice
* salt and pepper
vegetable oil for frying
Okonomiyaki sauce (or Tonkatsu sauce)
((Chikuwa Tempura - Deep Fried Fishcake Tempura))
4 large Chikuwa (fish cake)
A
* leftover beaten egg (about 1/2 egg) from the fish fries
* 75ml water
* 5 tbsp. flour
* 2 tbsp. Aonori (green laver)
vegetable oil for frying
((Nori Rice))
cooked rice
Nori seaweed sheet
A
*1 packet (5g) Katsuobushi (bonito flakes)
*1 tsp. Dashi soy sauce (or soy sauce)
((Others))
Takuan (Daikon radish pickles)
Baran (plastic leaf in sushi) if you have

Directions:
((Kinpira Gobo))
1. Use the back of the knife, lightly shave the gobo skin (do not peel because you will peel of the nutritious part between the skin and gobo). First, thinly slice the gobo diagonally. Then stack a few together and cut into thin strips. Soak the gobo strips in water while cutting, then drain well, lightly rinse, and dry off with paper towels.
2. Thinly slice the carrot in the same way.
3. Heat sesame oil in a frying pan and stir-fry gobo and carrot for a couple of minutes until tender.
4. Blend Mirin and sugar to give a sweetness, then season with soy sauce and stir-fry until the liquid is gone.
5. Turn off the heat. Sprinkle with sesame seeds.
((Fish Fries))
1. Remove all the bones from the fish. Season with salt and cracked black pepper.
2. Coat each with flour, dip in beaten egg, and coat with Panko.
3. Fry them in oil at 170C (340F) for 4-5 minutes until cooked golden brown. (Turn them over to cook evenly.) Remove the fish fries from the oil and drain.
4. Mix B to make tartar sauce.
5. Serve the fish fries with tartar sauce and Okonomiyaki sauce (or Tonkatsu sauce).
((Chikuwa Tempura - Deep Fried Fishcake Tempura))
1. Mix A in a bowl. Cut Chikuwa in halves if they are too large.
2. Heat vegetable oil in a deep pan to 170C (340F). Lightly dip the Chikuwa in the batter and fry them immediately until golden and crisp.
3. Drain them on a rack or a sheet of clean paper towel.
*make Okonomiyaki or Tenkasu using the leftover batter
((Nori Rice))
1. Mix A very well.
2. Put rice in a bento box. Put the Katsuobushi mixture on top. Then tear up Nori sheet into small pieces, and put them on top.
((Others))
Place side dishes on top of the Nori Rice. Serve the fish fries with tartar sauce and Okonomiyaki sauce (or Tonkatsu sauce). Okonomiyaki sauce goes great with Chikuwa Tempura as well!

How to Make ONE PIECE Bento Lunch Box (Nori ART Recipe) - Video Recipe

In this video, I will show you how to make amazing Nori Art character bento box.

You can apply this technique to make any other characters you like.



Good thing about this is you can make this the night before! So you don't have to get up early to make Kyaraben for your kids :)

Nori Art

Difficulty: Patience
Time: 1.5hrs or more or less (mine took about 1.5hrs)
Number of servings: 1

Necessary Equipment:
your favorite character's picture
flexible cutting board
binder clips
design knife
tweezers
Nori seaweed sheet
sliced cheese

Directions:
1. Print out your favorite character's picture.
2. Place Nori seaweed sheet on a flexible cutting board. Then place your favorite character's picture on top of the nor seaweed sheet. Secure them with binder clips.
3. Cut out the image with a design knife. Cut out smaller parts first, larger parts last. If the parts were too small to trace, you can cut them out later (or any easier way for you is fine). Make sure you don't lose any of the parts you cut out (keep them in a box).
4. Place them on a sliced cheese.

Tips:
You can make this the night before. Wrap it securely in plastic wrap and keep it in the fridge till the next morning when you pack your bento box :)

How to Make My Melody Bento Lunch Box

Difficulty: Medium

Ingredients:
((Sauteed Shimeji Mushrooms and Peppers with Shio-Kombu))
60g (2.1oz.) red pepper
60g (2.1oz.) yellow pepper
60g (2.1oz.) orange pepper
200g (7oz.) Shimeji mushrooms
20g (0.7oz.) Shio-Kombu (salted kelp)
1 tbsp. sesame oil
((Simmered Potato Pork Roll))

((Usuyaki Tamago Egg Crepe Flowers))
1 egg
1/2 tsp. Yamaki Kappo Shirodashi (White Dashi)
((My Melody Onigiri Rice Ball))
cooked white Japanese rice
sliced ham
Nori Sheet
sliced cheese
sliced cheddar cheese
((Others))
cooked broccoli

Directions:
((Sauteed Shimeji Mushrooms and Peppers with Shio-Kombu))
1. Remove tough base of Shimeji mushrooms and break into pieces. Slice the peppers.
2. Heat sesame oil in a frying pan and saute the Shimeji mushrooms and the peppers.
3. Cook until softened and season with Shio-Kombu.
((Simmered Potato Pork Roll))

((Fish Sausage Strawberries))
1. Slice fish sausage and cut into a strawberry shape with a design knife.
2. Cut and make zigzag Edamame halves for the strawberry hulls.
3. Attach the Edamame hulls to the fish sausage strawberries with bits of spaghetti pasta. (pasta will absorb moisture from fish sausage and gets soft after few hours, so you can eat it by lunchtime!)
4. Arrange some black sesame seeds for strawberry seeds with tweezers.
((Usuyaki Tamago Egg Crepe Flowers))
1. Beat an egg in a bowl and season with Yamaki Kappo Shirodashi (a bit of salt and sugar is fine).
2. Heat cooking oil in a tamagoyaki nabe (rectangular omelet pan) on low heat, pour the egg mixture in the pan and spread over the surface.
3. Cook the egg until the edges begin to dry, then flip it over and cook the other side for about 10 seconds. Leave it to cool completely.
4. Cut the egg lengthwise, fold in half lengthwise, and make vertical slices on the folded side.
5. Roll up the egg and attach it with a bit of spaghetti pasta.
((My Melody Onigiri Rice Ball))
1. With a permanent marker (Sharpie), trace your favorite My Melody illustration on the parchment paper and cut it out.
2. Pile up some steamed rice, cover with plastic wrap, place the My Melody stencil, and shape it with your fingers. Pinch and create chiseled jaw, because you want to draw a clear outline where you don't put the ham on top.
3. Place the My Melody stencil on a slice of ham and wrap with plastic wrap. Cut out the hood and the folded ear with eyebrow scissors.
4. Use the Character Nori Punch to cut out eyes and mouth. (you can also use eyebrow scissors)
5. Cut out and place the My Melody's flower hair accessory stencil on a slice of cheese. Use a design knife or a toothpick to cut carefully around the stencil. Cut out a slice of cheddar cheese to make a core of the flower and a nose.
6. Place the side dishes and the rice in a bento box. Then arrange the parts with tweezers.

How to Make Hello Kitty Bento Lunch Box


Difficulty: Easy
Time: 30-60min (depending on your patience)
Number of servings: 2-3 bento boxes

Ingredients:
((Stuffed Red Peppers))
2 red peppers *30g (1oz.) each
A
* 80g (2.8oz.) ground pork
* 40g (1.4oz.) minced onion
* salt and cracked black pepper
flour
cooking oil
sliced American cheese
Nori sheet
((Vegetable Kinpira with Eggs))

white Kamaboko fish cake
Kanikama (imitation crab meat/crab sticks)
sliced American cheese
spaghetti pasta
((Hello Kitty Onigiri Rice Ball))
cooked white Japanese rice
salt
Nori sheet
red pepper bottom
drained canned whole corn kernels

Directions:
((Stuffed Red Peppers))
1. Put A in a bowl and mix well by hand until all ingredients are combined and smooth.
2. Cut the bottoms off the red peppers to make a ribbon (ribbons) for the Hello Kitty Onigiri Rice Ball.
3. Cut each pepper into 3 rings, remove the seeds, and dust inside of peppers with flour.
4. Stuff the mixture into the peppers.
5. Heat cooking oil in a pan and place the stuffed peppers. When one side is golden brown, flip them over. Cover and steam for about 5 minutes until cooked through. In the same pan, lightly saute the Hello Kitty ribbons, and set aside.
6. Cut the sliced cheese with a toothpick to make apple cores. Cut Nori sheet with eyebrow scissors to make apple seeds.
*I bought leaf-shaped bento toothpicks at "CANDO" 100yen shop.
((Vegetable Kinpira with Eggs))

((Kamaboko Fish Cake House))
1. Slice Kamaboko fish cake and cut into a house shape.
2. Peel off the red part of Kanikama to make the roof, and attach it with bits of spaghetti pasta. (pasta will absorb moisture from Kamaboko and gets soft after few hours, so you can eat it by lunchtime!)
3. Cut sliced cheese to make windows.
((Hello Kitty Onigiri Rice Ball))
1. Put steamed rice in a bowl and mix a pinch of salt to taste. Stuff the rice into the Hello Kitty Onigiri Mold (spread the rice into the crevices of the mold with a small spoon). Place the lid and push the rice down. Remove the lid, then push the rice out from the mold.
2. Use the Hello Kitty Nori Punch to make eyes and whiskers.
3. Place the side dishes and rice in the bento box. Then arrange the small parts with tweezers.

You can also use a plastic wrap to form the Hello Kitty rice ball but it requires a great patience…

How to Make Wasabi Mayonnaise Chicken Rice Bowl

Difficulty: Very Easy
Time: 15min
Number of servings: 2 rice bowls

Ingredients:
1 package (45g=1.6oz.) Natto *you can substitute it with ground chicken or vegetables
100g (3.5oz.) ground chicken
A
* 2 tbsp. mayonnaise
* 1 tbsp. Wasabi in tube (freshly grated Wasabi is perfect)
* a pinch of sugar to taste
* a bit of salt to enhance the flavor
* 2 tsp. olive oil to add a gorgeous flavor
2 bowls cooked rice
soy sauce
chopped scallion (green onion)
Kizaminori (finely shredded Nori sheet)

Directions:
1. Cook the ground chicken in boiling water and drain well.
2. Mix A in a bowl. Then add the cooked chicken and natto, and mix well.
3. Serve cooked rice in a rice bowl, place the chicken mixture, season with a dash of soy sauce, then sprinkle with chopped scallion (green onion) and Kizaminori (finely shredded Nori sheet).

Halloween Teddy Bear Curry (Hamburger Steak Curry)

Difficulty: Medium with Patience
Time: 40min
Number of servings: 6
Calories per serving: 567Kcal

Ingredients:
((Curry))
1/2 box = 119g (4.2oz.) House Vermont Curry Sauce Mix (Mild) *we call it "curry roux". you can choose med hot or hot as well.
2 medium (400g=14.1oz.) onions
1 medium (150g=5.3oz.) potato
1/2 medium (100g=3.5oz.) carrot
2 (60g=2.1oz.) green peppers
1 (150g=5.3oz.) red bell pepper
2&1/2 tbsp. cooking oil
850ml water
((Hamburger Steaks))
250g (8.8oz.) ground beef and pork
2 tbsp. Panko (bread crumbs)
1 tbsp. milk
salt and pepper
((Saffron Rice)) *of course, the curry can be served with plain, unflavored steamed rice.
1 package Curry Partner Saffron Paste
6 servings (1020g=2.3lbs.) cooked rice
((Decoration))
3 sliced American cheese
3 nori sheets
12 raisins

Directions:
((Curry))
1. Mince the onions. Roughly dice the potato and carrot. Cut out 6 triangles from red bell pepper for teddy bear noses. Cut and save 6 strips of green pepper for teddy bear mouths. Roughly dice the rest of the peppers.
((Hamburger Steaks))
1. Put ground beef and pork, salt and pepper, Panko (bread crumbs), and milk in a bowl, and mix well by hand until all ingredients are combined and smooth.
2. Divide it into 12 patties. Heat 1 tbsp. cooking oil in a frying pan and lightly saute the teddy bear noses and mouths, and set aside. Then in the same frying pan, cook the hamburger steaks to desired doneness.
((Curry))
1. Heat 1&1/2 tbsp. cooking oil in a large stew pot. Add onions, potatoes, and carrots, and stir-fry them until slightly coated with oil.
2. Add 850ml water, bring to a boil, remove the foam, and turn the heat down to low and cook for about 15 minutes.
3. Turn off the heat, break up the curry roux into the pot, and mix well until completely melted. *make sure you stop the heat when you add the curry roux, otherwise it won't blend well.
4. Then add green and red peppers, and put on low heat and simmer for about 10 minutes until it thickens.
((Saffron Rice))
1. Place cooked rice in a bowl. Add Curry Partner Saffron Paste while the rice is still hot and slice through it using a rice paddle to separate the grains.
((Decoration))
1. Serve curry and a round piece of saffron rice and a round piece of sliced American cheese. Place hamburger steaks centered with round pieces of sliced American cheese to make the ears. Place raisins for eyes, red bell pepper for nose, and green pepper for mouth.
2. For the hat, make a circular cone shape with rice and wrap with 1/2 nor sheet. Then place a strip of sliced American cheese.

*for best results, don't use a lid while cooking.
*curry and rice is best eaten on the day it's made but if you have any leftover, store it in the fridge and finish it on the next day, but it is not recommended.
*if you have leftover curry roux, wrap in a plastic wrap and store it in the fridge and use within a week.

Halloween Jack-O'-Lantern Ball Sushi - Video Recipe

Very easy and cute Halloween recipe idea even kids can help to make them!

Temari-Zushi (ball sushi) is a ball-shaped sushi made by shaping sushi rice and fish into a ball by hand using a plastic wrap.

Avocado sushi rice is pretty tasty and it goes great with smoked salmon. I hope you like it!

Halloween Jack-O'-Lantern Ball Sushi

Difficulty: Easy
Time: 20min (w/o rice cooking time)
Number of servings: 14

Ingredients:
300g (10.5oz.) cooked Japanese rice (short-grain rice)
A
* 2&1/2 tbsp. rice vinegar
* 1 tbsp. sugar
* 1 tsp. salt
1/2 avocado
14-28 slices smoked salmon
1/2 nori sheet
14 pumpkin seeds
mayonnaise

Directions:
1. Chop avocado into small pieces.
2. Place cooked rice in a bowl. Add A while the rice is hot and slice through rice using rice paddle to separate the grains. Then add the chopped avocado and mix well.
3. Place a sheet of plastic wrap on your hand. Then place 1 or 2 slices of smoked salmon in the center. Measure a bite-size amount of sushi rice and place it on the salmon. Shape them into a ball, twisting the plastic wrap. Unwrap and make the rest.
4. Draw a spider web on a plate with mayonnaise. Place the sushi balls on the plate.
5. Cut out nori sheet for the eyes, nose, and mouth. (Cut freehand to make expressive faces.) Place them on sushi balls.
6. Attach pumpkin seeds to each sushi ball to finish.

Preferably refrigerate before you serve!

Quick Edamame Keema Curry

Difficulty: Very Easy
Time: 15min
Number of servings: 4
Calories per serving: 736Kcal

Ingredients:
1/2 box = 103.5g (4.2oz.) House Java Curry Sauce Mix (Med Hot) *we call it "curry roux". you can choose either med hot or hot.
200g (7oz.) ground pork
1 medium (200g=7oz.) onion
100g (3.5oz.) shelled edamame or deshell 250g (8.8oz.) frozen unshelled edamame
400g (14oz.) diced tomato can
200ml water
1 tsp. House Tokusen Nama Ninniku (grated garlic in tube)
1 tsp. House Tokusen Nama Shoga (grated ginger in tube)
4 servings cooked rice
shelled edamame for topping *if preferred

Directions:
1. Roughly dice the onion.
2. Heat a non-stick pan over medium heat. Add ground pork, onions, garlic and ginger.
3. When the meat starts to change color, add diced tomato can and water.
4. Bring to a boil, and remove the foam. Turn off the heat, break up the curry roux into the pot, and mix well until completely melted. *make sure you stop the heat when you add the curry roux, otherwise it won't blend well.
5. Then put on low heat and simmer for about 5 minutes.
6. Add shelled edamame and let boil for a few seconds.
7. Serve the curry on a hot bed of rice and sprinkle with edamame to finish.

*curry and rice is best eaten on the day it's made but if you have any leftover, store it in the fridge and finish it on the next day, but it is not recommended.
*if you have leftover curry roux, wrap in a plastic wrap and store it in the fridge and use within a week.

Black Gomoku Rice Balls - Video Recipe

This recipe once became an actual onigiri product and sold at convenience stores nationwide in Japan.

The rice is cooked with 5 black-colored ingredients: black pork (local specialty in Kagoshima prefecture), sliced kelp, black rice, black sesame seeds, and dried shiitake mushrooms.

The sliced kelp and dried shiitake mushrooms add amazing tasty dash flavor to the rice.

Black Gomoku Rice Balls

Difficulty: Easy
Time: 1hr (incl. cooking time)
Number of servings: 8 small onigiri

Ingredients:
2 cups uncooked Japanese rice
100g (3.5oz.) thinly sliced black pork (Berkshire pig)
10g (0.35oz.) dried sliced kelp
10g (0.35oz.) black rice
5g (0.18oz.) dried sliced shiitake mushrooms
50ml hot water
2 tsp. black sesame seeds
A
* 1 tbsp. sake
* 1 tbsp. soy sauce
* 2/3 tsp. salt
4 nori sheet cut in half

Directions:
1. Wash and drain the dried sliced kelp (they will become slightly soft after 5 minutes or so). Soak dried shiitake mushrooms in 50ml hot water until they become soft (after 2 minutes or so). Cut thinly sliced black pork into bite-size pieces.
2. Wash rice if needed. Place the rice and water (to the correct water level) in a Japanese rice cooker, then add A, softened shiitake mushrooms with the soaking liquid, black rice, black sesame seeds, softened sliced kelp, and black pork. Then mix well.
3. Close the rice cooker and press the button to start.
4. When it's done, do not open and let it steam for about 10 minutes. (If you are using the rice cooker like mine, it includes the steaming time, so you can toss the rice immediately.)
5. Put steamed rice in a bowl and let it cool until you can handle it. Wet your hands in water so that the rice won't stick. Place the rice on your hand. Form the rice into a triangle by pressing lightly with your palms. Wrap with nori sheet. Wrap with plastic wrap to shape it.

Bite-Size Tomato Cup Sushi - Video Recipe

Juicy tomato and rich tuna melt in your mouth good.


This is my award winning sushi recipe which I won the outstanding performance award at "sushi project" by iCommons Summit'08 in Sapporo.

iCommons Summit put out a call for sushi recipes and designs from around the world, so that they can promote Japan's "sushi culture" to a new level, not just as part of Japanese culture but as a "world culture".
My prize-winning recipe is "Tomato Cup Sushi". I stuffed sushi rice and tuna salad in tomatoes. Those are juicy and easy to eat. The sweet and sour flavor of sushi vinegar matches perfectly to the tuna salad! You gotta try ;)

Regarding the sushi project, I was interviewed by Hana TV. It was broadcast only in Hokkaido, though.

Bite-Size Tomato Cup Sushi


Difficulty: Easy
Time: 20min (w/o rice cooking time)
Number of servings: 8 (or more)

Ingredients:
8 (or more) tomatoes about 4cm (1.5inch) in diameter
300g (10.5oz.) cooked Japanese rice (short-grain rice)
2 tbsp Sushisu (seasoning for sushi rice)
A
* 2 tbsp. (30g=1oz.) drained canned tuna
* 1 tbsp. finely-chopped sweet pickle
* 1 tbsp. finely-chopped onion
* 1 tbsp. drained canned whole corn kernels
* 1&1/2 tbsp. mayonnaise
* salt and pepper
parsley flakes

Directions:
1. Place cooked Japanese rice in a bowl. Add Sushisu while the rice is hot and slice through rice using rice paddle to separate the grains. (Cool the rice before you use.)
2. Slice tops off the tomatoes, and scoop out the pulp and seeds. Discard seeds, chop the pulp, and keep aside.
3. Mix the chopped pulp (2.) and A.
4. Stuff moderate amount of sushi rice into tomatoes, place the tuna mixture (3.) on top, and sprinkle with parsley flakes.

Preferably refrigerate before you serve!

Ingredients to make sushi vinegar from scratch.
* 1&1/2 tbsp. rice vinegar
* 1/2 tbsp. sugar
* 1/2 tsp. salt

Sparerib Curry (Summer BBQ Idea) - Video Recipe

Sparerib Curry

Difficulty: Medium
Time: 40min
Number of servings: 6
Calories per serving: 567Kcal

Ingredients:
((Sparerib Curry))
1/2 box = 119g (4.2oz.) House Vermont Curry Sauce Mix (Med Hot) *we call it "curry roux". you can choose mild or hot as well.
12 (900g=2lbs.) spareribs
1&1/2 medium (300g=10.5oz.) onions
1/2 medium (100g=3.5oz.) carrot
1 (150g=5.3oz.) yellow bell pepper
1 (200g=7oz.) zucchini
1 tbsp. cooking oil
800ml water
((Garlic Rice)) *of course, the curry can be served over plain, unflavored steamed rice.
1 package Curry Partner Garlic Paste
6 servings (1020g=2.3lbs.) cooked rice

Directions:
((Sparerib Curry))
1. Prick the spareribs around the bones with a fork. Thinly slice the onion. Cut the carrot and yellow bell pepper into bite-size pieces. Cut zucchini into 1/2 inch slices.
2. Heat cooking oil in a large stew pot (use a wide pot if available). Add the spareribs and saute on medium heat until both sides are golden brown. Then set aside. *drain the excess oil out
3. Add onions, carrots, and yellow bell peppers and saute over medium heat until softened.
4. Add 800ml water, spareribs and zucchini, then bring to a boil. Remove the foam, turn the heat down to low, and cook for about 15 minutes.
5. Turn off the heat, break up the curry roux into the pot, and mix well until completely melted. *make sure you stop the heat when you add the curry roux, otherwise it won't blend well.
6. Then put it on the heat and simmer for about 10 minutes until it thickens.
((Garlic Rice))
1. Place cooked rice in a bowl. Add Curry Partner Garlic Paste while the rice is still hot and slice through it using a rice paddle to separate the grains.
2. Serve Sparerib Curry on a hot bed of garlic rice, then sprinkle with some parsley flakes if desired.

*for best results, don't use a lid while cooking.

Pork and Pickled Plums Takikomi Gohan - Video Recipe

Very healthy, tasty, savory, and superb nourishing Takikomi Gohan using pork and Umeboshi (pickled plums).

Takikomi Gohan (炊き込みご飯) is a Japanese seasoned rice dish cooked with meats or fish and vegetables. You can use a rice cooker to make this dish, so all you have to do is to place the ingredients in a rice cooker :) Very easy!!!

Pork and Pickled Plums Takikomi Gohan

Difficulty: Easy
Time: 1hr 15min (incl. cooking time)
Number of servings: 4

Ingredients:
100g (3.5oz.) thinly sliced pork
2 cups uncooked Japanese rice (you can mix white and brown rice)
50g (1.7oz.) onion
2 Umeboshi (pickled plums)
garlic chips
A
* 2 tbsp. soy sauce
* 1 tbsp. sake
* 1 tbsp. mirin (sweet sake)
2 tsp. sesame oil
white sesame seeds
chopped scallion (green onion)

Directions:
1. Mince the onion. Cut the pork into bite-size pieces.
2. Heat sesame oil in a frying pan, add the onion and the pork, then saute until cooked and tender. Stop the heat and let it cool until just warm.
3. Wash rice if needed. Add A and water to the appropriate level indicated in the pot. Place 2, Umeboshi (pickled plums), and garlic chips. Cover it, and press the button to start.
4. When it's done, toss the rice lightly with a rice paddle. *Some rice cookers like mine include steaming time, thus you can toss the rice immediately. As for the rest, when it's done, do not open and let it steam for about 15 minutes to get a better result.
5. Serve in a rice bowl. Garnish with white sesame seeds and chopped scallion.
