Directions:

How to Use Onigiri Wrappers

Ingredients:
cooked Japanese rice
salt to taste
fillings of your choice: salted salmon flakes, pickled plums, okaka (bonito flakes)
Nori seaweed sheets

Directions:
1. Season the cooked rice with salt to taste.
2. Place 120g of rice on a plastic wrap, place the filling, then form it into a triangle by pressing it lightly between your palms.
3. Cut Nori seaweed sheet into half.
4. Place it into the wrapper then fold the edges to wrap.
5. Label the Onigiri with stickers.

Boiled Whitebait Rice Bowl (Kamaage Shirasu Don / Donburi) - Video Recipe

This is the way I love to eat Shirasu Don! Of course you can eat it in the way you like ;) There is no rule. hehe

My neighbor gave me delicious Kamaage Shirasu (boiled whitebait). If the fish is frozen, you can defrost it in the fridge overnight. Or 2 hours out from the fridge. Or place it in a Ziploc Bag (make sure water doesn't come in) and place it under running water for 15 minutes.

Boiled Whitebait Rice Bowl

Difficulty: Super Easy
Time: 5min
Number of servings: N/A

Ingredients:
a bowl of cooked rice
boiled whitebait
Daikon Oroshi (grated Daikon radish)
thinly sliced Shiso leaves
soy sauce

Directions:
1. Defrost Kamaage Shirasu (boiled whitebait) as needed.
2. Top a bowl of rice with plenty of Shirasu.
3. Garnish with grated Daikon radish (grate the top part of Daikon because it is sweeter) and a few drops of soy sauce: this is called "Someoroshi" because the radish is dyed with soy sauce. Then place sliced Shiso leaves to finish.

If you like, as most people in Japan do, you can top with a fresh raw egg yolk, chopped scallions, and more ;)

Natto Rice Bowl with Soft-Boiled Egg

Difficulty: Super Easy
Time: 5min
Number of servings: 1

Ingredients:
a bowl of cooked rice
1 package Natto
1 Onsen Tamago (Soft-Boiled Egg)
Kizaminori (finely shredded Nori sheet)
Ikura (salmon roe) or soy sauce to season

Directions:
1. Mix Natto with the seasonings attached. If you mix the seasonings straight away, it won't develop the stickiness. I prefer to mix lightly for a few times. However, if you prefer gooey Natto, you want to mix Natto very well before adding the seasonings.
2. Pour Natto over the rice. Make a hole in the middle and place a soft-boiled egg.
3. Sprinkle with Ikura or soy sauce to season.
4. Sprinkle with Kizaminori to finish.

Heart-Shaped Umaki Maki-Zushi (Eel Rolled Omelette) - Video Recipe

I found canned Hamanako Broiled Eels at a supermarket and it also tasted great! You can maybe get it online since it has a long expiry date!

FYI: Umaki is broiled eel wrapped in Japanese rolled omelette (called Tamagoyaki, Dashimakitamago, or Atsuyakitamago). Egg is juicy and eel makes it very tasty. It tastes great even when it is cold.

Heart-Shaped Umaki Maki-Zushi (Eel Rolled Omelette)

Difficulty: Medium
Time: 30min
Number of servings: 8 pieces

Necessary Equipment:
18x13cm (7x5.1inch) Tamagoyaki Nabe (rectangular omelet pan)

Ingredients:
1 canned Unagi no Kabayaki (broiled eel on skewers is OK)
3 eggs
2 tsp. Yamaki Kappo Shiro Dashi (White Dashi)
cooking oil
300g (10.6oz.) cooked Japanese rice (short-grain rice)
2 tbsp. Sushi vinegar*
2 Nori seaweed sheet

Directions:
1. If necessary, cook the eel as directed on its package. (You don't have to cook the canned one)
2. Mix eggs and Yamaki Kappo Shiro Dashi very well.
3. Heat cooking oil in a Tamagoyaki Nabe (rectangular omelette pan), pour a thin layer of egg mixture in the pan and spread over the surface. Cook until half done, place a strip of eel, roll up the egg, and move it to one end. Pour in another thin layer of egg mixture and let it flow under the rolled egg also. Cook until half done and again roll up the egg. Repeat this until half the mixture is gone.
4. Wrap the rolled egg while warm in plastic wrap to even out the shape. Allow it to cool.
5. Cut the egg diagonally and join the cut sides reversely to make a heart shape. Wrap the egg with 1/2 Nori sheet, then wrap in plastic wrap and wait until the Nori gets soft. *it is to define the outline of the heart-shape.
6. Place cooked Japanese rice in a bowl. Add Sushi vinegar while the rice is hot and slice through rice using a rice paddle to separate the grains. Spread the Sushi rice on another 1/2 Nori sheet using your finger tips, little bit moistened with water.
7. Place an extra Sushi rice for the “v” shape indentation of the heart shape.
8. Place the egg then start rolling.
9. With a moistened knife (bread knife cuts well) cut the roll into 4 pieces (re-wet as needed. don't push but pull to cut).

Eat with soy sauce if you like.

* Ingredients to make Sushi vinegar from scratch.
1.5 tbsp. rice vinegar
1/2 tbsp. sugar
1/2 tsp. salt

How to Make Mock Matsutake Gohan (Pine Mushroom Rice) - Video Recipe

Matsutake Gohan (pine mushroom rice) is a very simple rice dish to enjoy the flavor of Matsutake mushrooms!

I saw on TV that you can create the Matsutake flavor by cooking Eryngii (royal trumpet) mushrooms and unshelled Edamame together since Eryngii mushrooms have the same texture as Matsutake and Edamame pods have the same flavor component as Matsutake. Very scientific logic. haha

It went viral in Japan, so I tried it out. Yes, it becomes a very dainty Matsutake rice dish. Try out and see how you like it ;)

Mock Matsutake Gohan (Pine Mushroom Rice)

Difficulty: Super Easy
Time: 1hr
Number of servings: 4

Ingredients:
3 cups uncooked Japanese rice (short-grain rice)
100g (3.5oz.) Eryngii (royal trumpet) mushrooms
100g (3.5oz.) unshelled Edamame *fresh ones
Dashi Broth
* 600ml water
* 10cm/4inch-square Konbu (kelp)
Seasonings
* 1 tbsp. Sake
* 1.5 tbsp. soy sauce
* a pinch of salt

Directions:
1. Wash rice and leave for about 30 minutes. If you are using pre-washed rice (musenmai) you don't have to wash it.
2. Clean Konbu with moistened towel. Soak in 600ml water for 30 minutes.
3. Slice Eryngii mushrooms. Rub the Edamame bean pods with 1 tsp. of salt to remove the surface fuzz and wash.
4. Place the rice in a pot, add Kombu Dashi (2) and the seasonings, then mix well. Place the Eryngii mushrooms and Edamame on top of the rice.
5. Place the pot into the rice cooker. Cover and press the button to start.
6. When it's done, remove Edamame (you can eat them as an appetizer), toss the rice lightly using a rice paddle, then serve.

Garnish with chopped Mitsuba (Japanese wild parsley) if you like.

How to Cook Steamed White Rice (Gohan) in AKOMEYA TOKYO Original Arita Ware Kuroyu (black glaze) Clay Pot

Difficulty: Super Easy
Time: 30min soaking time + 20 min
Number of servings: 4 (2 cups of rice)

Ingredients:
2 rice cups (360ml) = 300g (10.6oz.) Japanese-style rice
400ml water

Directions:
1. Measure the rice with a measuring cup for rice and put it in a bowl.
2. Wash the rice with cold water. As for 2 cups, wash 4 or 5 times. Water does not have to be clear but somewhat clean. Then drain.
3. Place the rice in the pot and add water. Let the rice soak in the water at least 30 minutes.
4. Place the inner lid and upper lid, make sure the holes of both lids won't overlap and arranged to cross each other at right angle.
5. Set the pot on the gas stove and heat on medium high for 10 minutes.
6. Turn off the heat and let it steam for about 10-15 minutes.
7. Toss the rice lightly with a rice paddle and serve.

AKOMEYA recommended cooking time:
1 cup of rice = 8 minutes
2 cups of rice = 10 minutes
3 cups of rice = 12 minutes

NOTE: The amount of water should be adjusted depending on how firm you like your rice and the condition of the rice itself. In particular, the moisture content of new rice is higher, so less water is needed.

Usage Note:
* please wash and dry well after each use
* use only on gas stove
* do NOT use as a deep fryer
* do NOT heat without water in it

Ideas:
white rice + Yukari (red Shiso leaves rice seasoning) + Shiso leaves
white rice + salmon flakes + Nori seaweed sheet
white rice + Nameshi (pickled Hiroshima-na rice seasoning) + Nori seaweed sheet

Directions:
1. Mix your favorite rice seasoning to the rice.
2. If you like, place Nori seaweed sheet on plastic wrap.
3. Place the rice on the plastic wrap, then wrap and make a thin rice roll.

Tsukimi (月見) is moon-viewing, also known as Jugoya (十五夜), refers to Japanese festivals honoring the mid-autumn full-moon. We decorate with offerings of Tsukimi-Dango (月見団子 moon-viewing dumplings), made to look like the moon.

This rice roll shaker is a very popular item sold at DAISO (100yen shop in Japan). It can get sold out quite soon, so if you happened to find it, just get it!



What You Need:
cooked white rice
filling
1/2 or 1/4 Nori seaweed sheet

How to Use:
1. Fill the rice up to half the height of the guideline.
2. Place the filling in the middle.
3. Fill the rice up to the height of the guideline and close the lid.
4. Shake up and down for 20-30 times.
5. Insert a Nori sheet.
6. Shake up and down to wrap the rice with Nori sheet.
7. Cut to serve if you like.

EASY Chicken Pilaf using a rice cooker- Video Recipe

EASY Chicken Pilaf

Difficulty: Super Easy
Time: 1hr
Number of servings: 4

Ingredients:
2 cups uncooked pre-washed Japanese rice
150g (5.3oz.) chicken thigh cut into chunks seasoned with salt and pepper
100g (3.5oz.) chopped onion
50g (1.8oz.) canned sliced mushrooms
150g (5.3oz.) mixed vegetables
1 tbsp. Sake
1/2 tsp. salt
1 tsp. consomme powder (or bouillon powder)
1 tbsp. butter
cracked black pepper

Directions:
1. If you are using pre-washed rice (Musenmai) you don't have to wash it. If you washed rice, allow the rice to drain in a strainer for 30 minutes.
2. Heat 1/2 tbsp. of butter in a fringe pan. Cook pre-washed rice until coated with butter. If you are using washed rice, cook for about 5 minutes to dry out water from the rice.
3. Place the rice in a pot, add water to the appropriate level indicated in the pot, then add Sake, salt, and consomme powder, and mix well.
4. Heat another 1/2 tbsp. of butter in a frying pan and cook chopped onion until tender. Add chicken and cook until no longer pink. Add mushrooms and mixed vegetables, then season with cracked black pepper.
5. Place 4. on top of the rice. *do not mix or the rice won't cook evenly.
6. Place the pot into the rice cooker. Cover and press the button to start.
7. When it's done, toss the rice lightly using a rice paddle. Then serve in a dish.

How to Make Onigirazu (Rice Sandwiches) - Video Recipe

Onigirazu is a new type of Onigiri (rice ball) becoming very popular in Japan recently in 2015.

Unlike Onigiri (rice ball), Onigirazu can be prepared quickly without making into a triangular or a ball shape but just by wrapping rice and the fillings in Nori seaweed sheet.

I think it is a great idea that you can wrap more fillings than the regular ball-shaped Onigiri. Also, it looks very pretty like sandwiches!!!

Difficulty: Very Easy
Time: depends on what you wrap

Ideas:
curry flavored rice + bacon and eggs
Yukari (red Shiso leaves rice seasoning) rice + Shiso leaves + sliced cheese
white rice + shredded cabbage + Tonkatsu (pork cutlet) + Tonkatsu sauce

Directions:
1. Place Nori seaweed sheet on plastic wrap.
2. Place rice in the center, then flatten it out.
3. Place the fillings on top.
4. Cover the fillings with rice, then flatten it out.
5. Fold the corners towards the center of the rice, then wrap tightly with plastic wrap.
6. When the Nori gets soft, cut into half.

Ingredients:
2 cups uncooked pre-washed Japanese rice
200g (7oz.) Shimeji mushrooms
50g (1.8oz.) carrot
80g (2.8oz.) canned tuna in water
65ml Mizkan Ajipon (Ponzu sauce)

Ponzu Sauce (citrus-flavored soy sauce: you can mix 1:1 soy sauce and lemon juice to make it)

Directions:
1. Wash rice if needed. If you are using pre-washed rice (Musenmai) you don't have to wash it.
2. Thinly slice the carrot. Remove tough base of Shimeji mushrooms and break into pieces.
3. Place rice in a pot, add the liquid from the canned tuna, add Ajipon (Ponzu sauce), then add water to the appropriate level indicated in the pot, and mix well.
4. Add sliced carrot, Shimeji mushrooms, and Tuna on top.
5. Place the pot into the rice cooker. Cover and press the button to start.
6. When it's done, toss the rice lightly using a rice paddle. Then serve in a dish.

Rice Porridge (Congee)

Difficulty: Super Easy
Time: 20min
Number of servings: 1

Ingredients:
3 tbsp. cooked rice
150ml water

Directions:
1. Put cooked rice and water in a pot.
2. Bring to a boil then turn down to low and cook for 10 minutes. *if you want the rice water, skim the liquid.
3. Stop the heat, cover, then steam for 10 minutes. *you can grate the congee for baby food.

You can eat with Umeboshi (pickled plum), Shio-Kombu (salted kelp), salmon flakes, or any kind of rice seasoning of your choice!

Sakura Deco Rice Rolls (Sushi Roll Idea)

Difficulty: Easy
Time: 30min
Number of servings: 2 rolls (8 pieces)

Ingredients:
250g (8.8oz.) cooked Japanese rice (short-grain rice)
1 Umeboshi (pickled plum)
Chee-Kama (cheese fish sausage)
Nozawana (leaf vegetable pickles)
Nori seaweed sheet

Directions:
1. Mix chopped Umeboshi in the rice and divide it into 10 portions.
2. Cut Nori sheet into half, then cut into 3 pieces. Make 10 of them.
3. Place Umeboshi rice on the Nori sheet, then wrap to make thin rice rolls.
4. Place a bamboo sushi-roll mat on your hand, place 3 thin rice rolls, place Chee-Kama (cheese fish sausage), place 2 thin rice rolls, then shape them into a flower shape.
5. Cut Nozawana into the length of a Nori sheet, place them between the thin rice rolls. Cut Nori sheet into half, then securely wrap the flower roll.
6. With a moistened knife, cut the roll into 4 pieces (re-wet as needed. don't push but pull to cut).
