Difficulty: Easy
Time: 30min
Number of servings: 8 medium (2.4inches/6cm) baking cups

Ingredients:
4 (400g/14oz.) peeled ripe bananas
300g (10.5oz.) hot cake mix

Directions:
1. In a large bowl, mash the bananas with a fork until mostly smooth. Some lumps are okay. 
2. Add hot cake mix and mix well. If the batter is thick, you can add a bit of water or milk.
3. Spoon the batter into the baking cups.
4. Bake in the oven at 180C (350F) for about 20 minutes.

Easy Halloween Sushi Layer Cake (Recipe) | Japanese Cooking Video

Orange and black Halloween colors are pretty gorgeous 🧡🖤



Salmon and salmon roe goes perfect together. Sweet shredded egg crepe and crunchy toasted black sesame seeds makes it very tasty yet addictive. You must try out this simple Sushi cake 😉

Easy Halloween Sushi Layer Cake (Recipe)


Difficulty: Easy
Time: 30min
Number of servings: 4 people = 11cm (4.3inch) round cake pan

Ingredients:
700g (1.5lb) cooked Japanese short grain rice
Sushi vinegar as directed on its package (mine was 6 tbsp.) 
((Kinshi Tamago: shredded egg crepe))
1 egg
1 tsp. sugar
a pinch of salt
((Toppings I used))
smoked salmon
toasted black sesame seeds
Nori art or simple shredded Nori sheet is OK
boiled eggs
sliced cheese
grape tomatoes
boiled eggs
Ikura (salmon roe)

Directions:
((Sushi Rice))
Add the Sushi vinegar while the rice is still hot and slice through the rice using a rice paddle to separate the grains. Let the rice cool. Use a fan to cool the rice if available to create an added shine on your Sushi rice but it is optional.
((Kinshi Tamago: shredded egg crepe))
Season an egg with sugar and salt. Strain with a strainer. Heat cooking oil in a frying pan and make a thin omelet. Leave to cool on a plate, then cut into thin strips. 
((Sushi Cake))
Wet the cake pan (or line with plastic wrap). Place the Sushi rice and press down flat with a rice paddle or a spoon. Sprinkle with toasted black sesame seeds (make sure you cover the edges). Place the Sushi rice again. Place smoked salmon, Sushi rice, black sesame seeds, and Sushi rice one after another and flatten as well. Turn the cake pan upside down onto a plate to remove the rice.
((Toppings))
Spread Kinshi Tamago (shredded egg crepe) over the rice. Be creative and decorate the Sushi cake with any black and orange food ingredients. Simple toppings are absolutely Okay.

Keema curry using ground soy meat and minced vegetables. Tasty yet delicious way to intake a lot of vegetables 😋

Vegan Soy Meat Keema Curry and Rice (EASY Halloween Recipe Idea)

Vegan Soy Meat Keema Curry and Rice Recipe


Difficulty: Very Easy
Time: 30min
Number of servings: 4

Ingredients:
100g (3.5oz.) dried soy meat mince
200g (7oz.) minced onion
150g (5.2oz.) minced Shimeji mushrooms
100g (3.5oz.) minced carrot
300g (10.5oz.) diced tomatoes
* 1 tbsp. grated ginger
* 1 clove grated garlic
* 2 tbsp. curry powder
* 2 tbsp. Awase Miso
* 1 tbsp. soy sauce
* 2 tbsp. tomato ketchup
* 2 tbsp. water
1 tbsp. olive oil
4 servings of cooked rice

Directions:
1. In a boiling water, cook dried soy meat mince for 3 minutes. Or as directed on its package. Wash well (change water for a few times) to remove the bad smell, then drain well.
2. Mince the vegetables. Mix the seasonings in a bowl.
3. Heat olive oil in a deep frying pan or a pot. Saute the minced onion until soft.
4. Add minced Shimeji mushrooms, minced carrot, diced tomatoes, and soy meat mince, and cook until heated.
5. Add the seasonings and simmer for about 10 minutes.
6. Serve the curry on a hot bed of rice.

You can rest in the pan for over an hour or keep in the fridge overnight, so that the vegetables can absorb the flavor. You can keep in the fridge for 2-3 days.

I asked my daughter to draw ghost faces but she ended up drawing human-looking faces with hair and braids. And she is right that she says humans and ghosts exist together on Halloween 🎃

Chocolate Fountain Fondue Challenge (Easy Chocolate Syrup Recipe) | | Japanese Cooking Video

You can easily enjoy chocolate fountain at home. Perfect for any event or party 🥳



It was my kids' request to try this at home. At first, I was like "Do you know how?" but they knew it better than me😅👍 It gave kids hours of dessert dipping fun 💖




Heated bowl keeps the chocolate syrup sauce melted and flowing so you get a consistent dip every time for a long while. Three canopies are perfectly spaced for easy dipping. Auger-style fountain provides the continuous flow of chocolate. Easy to Assemble and Disassemble. Easy to clean ;)

Chocolate Fountain Fondue Machine (Set Up Chocolate Syrup Sauce Recipe)


Difficulty: Easy
Time: 20min
Servings: 3~4people

What you need:
350g (12oz.) chocolate bars
200ml milk
strawberries, bananas, pineapples, marshmallows, biscuits, breads, etc...
1 tbsp, liquor if you like

How to Prepare the Chocolate Syrup Sauce:
1. Break chocolate bars into small pieces. Melt the chocolates over hot water. 
2. Warm the milk using microwave or boil up to 40C (105F).
3. Add milk little by little into the melted chocolate and mix with a spatula until smooth. Add liquor if you like.

How to Use the Machine:
1. Before using the machine, turn the HEAT knob and HEAT for 15 minutes.
2. Pour in the chocolate syrup sauce.
3. Turn the HEAT MORTOR knob.

How to Make Pumpkin-Shaped Melonpan (Halloween / Thanksgiving Recipe) | Japanese Cooking Video Recipe

If you don't want to spend too much time on baking, this recipe idea is perfect! My daughter 4years10months liked it and ate most of them. Kids like it 🎃👍




Melonpan メロンパン (melon pan, melon bun or melon bread) is a Japanese sweet bun, also popular in Taiwan, China and Latin America. It is a roll (small bread) covered with a thin layer of crisp cookie dough.

How to Make Pumpkin-Shaped Melonpan


Difficulty: Very Easy
Time: 60min
Number of servings: about 18 mini (6cm/2.5inch) Melonpan

Ingredients:
18 6cm/2.5inch rolls (small bread)
4 tbsp. (50g) butter (softened)
3 tbsp. granulated sugar
1 egg
Wilton Icing Gel Color red and yellow
vanilla extract
1 cup (120g) all-purpose flour
1/3 tsp. baking powder
granulated sugar for coating
18 pistachios, walnuts, or pumpkin seeds

Directions:
1. If you can't find a round roll (bread), cut out a small roll (bread) using a round cookie cutter.
2. Beat butter and sugar until creamy, add egg little by little and mix well. Add Wilton Icing Gel Color red and yellow to make orange cookie dough. Then add a few drops of vanilla extract.
3. Sift in flour and baking powder and mix well.
4. Spoon the cookie dough onto the bread, wrap with plastic wrap to coat the bread with the cookie topping.
5. Roll in the granulated sugar and place it on a parchment paper. With a scraper or a knife, score the cookie dough in random vertical lines. Insert pistachios on top of each buns.
6. Preheat oven to 350F (180C). Meanwhile place the buns in the fridge to set. (Up to 30 minutes is ok)
7. Bake at 350F (180C) for 10 minutes. (Depending on the heat of the oven, cooking time may differ, so please watch out.)

Ingredients:
sausages
cheese slices
Nori seaweed sheet

Directions:
1. Cut cheese slices into thin strips, then bring the cold cheese to room temperature. In this way cheese won't break while wrapping around the sausage.
2. Cook the sausages and let them cool until slightly warm. Wrap the cheese strips around the sausages.
3. Cut out small round pieces of cheese then put small round pieces of Nori seaweed sheet in the center to make eyes (using Nori punch is easy if you have). Place the eyes on mummy sausages to finish.

Omurice is a very popular home cooked meal in Japan. It is a tomato ketchup fried rice wrapped with a thin sheet of crepe-like fried egg. HOWEVER, many people dislike using a lot of ketchup, so I used Pomodoro sauce instead. YES! it works 😉

Zombie Omurice (Japanese Omelet Rice Using Pomodoro Sauce) Halloween Recipe


Difficulty: Easy
Time: 20min
Number of servings: 2

Ingredients:
300g (10.5oz.) cooked Japanese rice (short-grain rice)
75g (2.5oz.) smoked chicken or ham cut into small pieces
6 tbsp. pomodoro sauce
4 eggs
cooking oil
tomato ketchup
salt and pepper
10 sausages for Zombie fingers
cooked broccoli *if you like

Directions:
1. Heat pomodoro sauce in a frying pan, add rice and meat, mix well, then season with salt and pepper.
2. Peel the tip of the sausages to make nails, then cook. Beat 2 eggs (1 serving) in a bowl.
3. In another frying pan, heat cooking oil, spread the egg mixture and make a round sheet of egg. Before the egg is fully cooked, place the seasoned rice in the middle. Fold up both sides of the egg, then shape it using the edge of the pan. Carefully flip it over onto a plate. *You can use a paper towel to help shape it.
4. Make holes in Omurice and place the sausage fingers. Decorate with ketchup and garnish with cooked broccoli if you like.

Karaage Fingers (Japanese Fried Chicken) EASY Perfect for Coming Holiday Season 🍁🎄 | Japanese Cooking Video Recipe

I made Karaage video before but this time with a bit thicker batter using chicken breast with no skin 😋

Karaage Fingers (Japanese Fried Chicken)


Difficulty: Very Easy
Time: 30min
Number of servings: 2~3 people

Ingredients:
350g (12oz) chicken breast (no skin)
seasonings
* 1 tbsp. soy sauce
* 1 tsp. grated garlic
* 1 tsp. grated ginger
* 1 tbsp. sake
* 1 tsp. sesame oil
* salt and pepper
batter
* 4 tbsp. flour
* 4 tbsp. katakuriko (potato starch or corn starch)
1 egg
vegetable oil for deep frying
ketchup, mustard, mayonnaise, lemon juice if preferred

Directions:
1. Remove skin of the chicken. Make incisions to flatten chicken. Then slice.
2. Mix the seasonings, place the chicken, and marinate for 15 minutes or more.
3. Mix the batter in one bowl, beat 1 egg in another bowl.
4. Dust the chicken with batter, dip in beaten egg, then dust again with batter.
5. Pour about 2cm/1in oil into a frying pan. Put on medium (the temperature is at about 180C/350F), cover, and cook for 3 minutes. Open the lid, flip them over, cover again and cook for another 3 minutes. Then open the lid, put on high and cook for 1 minute until crisp golden.
6. Drain well, place on a dish, serve with some ketchup, mustard, and lemon juice if preferred.
