Big Egg Sandwiches (Recipe) | Japanese Cooking Video Recipe

Very simple yet delicious idea. Big sandwich with a thick filling is a very popular sandwich style in Japan now. Especially the egg sandwiches with huge egg chunks are typical, MUST TRY 👍



Mayo makes a difference. Please use Japanese Kewpie Mayonnaise or your favorite mayonnaise 😉

Difficulty: Easy

Number of servings: 2 servings

Ingredients:
4 eggs
2 tbsp. mayonnaise
a pinch of sugar
salt and pepper
2 slices of bread

Directions:
1. Boil eggs for about 20 minutes from water to make boiled eggs. 
2. You need, 3 half-cut boiled eggs and 4 quarter-cut boiled eggs.
3. Chop (or mash with a fork) the rest, then season with mayonnaise, sugar, salt and pepper.
4. Put the egg salad and cut boiled eggs between 2 slices of bread. Wrap in parchment paper and cut in half to serve.

Chicken Mince Simmered Ebi-Imo (Shrimp-Shaped Taro Potatoes) | Japanese Cooking Video Recipe

No-fuss family dish kids and adults will love 😋


You can arrange this dish with regular taro potatoes, or regular potatoes or a radish kind. Perfect for everyday meal and Bento box!



Because its shape and pattern are like a shrimp, we call this taro potato Ebi-Imo (shrimp potato). It is in season from November through January. My neighbor gave me some beautiful Ebi-Imo, so I decided to make this dish for my family. I hope this idea helps 👍

Chicken Mince Simmered Ebi-Imo (Shrimp-Shaped Taro Potatoes) Recipe

Ingredients
600g (1.3lb.) Ebi-Imo (shrimp potato)
300g (0.7lb.) minced chicken
3 tbsp. green peas (cooked/frozen/canned)
salt
400ml Dashi broth
A
* 4 tbsp. soy sauce
* 2 tbsp. Sake
* 2 tbsp. sugar
* 1 tbsp. ginger juice
1 tbsp. cooking oil
B
* 1 tbsp. corn/potato starch
* 1 tbsp. water

Directions:
1. Peel and cut Ebi-Imo in bite-size chunks. Parboil in salted water to remove bitter taste then rinse to remove slimy texture. *When you use regular potato, this procedure is not necessary but it improves flavor.
2. Heat cooking oil in a pot, and cook minced chicken until no longer pink.
3. Add Ebi-Imo and Dashi stock, and bring to a boil. When it comes to a boil, remove the foam.
4. Add the seasonings (A), and cook until the potatoes are soft for about 10~15 minutes.
5. Stop the heat, add starch diluted with water, then heat again until thick.
6. Lastly, add green peas, and cook until hot.

Japanese Pickled Daikon Radish (Tsukemono) | Japanese Cooking Video Recipe

Japanese radish (non-spicy) recipe is the perfect compliment to any dish because it's salty-sweet, sour, and crunchy.



Use fresh Daikon when preparing pickles. I used purple Daikon which my daughter grew at kindergarten. You can use regular white Daikon radish, too.

Japanese Pickled Daikon Radish (Tsukemono)


Difficulty: Easy

Ingredients:
250g (9oz.) Daikon radish
2 tbsp. vinegar
1 tbsp. sugar
salt
1.5inch (5cm) Kombu kelp

Directions:
1. Wash and cut Daikon (with skin is ok) into 1/2 or 1/4 slices. Rub with 1/2 tsp. salt and leave for 20 min. Rinse and drain well.
2. In a sauce pan or microwave, heat vinegar, sugar and a pinch of salt until it comes to a boil.
3. Wipe and clean dirts from Kombu kelp.
4. Put all the ingredients in a Ziploc bag and keep in the fridge overnight or more.

Daikon Radish Leaves Furikake (Rice Seasoning Recipe) | Japanese Cooking Video Recipe

Furikake is rice seasoning comes in many different flavors and textures. Soft or crunchy is pretty common. In this video, I want to share with you amazingly delicious soft Furikake using Daikon radish leaves. You can use any similar kind of leaves of course.



Adding Katsuobushi (bonito flakes) or canned tuna is OK. Very tasty yet delicious. Perfect rice topping. My kids (6 years & 4 years) eat very well.

You can keep this dish for 5 days in the fridge. Nutritious lifesaver for daily Bento lunch box 👍

Daikon Radish Leaves Furikake (Rice Seasoning Recipe)

Ingredients:
120g~150g (5oz.) Daikon radish leaves
1 tbsp. sesame oil
1 tbsp. soy sauce
1 tsp. sugar
1 tbsp. white sesame seeds
1 package (2.5g) bonito flakes OR 70g (2.5oz) small canned tuna

Directions:
1. Wash Daikon radish leaves very well then Chop (parboil or microwave to reduce the amount to fit in the pan).
2. Chop into small pieces. Using kitchen shears is easier. 
3. Heat half the amount of sesame oil in the pan then cook Daikon leaves until soft.
4. Add Katsuobushi or tuna, then quickly cook until combined.
5. Season with soy sauce and sugar. Then cook until the liquid is gone.
6. Add sesame seeds and remaining sesame oil. Mix and cook quickly until fragrant then stop the heat.

Daikon Radish Steak | Japanese Cooking Video Recipe

Juicy tasty yet delicious. Very easy to make. Perfect for vegan/vegetarian people as well. This recipe works with turnip, too. Quick and easy way to use up radishes 😋



Smoky flavor of pan fried Daikon is very appetizing. Better pan fried since soy sauce is easy to burn. Microwave or parboil Daikon first to cook faster 😉

Daikon Radish Steak (Recipe)

Ingredients
500g (1.1lb) Daikon radish
A
* 1 tbsp. Sake (or white wine is ok)
* 1 tbsp. Mirin (sweet Sake)
* 1 tbsp. soy sauce
chopped green onion
cooking oil

Directions:
1. Cut Daikon radish into 1.5cm (0.5inch) thick round slices. Make cross incisions on both sides so that they soak flavor well. Microwave at 500w for 5 minutes. You can parboil Daikon with Kome no Togijiru (or water with a tablespoon of rice) for 15 minutes (it makes Daikon clear colored and less bitter). Drain well and remove excess water with paper towel.
2. Heat cooking oil in a frying pan. Cook both sides of Daikon on medium until slightly browned.
3. Dress with A until shiny fragrant (it turns bitter if you burn too much but it is tasty in this way, it is up to your preference).
4. Place on a dish, and garnish with green onions to finish.

* Instead of Teriyaki sauce, you can simply season with salt and pepper! It is delicious, too.

Daikon Radish Curry and Rice (Japanese Kare Raisu) | Japanese Cooking Video Recipe

My daughter (6 years) has been to Daikon digging at her Kindergarten and brought back some Daikon. She asked me to make Daikon Curry ☺️ It was juicy, tasty, yet delicious. Must TRY 😉



At first, when she requested for this idea, I thought it can turn out too watery, but NOT. I would make it again!!!

Daikon Radish Curry and Rice (Japanese Kare Raisu Recipe)

Ingredients
500g (1.1lb) Daikon radish
200g (7oz) minced chicken or pork is good
1/2 box Japanese curry and rice roux https://amzn.to/3oXYXRa
Dashi soup stock or water as directed on the package
1 tbsp. Miso *if you have
150g (5.3oz) minced onion
1 tbsp. cooking oil
4 servings rice

Directions:
1. Dice Daikon radish.
2. Heat cooking oil in a frying pan, sauté the minced onion and diced Daikon for 5 min.
3. Add minced meat and cook until no longer pink.
4. Add Dashi soup stock or water and cook until Daikon radish is soft.
5. Stop the heat (to mix well) and add Miso (if you have) and curry roux. Mix well and cook on low until thick.
6. Serve the curry over the rice.

Tomato Gyoza Nabe (Hot Pot with Dumplings) | Japanese Cooking Video Recipe

Consommé soup base easy-to-eat tomato hot pot with chewy Gyoza dumplings 😋 Nice presentation, perfect for parties. Kids can eat 👍



You can easily make this dish by cooking frozen food stocks. I used frozen Gyoza, broccoli, and Shimeji mushrooms. You can of course use your favorite vegetables 😉

Ingredients:
300g (10.5oz.) onion
200g (7.0oz.) frozen broccoli
200g (7.0oz.) Shimeji mushrooms
400g (14oz.) canned diced tomatoes
600ml water
2 tbsp. olive oil
salt and pepper
grated parmesan cheese if you like

Directions:
1. Slice onion into wedges. 
2. Heat cooking oil in a pot. Add onion wedges and saute until tender. 
3. Add canned diced tomatoes, water, and consommé cubes. Simmer until hot.
4. Add Shimeji mushrooms, Gyoza, and broccoli. Let it simmer for about 20 minutes until cooked through.
5. Season with salt and pepper. Serve in a dish and dust with grated parmesan cheese if you like.

Hokkaido Pork Ketchup | Japanese Cooking Video Recipe

Pork Ketchup is a local gourmet of Hokkaido Sunagawa-city. Simple yet delicious. Easy to eat flavor which goes perfect with white rice and also a perfect dish for Bento lunch box 😋



Tomato Ketchup is going to be the main ingredient, so I wish you can try this dish using Kagome Tomato Ketchup to get this flavor right 😉 But of course your favorite ketchup is ok❣️

Ingredients
450g (1lb) shaved pork meat
250g (1/2lb) onion
1/2 tbsp. cooking oil
A
* 2 tbsp. Sake or white wine
* 1 tbsp. soy sauce
* 1 tsp. grated garlic if you like
salt and pepper
1 tbsp. Hokkaido butter if you like

Directions:
1. Slice onion into wedges. Mix A very well.
2. Heat cooking oil in a frying pan. Add onion wedges and saute until coated with oil. 
3. Add shaved pork meat and cook through.
4. Add A seasonings then cook well to remove the sour flavor.
5. Season with salt and pepper. Finish with butter if you like.

The BEST Shogayaki (Ginger Pork) Recipe | Japanese Cooking Video Recipe

Shogayaki is a very typical Japanese pan fried pork dish with soy sauce and ginger flavor. Pork slices are seasoned thoroughly, very fragrant yet tasty. The key is to remove from the heat just before they dry out. It goes perfect with white rice. Perfect side dish for Bento lunch box.



Serving with shredded cabbage is the best. And with cucumber slices and/or tomato slices.

Ingredients
200g (7oz.) pork loin slices
A
* 1/2 tbsp. soy sauce
* 1/2 tbsp. Sake
* 1/2 tbsp. Mirin (sweet Sake)
* 1/4 tsp. ginger juice
1/2 tbsp. grated ginger
B
* 1/2 tbsp. soy sauce
* 1/2 tbsp. Sake
* 1 tsp. sugar
1/2 tbsp. cooking oil
shredded cabbage, cucumber/tomato slices

Directions:
1. Season the pork slices with A for about 10 minutes.
2. Heat cooking oil in a frying pan. Drain well and add the pork slices. Cook on medium until nice and brown on one side. Then flip them over.
3. Mix B ver well then add. Add grated ginger and quickly cook on high. Remove from the heat just before the pork slices dry out.
4. Serve with shredded cabbage and some vegetables of your choice if you like.

Vegan Yaki Udon (Stir-Fried Udon Noodles with Vegetables) Recipe | Japanese Cooking Video

My family is not vegan but this Yaki Udon turned out satisfying. Please Try 😉




Yaki Udon is a very basic Japanese stir-fried Udon noodle dish made with lots of vegetables and meat/seafood. We usually make it using the leftover vegetables and thinly sliced pork but I found it without pork is absolutely delicious!

Kombu (kelp) Dashi is a vegan option for Dashi. You can use any Dashi product but so far my favorite to make this dish is this one. RIKEN Kombu Dashi Powder (リケン 素材力だし こんぶだし)

Vegan Yaki Udon (Stir-Fried Udon Noodles with Vegetables) Recipe


Difficulty: Very Easy
Time: 15min
Number of servings: 2

Ingredients
2 packages fresh Udon noodles
400g (about 1lb) vegetables of your choice *I recommend adding some onion slices
5g (1&2/3tsp.) Dashi powder *I recommend RIKEN Kombu Dashi Powder
2 tbsp. soy sauce
1 tbsp. cooking oil
pepper *if you like

Vegetables of your choice ideas:
cabbage, bean sprouts, carrot, green pepper, onion, chive, long onion, Shimeji mushrooms, Shiitake mushrooms, etc... Sometimes I use only bean sprouts and onion slices and it turns out amazingly delicious if you don't care the color of the dish. hehe

Directions:
1. Cut vegetables into bite-size pieces.
2. Wash Udon under running water to separate, then drain well. You can also use boiled frozen Udon.
3. Heat cooking oil in a frying pan and cook the vegetables until tender.
4. Add Udon, season with Dashi powder and soy sauce. You can add pepper if you like.
5. Serve in a dish.

Number of servings: about 5 thick foil cupcake liners (about 3-inch-wide)

Ingredients:
100g (about 2/3 UScup) rice flour
2 tbsp. granulated sugar
1 tsp. baking powder
100ml (about 1/2 UScup) soy milk
2 tbsp. cooking oil
a few drops of vanilla extract

Directions:
1. Put rice flour, granulated sugar and baking powder in a bowl, and mix with a whisk.
2. Add soy milk, cooking oil and vanilla extract, and mix well.
3. Spoon the mixture into the thick foil cupcake liners up to 80% full. Drop them lightly on the counter to raise the air bubbles out of the batter.
4. Place them in a frying pan. Add hot water up to 1/3 of the height. Put on high heat until water boils. Turn the heat down to medium, cover with a lid wrapped in a wet cloth to absorb water and prevent the water from dripping onto the cakes, and cook for 10 minutes.
5. Remove the lid carefully. Place the cakes on a wire rack to cool.

*Keep the water boiling while steaming to make fluffy cakes.
*Depending on the shape of the cups you use, your cake may crack, but it is OK!

Nagashi Somen (At-Home Fun Flowing Noodles Party Rainbow LED Machine) | Japanese Cooking Video Recipe

Somen is perfect refreshing food for hot and humid summer season 🎐




Sōmen (素麺) is very thin Japanese noodles made of wheat flour. The noodles are usually served cold in summer with a dashi flavored tasty dipping sauce called Mentsuyu (めんつゆ).

My daughter requested me to make Nagashi Somen (Flowing Somen). Two years ago (when she was 3) she had a chance to do it at Kindergarten. Noodles flowing in a bamboo pipe, you need to catch the noodles with chopsticks then dip in a cup of noodle sauce to eat. Sadly not because of COVID-19, this event is gradually removed from schools. Anyway, we can still enjoy it at home 😋 Kids enjoyed it and ate well 👍💕 BTW, I asked my daughter if she needs a machine like a long water slide, then my daughter chose this one and it was pretty fun!!! Good choice 💡

In a pot, bring Dashi broth, Mirin, and soy sauce to a boil. You can also microwave until it comes to a boil. Cool in the fridge until ready to serve.
((Somen Noodles))
Boil water in a large pot. Add dried Somen noodles in boiling water and gently stir noodles with chopsticks. Cook Somen noodles according to your package (mine was 2 min). Drain the noodles in a strainer and rinse the noodles with hands under running water.

NOTE: You can put about 100g (usually 2 bundles) of Somen noodles in the machine or the noodles won't flow.

I love using Kayanoya Dashi. Vegan/Vegetarian people can use Kombu or Vegetable Dashi broth for the dipping sauce 👍
