Vegan Maguro Zuke Don (Tekka Don Rice Bowl) | Japanese Cooking Video Recipe

Tomato looks just like Maguro (Tuna) and Avocado with soy sauce tastes just like Maguro (Tuna) 😋



(Maguro means Tuna, Zuke means to marinate, and Don is short for Donburi which means rice bowl. Marinated fresh Sashimi-grade tuna served on a rice bowl.)


You can either serve on top of regular white rice or Sushi rice. It is up to your preference 😋

Vegan Maguro Zuke Don (Tekka Don Rice Bowl)


Difficulty: Very Easy
Time: 15min
Number of servings: 2

Ingredients:
300g (10.6oz.) tomato
2 tsp. soy sauce
2 tsp. vinegar
1 tsp. sesame oil
1/2 Avocado
cooked white rice or Sushi rice
Kizaminori (shredded Nori sheet)
toasted white sesame seeds
green onions and/or Shiso leaf
Wasabi if you like

Directions:
1. Put tomatoes in boiling water and poke with a toothpick to peel the skin. Place them in cold water then peel.
2. Mix soy sauce, vinegar, and sesame oil in a cooking tray.
3. Cut tomatoes into wedges (remove the seeds) and marinate them for about 10 minutes. (Do not marinate too long or they become waterly.)
4. Meanwhile, put rice in a rice bowl and leave to cool. (Cold rice is better because it won't warm up the vegetables.) Slice Avocado.
5. Put Kizaminori on the rice, arrange marinated Tomato and Avocado, pour over some marinade, garnish with green onions or Shiso leaves if you have, and sprinkle with toasted white sesame seeds. You can place a bit of fresh Wasabi on top if you like.

Miso Potato (Vegan Poutine-Like Dish) | Japanese Cooking Video Recipe

Very tasty crunchy yet delicious deep fried potatoes with Miso sauce. 



Originated in Chichibu city of Saitama prefecture in Japan. It is a very popular school lunch menu in Japan 😋 Perfect for snack time ❤️


Miso Potato (Japanese Vegan Poutine-Like Dish)

Miso Potato


Difficulty: Very Easy
Time: 15min
Number of servings: 4

Ingredients:
500g (1.1lb) potatoes
80g (2.8oz.) flour
100ml water
deep frying oil
* 3 tbsp. Miso
* 2 tbsp. sugar
* 1 tbsp. Mirin (sweet Sake)
* 1 tbsp. Sake

Directions:
1. Mix Miso, sugar, Mirin, and Sake in a bowl. Cover and microwave on medium for a minute.
2. Peel the potatoes and cut them into bite-size pieces. Place them on a microwavable dish and microwave on medium for 5 minutes.
3. Mix flour and water in a bowl. Quickly add it into the potatoes and coat them. *Please deep fry immediately. Do not leave long or they stick together.
4. Deep fry in oil for 2~3 minutes until golden brown.
5. Drizzle with the Miso sauce to finish.

Aquarium Field Trip Bento Lunch Box (Easy Kawaii Onigiri Idea) | Japanese Cooking Video Recipe

This video will show you how to make quick and cute Aquarium Field Trip Bento lunch box.



My son went to Yokohama Hakkeijima Sea Paradise Aquarium from his kindergarten, so I made this Bento. Easy for moms to make in the busy morning and easy for kids to eat outside with their friends :)

How to Make Tonjiru (Miso Soup with Pork and Vegetables) | Japanese Cooking Video Recipe

Tonjiru (sometimes called Butajiru) is a Japanese pork and vegetable Miso soup. Remarkably delicious family meal 😋 



Some people cut vegetables into quarter round. Some people cut into chunks. It is up to you. Vegetables become very tasty by slowly cooking in pork Miso soup. It takes a bit time to cook but worth the time 😉

Tonjiru (Miso Soup with Pork and Vegetables)


Difficulty: Easy
Time: 1.5hr
Number of servings: 4

Ingredients:
100g (3.5oz.) thinly sliced pork rib
1 tbsp. ginger juice
150g (5.2oz.) Daikon radish
150g (5.2oz.) carrot
1/2 Gobo (burdock root)
200g (7oz.) Konnyaku (yam cake)
200g (7oz.) potatoes
4 Shiitake mushrooms
1 long onion
4 tbsp. Awase Miso
1/2 tsp. sugar

Directions:
1. Cut pork into an inch long pieces.
2. Slice Gobo   and soak in water for 5 minutes. Tear Konnyaku into small chunks. Cut Daikon, carrot, potatoes, long onion, and Shiitake mushrooms into small chunks. *Cut all the vegetables about the same size.
3. In a large pot, put pork, ginger juice, and 800ml water. Bring to a boil, turn down to low, and remove the foam.
4. Add Daikon, carrot, burdock root, and Konnyaku, then cook on medium for 15 minutes, removing the foam. 
5. Dilute the Miso with the cooking liquid, add half of it, add potatoes, then cook for 20 minutes.
6. Add Shiitake mushrooms and long onion, and simmer for 15 minutes. Add the rest of the Miso and sugar to taste. Cook until hot to finish.

Vegan Karaage (Soy Meat Fried Chicken) Recipe | OCHIKERON | Japanese Cooking Video

I made Karaage (Japanese fried chicken) using soy meat chunks. Very juicy, tasty yet delicious! Must TRY 👍

Vegan Karaage (Soy Meat Fried Chicken) Recipe


Difficulty: Very Easy
Time: 40min (incl. marinating time)
Number of servings: 4

Ingredients:
100g (3.5oz.) dried soy meat blocks
* 2 tbsp. soy sauce
* 2 tbsp. sake
* 1 tbsp. grated ginger
* 1 clove grated garlic
* 1 tsp. sesame oil
2 tbsp. Katakuriko (potato starch)
deep frying oil
lemon wedges if preferred

Directions:
1. In a boiling water, cook dried soy meat blocks for 4 minutes. Or as directed on its package. Wash well (change water for a few times) to remove the bad smell, then drain well.
2. Mix the seasonings in a bowl and marinate the soy meat for about 30 minutes. Overnight is okay, longer makes them tasty.
3. Drain lightly (do not squeeze out the marinade liquid), coat with Katakuriko in a plastic bag.
4. Deep fry in oil at 180C (350F) until crisp golden brown.
5. Serve with lemon wedges if you like.

Maguro Zuke Don (Marinated Tuna Fish Rice Bowl) Recipe | Japanese Cooking Video


Maguro means Tuna, Zuke means to marinate, and Don is short for Donburi which means rice bowl. Marinated fresh Sashimi-grade tuna served on a rice bowl. Quick yet delicious!


You can of course use Salmon, scallop, or any other Sashimi-grade fish instead! Enjoy :)


Hachibiki (Japanese Rubyfish)

BTW, you can eat Chrysanthemum. For Sashimi you float the petals on soy sauce. For rice bowl, you can sprinkle with the petals if you like.

Difficulty: Very Easy
Time: 15min
Number of servings: 1

Ingredients:
90g (3.2oz) Sashimi Grade Yellowfin Ahi Tuna
1/2 tbsp. Sake
1/2 tbsp. Mirin (sweet Sake)
1 tbsp. soy sauce
Wasabi if you like
1 bowl of rice
Kizaminori (shredded Nori sheet)
green onions and/or Shiso leaf
toasted white sesame seeds

Directions:
1. In a small pot, boil down Sake and Mirin to reduce the alcohol content.
2. Add soy sauce and Wasabi, then mix well. (Wasabi will be not spicy if you mix and leave for a while, so kids can eat it with only nice Wasabi aroma.)
3. Marinate tuna Sashimi and put in the fridge for about 10 minutes. (Do not marinate too long or tuna will be salty.)
4. Meanwhile, put rice in a rice bowl and leave to cool. (Cold rice is better because it won't warm up the fish.)
5. Put Kizaminori on the rice, arrange Tuna sashimi, garnish with green onions or Shiso leaves, and sprinkle with toasted white sesame seeds. You can place a bit of fresh Wasabi on top if you like.

4-Ingredient Edible Gemstones (Kohakutou Crystal Gummy Candies) | Japanese Cooking Video Recipe

Firm jelly inside, crunchy shell outside. Kohakutou is a traditional Japanese confection (Wagashi).



You just need only 4 ingredients!


You can use your favorite colors to make your own favorite gemstones. Easy yet Fun! It is one of summer vacation free research project ideas in Japan 💎



It takes about a week to dry to create the crunchy shell. At this point, the sweetness becomes very mild and delicious 😋 



You can use fruit juice if you want to make it in a different flavor! Have fun

4-Ingredient Edible Gemstones (Kohakutou Crystal Gummy Candies)


Difficulty: Easy
Time: 1 week
Number of servings: candies on 1 baking sheet

Ingredients:
300g (10.6oz.) granulated sugar
4g (2 tsp.) Kanten powder (agar-agar powder)
your favorite food colorings
200ml water

Directions:
1. Dilute your favorite food colorings with water.
2. Mix water and Kanten powder (agar-agar powder) very well in a pot. Put on medium. When the agar-agar powder melts, add granulated sugar and turn down to low. Simmer for 10 minutes until it bubbles and the liquid hangs down when you lift the spatula.
3. Pour it into any heat resistant container is okay. Color it in the way you like. Put it in the fridge for an hour to harden.
4. Tear it by hand, place the candy pieces on a parchment paper and let dry for a week until they develop white and crunchy outer shells.

*You can store the candies in an airtight container at room temperature for 2-3 weeks.

Edamame Corn Flowing Somen Noodles (At-Home Fun Party Rainbow LED Machine) Recipe | Japanese Cooking Video

Kids requested me to make Edamame and Corn Nagashi Somen (Flowing Somen). 



Edamame and corn were pretty easy to catch and eat 😉 Kids enjoyed it very much 👍

Somen is perfect refreshing food for hot and humid summer season :)


Sōmen (素麺) is very thin Japanese noodles made of wheat flour. The noodles are usually served cold in summer with a dashi flavored tasty dipping sauce called Mentsuyu (めんつゆ).

Difficulty: Very Easy
Time: 15min
Number of servings: N/A

Ingredients:
((Toppings)) 
frozen edamame and canned kernel corn are OK! (Fibers may get stuck in the machine, so you want to be careful.)
Other Topping Ideas:
cooked shrimp 
goldfish tomatoes (optional)
cucumber slices (or thin strips)
ham
shredded chicken
Yakibuta (braised pork) is good
Shiso leaves
Naganegi (long onion slices)
Aonegi (chopped green onions)
ginger strips
etc...
((Somen Dipping Sauce))
((Somen Noodles))
dried Somen noodles

Directions:
((Somen Dipping Sauce))
I used this Mentsuyu (noodle soup base) btw: ヤマサ ぱぱっとちゃんと これ!うま!!つゆ
Dilute with water as instructed on its package.
((Somen Noodles))
Boil water in a large pot. Add dried Somen noodles in boiling water and gently stir noodles with chopsticks. Cook Somen noodles according to your package (mine was 2 min). Drain the noodles in a strainer and rinse the noodles with hands under running water. 

NOTE: You can put about 100g (usually 2 bundles) of Somen noodles in the machine or the noodles won't flow.

((Somen Dipping Sauce from scratch))
* 300ml Dashi broth (using packaged dashi powder saves time)
* 4 tbsp. Mirin (sweet Sake)
* 4 tbsp. soy sauce
In a pot, bring Dashi broth, Mirin, and soy sauce to a boil. You can also microwave until it comes to a boil. Cool in the fridge until ready to serve.

DAISO Mess Tin (How to Cook Japanese White Rice in a Camping Cookware) | Japanese Cooking Video Recipe

DAISO Mess Tin (500yen) became very popular in June 2020 and still hot now in 2021.



I recorded this video last year btw 😅
It was pretty fun to cook rice outdoor with kids.

DAISO Mess Tin (How to Cook Japanese White Rice in a Camping Cookware)


Difficulty: Very Easy
Time: 1hr
Number of servings: 1-2 people

Necessary Equipment:
Mess Tin
solid fuel
trivet
aluminum plate for the fuel
lighter
parchment paper
1 cup = 160g (5.6oz.) Japanese rice
200ml water
cotton gloves
towel

Direction:
1. Wash rice and place it in Mess Tin lined with parchment paper. Add water and leave for 15~30 minutes to let it absorb water. * I did not rest the rice but the result was pretty good.
2. Place the solid fuel on the aluminum plate. Place it in the center of trivet. Set fire, place the Mess Tin, and cook until the fire goes out.
3. Wear the cotton gloves and hold the lid securely. Then flip it over and leave to steam for 15 minutes. If you have a towel wrap Mess Tin to steam. *Flipping over is to cook rice more uniformly but some people say it is not necessary.

Agepan (Deep Fried Bread Roll) is the best and typical school lunch menu ☺️

Very tasty yet delicious. MUST TRY 💕



At school, top half of the bread is coated with sugar topping. In this way it is easy to eat. Sure I understand. Great idea 👍


The bread roll we use is called "Koppepan" similar to a hot dog bun.

Ingredients:
4 bread rolls or bread crusts are good!
4 tbsp. soybean flour
4 tbsp. granulated sugar
deep frying oil

Directions:
1. In a steel tray, mix soybean flour and granulated sugar.
2. Deep fry in oil (160C=320F) for about 10 seconds on both sides until golden.
3. Coat or top with the soybean sugar to finish.

FYI: Only sugar is okay. Cinnamon sugar is good, too!

Ankake Yakisoba (Fried Noodles with Thick Savory Sauce Recipe) | Japanese Cooking Video

Crisp brown fried noodles with a thick savory sauce with a lot of meat and vegetables. It is a very popular Japanese dish, served as a school lunch as well.



You can add seafood if you like. You can use any vegetables available in your fridge. Take it easy. It is a delicious lifesaver dish super quick to prepare 👍

Ankake Yakisoba (Fried Noodles with Thick Savory Sauce Recipe)


Difficulty: Easy
Time:20min
Number of servings: 2 servings

Ingredients:
2 servings Yakisoba noodles
150g (5.2oz.) thin sliced pork
150g (5.2oz.) baby bok choy
150g (5.2oz.) vegetables of your choice (onion, bean sprouts, carrot, mushrooms, etc...)
* 1 tsp. chicken broth powder
* 2 tsp. oyster sauce
* 1 tsp. soy sauce
salt and pepper
cooking oil
1 tbsp. Katakuriko (corn starch is ok)
1 tsp. sesame oil

Directions:
1. Cut the meat and vegetables into bite-size pieces.
2. Heat 1 tbsp. of cooking oil in a frying pan and cook the noodles 3 minutes each on both sides until crisp golden. Place them on serving plates.
3. Heat 1 tbsp. of cooking oil in a frying pan and cook the meat until crisp golden. Add the vegetables and cook until tender. Add 1 US cup (240ml) of water, then add chicken broth powder, oyster sauce, and soy sauce.
4. Bring to a boil, stop the heat, and add starch diluted with double the amount of water. Heat again until thick. Stop the heat and finish with sesame oil. Season with salt and pepper if needed. 
5. Cover the noodles with Ankake sauce to serve.
