Goldfish Tomato Somen Noodles (Kawaii Tomato Carving Garnish Idea) Recipe | Japanese Cooking Video

Goldfish Tomato Somen Noodles (Kawaii Tomato Carving Garnish Idea) Recipe


Difficulty: Very Easy
Time: 15min
Number of servings: 4

Ingredients:
((Toppings))
grape tomatoes
cucumber slices
chopped green onions, etc...
((Somen Dipping Sauce))
* 300ml Dashi broth (using packaged dashi powder saves time)
* 4 tbsp. Mirin (sweet Sake)
* 4 tbsp. soy sauce
((Somen Noodles))
dried Somen noodles

Directions:
((Somen Dipping Sauce))
In a pot, bring Dashi broth, Mirin, and soy sauce to a boil. You can also microwave until it comes to a boil. Cool in the fridge until ready to serve.
((Somen Noodles))
Boil water in a large pot. Add dried Somen noodles in boiling water and gently stir noodles with chopsticks. Cook Somen noodles according to your package (mine was 2 min). Drain the noodles in a strainer and rinse the noodles with hands under running water.
((Goldfish Tomato))
Wash and remove the stem. Place it stem side down. Slice the tail part, making sure you do not cut all the way through. Open and place the cut side down. Adjust the shape of the tail. Cut the fins. If you like, you can cut out sliced cheese and put some sesame seeds to make eyes.

I love using Kayanoya Dashi. Vegan/Vegetarian people can use Kombu or Vegetable Dashi broth for the dipping sauce 👍

Nagashi Somen (At-Home Fun Flowing Noodles Party Rainbow LED Machine) | Japanese Cooking Video Recipe

Somen is perfect refreshing food for hot and humid summer season 🎐




Sōmen (素麺) is very thin Japanese noodles made of wheat flour. The noodles are usually served cold in summer with a dashi flavored tasty dipping sauce called Mentsuyu (めんつゆ).

My daughter requested me to make Nagashi Somen (Flowing Somen). Two years ago (when she was 3) she had a chance to do it at Kindergarten. Noodles flowing in a bamboo pipe, you need to catch the noodles with chopsticks then dip in a cup of noodle sauce to eat. Sadly not because of COVID-19, this event is gradually removed from schools. Anyway, we can still enjoy it at home 😋 Kids enjoyed it and ate well 👍💕 BTW, I asked my daughter if she needs a machine like a long water slide, then my daughter chose this one and it was pretty fun!!! Good choice 💡

Nagashi Somen (At-Home Fun Flowing Noodles Party Rainbow LED Machine) Recipe


Difficulty: Very Easy
Time: 15min
Number of servings: 4

Ingredients:
((Toppings))
boiled eggs
Kinshi Tamago (shredded egg crepe) is perfect
cooked shrimp
simmered Shiitake mushrooms
goldfish tomatoes (optional)
cucumber slices (or thin strips)
ham
shredded chicken
Yakibuta (braised pork) is good
Shiso leaves
Naganegi (long onion slices)
Aonegi (chopped green onions)
ginger strips
etc...
((Somen Dipping Sauce))
* 300ml Dashi broth (using packaged dashi powder saves time)
* 4 tbsp. Mirin (sweet Sake)
* 4 tbsp. soy sauce
((Somen Noodles))
dried Somen noodles

Directions:

NOTE: You can put about 100g (usually 2 bundles) of Somen noodles in the machine or the noodles won't flow.

How to Make Kamaage Udon (Marugame Inspired Recipe) | Japanese Cooking Video

Kamaage Udon is Udon served in a wooden bowl with some hot cooking water. You dip Udon into dipping sauce and eat with some toppings if you like. Tempura sides are perfect. If you have ever tried it at a restaurant (such as Marugame Udon Restaurant), you know it is pretty simple yet delicious.




I was not sure if I should get the wooden bowl to recreate it at home while plastic one is available. However, by serving it in a wooden bowl, I noticed it keeps Udon hot for a long while, looking good with a nice steam rising from it. It was fantastic and everyone liked it 😉 If you get a chance to get a wooden bowl, please try it out 💖

How to Make Kamaage Udon (Marugame Inspired Recipe)

Time: 5min
Number of servings: 4

Ingredients
4 frozen Udon noodles *I used TableMark (Katokichi), any brand is OK
Tsuketsuyu (Udon dipping sauce)
* 300ml Dashi broth (using packaged dashi powder saves time)
* 4 tbsp. Mirin (sweet Sake)
* 4 tbsp. soy sauce
condiments of your choice (chopped green onions/chopped long onions/grated ginger/white sesame seeds/Tenkasu crunchy bits of deep fried flour-batter/etc...)
Tempura if you like

Directions:
1. In a pot, bring Dashi broth, Mirin, and soy sauce to a boil. You can also microwave until it comes to a boil.
2. Bring water to a boil in a large pot, if your pot is small cook Udon 1 serving at a time, cook Udon on medium high heat as directed on its package. (Cooking time was 1 minute for TableMark frozen Udon) You shake the noodles in boiling water then stop the heat when they are separated.
3. Using the edge of a serving bowl, slide in the noodles to drain water when you serve.
4. Add some hot cooking water.
5. Serve with Tsuketsuyu (dipping sauce), condiments, and Tempura if you like.

Cucumber Soba Noodles with Shabu-Shabu Pork (Recipe) | Japanese Cooking Video Recipe

Very refreshing, crunchy and delicious cold Soba noodle recipe idea 😋

Shabu Shabu pork is very healthy and filling!




You can of course make it hot or spicy by adding your favorite condiments!

Cold Cucumber Soba


Difficulty: Easy
Time: 30min
Number of servings: 3 servings

Ingredients:
3 bundles of dried Soba noodles
2 Japanese cucumbers
210g (7.5oz.) thinly sliced pork (for Shabu-Shabu)
10 Shiso (Ooba) leaves
1 tbsp. sesame seeds
* 90ml Mentsuyu (Concentrated Soup Base)
* 1.5 tbsp. vinegar
* 1 tbsp. sesame oil
* you can add more of your favorite condiments to spice up to your taste
grape tomatoes to garnish

Directions:
1. Cut cucumbers and Shiso leaves into thin strips then cool in the fridge until you use.
2. In a boiling water, put the pork slices and cook until no longer pink. Then drain well with a strainer.
3. Mix Mentsuyu, vinegar, and sesame oil to make the sauce. You can add more of your favorite condiments to spice up to your taste.
4. Cook Soba noodles according to your package. Drain, rinse several times in cold running water, cool in ice water, and drain well.
5. Put Soba noodles in a large bowl. Add cucumber strips, Shiso leaf strips, Shabu-Shabu-pork, sesame seeds, and more of your favorite vegetables and condiments if you like.
6. Serve in a dish, garnish with grape tomatoes, and pour some sauce to eat.

How to Make Udon Noodles (Recipe) | VR180 Cooking | Japanese Cooking Video Recipe



I used pasta making machine Atlas 150 Marcato made in Italy 👍

You need only 4 ingredients! Using a bread machine and a pasta maker machine, you can make silky-smooth and chewy Udon noodles in a minute!!! (Any bread machine is OK if it can knead)


FYI: Perfectly kneaded dough is the KEY to activate the gluten in the flour and gives the noodles the silky-smooth and chewy texture. This is why we used a bread machine. My mom used to make udon like this when we lived in Jordan many many years ago 😉Using hands or feet is pretty much a work if you want to serve udon quickly for family.

If you don't have a bread machine, you can put the dough in a plastic bag, wrap in a towel, and knead with your feet for about 5 minutes until smooth. If you use your hands (palms) it may take for about 15 minutes.

Homemade Udon Noodles from Scratch


Difficulty: Very Easy
Time: 15min + 2hrs resting time
Number of servings: n/a

Ingredients
4 cups (500g) all purpose flour
1 cup (240ml) water
1 tbsp. salt
1 egg white

Directions:
((Using a machine))
1. Put all the ingredients in a bread machine and knead.
2. Place the dough in a plastic bag and rest for about 2 hours.
3. Divide it into 5, roll out the dough and put through the pasta maker machine at the dial to the widest setting (usually setting number 1). Feed it through the rollers.
4. Then begin rolling it thinner, by turning the dial to the next narrowest setting (most likely number 2).
5. Attach the noodle-cutting attachment to the pasta machine (3.5mm or 6mm is perfect for Udon), sprinkle the dough lightly with flour, and feed it into the cutting attachment.
6. Cook the Udon in boiling water for 10 minutes. Wash the noodles very well with running water if you want to serve cold Udon.
7. Serve the udon with shredded Nori seaweed sheet, wasabi, chopped onions, and Tsuyu (dipping sauce). You can also serve with Tempura! Yummy!

((by hands or feet))
1. Mix water and salt very well to make salted water.
2. Add water little by little then quickly mix with your hand until the dough crumbles. Make sure water is mixed evenly. When you see a lump, you want to crumble it.
3. Form it into a ball.
4. Knead the dough for 15 minutes using your palms, just like you make a bread, stretch the dough for a few times using your palms, fold it in half, turn it around (90C), and stretch again. Repeat and knead until smooth. You can put the dough in a plastic bag and step it on with your feet for 5 minutes, this allows you to get much more pressure on the dough to activate the gluten.
5. Put it in a plastic bag, rest the dough for 2 hours at a room temperature.
6. Roll out the dough into a thin rectangle, sprinkle lightly with flour, then fold it into thirds, slice it into 0.2 inch (5mm) or as you desire.
7. Cook the Udon in boiling water for 10 minutes. Wash the noodles very well with running water if you want to serve cold Udon.
8. Serve the udon with shredded Nori seaweed sheet, wasabi, chopped onions, and Tsuyu (dipping sauce). You can also serve with Tempura! Yummy!

((Udon Dashi))
Boil 600ml Dashi broth (made with Dashi powder is ok), 2 tsp. Soy sauce, 1 tbsp. Mirin (sweet Sake), ½ tsp. Salt in a pot.

Ramen Pizza (Crispy Crust) Recipe


Difficulty: VERY Easy
Time: 10 min
Number of servings: 1 small pizza

Ingredients:
1 instant Ramen noodles
shrimp
broccoli
grape tomatoes
80g (10 tbsp.) pizza cheese for crust
pizza cheese or grated parmesan cheese for topping

Directions:
1. Cook the ramen noodles in a boiling water for 2 minutes. Drain well in a strainer.
2. Mix 1/2 packet of seasoning powder and 40g (5 tbsp.) pizza cheese.
3. Place 40g (5 tbsp.) pizza cheese in a frying pan. Cook on medium low for 2 minutes until crisp golden in the bottom then flip it over. Place the noodles, press flat, flip it over, and cook on medium for 3 minutes. Flip it over, place the toppings, cover and cook on low for 10 minutes.

Very tasty yet delicious Miso Ramen in 5 minutes!!!


Miso is a traditional Japanese seasoning made from fermented soybeans. It is a umami-rich paste to make a Miso Soup. There are tons of different kinds of Miso pastes in Japan. You can use any of your choice to enjoy this recipe.

5 MIN Vegan Miso Ramen


Difficulty: VERY Easy
Time: 5 min
Number of servings: 1

Ingredients:
1 package fresh Ramen noodles
a bag of bean sprouts (remove the roots and heads if you prefer)
whole kernel corn (canned)
chopped green onion
((Miso Ramen Soup Base))
2 tbsp. Miso
1 tbsp. Soy sauce
1 tsp. Sugar
1 tsp. Kombu kelp Dashi powder
1 tbsp. ground white sesame seeds
1 tsp, garlic paste
1 tsp, ginger paste
1 tbsp. sesame oil
a few drops of La-Yu chili oil if you like
350ml hot water

Directions:
1. Wash the bean sprouts, place them in a microwavable dish, cover, then cook on medium (600w) for 2 min. Drain well, then season with salt, pepper, and sesame oil.
2. In a bowl, mix the ingredients of the Miso Broth, add hot water little by little then mix well.
3. In a pot, boil water. Add fresh Ramen noodles in the boiling water and gently stir noodles with chopsticks. Cook Ramen noodles according to your package. Drain the noodles in a strainer and place them in the soup. Then arrange the toppings.

Yakisoba at a Festival

Difficulty: Very Easy
Time: 10min
Number of servings: as many as you want

Ingredients:
Yakisoba noodles (steamed Chuka noodles)
thinly sliced pork
cut vegetables (cabbage, carrot, green pepper)
Yakisoba sauce
salt and pepper
cooking oil
Aonori (green laver)
Beni Shoga (red pickled ginger)

Directions:
1. Heat cooking oil on a pan. Add pork and season with salt and pepper. Then cook the meat until they start to change color.
2. Add cut vegetables until they are coated with oil.
3. Add Yakisoba noodles and some water to separate the noodles.
4. Season with Yakisoba sauce.
5. Serve on a dish, sprinkle with Aonori, and garnish with Beni Shoga.

Goma Hiyashi Chuka (Cold Ramen with Sesame Dressing)


Difficulty: Easy
Time: 30min
Number of servings: 2

Ingredients:
2 packages fresh Ramen noodles
8 slices Char siu (roasted pork)

Chinese jellyfish
1/2 cucumber
100g (3.5oz.) bean sprouts
Beni Shoga (red pickled ginger)
Goma-Dare (sesame dressing)
* 3 tbsp. white sesame paste
* 1/2 tsp. Toban Jan (hot bean sauce / Chinese red chili paste)
* 50ml water
* 50ml vinegar (rice or cereal)
* 3 tbsp. soy sauce (use light soy sauce if you have)
* 1.5 tbsp. sugar
* 1 tbsp. sesame oil
* a pinch of salt

Directions:
1. First, dilute white sesame paste and Toban Jan with water. Then mix the other ingredients for Goma-Dare and cool in the fridge.
2. Remove the roots and heads of bean sprouts (you can leave the heads if you like), then parboil for a few seconds and drain well in a strainer. Cut cucumber into thin strips.
3. In a large pot, boil water. Add fresh Ramen noodles in the boiling water and gently stir noodles with chopsticks. Cook Ramen noodles according to your package (mine was 3 min). Drain the noodles in a strainer and rinse the noodles under cold water for a few times to remove starch. Then drain well again and pat dry with paper towels.
4. Place the cold noodles in a dish, then Arrange the toppings. Pour over the sauce right before you eat.

2 packages fresh Ramen noodles
4 slices ham
1/2 cucumber
1/2 tomato
1 egg
a pinch of salt
cooking oil
Shoyu-Dare (soy sauce dressing)
* 50ml water
* 50ml vinegar (rice or cereal)
* 3 tbsp. soy sauce
* 1.5 tbsp. sugar
* 1 tsp. sesame oil
* a pinch of salt
1 tbsp. ground toasted white sesame seeds

Directions:
1. Mix the ingredients for Shoyu-Dare and cool in the fridge.
2. Cut ham and cucumber into thin strips. Cut tomato into wedges.
3. Season an egg with a pinch of salt, then mix well. Heat cooking oil in a frying pan and make 1 or 2 thin omelets (depending on the size of your frying pan). Leave to cool on a plate, then cut into thin strips.
4. In a large pot, boil water. Add fresh Ramen noodles in the boiling water and gently stir noodles with chopsticks. Cook Ramen noodles according to your package (mine was 3 min). Drain the noodles in a strainer and rinse the noodles under cold water for a few times to remove starch. Then drain well again and pat dry with paper towels.
5. Place the cold noodles in a dish and sprinkle with ground toasted white sesame seeds. Arrange the toppings. Pour over the sauce right before you eat.

Serve with Karashi (Japanese mustard) if you like.

Spaghetti Napolitan (Popular Japanese Pasta Dish) - Video Recipe

Spaghetti Napolitan sounds like an Italian dish; however, it is a very popular Japanese pasta dish, a mealtime favorite across Japan.


It is mainly seasoned with tomato Ketchup. Please use Kagome tomato ketchup for better taste ;)

I used less tomato ketchup for my 1-year-old daughter. It is a perfect dish for babies!!! For adults, you can season it with additional tomato ketchup right before you eat ;)

Spaghetti Napolitan


Difficulty: Easy
Time: 20min
Number of servings: 2 adults and 1~2 babies

Ingredients:
200g (7oz.) spaghetti
100g (3.5oz.) onion
50g (1.8oz.) carrot
50g (1.8oz.) green pepper
2 slices of ham
1/2 consomme cube or powder
2 or more tbsp. tomato ketchup
5 tbsp. canned diced tomatoes
1 tsp. olive oil
grated parmesan cheese

Directions:
1. Slice the onion. Thinly slice the carrot, green pepper, and ham.
2. Cook spaghetti as directed on its package.
3. Heat olive oil in a frying pan, stir-fry onion and carrot slices until tender. Then add ham and green pepper and cook until just combined.
4. Mix in diced tomato, 2 tbsp. of tomato ketchup, and consomme cube. Then add the spaghetti and toss to coat evenly.
5. For a baby, remove a small bowl of Napolitan (100g=3.5oz.) and place it into a small pot. Add 150ml water, then simmer until water is fully absorbed and tender. You can cut the pasta into small pieces and/or add more tomato ketchup to season it, depending on the age of your baby.
6. For adults, season the dish with additional tomato ketchup (2~6 tbsp.) to your taste. Then dust with grated parmesan cheese to finish.
