Very Basic Japanese Roll Cake / Swiss Roll / Log Cake (Cup Measurements) - Video Recipe

Roll Cake is a type of sponge cake roll. In Japan, we call it "Roll Cake" however in some other countries people call it Swiss roll, jelly roll, log cake, etc.

Japanese Roll Cake

Difficulty: medium
Time: 60min
Number of servings: 8 pieces

Necessary Equipment:
9-inch square brownie pan
electric mixer

Ingredients:
((Sponge Cake))
2 egg
50g (5&1/2 tbsp.) superfine sugar
35g (4&1/3 tbsp.) cake flour
20g (1&1/3 tbsp.) milk *room temperature
((Filling))
200ml whipping cream
1 tbsp. granulated sugar
some fruits of your choice: strawberry, kiwi, canned fruits are okay!

Directions:
((Sponge Cake))
1. Line the brownie pan with parchment paper. Preheat the oven to 180C (350F).
2. Beat eggs and sugar with a whisk in a bowl. Place it over hot water, melt the sugar, and warm it up to 40C (105F).
3. Then with an electric mixer, beat the warmed mixture on high speed for about 5 minutes until white and fluffy. Then turn down to low and beat for about 2 minutes to set the texture.
4. Sift in flour and fold together with a spatula for about 10 times.
5. Add milk, then fold together with a spatula for about 50 times until combined.
6. Spread the batter into the pan and drop the pan lightly on the counter to raise air bubbles out of the batter.
7. Bake at 180C (350F) for 11-12 minutes till lightly brown. (Depending on the heat of the oven, cooking time may differ, so please watch out.)
8. When it's done, drop the pan lightly to prevent shrinking. Remove the sponge cake from the pan by lifting the parchment paper and place it on a wire rack to cool.
9. When it's cool enough, remove the parchment paper and place the sponge cake on the parchment paper with the brown side up.
((Filling))
1. Combine whipping cream and granulated sugar in a dry clean bowl. Float the bottom of the bowl in ice water, then whisk the cream until it forms a soft peak.
2. Dice the fruits of your choice.
3. Coat the surface of the sponge cake evenly with the cream. Place the fruits over the creamed surface (leave an inch at both ends).
4. Roll the cake in the parchment paper and put in the fridge for over 30 minutes to set.
5. Cut into round pieces to serve. The best way to cut the cake is to use a knife that has been warmed in hot water. Dip the knife in hot water, wipe, and cut. Repeat this each time you cut!

Japanese Baked Cheesecake Sticks / Bars - Video Recipe

Great recipe for holiday seasons: Thanksgiving, Christmas, New Year's parties :D

I made the crust with vanilla wafers (not the biscuits). Very tasty, crisp, and delicious. You must try it out!!!

Japanese Baked Cheesecake Sticks / Bars

Difficulty: easy
Time: 40min + 2-3 hours refrigeration time
Number of servings: 12 cheesecake bars

Necessary Equipment:
6-inch (15cm) square brownie pan
(9-inch square brownie pan makes 18 flatter cheesecake bars)

NOTE: Ingredients are listed in both American and metric measurements. However, please use a kitchen scale (metric measurements) to get a perfect result.

Ingredients:
((Crust))
120g (about 16 pieces) vanilla wafers
40g (about 3 tbsp.) butter (softened)
((Cheesecake Filling))
200g (1 cup) cream cheese (softened)
60g (4&1/2 tbsp.) sugar
2 eggs
150ml whipping cream
1 tbsp. lemon juice
3 tbsp. cake flour (all purpose flour or any kind of flour is ok)
20g (about 2 tbsp.) melted butter

Directions:
((Crust))
1. Line the brownie pan with parchment paper.
2. Smash vanilla wafers in a Ziploc bag, add butter, then mix well. Press firmly into the brownie pan. Chill until set.
((Cheesecake Filling))
1. Preheat the oven to 180C (350F).
2. Cream the cream cheese with a whisk. Add sugar, beaten eggs (little by little), whipping cream, lemon juice, flour (sift in), and melted butter, then mix well until smooth.
((Baking))
1. Pour the cheesecake filling into the brownie pan and bake at 180C (350F) for 35-40 minutes.
2. Cool to the room temperature and chill in the fridge for 2-3 hours. Cut into bars.

The best way to cut a cheesecake is to use a long knife that has been warmed in hot water. Dip the knife in hot water, wipe, then cut. Repeat this each time you cut!

NO EGG Vegan Matcha Green Tea Banana Ice Cream - Video Recipe

NO egg, NO ice cream machine needed!!!
Banana gives a rich flavor and thick texture like an ice cream.

NO EGG Vegan Matcha Green Tea Banana Ice Cream

Difficulty: easy
Time: 15min + freezing time
Number of servings: 6

Necessary Equipment:
electric mixer

Ingredients:
200ml soy whipping cream or vegan whipping cream
A
* 180g (6.3oz.) banana
* 150ml soy milk
* 4 tbsp. sugar
2 tbsp. Matcha green tea powder

1. Add the same amount of hot water to Matcha powder and mix well with a spoon.
2. Put A and 1. in a blender (mixer) and process until smooth.
3. Whip soy or vegan whipping cream until stiff peaks form.
4. Mix 2. and 3., then freeze for about 2 hours. Mix with a spoon and freeze again. Repeat this mix and freeze method for about 3 times, then freeze overnight. Put out from the freezer 10 minutes before you serve.

Love Pink Brownies - Video Recipe

Love Pink Brownies

Difficulty: medium
Time: 60min + some refrigeration time
Number of servings: 16 brownies

Necessary Equipment:
9-inch square brownie pan
electric mixer

NOTE: Ingredients are listed in both American and metric measurements. However, please use a kitchen scale (metric measurements) to get a perfect result.

Ingredients:
((Brownie))
100g (1/2 cup) white chocolate
3 eggs
100g (1 cup) all-purpose flour
70g (6 tbsp.) unsalted butter *room temperature
70g (5 tbsp.) sugar
60g (1/2 cup) sugar-free dried cranberries
1 tbsp. white curacao *optional
((Pink Ganache))
70g (1/3 cup) white chocolate
2 tbsp. whipping cream
1 tsp. white curacao *optional
red food coloring
((Toppings))
white chocolate
sprinkles of your choice

Directions:
((Brownie))
1. Soak the sugar-free dried cranberries in white curacao overnight. Grease the brownie pan, or line with parchment paper. Preheat the oven to 180C (350F).
2. Melt the chopped white chocolate over hot water. Remove from hot water and mix butter with the remaining heat until smooth.
3. In a separate bowl, beat eggs and sugar with an electric mixer on high speed for about 5 minutes until white and fluffy. Then on low speed, beat for about 2 minutes to set the texture.
4. Add 1/3 of (3.) in (2.) and fold together with spatula. Then add the rest and mix well.
5. Sift in flour and mix well with spatula until combined. Fold in cranberries.
6. Pour the batter into the brownie pan and drop the pan lightly on the counter to raise air bubbles out of the batter.
7. Bake at 180C (350F) for 15 minutes until golden brown. Cover the brownie with aluminum foil and continue to bake for another 15 minutes. (Depending on the heat of the oven, cooking time may differ, so please watch carefully.)
8. Remove the brownie from the pan by lifting the parchment paper and place it on a wire rack to cool.
((Pink Ganache))
1. Place the chopped white chocolate and whipping cream in a metal bowl. Place it over hot water and melt the chocolate until smooth.
2. Remove from hot water and mix in white curacao. Then add red food coloring (little at a time) and mix until you reach a nice medium shade of pink.
3. Cut the cake into 16 squares and spread the pink ganache evenly. Put in the fridge for a few minutes to set.
((Toppings))
4. Zig-zag the melted white chocolate over the brownies, then finish with the sprinkles of your choice. Put in the fridge for a few minutes to set.

Kawaii Bite-Sized Melonpan | Japanese Cooking Video Recipe

Here is the easy Kawaii (cute) Melonpan recipe that requires no rising.


I received a lot of requests for melonpan, but to tell the truth, I don't like to spend too much time on cooking, so I always try to cut corners. hehe

Bite-Sized Melonpan

Btw, you can make this Melonpan as big as you want, or as small as you want. I made it small and cute (Kawaii)♥

Kawaii Melonpan


Difficulty: Very Easy
Time: 60min
Number of servings: 12 bite-size mini Melonpan

Ingredients:
1 hot dog bun (or any kind of fluffy bun)
40g (1.4oz.) butter (softened)
40g (1.4oz.) granulated sugar
40g (1.4oz.) egg
A
* 100g (3.5oz.) all-purpose flour
* a pinch of baking powder
granulated sugar

Directions:
1. Beat butter and sugar until creamy, add egg little by little and mix well.
2. Sift A in 1. and mix well.
3. Place the cookie dough on the plastic wrap and shape it into a log and wrap. Refrigerate it for at least 30 minutes until firm.
4. Preheat oven to 350F (180C) when you think you are ready.
5. Cut the hot dog bun into 12 pieces. *
6. Cut the cookie dough into 12 pieces and shape them into balls. *
7. One at a time, roll out the cookie dough between two layers of plastic wrap, place the bun in the center and enclose it in the cookie dough.
8. Roll in the granulated sugar and place on a greased cookie sheet about an inch apart. With a scraper or knife, score the cookie dough in a criss-cross pattern.
9. Bake at 350F (180C) for 10 minutes. (Depending on the heat of the oven, cooking time may differ, so please watch out.)

* All you want to do is coat the bread with the cookie topping, so you can make it as big as you want, or as small as you want :D

Prune And Banana Yogurt Cake - Video Recipe

This is my favorite healthy high-fiber cake using prune and banana ;) Prune prevents an iron deficiency. Yogurt is good for your intestines.

When I say healthy, it doesn't mean fat-free or sugar-free because moderate amount of fat and/or sugar is not at all bad for your health, and makes the cake tasty delicious :D



You can substitute the prune with apple! Yummy, too!!!

Prune And Banana Yogurt Cake

Difficulty: Easy
Time: 45min
Number of servings: 20cm (8inch) pie dish

Ingredients:
100g (3.5oz.) prunes
1 banana
50g (1.7oz.) butter
5 tbsp. sugar
2 eggs
150g (5.2oz.) plain yogurt (unsweetened)
100g (3.5oz.) flour
1 tsp. baking powder
butter
flour
powdered sugar

Directions:
1. Preheat oven to 200 degrees C (392 degrees F). Butter and flour a 20cm (8inch) pie dish.
2. Thinly slice banana. Tear prunes into small bits. Keep butter in room temperature.
3. In a large bowl, mix butter and sugar. Then add eggs and plain yogurt and mix until smooth.
4. Sift in flour and baking powder a small amount at a time, and mix well.
5. Pour half of the mixture in the dish, arrange prune bits and banana slices on the mixture, pour the remaining mixture over them.
6. Bake at 200 degrees C (392 degrees F) for 25 minutes, or until lightly browned. (Depending on the heat of the oven, cooking time may differ, so please watch out.)
7. You can either eat at room temperature or chilled! Lightly sprinkle with powdered sugar, and serve with a scoop or vanilla ice cream if you want ;)

Tofu??? - Video Recipe

Tofu???

Difficulty: medium
Time: 20min + cooling time
Number of servings: 3-4

Necessary Equipment:
electric mixer

NOTE: Ingredients are listed in both American and metric measurements. However, please use a kitchen scale (metric measurements) to get a perfect result.

Ingredients:
100g (1/2 cup) cream cheese *room temperature
1 tbsp. sugar
200ml soymilk (you can use milk)
A
* 5g (1/2 tbsp.) unflavored granular gelatin
* 2 tbsp. water
B
* 1 egg white
* 1 tbsp. sugar
Kuromitsu (brown sugar syrup)

Directions:
1. In a bowl, mix softened cream cheese, sugar, and soymilk (add little by little) with an electric mixer. The mixture does not have to be perfectly smooth.
2. Put A in a small bowl, let sit for 5 minutes until gelatin is soaked. Powder gelatin soaks fast, so mix water right before you use.
3. Put 1 in a large pot and heat until smooth. Reduce to low heat, add gelatin and mix until completely dissolved. (DO NOT Boil) Then put in a bowl and leave to cool.
4. Whip one egg white and sugar until they form soft peaks.
5. Add whipped egg white in the cream cheese mixture and gently fold in with a spatula until smooth.
6. Pour the mixture in a Tofu container (or any container) and cool in the fridge for about an hour.
7. Remove from the container and cut like you serve Tofu. Top with brown sugar syrup to look like soy sauce.

Osakana Kuwaeta Doraneko - Video Recipe

Hello! This video will show you a kawaii (cute) idea of presenting Wagashi (Japanese sweets)! I am using Dorayaki - consists of two small pancakes with azuki (sweet red bean paste) filling and Taiyaki - fish-shaped sweet cake with azuki filling.

Wagashi sounds pretty formal but it is often eaten at home in Japan because it's healthy.

Anyways, do you know what "Osakana Kuwaeta Doraneko" means? Osakana is a polite way of saying fish. Kuwaeta is eating. And Doraneko is a stray cat.

So, it means "stray cat eating fish".

I think this phrase is pretty known to all Japanese since it's the words from Sazae-san's song, if you know ;)

Difficulty: Very Easy
Time: approx. 15min
Number of servings: 1

Ingredients:
1&1/2 dorayaki
1 taiyaki
chocolate pen

Directions:
1. Set the chocolate pen in a cup of hot water for a few minutes.
2. Meanwhile, cut 1/2 portion of the dorayaki and make 2 cat ears.
3. On the serving plate, open one round dorayaki, put taiyaki in between the pancakes, and place the ears.
4. Cut the tip of the chocolate pen and draw a cat face.
5. Put in the freezer for a few sec and harden the chocolate.

Anyways, I hope my voice and all the sounds are clear at a comfortable volume... I am looking for a good microphone which has a air noise control (I don't know how to explain it, though) So, I care the noise more than what I'm speaking out, which is kind of pain in the neck...

Microwave Chocolate Chip Cookies - Video Recipe

Microwave Chocolate Chip Cookies

Difficulty: Very Easy
Time: 15min
Number of servings: 16-18 cookies

Ingredients:
100g (3.5oz. = approx. 1/2 cup) butter (softened)
50g (1.7oz. = approx. 5 tbsp.) sugar
1 egg
A
* 130g (4.5oz. = approx. 1.3 cup) all-purpose flour
* 1/2 tsp. baking powder
50g (0.8oz. = approx. 1/4 cup) chocolate chips

Directions:
1. Beat butter and sugar until creamy, add egg and mix well.
2. Sift A in 1. and mix well. Add chocolate chips and mix well again.
3. Drop 4 cookies (at a time) by teaspoon onto waxed paper on microwavable plate or tray.
4. Microwave at 500w for 3min (or less or more depending on the heat of your microwave). Repeat the steps 3 & 4 to complete the rest.

Crispy Hina-Arare Cheese Truffles

March 3rd is Hinamatsuri (Japanese Doll Festival or Girls' Day). On this day, we set up hina dolls (hina-ningyo) that are believed to protect girls from bad luck. Those dolls consist of the Emperor (odairisama), Empress (ohinasama), three court ladies (sanninkanjyo), and five musicians (goninbayashi) in traditional court dress of the Heian period.

On Hinamatsuri, we eat colorful rice puffs called hina-arare. They commonly consists of three colors: pink, white, and green: pink represents life, white represents earth, and green represents trees. Those who eat them are believed to drive out their misfortune and disease.

Today, I will show you a crispy truffles recipe using leftover hina-arare ;)

Crispy Hina-Arare Cheese Truffles

Difficulty: Easy
Time: 10min + 60min refrigeration time
Number of servings: 8

Ingredients:
50g (1.8oz.) cream cheese *softened to room temperature
50g (1.8oz.) white chocolate *melted over a pot of boiling water
30g (1.0oz.) hina-arare (for filling) *use the small grains
moderate amount hina-arare (for topping) *use the small grains

Directions:
1. In a bowl, mix softened cream cheese and melted white chocolate, add hina-arare (for filling), and gently mix it in.



2. Divide the mixture into 8, roll into balls using hands, roll truffles in hina-arare (for topping), and refrigerate for 30 minutes until they set.

Microwave Cookies

Do you know that you can bake cookies in microwave?

Just mix and microwave! Easy enough for kids to bake ;)

Use your favorite sprinkles!!! I should have used more of pink ones. Ha-ha!!!

Microwave Cookies

Difficulty: Very Easy
Time: 15min
Number of servings: 20 cookies

Ingredients:
100g (3.5oz.) butter (softened)
50g (1.7oz.) sugar
1 egg
A
* 130g (4.5oz.) all-purpose flour
* 1/2 tsp. baking powder
B
* 25g (0.8oz.) chocolate chips
* 25g (0.8oz.) sprinkles of your choice

Directions:
1. Beat butter and sugar until creamy, add egg and mix well.
2. Sift A in 1. and mix well. Add B and mix well again.
3. Drop 5 cookies (at a time) by teaspoon in a ring onto waxed paper on microwave oven glass tray.
4. Microwave at 500w for 3min or 3 min + 30sec. Repeat the steps 3 & 4 to complete the rest.

Microwave Cookies (Metric Cup Measurement)

Difficulty: Very Easy
Time: 15min
Number of servings: 24 cookies

Note:
1cup = 250ml or 250cc

Ingredients:
1/2cup = 125ml butter (softened) *100g (3.5oz.)
1/4cup = 62.5ml granulated sugar
1 egg
1cup = 250ml cake flour
1/2 tsp. baking powder
1/4cup = 62.5ml chocolate chips

Directions:
1. Beat butter and sugar until creamy, add egg and mix well.
2. Sift cake flour and baking powder in 1. and mix well. Add chocolate chips and mix well again.
3. Drop 4 cookie dough at a time by tablespoon onto parchment paper on microwavable plate or tray. *You don't want to burn your plate, so please line with the parchment paper.
4. Microwave at 500w for 3min (or less or more depending on the heat of your microwave). Repeat the steps 3 & 4 to complete the rest. *It is safe to test from 1 min to see how they come out. Microwave bakes the cookies from inside, so if they are baked golden brown, they are burned X(

*You can also bake them in an oven at 180C (350F) for 15 minutes.

Prune And Banana Yogurt Cake

Muggy morning again... Today we broke a record of 24-day sweltering nights since 1876!!!

This is my favorite high-fiber cake using prune and banana ;) Prune prevents an iron deficiency. Yogurt is good for your intestines.

Prune And Banana Yogurt Cake

Difficulty: Easy
Time: 45min
Number of servings: 20cm (8inch) pie dish

Ingredients:
100g (3.5oz.) prunes
1 banana
50g (1.7oz.) butter
5 tbsp. sugar (soft brown sugar)
2 eggs
150g (5.2oz.) plain yogurt (unsweetened)
100g (3.5oz.) flour
1 tsp. baking powder
butter
flour
powdered sugar

Directions:
1. Preheat oven to 200 degrees C (392 degrees F). Butter and flour a 20cm (8inch) pie dish.
2. Chop prunes into small bits. Thinly slice banana. Keep butter in room temperature.
3. In a large bowl, mix butter and sugar. Then add eggs and plain yogurt and mix until smooth.
4. Sift in flour and baking powder a small amount at a time, and mix well.
5. Pour half of the mixture in the dish, arrange prune bits and banana slices on the mixture, pour the remaining mixture over them.
6. Bake at 200 degrees C (392 degrees F) for 30 minutes, or until lightly browned. Lightly sprinkle with powdered sugar. (You can either eat at room temperature or refrigerate!)

Healthy Kit Kat Rare Cheesecake

This is my award winning recipe at Kit Kat recipe contest. It's a cheesecake using Kit Kat, yogurt and cottage cheese. Only 165 Kcal per serving, plus it contains a lot of calcium! Just mix and refrigerate! Really easy and healthy sweet treat ;)

Actually, I used lemon vinegar flavored Kit Kat (limited flavor in Japan) for this recipe but regular chocolate flavored one + lemon juice can be substituted for it.

Healthy Kit Kat Rare Cheesecake

Difficulty: Easy
Time: 10min + 60min refrigeration time
Number of servings: 4

Necessary Equipment:
blender / mixer

Ingredients:
A
* 5g (0.18oz.) unflavored granular gelatin
* 50cc water
B
* 50g (1.8oz.) Kit Kat
* 200g (7oz.) pureed cottage cheese
* 250g (8.8oz.) low-fat plain yogurt (unsweetened)
* 1 tbsp. lemon juice
* 2 tbsp. honey
mint leaves if desired

Directions:
1. Put A in a small bowl, let sit 5 minutes until gelatin is softened.




2. Mix B in blender until smooth. Microwave 1. uncovered, on Medium 500 W (50-60%) for about 40 seconds until dissolved, add in the blender, mix again until smooth.

3. In jello cups, pour 2., cover, and refrigerate for about an hour.




4. To serve, remove from cups and garnish with mint leaves if desired.

This morning, I walked in heavy rain. At the time I reached to the station, my clothes were all wet even I used umbrella. But somehow it stopped by the time I reached to work... too bad.

Tomorrow, my bf and I are going to have dinner with my family at a Chinese restaurant! We are going to have Peking duck there ;)

Love Decoration Cookie

It is warm again during the day but freezing at night with a cold wind. Brrrrr...

This is another Valentine's day recipe ;)
I decorated a heart shaped cookie with a 3D LOVE message.

Love Decoration Cookie

Difficulty: Easy
Time: 1hr+35min (15min preparation, 20min cooking, 1hr ready in)
Number of servings: 3-4 10 cm (4 inches) heart shaped cookies

Ingredients:
60g (2.1oz.) butter (softened)
30g (1oz.) sugar
1 egg yolk
A
* 95g (3.3oz.) all-purpose flour
* 2 tbsp. cocoa powder
pink chocolate pen or pink colored icing
sprinkles of your choice

Directions:
1. Beat butter and sugar until creamy, add egg yolk and mix well.




2. Sift A in 1. and mix well.





3. Press and shape dough into one and wrap in plastic wrap. Refrigerate the dough for at least 1 hour to chill.



4. Preheat oven to 350F (180C). On a lightly floured surface, roll out dough to 0.5 cm (0.2 inch) thickness. Cut with a 4-inch heart-shaped cookie cutter dipped in flour. Also cut out alphabets (LOVE) freehand or with alphabet cookie cutters. Place on a greased cookie sheet about an inch apart.

5. Bake at 350F (180C) for 15-20 minutes. Cool the cookies on the sheet and attach sprinkles with chocolate pen or colored icing.

I had sake with my friend tonight. I drank it after a long time, so I was dizzy for few hours... but I am okay now! Wow it is 2AM already!!! I think I should go to bed.
