Ingredients:
1 onion (200g/7oz.)
1 tbsp. Katakuriko (potato starch) or corn starch
salt and pepper
sesame oil / olive oil / cooking oil

Directions:
1. Finely chop the onion.
2. Season with salt and pepper and mix Katakuriko (potato starch) or corn starch.
3. Heat sesame oil in a frying pan, spread the onion mixture, cover and cook on low for 5 minutes.
4. Flip it over, cover, and cook on low for another 5 minutes.
5. Eat it with soy sauce, salt, or anything you like!

Imo Furai (Japanese Deep Fried Potatoes Vegan Recipe) いもフライ | Japanese Cooking Video

Only 5 Ingredients! Simple yet delicious. Kids said this is the BEST potato dish ever 😂



It is a local specialty of Tochigi prefecture in Japan.


Perfect recipe to use up small potatoes. Making without the skewers is okay.

Number of servings: 4 servings

Ingredients:
450g (1lb.) potatoes 
* 8 tbsp. flour
* 80ml water
Panko (bread crumbs)
deep frying oil
Tonkatsu sauce / Bull-Dog sauce / Worcestershire sauce

Directions:
1. Wash potatoes. Cook from water for about 20 minutes until soft. Peel (with skin is okay if the skin is soft) and cut into bite-size chunks. You can thread the potatoes onto skewers if you like.
2. Mix flour and water (adjust the texture until it becomes smooth like yogurt). Dip the potatoes then coat with Panko. 
3. Deep fry at 180C (350F) until golden brown. You can dip in sauce or drizzle with sauce to eat.

Bacon Potato Rolls (Very EASY Potato Recipe) | Japanese Cooking Video Recipe

Bacon Potato Rolls


Difficulty: VERY Easy
Time: 10min
Number of servings: 2 servings

Ingredients:
150g (5.3oz.) potato
8 half slices bacon
salt and pepper
1 tbsp. Sake *white wine or water is ok

Directions:
1. Cut potato into thin strips. Soak in water to remove excess starch and drain well.
2. Place potato strips on the end of the bacon and start rolling. Fasten with a toothpick.
3. Place the bacon potato rolls on a frying pan, add Sake (white wine or water is ok), then cover and steam for 3 minutes.
4. Open and cook on medium until the water is gone. Flip the rolls to cook sides equally nice and brown. Season with salt and pepper to finish.

Sautéed Fava Beans and Pork | Japanese Cooking Video Recipe

My daughter requested me to cook Fava Beans with Pork. Garlic ginger flavor is very appetizing. Kids ate very well 😉



You can use Chicken instead of pork and/or Edamame instead of fava beans!

Ingredients:
200g (7oz.) thinly sliced pork
100g (3.5oz.) onion
* 1/2 tsp. salt
* 1 tbsp. Sake or white wine
* 1 tbsp. grated ginger
* 1 clove garlic
sesame oil
pepper

Directions:
1. Cut thinly sliced pork into bite-size pieces and season with salt, Sake, grated ginger, and chopped garlic (or crushed garlic removing later is ok).
2. Slice the onion. Heat sesame oil in a frying pan and cook the onion slices until slightly softened.
3. Add the seasoned pork and sauté until the pork is no longer pink.
4. Season with black pepper and dash of sesame oil. Add cooked Fava Beans and gently mix together to finish.

Ingredients:
1 Japanese cucumber (fresh one is better)
a dash of sesame oil
toasted white sesame seeds

Directions:
1. Rub cucumber with salt and wash with water to smooth out the prickly surface of fresh cucumber. Simply washing is OK.
2. Cut cucumber into thick slices and add 1 tbsp. Mild Vinegar with Dashi and 1 tbsp. Mizkan Shiro Dashi Sauce Professional Taste, and a dash of sesame oil. You can serve it immediately, but I always leave overnight till the cucumber slices absorb the flavor.
3. Sprinkle with toasted white sesame seeds to finish.

One of my viewers from Taiwan, a mom at my son's kindergarten, asked me the easiest way to make Tamagoyaki. She said she wants to make non-brown, easy yet fluffy Tamagoyaki. I thought everyone already knows this idea. I make this Tamagoyaki in busy morning. No-Fail! 


I used Mizkan Shiro Dashi Sauce Professional Taste

Number of servings: 2-3 (6 pieces)

Ingredients:
3 eggs
3 tbsp. water

Directions:
1. Beat eggs in a bowl, add the Dashi product and water, and mix well. Strain through a sieve if you can for nice and smooth texture.
2. Heat cooking oil in a Tamagoyaki Nabe (rectangular omelette pan), pour a thin layer of egg mixture in the pan and spread over the surface. Cook until half done, roll up the egg, and move it to one end. Pour in another thin layer of egg mixture and let it flow under the rolled egg also. Cook until half done and again roll up the egg. Repeat this until all the mixture is gone.
3. Wrap the rolled egg while hot in a bamboo sushi roll mat (or plastic wrap) to even out the shape. Allow it to cool and cut it into bite-size pieces.

Tasty Simmered Daikon Tortoise Shell 大根のこっくり煮 | Japanese Cooking Video Recipe


In Japanese, people call this dish "大根のこっくり煮 OR 大根のべっこう煮". 大根=Daikon. こっくり=Tasty. べっこう=Tortoise Shell. 煮=simmered.


My daughter had this dish at her elementary school and said it was good, so I decided to recreate it at home. Pork belly slices are commonly used but if you think pork belly has too much fat, use any portion you like :) I used affordable pork shoulder trimmings 👍

Daikon radish is from my son's Daikon digging at Kindergarten BTW 😉

Tasty Simmered Daikon Tortoise Shell


Difficulty: Easy

Number of servings: 4 servings

Ingredients:
900g (2lb.) Daikon radish
250g (0.5lb) pork belly trimmings
300ml Dashi broth or water
3 tbsp. soy sauce
3 tbsp. Mirin (sweet Sake)
2 tbsp. sugar
2 tbsp. sesame oil

Directions:
1. Cut daikon into 2/3 inch slices, quarter rounds. Cut pork into bite-size pieces.
2. Heat sesame oil in a large pot and cook the meat until no longer pink.
3. Mix Dashi broth (or water), soy sauce, Mirin, and sugar very well.
4. Add  Daikon and the Dashi broth mixture into the pot. Bring to a boil and remove the foam if necessary.
5. Turn down to low, cover, and simmer for 10 minutes.
6. Open and simmer on medium for 10 minutes until nice and amber.
7. You can simmer down more, or stop the heat and leave in the pot for a while or overnight is better! It will become nice, brown, and tasty in this way.

You can garnish with chopped green onions if you like :)

Potato Somen Noodles Recipe | Japanese Cooking Video

Potato Somen noodles are easy and perfect refreshing idea in hot and humid summer season 😋 Try out with fresh potatoes!



My son and I've been to potato digging and got some potatoes again this year 👍

You can of course add some toppings. It was my son's request that he does not need anything other than potatoes. haha

Sōmen (素麺) is very thin Japanese noodles made of wheat flour. The noodles are usually served cold in summer with a Dashi flavored tasty dipping sauce called Mentsuyu (めんつゆ).

Number of servings: as much as you want

Ingredients:
potatoes
Mentsuyu (dipping sauce)
condiments of your choice

Directions:
1. Wash and peel potatoes. Put water in a bowl. Using a slicer, slice potatoes into thin strips. Soak in water to remove extra starch.
2. In boiling water, add salt, then blanch the potatoes for 15 seconds. Drain in a strainer and quickly wash with cold water before the potato strips get soft with remaining heat.
3. Dip in diluted Mentsuyu (as instructed on its package) to eat.

I used this Mentsuyu btw:

((Somen Dipping Sauce from scratch))
* 300ml Dashi broth (using packaged dashi powder saves time)
* 4 tbsp. Mirin (sweet Sake)
* 4 tbsp. soy sauce
 In a pot, bring Dashi broth, Mirin, and soy sauce to a boil. You can also microwave until it comes to a boil. Cool in the fridge until ready to serve.

200g(7oz.) bean sprouts
70g (2.5oz.) canned tuna
2 tbsp. Japanese Mentsuyu soup base 
1 tbsp. sesame oil

Directions:
1. Wash and place the bean sprouts in a microwavable bowl. Add drained canned tuna and Japanese Mentsuyu soup base. Cover with plastic wrap then microwave on medium (600W) for 3 minutes.
2. Toss with sesame oil and sesame seeds to finish.

Chicken Mince Simmered Ebi-Imo (Shrimp-Shaped Taro Potatoes) | Japanese Cooking Video Recipe

No-fuss family dish kids and adults will love 😋


You can arrange this dish with regular taro potatoes, or regular potatoes or a radish kind. Perfect for everyday meal and Bento box!



Because its shape and pattern are like a shrimp, we call this taro potato Ebi-Imo (shrimp potato). It is in season from November through January. My neighbor gave me some beautiful Ebi-Imo, so I decided to make this dish for my family. I hope this idea helps 👍

Chicken Mince Simmered Ebi-Imo (Shrimp-Shaped Taro Potatoes) Recipe

Ingredients
600g (1.3lb.) Ebi-Imo (shrimp potato)
300g (0.7lb.) minced chicken
3 tbsp. green peas (cooked/frozen/canned)
salt
400ml Dashi broth
A
* 4 tbsp. soy sauce
* 2 tbsp. Sake
* 2 tbsp. sugar
* 1 tbsp. ginger juice
1 tbsp. cooking oil
B
* 1 tbsp. corn/potato starch
* 1 tbsp. water

Directions:
1. Peel and cut Ebi-Imo in bite-size chunks. Parboil in salted water to remove bitter taste then rinse to remove slimy texture. *When you use regular potato, this procedure is not necessary but it improves flavor.
2. Heat cooking oil in a pot, and cook minced chicken until no longer pink.
3. Add Ebi-Imo and Dashi stock, and bring to a boil. When it comes to a boil, remove the foam.
4. Add the seasonings (A), and cook until the potatoes are soft for about 10~15 minutes.
5. Stop the heat, add starch diluted with water, then heat again until thick.
6. Lastly, add green peas, and cook until hot.

Daikon Radish Steak | Japanese Cooking Video Recipe

Juicy tasty yet delicious. Very easy to make. Perfect for vegan/vegetarian people as well. This recipe works with turnip, too. Quick and easy way to use up radishes 😋



Smoky flavor of pan fried Daikon is very appetizing. Better pan fried since soy sauce is easy to burn. Microwave or parboil Daikon first to cook faster 😉

Ingredients
500g (1.1lb) Daikon radish
A
* 1 tbsp. Sake (or white wine is ok)
* 1 tbsp. Mirin (sweet Sake)
* 1 tbsp. soy sauce
chopped green onion
cooking oil

Directions:
1. Cut Daikon radish into 1.5cm (0.5inch) thick round slices. Make cross incisions on both sides so that they soak flavor well. Microwave at 500w for 5 minutes. You can parboil Daikon with Kome no Togijiru (or water with a tablespoon of rice) for 15 minutes (it makes Daikon clear colored and less bitter). Drain well and remove excess water with paper towel.
2. Heat cooking oil in a frying pan. Cook both sides of Daikon on medium until slightly browned.
3. Dress with A until shiny fragrant (it turns bitter if you burn too much but it is tasty in this way, it is up to your preference).
4. Place on a dish, and garnish with green onions to finish.

* Instead of Teriyaki sauce, you can simply season with salt and pepper! It is delicious, too.

Hokkaido Pork Ketchup | Japanese Cooking Video Recipe

Pork Ketchup is a local gourmet of Hokkaido Sunagawa-city. Simple yet delicious. Easy to eat flavor which goes perfect with white rice and also a perfect dish for Bento lunch box 😋



Tomato Ketchup is going to be the main ingredient, so I wish you can try this dish using Kagome Tomato Ketchup to get this flavor right 😉 But of course your favorite ketchup is ok❣️

Ingredients
450g (1lb) shaved pork meat
250g (1/2lb) onion
1/2 tbsp. cooking oil
A
* 2 tbsp. Sake or white wine
* 1 tbsp. soy sauce
* 1 tsp. grated garlic if you like
salt and pepper
1 tbsp. Hokkaido butter if you like

Directions:
1. Slice onion into wedges. Mix A very well.
2. Heat cooking oil in a frying pan. Add onion wedges and saute until coated with oil. 
3. Add shaved pork meat and cook through.
4. Add A seasonings then cook well to remove the sour flavor.
5. Season with salt and pepper. Finish with butter if you like.
