Oatmeal Omurice (Recipe) | Japanese Cooking Video

Omurice is a very popular home cooked meal in Japan. It is a chicken fried rice wrapped with a thin sheet of crepe-like fried egg. In this recipe I substituted rice with oatmeal. The result is very satisfying. Enjoy!

The oatmeal I picked at the grocery store was "Multi Oatmeal". Which can be used for both hot and cold oatmeal. Please make sure what kind of oatmeal you have, and the way you turn it into rice substitute.

Omurice (Japanese Omelet Rice)


Difficulty: Easy
Time: 20min
Number of servings: 4

Ingredients:
50g (1.8oz.) oats
50g (1.8oz.) chicken thigh without skin
50g (1.8oz.) onion
2 eggs
cooking oil
tomato ketchup
salt and pepper

Directions:
1. Dice the chicken and chop the onion.
2. Heat 1/2 tbsp. of cooking oil in a frying pan and cook the chopped onion and diced chicken until done. 
3. Quickly rinse the oatmeal in a strainer to moisten, drain well, then add. Season with 2 tbsp. of ketchup and salt and pepper.
4. Beat 2 eggs in a bowl, then season with salt and pepper.
5. In a clean frying pan, heat 1/2 tbsp. of cooking oil, spread the egg mixture and make a round omelette. Before the egg is fully cooked, place the seasoned oatmeal in the middle. Fold both sides of the egg, then shape it using the edge of the pan. Carefully flip it over onto a plate. *You can use a paper towel to shape it nicely.
6. Put some ketchup on top to finish.

Oatmeal Okonomiyaki (Gluten-Free Recipe) | Japanese Cooking Video

Okonomiyaki is a Japanese savory pancake made with flour, eggs, cabbage, and a variety of condiments. In this video, I will share with you how to substitute flour with oatmeal. Healthy yet satisfying 😉

Oatmeal Okonomiyaki (Gluten-Free Recipe)


Difficulty: Very Easy
Time: 20min
Number of servings: 1

Ingredients:
30g (1oz.) oats
100ml water
1/2 tsp. Kombu Dashi powder *other soup stock powder is OK
100g (3.5oz.) shredded cabbage
15g (0.5oz.) chopped green onions
1 tsp. Sakuraebi (dried small shrimp) *if you have is OK
1 egg
50g (1.8oz.) thinly sliced pork rib *bacon is OK
cooking oil
* Okonomiyaki sauce
* mayonnaise
* Katsuobushi (bonito flakes)
* Aonori (green laver)

Okonomiyaki Sauce from scratch (about 2 servings): 
2 tbsp. Worcestershire sauce (or Tonkatsu sauce) + 2 tbsp. ketchup + 1 tsp. sugar (or agave syrup)

Directions:
1. In a large microwavable bowl, mix oats, Dashi powder, and water. Microwave at 600w for 1.5min.
2. Add egg, shredded cabbage, chopped green onions, and Sakuraebi (or any condiments are ok), then mix well until the cabbage gets wilted.
3. Heat cooking oil in a frying pan. Spread the batter in a circular shape, place pork meat on top, cover, and cook on low for about 5 minutes. Then flip it over, cover, and cook the other side for 5 minutes until golden brown.
4. Serve on a plate, and arrange the toppings.

Directions:
1. Separate the trays.
2. Make french fries. Mix 2 cups of water. Microwave on Med for 30 sec. Cut into strips.
3. Make hamburger. Mix 2 cups of water to each burger buns and burger steak. Microwave on Med for 30 sec. Slice into 2 pieces.
4. Make cheese slices. Mix 1 cup of water. Flatten out and cut into 2 square pieces.
5. Make ketchup. Mix 2 cups of water.
6. Pile up burgers with cheese and ketchup. Make a flag, French fries holder to complete the meal set.
7. Just add water to make coke.

3-Ingredient Icebox Cookies (Checkerboard/Pinwheel/Marble) | OCHIKERON | Create Eat Happy :)

These tasty, crispy, and buttery cookies are made with only 3 Ingredients! Kids love them!


What I used is Hot Cake Mix. It is a very popular and versatile Japanese pancake mix. You can make cakes, cookies, muffins, or any kind of sweets. 



Hot Cake Mix comes in many brands. In this video I used Morinaga, which is the most recognized one.

Time: 1hr
Number of servings: 15 cookies (1 pattern)

Ingredients:
50g (1.8oz.) butter *room temperature
100g (3.5oz.) Hot Cake Mix
1 tsp. cocoa powder

Directions:
1. Plain Dough: Cream half of the butter (25g) in a bowl with a spatula. Add half of the Hot Cake Mix (50g) and mix well with a spatula. When the dough starts to crumble, use your hands to mix tougher until formed. 
2. Chocolate Dough: Cream half of the butter (25g) in a bowl with a spatula. Add half of the Hot Cake Mix (50g) and cocoa powder, then mix well with a spatula. When the dough starts to crumble, use your hands to mix tougher until formed. 
3. Wrap in plastic wrap and cool in the fridge for about 30 minutes to set. 
4. Please see the video for how to make Checkerboard, Pinwheel, and Marble shapes. Wrap in plastic wrap again and cool and harden in the fridge or freezer for about 15 minutes. *you can keep the dough in the freezer up to a week.
5. Preheat the oven to 170C (340F). Slice the dough into 7mm (0.3inch) thick. Place them on a baking sheet lined with parchment paper.
6. Bake at 170C (340F) for about 15 minutes. You can cool the cookies on the baking sheet!

DAISO Mess Tin (How to Cook Japanese White Rice in a Camping Cookware) | Japanese Cooking Video Recipe

DAISO Mess Tin (500yen) became very popular in June 2020 and still hot now in 2021.



I recorded this video last year btw 😅
It was pretty fun to cook rice outdoor with kids.

Difficulty: Very Easy

Number of servings: 1-2 people

Necessary Equipment:
Mess Tin
solid fuel
trivet
aluminum plate for the fuel
lighter
parchment paper
1 cup = 160g (5.6oz.) Japanese rice
200ml water
cotton gloves
towel

Direction:
1. Wash rice and place it in Mess Tin lined with parchment paper. Add water and leave for 15~30 minutes to let it absorb water. * I did not rest the rice but the result was pretty good.
2. Place the solid fuel on the aluminum plate. Place it in the center of trivet. Set fire, place the Mess Tin, and cook until the fire goes out.
3. Wear the cotton gloves and hold the lid securely. Then flip it over and leave to steam for 15 minutes. If you have a towel wrap Mess Tin to steam. *Flipping over is to cook rice more uniformly but some people say it is not necessary.

TAKOYAKI Party (Octopus Balls) | Japanese Cooking Video Recipe

How you make the batter is the key. My mom uses Takoyaki flour and tasty Dashi broth, then makes the batter bit loose and less salty. In this way we can eat Takoyaki forever with No Sauce 😂👍



Serving Takoyaki with Dashi broth is our typical family style. Sometimes we put sauce then pour over the Dashi but this time, no one used the sauce because the batter was a success. Making the batter from scratch is not easy for the beginners, so I recommend using Takoyaki flour for No Sauce like this one 😉 https://amzn.to/3nKsbDG


Takoyaki is a popular Japanese ball-shaped snack made of batter, diced octopus, tenkasu (tempura scraps), beni shoga (red pickled ginger), and aonegi (green onion), topped with okonomiyaki sauce, mayonnaise, aonori (green laver), and katsuobushi (bonito flakes). Slightly crispy on the outside and creamy inside.

Necessary Equipment:
Takoyaki pan
spouted measuring cup
oil brush (you can make it with paper towel, chopsticks, and rubber band)
steel pick (long bamboo pick is ok)

Ingredients:
200g (7oz.) takoyaki flour
2 egg
600cc water
cooking oil
Fillings
* diced boiled octopus
* chikuwa (fish cake) if you like
* beni shoga (red pickled ginger)
* tenkasu (tempura scraps)
* aonegi (green onion)
Sauce
* okonomiyaki sauce
* mayonnaise
* katsuobushi (bonito flakes)
* aonori (green laver)

Directions:
1. In a bowl, mix takoyaki flour, eggs, and water (add little by little).
2. Heat takoyaki pan and grease the molds with cooking oil. 
3. Pour batter into the molds to the full.
4. Put beni shoga, tenkasu, aonegi, and octopus or chikuwa in each mold.
5. Wait a little until batter on the edge of the molds become cooked. 
6. Flip takoyaki with a pick, fix the form by flipping, and cook until golden brown.

How to serve:
1. Place on a plate and top with okonomiyaki sauce, mayonnaise, katsuobushi, and aonori.
2. With dashi broth. (boil 200cc water and 2 tbsp. Kamada dashi soy sauce)
3. With grated radish and ponzu sauce.
4. With sausage. (cut sausage into half. finely cut outer curve of the sausage and cook. place takoyaki and draw face with nori and ketchup.)

We Japanese also love Korean-style dishes. I did not make it spicy for kids btw. I love dishes seasoned with simple salt, sesame seeds and sesame oil. Smells really good and appetizing. MUST TRY, really good 😋

Number of servings: 2

Ingredients:
200g (7oz.) brussels sprouts
1/4 tsp. salt
1 tbsp. sesame oil
1 tsp. toasted white sesame seeds

Directions:
1. Wash brussels sprouts, trim off the dirty end, then slice down the middle lengthwise.
2. Boil water in a large pot. Add a teaspoon of salt in the water, cook brussels sprouts for about 3 minutes. Drain well in a strainer.
3. Toss with salt, sesame oil, and sesame seeds to finish.

You can keep it in the fridge for 3 days.

Okonomiyaki Cup Set (Fluffy Savory Japanese Pancake) | Japanese Cooking Video Recipe

Cup noodle-like Okonomiyaki Set by Nisshin Flour Milling Inc. It says you don't need many cooking utensils but actually you need a lot of ingredients to get 😅 At least it contains mayo and sauce in addition to the dry ingredients. Anyway, the direction was interesting. Using 14cm (5.5inch) frying pan, no pressing with spatula, resulted satisfying fluffy soufflé texture! I would vote for this trick 👍

Okonomiyaki Cup Set (Fluffy Savory Japanese Pancake Recipe)


Difficulty: Easy
Time: 20min
Number of servings: 2 (14cm/5.5inch) pancakes

Ingredients:
120ml water
220g finely chopped cabbage
100g (3.5oz.) thinly sliced pork rib
1 egg
cooking oil

Directions:
1. Make Batter: In the cup, put Okonomiyaki flour and water. Mix with a spoon, a bit crumbled is okay, do not overmix.
2. Mix: Add chopped cabbage, Agedama (crunchy bits of deep fried flour-batter) and egg, then mix well. *Thinly sliced cabbage is not easy to mix with a spoon, so this is why chopped cabbage is recommended.
3. Cook: In a 14cm/5.5inch frying pan, heat cooking oil, put half of the batter, and place pork slices. Uncover and cook on medium for 4 minutes. Flip it over, COVER, and cook on medium for 5 minutes. Again, flip it over, uncover, and cook on low for 5 minutes.
4. Finish: Put Okonomiyaki sauce, mayonnaise (if you like), Katsuobushi (bonito flakes) and Aonori (green laver) to finish.

Recreated Panda Bento at Ueno Zoo 🐼💕 | Japanese Cooking Video Recipe

We had Panda Bento at Ueno Zoo in Tokyo. It was very cute and looked very easy to make, so we tried to recreate it at home 🐼 If you cannot get the bamboo skin wrapping sheet, you can of course put it in a Bento box. I did so, too for kids' school lunch 😉 



Bamboo Skin Wrapping Sheet Takekawa 竹の皮(大)15cm*60cm 6inch*23inch

To use, soak the Bamboo Sheet 2~3 hours in advance to make it soft. Rinse and wipe off any extra water before you use. Peel off 5mm-wide bamboo string to tie up the wrapped Bento.


At Ueno Zoo, the flavored rice was sticky Mochi rice (Okowa) and it was steamed in a steamer until they serve. We found the rice getting pretty hard and chewy, as they keep it like this for hours, so my kids could not complete it. This is why I made this video using regular rice.

FYI: In Japan, many people own Combination Microwave Oven. I use Convection Grill Microwave: it can grill, steam, bake like a convection oven, and function as a regular microwave. Back in 2005 I used National (now Panasonic) Bistro NE-SS30A for 7 years. Now since 2012 I use Panasonic Bistro NE-R3500 for 8 years. My sister still uses the former one! They are pretty long lasting :)


Most Japanese sweets don't require an oven maybe because it was not common to have an oven at home in old days?!

The BEST Shogayaki (Ginger Pork) Recipe | Japanese Cooking Video Recipe

Shogayaki is a very typical Japanese pan fried pork dish with soy sauce and ginger flavor. Pork slices are seasoned thoroughly, very fragrant yet tasty. The key is to remove from the heat just before they dry out. It goes perfect with white rice. Perfect side dish for Bento lunch box.



Serving with shredded cabbage is the best. And with cucumber slices and/or tomato slices.

1/2 tbsp. cooking oil
shredded cabbage, cucumber/tomato slices

Directions:
1. Season the pork slices with A for about 10 minutes.
2. Heat cooking oil in a frying pan. Drain well and add the pork slices. Cook on medium until nice and brown on one side. Then flip them over.
3. Mix B ver well then add. Add grated ginger and quickly cook on high. Remove from the heat just before the pork slices dry out.
4. Serve with shredded cabbage and some vegetables of your choice if you like.
