California Roll - Video Recipe

I used to work as a waitress at a Japanese restaurant in the U.S. and learned how to make California Roll, looking at the chefs ;) hehe

California Roll

Difficulty: Easy
Time: 60min (includes rice cooking time)
Number of servings: 4 rolls (24 pieces)

Necessary Equipment:
suihanki (Japanese rice cooker)
makisu (bamboo sushi-roll mat)

Ingredients:
1.5 cups uncooked Japanese rice (short-grain rice)
A
* 2 tbsp. rice vinegar
* 2 tsp. sugar
* 2/3 tsp. salt
1 avocado
12 imitation crab sticks
2 nori sheets
toasted sesame seeds
soy sauce
wasabi (Japanese Horseradish Paste) if desired
pickled Ginger if desired

Directions:
1. Cook rice and place in a bowl. Add A while the rice is hot and slice through rice using rice paddle to separate the grains.
2. Peel avocados and cut it into 8 strips.
3. Cover a bamboo sushi-roll mat with plastic wrap. Cut nori sheet in half and place it on the bamboo sushi-roll mat, shiny side down.
4. Spread 1/4 of sushi rice (1.) on the nori sheet using your finger tips, little bit moistened with water. Sprinkle sesame seeds over the sushi rice and turn it over so that the nori sheet facing you.
5. Place avocado and imitation crab sticks lengthwise on the nori sheet. (cut them if too long.)
6. Roll the bamboo mat forward, hold the line of ingredients firmly with your fingers, stop and leave about 1/3 inch of sushi rice, make sure all the ingredients are pressed in, roll it completely, gently press the mat around the roll to shape it (do not squeeze).
7. With a moistened knife (bread knife cuts well!) cut the roll into 6 pieces (re-wet as needed. don't push but pull to cut!).
8. Serve with soy sauce, wasabi, and pickled ginger.

The bread knife, I mentioned in the recipe, is the Miracle Blade which I purchased at eBay 5 years ago. I saw it on TV and wanted to get one! On TV, it could even cut a rock!!! haha

Onigiri - Video Recipe

Rice ball is called "Onigiri" in Japanese. Mostly it's shape is triangle and you can either mix ingredients into rice or fill your favorite ingredient in the rice ball, or both!

There are many furikake (rice seasoning) products at Asian grocery stores, so try out and see how you like it done :D

Onigiri

Difficulty: Very Easy
Time: 3min
Number of servings: 2

Ingredients:
160g (5.7oz.) cooked white Japanese rice
furikake of your choice

Directions:
1. Put steamed rice in a bowl.
2. Mix furikake of your choice. (See the direction on it's package.)
3. Wet your hands in water so that the rice won't stick.
4. Place the seasoned rice on your hand.
5. Form the rice into a triangle by pressing lightly with your palms.

When you use filling…
1. Put steamed rice in a bowl.
2. Wet your hands in water so that the rice won't stick.
3. Place the rice on your hand.
4. Make a hole in the center of the rice and place the filling.
5. Form the rice into a triangle by pressing lightly with your palms.

*You can wrap your onigiri with a strip or a sheet of nori seaweed if you want.

Onion Potato Miso Soup - Video Recipe

I asked my darling what kind of miso soup he wants to eat and he said "onion potato", and yes, my mom cooks this miso soup, too! I think these are pretty popular Japanese miso soup ingredients. I added bacon which gives rich and delicious flavor!!! Please try out :D

Onion Potato Miso Soup

Difficulty: Easy
Time: 20min
Number of servings: 4

Ingredients:
200g (7oz.) potato
100g (3.5oz.) onion
2 bacon strip
3g (0.1oz.) dried wakame seaweed
4 cups (800cc) water
1 tsp. dashi powder
3 tbsp. miso

Directions:
1. Slice potato in half or quarter-rounds. Slice the onion. Cut bacon into thin strips.
2. In Nabe (large casserole), put the water, 1/2 tsp. dashi powder, sliced potato and onion, and bring to boil.
3. Skim the scum (foam), then cover and cook for about 7 minutes on low heat until potato is done.
4. Add bacon, dilute miso in 1/2 cup soup broth and add to the soup, and then add another 1/2 tsp. dashi powder to give a dashi flavor.
5. Add dried wakame seaweed and cook for about 3 minutes.
6. Serve immediately and enjoy!

Microwave Chocolate Chip Cookies - Video Recipe

Microwave Chocolate Chip Cookies

Difficulty: Very Easy
Time: 15min
Number of servings: 16-18 cookies

Ingredients:
100g (3.5oz. = approx. 1/2 cup) butter (softened)
50g (1.7oz. = approx. 5 tbsp.) sugar
1 egg
A
* 130g (4.5oz. = approx. 1.3 cup) all-purpose flour
* 1/2 tsp. baking powder
50g (0.8oz. = approx. 1/4 cup) chocolate chips

Directions:
1. Beat butter and sugar until creamy, add egg and mix well.
2. Sift A in 1. and mix well. Add chocolate chips and mix well again.
3. Drop 4 cookies (at a time) by teaspoon onto waxed paper on microwavable plate or tray.
4. Microwave at 500w for 3min (or less or more depending on the heat of your microwave). Repeat the steps 3 & 4 to complete the rest.

Juicy Tender Simmered Eggplant - Video Recipe

I thank to all my friends who watched my videos. I know it is hard and takes time to generate traffic but I want to focus more on the content as usual like I write my blog posts! Anyways, it is a day-long project to complete one simple video recipe, so I wish I could get used to it soon!!!

BTW, starting from tomorrow till 5/8, we are having Golden Week holiday (GW) in Japan. It's a large consecutive holiday containing public holidays.

Tomorrow my darling and I are going to participate in a 10km (6 miles) marathon!

How to Cook Steamed White Rice (Gohan) - Video Recipe

How to Cook Steamed White Rice (Gohan)

Difficulty: Super Easy
Time: approx. 30min
Number of servings: 4 (2 cups of rice)

Necessary Equipment:
suihanki (Japanese rice cooker)

Ingredients:
2 cups Japanese-style rice
water

Directions:
1. Measure the Rice:
Measure the rice with a measuring cup and put it into the cooking pot. Most of the time the measuring cup comes with your rice cooker!
2. Rinse the Rice:
With cold water, wash the rice. As for 2 cups, wash 4 or 5 times. Water does not have to be clear but somewhat clean.
3. Add Water:
Add water to the appropriate level indicated in the pot. If you have time, let the rice soak in the water at least 30 minutes.
4. Start the Cooker:
Place the pot into the rice cooker. Cover it, and press the button to start.
5. Steam:
When it's done, do not open and let it steam for about 15 minutes.
6. Toss:
Using a rice paddle, toss the rice lightly.
7. Serve:
You can keep the rice warmed until you unplug the rice cooker so serve when other dishes are ready.

Introduction to my Channel

Some of you may already know that I am going to leave my job on May 31st. I have been working at a trading company for 7 years but after the huge quake in Miyagi, I thought it's end of Japan (and I think many people did thought in the same way...) So, I simply thought I want to use my time to share Japanese cooking which is the most thing I can do for myself and for my country at this moment. I believe Japanese dishes are amazingly healthy and delicious and people have to try out at home! And maybe your interest in Japan (consuming Japanese products?!) would help restore Japan after many many years!

So, for a few years, I shared my ideas of Japanese home-cooked meals through my blog but now I decided to share them through my Create Eat Happy :) channel @ YouTube, which I think is more interesting and easier to understand.

I mostly cook Japanese foods in a style using popular Japanese food products which most Japanese homemakers use. So, I hope you enjoy!

BTW, I'm new to speaking English online and editing how to videos using iMovie, so please bear with me until I improve!

I hope I can post my first tutorial as soon as I can!

Microwave Cookies

Do you know that you can bake cookies in microwave?

Just mix and microwave! Easy enough for kids to bake ;)

Use your favorite sprinkles!!! I should have used more of pink ones. Ha-ha!!!

Microwave Cookies

Difficulty: Very Easy
Time: 15min
Number of servings: 20 cookies

Ingredients:
100g (3.5oz.) butter (softened)
50g (1.7oz.) sugar
1 egg
A
* 130g (4.5oz.) all-purpose flour
* 1/2 tsp. baking powder
B
* 25g (0.8oz.) chocolate chips
* 25g (0.8oz.) sprinkles of your choice

Directions:
1. Beat butter and sugar until creamy, add egg and mix well.
2. Sift A in 1. and mix well. Add B and mix well again.
3. Drop 5 cookies (at a time) by teaspoon in a ring onto waxed paper on microwave oven glass tray.
4. Microwave at 500w for 3min or 3 min + 30sec. Repeat the steps 3 & 4 to complete the rest.

Microwave Cookies (Metric Cup Measurement)

Difficulty: Very Easy
Time: 15min
Number of servings: 24 cookies

Note:
1cup = 250ml or 250cc

Ingredients:
1/2cup = 125ml butter (softened) *100g (3.5oz.)
1/4cup = 62.5ml granulated sugar
1 egg
1cup = 250ml cake flour
1/2 tsp. baking powder
1/4cup = 62.5ml chocolate chips

Directions:
1. Beat butter and sugar until creamy, add egg and mix well.
2. Sift cake flour and baking powder in 1. and mix well. Add chocolate chips and mix well again.
3. Drop 4 cookie dough at a time by tablespoon onto parchment paper on microwavable plate or tray. *You don't want to burn your plate, so please line with the parchment paper.
4. Microwave at 500w for 3min (or less or more depending on the heat of your microwave). Repeat the steps 3 & 4 to complete the rest. *It is safe to test from 1 min to see how they come out. Microwave bakes the cookies from inside, so if they are baked golden brown, they are burned X(

*You can also bake them in an oven at 180C (350F) for 15 minutes.

How to Make Tasty Mayo Marinated Tuna and Avocado - Video Recipe

These days, we see on TV that the oil price increase hit deep-sea tuna fishing industry.
Too sad... I love tuna!
How times have changed!!!
I wonder whether we are doing the right things for future generations...




Today I will translate my recipe using "sushi-su" (sushi vinegar or Japanese seasoned rice vinegar). It is a rice vinegar mixed with sugar and salt. The most popular manufacturer of sushi-su is Mizkan! Their products are also available overseas!

The slightly sweet flavor of sushi-su gives a small amount of mayonnaise a rich flavor, which is better for your health ;)

Tasty Mayo Marinated Tuna and Avocado

Difficulty: Very Easy
Time: 5min or less
Number of servings: 2-3

Ingredients:
1 avocado
110g (3.8oz) Sushi grade tuna
A
* 1 tbsp. mayonnaise
* 2 tsp. Sushi-Su (Sushi vinegar)
* 1/2 tbsp. soy sauce
* a bit of Wasabi (Japanese Horseradish Paste) if desired
Kizaminori (finely shredded Nori sheet)

Directions:
1. Mix A in a bowl.
2. Cut avocado and tuna into cubes, place them in the bowl (1.), and toss lightly.
3. Arrange (2.) neatly in a dish, sprinkle with Kizaminori on top, and serve.

Creamy Avocado Doria (Japanese Rice Gratin) - Video Recipe

Yesterday, I had a long meeting at work. It was raining all day long. And is still raining... Because of the weather or whatever, I was so tired that I wasn't able to finish my diary and went to bed.

This morning, I woke up at 6!
My boyfriend had to leave home at 7:30 (to attend on-the-job training), so I made him breakfast.
I left home with him and relaxed at a cafe in front of the station, thinking new recipes for few hours. Since I worked early in the morning, I could organize my ideas by noon! I shopped all the food stuff I needed for tomorrow and came back home.

Is it because of the rain and cold? I have a pain in my knee :( One problem after another... My ankle has just healed!

Anyway. I won't be writing my details! Ha-ha.
Today, I will translate one of my popular dishes!
Up to now, 24 people have made this and said good :)

Creamy Avocado Doria (Japanese Rice Gratin)


Difficulty: Medium
Time: 30min
Number of servings: 20cm (8inch) pie dish

Ingredients:
((Fried Rice))
400g (14oz.) cooked white rice
100g (3.5oz.) thick sliced ham *sausage is okay
50g (1.7oz.) onion
50g (1.7oz.) green pepper
30g (1oz.) carrot
10g (0.3oz.) butter
salt and pepper
((Avocado Cream Sauce)) *200cc ready-made white sauce is okay
100ml consomme soup
100ml soy milk *milk or whipping cream is okay
2 tbsp. flour
1 tbsp. corn starch
1 bay leaf *if you have
10g (0.3oz.) butter
salt and pepper
1 avocado
shredded pizza cheese

Directions:
((Fried Rice))
1. Dice ham into 1/2inch (1cm) pieces. Chop onion, carrot, and green pepper.
2. Heat butter in a pan on medium. Fry the diced ham until browned. Add onion, carrot, and green pepper, and saute until soft.
3. Add cooked white rice, mix well, and season with salt and pepper.
((Avocado Cream Sauce))
1. Dice the avocado.
2. Pour the consommé soup into a pan. Mix flour and corn starch with the same amount of water and add to the soup. Add the soy milk. Add a bay leaf if you like. Heat on low, stir constantly until the sauce thickens.
3. Turn off the heat, add butter, remove the bay leaf, then add the diced avocado.
4. Heat again on low for 2-3 minutes. Season with salt and pepper.
((Finish))
1. Butter an 8inch (20cm) pie dish. Put the fried rice mixture in the bottom, and spread the avocado cream sauce evenly over the rice.
2. Sprinkle with shredded pizza cheese and bake in a preheated oven at 480F (250C) for 10-15 minutes or bake in a toaster oven until the top is lightly browned.

Aojiso Flavored Natto Dressing Salad - Video Recipe

I can't wait for the weekend to begin!!!

Yesterday, I realized that my "Aojiso Flavored Natto Dressing Salad" is now introduced at Riken's Aojiso 20th Anniversary website!

I wrote about this recipe before, but I haven't translated it yet, so today I will :)

Aojiso Flavored Natto Dressing Salad

Difficulty: Very Easy
Time: 3min
Number of servings: 2

Ingredients:
1 package (1.7oz.) ground Natto (traditional Japanese food made from fermented soybeans)
2 tbsp. Riken's non-oil Aojiso (Shiso/perilla leaves) dressing or any other Japanese-style dressing of your choice
2 servings Japanese-style mixed salad pack of your choice
chopped scallion (green onion)
Kizaminori (finely shredded Nori sheet)

Directions:
1. Mix ground Natto and the dressing.
2. Place salad on a platter, pour Natto over, sprinkle with Kizaminori and chopped scallion on top and serve.
