How to Make Easy NO EGG Tiramisu - Video Recipe

Easy Tiramisu

Difficulty: Very Easy
Time: 15min + cooling time
Number of servings: 2

Ingredients:
100ml whipping cream
2 tbsp. granulated sugar
100g (3.5oz.) mascarpone cheese
Coffee Syrup
* 2 tsp. instant coffee
* 1 tbsp. granulated sugar
* 50ml hot water
6 biscuits * ladyfingers (Savoiardi), sponge cake, or Kasutera are okay
unsweetened cocoa powder

Directions:
1. Mix the Coffee Syrup ingredients together. Place the biscuits in a flat container and pour the syrup over them.
2. Beat whipping cream and granulated sugar with an electric mixer until creamy.
3. Add mascarpone cheese and mix with a spatula.
4. Layer the cream and biscuits in serving cups (about 3 layers). Keep in the fridge for at least two hours (or overnight) to set.
5. Sprinkle with cocoa powder before serving.

Chocolate Ganache Spoons

Difficulty: Super Easy
Time: 15min
Number of servings: 12 spoons

Ingredients:
100g (3.5oz.) milk chocolate or chocolate of your choice
2 tbsp. whipping cream
1 tbsp. unsalted butter
sprinkles

Directions:
1. Place the chocolate in a bowl and melt over hot water. Add butter and whipping cream, then mix well. *you can add rum if you like
2. Transfer to the pastry bag with a star tip, then cool in the fridge until you can pipe it out.
3. Pipe it out onto the spoons, decorate them with sprinkles and cool in the fridge to set.

Animal Chocolate Tarte

Difficulty: Easy
Time: 1hr
Number of servings: 6

Ingredients:
((Kit Includes…))
40g (1.4oz.) sweet chocolate
40g (1.4oz.) white chocolate
12 sweet chocolates for ears
6 petit tartes
2 bags sprinkles (chocolate mints and craft sugar)
2 chocolate pens (milk and white)

((What You Need…))
4 tbsp. whipping cream

Directions:
1. Place sweet chocolate and white chocolate in bowls, add 2 tbsp. of whipping cream in each bowl, place them over hot water, then melt the chocolate. *you can add rum if you like
2. Spoon the chocolate mixtures in petit tartes.
3. Place the chocolates for ears and cool in the fridge to set.
4. Draw the face parts with chocolate pens and decorate with sprinkles.
5. Cool in the fridge to set.

Happy Animal Chocolate Truffles

Difficulty: Need Patience
Time: 2 hrs
Number of servings: 9

Ingredients:
((Kit Includes…))
70g (2.5oz.) white chocolate
30g (1.0oz.) milk chocolate for coating
30g (1.0oz.) pink chocolate for coating
30g (1.0oz.) yellow chocolate for coating
1 milk chocolate pen
1 white chocolate pen
1 pink chocolate pen
1 yellow chocolate pen
10 gift bags
5 ties

((What You Need…))
2 tbsp. whipping cream

Directions:
1. Place whipping cream in a bowl, place it over hot water, add white chocolate, then melt the chocolate.
2. Place the bowl over iced water. Mix with a spatula until thick.
3. Spoon the mixture on a plate lined with plastic wrap and cool in the freezer until you can handle them.
4. Quickly make them into balls and cool in the fridge.
5. Melt the chocolates for coating in small bowls.
6. Coat the ganache balls in the melted chocolates and cool in the fridge.
7. On a parchment paper, draw face parts with melted chocolate pens and cool in the fridge.
8. Attach and draw the face parts with chocolate pens and cool in the fridge to set.

Ginger removes the fishy taste and flavor, and makes easy to eat, even for those who don't like mackerel! Also, ginger is great for warming the body up on a cold day.

EASY Mackerel Rice

Difficulty: Super Easy
Time: 1hr
Number of servings: 4

Ingredients:
2 cups uncooked pre-washed Japanese rice
1 small piece sliced ginger
190g (6.7oz.) unflavored canned boiled mackerel
A
* 1 tbsp. soy sauce
* 1 tbsp. Sake
chopped Mitsuba (Japanese wild parsley) if you like

Directions:
1. Wash rice if needed. If you are using pre-washed rice (Musenmai) you don't have to wash it.
2. Place the rice in a pot, add A, add the liquid from the canned mackerel, then add water to the appropriate level indicated in the pot, and mix well.
3. Add the mackerel and sliced ginger on top.
4. Place the pot into the rice cooker. Cover and press the button to start.
5. When it's done, toss the rice lightly using a rice paddle, serve in a dish, top with chopped Mitsuba if you like.

How to Make Country Ma'am Soft and Chewy Cookies (Matcha Green Tea Latte Flavor) - Video Recipe

Fujiya Country Ma'am Chocolate Chip Cookies are very popular soft and chewy cookies in Japan.

Vanilla and chocolate flavor are the ever classic, but there are some limited flavors such as Matcha green tea.

Country Ma'am (Matcha Green Tea Latte Flavor)

Difficulty: Easy
Time: 1hr
Number of servings: 25 cookies

Ingredients:
100g (3.5oz.) unsalted butter *room temperature
50g (1.8oz.) brown sugar
1 egg *room temperature
vanilla extract
160g (5.6oz.) all purpose flour
2 tbsp. Matcha green tea powder
1/2 tsp. baking powder
40g (1.4oz.) white chocolate bar
40g (1.4oz.) milk chocolate bar

Directions:
1. Cream the butter in a large bowl. Add sugar and mix until white and fluffy.
2. Add the beaten egg little by little, and mix well. Add a few drops of vanilla extract and mix well.
3. Sift in flour, Matcha powder, and baking powder, then mix well with a spatula.
4. Wrap in plastic wrap and cool in the fridge for about 30 minutes to set.
5. Break the chocolate bars into small pieces.
6. Divide the dough into 25 pieces. Make it flat and place the chocolates. Roll into a small ball. Then press the center of the ball gently with your finger to make it flat.
7. Bake at 170C (338F) for 10 minutes. Cool the cookies on the baking sheet or a wire rack.

You can keep the cookies in an airtight container or a Ziploc bag for a week.

Ingredients:
350g (12.5oz) thinly sliced beef *chicken, pork or any kind of meat is OK
((Yakiniku Sauce))
* 2 tbsp. Sake
* 2 tbsp. soy sauce
* 2 tbsp. honey
* 1 tbsp. oyster sauce
* 1 tbsp. ground toasted white sesame seeds
* 1 tbsp. sesame oil
* 1 tsp. grated garlic
lettuce
tomato

Directions:
1. Cut the beef into bite-size pieces if necessary, and season with Yakiniku Sauce. *you don't have to soak but cook immediately.
2. Cook the seasoned beef in a frying pan until done.
3. Serve with lettuce and tomato if you like.

How to Make Omurice (Japanese Omelet Rice) - Video Recipe

Omurice is a very popular home cooked meal in Japan.




It is a chicken fried rice wrapped with a thin sheet of crepe-like fried egg.


Kawaii rice dish for kids and perfect for a Bento lunch box!

Before you hate ketchup, TRY Kagome Tomato Ketchup! This is what we use to make Omurice. You can easily find it at a Japanese grocery store.

Omurice (Japanese Omelet Rice)


Difficulty: Easy
Time: 20min
Number of servings: 4

Ingredients:
600g (1.3lb.) warm cooked rice
200g (7oz.) chicken breast without skin
200g (7oz.) onion
50g (1.8oz.) canned sliced mushrooms
8 eggs
cooking oil
tomato ketchup
salt and pepper
cooked broccoli *if you like

Directions:
1. Dice the chicken and chop the onion. Heat 1 tbsp. of cooking oil in a frying pan and cook the chopped onion until tender. Add the diced chicken and cook until no longer pink. Add the sliced mushrooms and 8 tbsp. of ketchup and continue cooking. Stir to coat evenly.
2. Add warm cooked rice, season with salt and pepper. Divide it into 4 portions. *you can wrap the leftover rice in plastic wrap and keep in the freezer for about a week or more.
3. Beat 2 eggs (1 serving) in a bowl and season with salt and pepper. In another frying pan, heat 1/2 tbsp. of cooking oil, spread the egg mixture and make a round sheet of egg. Before the egg is fully cooked, place one portion of the seasoned rice in the middle. Fold up both sides of the egg, then shape it using the edge of the pan. Carefully flip it over onto a plate. *You can use a paper towel to help shape it.
4. Decorate with ketchup on top, and serve with cooked broccoli if you like.

((Sponge Cake & Whipped Cream))

200g (7oz.) marron cream
40g whipped cream
1 tsp. rum *if you like
((Decoration))
whipped cream
sweetened chestnuts

Directions:
((Sweet Potato Cream))
1. Mix marron cream, whipped cream, and rum in a bowl. Transfer it to a pastry bag and snip off the end.
((Decoration))
1. Cut out sponge cake into round pieces, then place them on cupcake liners.
2. Place one sweetened chestnut and whipped cream in the center.
3. Pipe out the marron cream around the whipped cream.
4. Garnish with a sweetened chestnut and put in the fridge until cold.

*You can top with some edible gold leaf for gorgeous finish if you have!

Flower Pork Teriyaki Rolls

Difficulty: Easy
Time: 20min
Number of servings: 8 pieces

Ingredients:
8 thinly sliced pork loin
8 1.3inch-long carrots
salt
A
* 2 tsp. Sake
* 2 tsp. Mirin (sweet Sake)
* 2 tsp. soy sauce
corn or potato starch
1 tsp. cooking oil

Directions:
1. Use a small (2cm=0.8inch) flower-shaped cookie cutter and cut out the carrots. In a boiling water, cook the carrots for 10 minutes, drain well, and cool.
2. Place pork slices, season with a bit of salt, place the cooked carrot on the end of the pork, then start rolling.
3. Heat cooking oil in a frying pan, place the rolls seam side down, you can cover and steam to cook them through for a couple of minutes, then make sure to flip the rolls so that all sides are cooked equally crisp and brown.
4. Add and coat with A, sprinkle with a few pinches of corn or potato starch, and stop the heat when the sauce thickens.
5. When they are cool enough to handle, cut one side to let show the beautiful flower shape. *You can eat the scraps to see how they taste ;)

2. Place sponge cake cut into an almond shape. Brush the cake with syrup if you like (you can add rum to make it fragrant).
3. Place some whipped cream and fruits of your choice.
4. Then place another sheet of sponge cake and brush the cake with syrup if you like.
5. Fold both both sides of the crêpe, then carefully flip it over onto a plate.
6. Put some strawberry jam on top and garnish with mint leaves if you have.

Mini Strawberry Roll Cake (Swiss Roll) using Frying Pan

Difficulty: Easy
Time: 30min
Number of servings: 3 pieces

Necessary Equipment:
18X13cm Tamagoyaki Nabe (rectangular omelet pan)

Ingredients:
((Sponge Cake))
1 egg
1 tbsp. granulated sugar
2 tbsp. cake flour
1 tbsp. cooking oil
((Strawberry Sauce))
2 strawberries
1/2 tsp. granulated sugar
((Filling))
whipped cream
3 cut strawberries

Directions:
((Sponge Cake))
1. Put the egg and granulated sugar in a bowl. Beat with an electric mixer until white and fluffy.
2. Sift in cake flour and mix with a spatula until combined. Then mix in cooking oil.
3. Heat cooking oil in a Tamagoyaki Nabe (rectangular omelet pan). Pour in the batter, cover with aluminum foil, and cook on low for 5~6 minutes. When the surface becomes dry, remove from the pan, wrap with plastic wrap, and cool completely.
((Strawberry Sauce))
1. Strain 2 strawberries through a coarse sieve.
2. Mix in granulated sugar.
((Filling))
1. Cut off one end of the sponge cake diagonally.
2. Spread some strawberry sauce. Spread some whipped cream. Then place some cut strawberries.
3. Place the cut side on the other side, and roll up the cake. Wrap in plastic wrap and cool in the fridge to set.
4. Cut off both ends and cut into 3 pieces.

* Place the cake in the fridge for a few hours ~ a day. The cream will set and you can cut the cake easily. Eat within the next day.

Number of servings: 15cm (6inch) mille crêpe cake

Ingredients:
80g (2.8oz.) cake flour
2 tbsp. granulated sugar
a pinch of salt
2 eggs *room temperature
2 tbsp. melted butter
150ml warm milk
a few drops vanilla extract *if you like
whipped cream
strawberries
mint leaves

Directions:
((10 Crêpes))
1. Sift in flour in a bowl. Add sugar and salt, then mix well with a wire whisk.
2. Add beaten egg little by little and mix well.
3. Add melted butter and mix well.
4. Add warm milk little by little and mix well. Mix in a few drops vanilla extract if you like. Then cover with plastic wrap and leave the batter to stand at room temperature for 30 minutes.
5. Use a nonstick pan, or wipe the surface of the frying pan with a thin layer of cooking oil using a paper towel. Heat the pan on medium, pour half a ladle of the batter into the pan, slowly move the pan in a circular motion to spread the batter evenly.
6. Cook until the edges begin to dry, then flip it over and cook the other side for about 10 seconds.
7. Leave them to cool completely.

1. Chop strawberries.

How to Make NO EGG Microwave Banana Walnut Soft Cookies - Video Recipe

Using this kit, you can avoid burning cookies in the microwave, like the ones I made before.

I made banana walnut cookies, but you can also make other type of cookies as well. If you want to know how to make basic plain butter cookies (as seen on its package), let me know! I will translate the recipe and make a video someday later :)

NO EGG Microwave Banana Walnut Soft Cookies

Difficulty: Very Easy
Time: 15 min
Number of servings: 18 cookies

Ingredients:
70g (2.5oz.) butter *room temperature
30g (1.0oz.) sugar
70g (2.5oz.) banana *net weight
80g (2.8oz.) cake flour *all purpose flour is OK
30g (1.0oz.) walnuts

Directions:
1. Mash banana with a fork. Chop walnuts.
2. Cream the butter and sugar in a bowl with a spatula.
3. Add the mashed banana, sift in flour, then mix until just combined.
4. Mix in the chopped walnuts.
5. Drop the cookie dough using a small ice cream scooper or spoons onto the baking sheet (brown container).
6. Place the lid (pink board) and press to make the cookies flat.
7. Microwave at 500w for 3 minutes OR 600w for 2 minutes 50 seconds. Cool the cookies on the baking sheet or a wire rack.

*You can use one set twice, so repeat the steps to make another batch.
