Heart Cutout Stencil Cookies for Valentine's Day - Video Recipe

I heard this no-egg cookie dough is flaky. Yes it is!!! You must be patient enough to work with. Make sure you leave the dough for at least 1 hour to set ;) You can add 1 tbsp. of beaten egg, however leaving the dough is a must.

Heart Cutout Stencil Cookies

Difficulty: Super Easy
Time: 1.5 hr
Number of servings: 3 (3inch/8cm) sandwich cookies

Ingredients:
1 cup cake flour or all purpose flour (100g=3.5oz.)
5 tbsp. powdered sugar (or 3 tbsp. regular sugar is ok but the texture will become sugary)
1/4 cup butter (50g=1.8oz.)
cocoa powder/Matcha powder
your favorite spreads

Directions:
1. Place flour, powdered sugar, and butter in a large Ziploc bag, then mix well.
2. Roll out the dough in the Ziploc bag to 5mm (0.2 inch) thick. Refrigerate the dough for at least 1 hour to set and chill.
3. Preheat the oven to 170C (338F). Cut out the dough with cookie cutters.
4. Place cocoa powder or Matcha powder in a tea bag. Place striped stencil over the cookie and apply the powder. For the checked pattern, you want to rotate it 90 degrees and apply again. Place the cookies on a cookie sheet lined with parchment paper.
5. Bake at 170C (338F) for about 12 minutes. Cool the cookies on the baking sheet or a wire rack.
6. Spread the whole disks with jam, nutella, or any spread you like, then top with the disks with holes.

Chocolate Bears Taking a Bath for Valentine's Day - Video Recipe

Chocolate Bears Taking a Bath (Valentine's Day Tart Recipe)

Difficulty: Easy
Time: 1-2 hrs (incl. cooling time)
Number of servings: 7

Ingredients:
7 small tart shells
100g (3.5oz.) milk chocolate for the bears
Ganache Bathwater
* 40g (1.4oz.) white chocolate
* 2 tbsp. whipping cream
* 1/2 tsp. any liquor *optional
sugar sprinkles of your choice

Directions:
1. Put chopped milk chocolate in a pastry bag and place it over hot water to melt. Snip off the end and pipe it into the mold. Then put in the fridge or freezer to set.
2. Put whipping cream in a bowl. Place it over hot water until warm. Put chopped white chocolate and leave for a minute until soft. Then mix well. Add liquor to taste if you like.
3. Pour the Ganache Bathwater into the tart shells. Place it in the fridge until they harden up a little bit. Remove the bear chocolates from the mold and place them into the tarts. Decorate with sprinkles of your choice.

If you want to take this to the place where there is no fridge, you can use regular chocolate instead of using chocolate ganache.

Kawaii Deco Cheesecake Bars

Difficulty: Easy
Time: 1.5hrs
Number of servings: 15cm (6inch) square cake pan

Ingredients:
60g (2.1oz.) unsalted butter *room temperature
100g (3.5oz.) cream cheese *room temperature
3 tbsp. granulated sugar
2 beaten eggs
1 tbsp. lemon juice
70g (2.5oz.) mixed dried fruit
90g (3.2oz.) cake flour *all purpose flour is OK
1/2 tsp. baking powder
frosting and toppings of your choice

Directions:
1. Preheat the oven to 356F (180C).
2. Cream the butter and cream cheese in a bowl with a whisk. Add sugar and mix until white and creamy.
3. Add beaten eggs (little by little) and lemon juice, then mix well.
4. Sift in flour and baking powder, then fold in with a spatula. Fold the mixed dried fruit into the mixture as well.
5. Pour the batter into the pan lined with parchment paper and even out the surface. Bake at 356F (180C) for about 30 minutes.
6. Remove the cake from the pan and leave to cool on a wire rack. Cut into 16 squares. Decorate with the frosting and toppings of your choice.

Matcha Green Tea Chocolate Fondue - Video Recipe

I don't have a sweet tooth but I liked it!
The bitter taste of Matcha green tea gives an elegant flavor to the chocolate.

Ghana Fondue Set (イシガキ産業 ガーナフォンデュセット)

Matcha Chocolate Fondue

Difficulty: VERY Easy
Time: 20min
Servings: 2-3 people

Fondue Dipping Sauce:
100g (3.5oz.) chopped white chocolate
50ml soy milk or milk
2 tsp. Matcha (green tea) powder

Directions:
1. Place Matcha in a small bowl. Add soy milk little by little and mix until smooth.
2. Heat Matcha milk in a small pot or a fondue pot.
3. Stop the heat, add chopped chocolate, sit for a minute or two, then stir constantly, until the chocolate is melted and the sauce is smooth
4. If you don't have a fondue pot, you can transfer the sauce into a small dish. Dip in your favorite treats :)

Chocolate Magic Cake (3-Layer Cake from 1 Batter) - Video Recipe

One batter which magically divides into three layers, three different textures: a fudge base, gâteau au chocolat center, and sponge top!

Chocolate Magic Cake (3-Layer Cake from 1 Batter)

Difficulty: Easy
Time: 1.5hrs
Number of servings: 15cm (6inch) square cake pan

Ingredients:
2 eggs
60g (2.1oz.) granulated sugar
1 tbsp. water
60g (2.1oz.) butter
40g (1.4oz.) cake flour
20g (0.7oz.) cocoa powder
a pinch of salt
180ml milk
1/2 tsp. vanilla extract

*to make plain magic cake you can eliminate cocoa powder and use 60g (2.1oz.) cake flour

Directions:
1. Preheat the oven to 160C (320F).
2. Line the cake pan with parchment paper.
3. Melt the butter in a microwave at 600W for 30 seconds.
4. Warm the milk (not hot).
5. Separate the eggs.
6. Place the egg yolks in a bowl. Add half of the sugar (30g) and water, then beat them with an electric mixer until white like mayonnaise.
7. Add butter little by little and mix well.
8. Sift in flour and cocoa powder, add salt, and mix well.
9. Add milk 1/2 at a time, then add vanilla extract and mix well.
10. In a different bowl, whip egg whites and the rest of the granulated sugar (30g) with an electric mixer until firm peaks form.
11. Mix 9 and 10 together for 10 times with a whisk. DO NOT OVER-MIX. Pour the batter into the pan and even out the surface.
12. Bake at 160C (320F) for about 45~50 minutes.
13. Leave to cool completely, then cool in the fridge for 2 hours.

You can dust with powdered sugar and garnish with some fruits if you like :)

Homemade Pocky Chocolate Sticks - Video Recipe

Pocky is a very popular treat produced by the Ezaki Glico Company of Japan!
It is one of the sweets that kids want to make from scratch ;)

Homemade Pocky Chocolate Sticks

Difficulty: Easy
Time: 1hr
Number of servings: about 50 sticks

Ingredients:
100g (3.5oz.) cake flour
1 tbsp. granulated sugar
a pinch of salt
2 tbsp. butter
2 tbsp. milk
chocolate
toppings (diced almonds, chocolate sprinkles, etc…)

Directions:
1. Mix cake flour, granulated sugar, and salt in a bowl.
2. Add in butter, use your fingers to crumble it.
3. Add milk, use a spatula to crumble it again.
4. Wrap into one using plastic wrap. Cool in the fridge for 30 minutes to set.
5. Preheat the oven to 170C (338F). Place the dough between 2 pieces of plastic wrap. Flatten out the dough using a rolling pin to 3mm (0.1 inch) thick. Trim off the excess dough, then cut into thin 3mm (0.1 inch) strips.
6. Bake at 170C (338F) for 13-15 minutes. Leave to cool completely.
7. Dip the biscuit into melted chocolate and coat with sprinkles if you like.

How to Make Strawberry Jelly (with no artificial colors or flavors) - Video Recipe

Strawberry Jelly

Difficulty: VERY Easy
Time: 40min + cooling time
Number of servings: 4 small cups

Ingredients:
150g (5.3oz.) strawberries
6 tbsp. granulated sugar
200ml water
5g (1/2 tbsp.) unflavored gelatin powder

Directions:
1. Dice strawberries.
2. Put granulated sugar and water in a pot. When the sugar melts, stop the heat and soak the strawberries for 30 minutes.
3. When the syrup gets red, drain and separate the syrup and strawberries.
4. Heat the syrup in a microwave or in a pot (80C/176F), then mix in the gelatin powder.
5. Float the bottom of the bowl of the syrup in ice water to cool. When the syrup gets cold, add strawberries and mix well.
6. Serve in cups and cool in the fridge for about an hour to set.

Heart-Shaped Simmered Hamburger Steak

Difficulty: Easy
Time: 40min
Number of servings: 4

Ingredients:
400g (14oz.) ground beef and pork mixture
200g (7oz.) chopped onion
2/3 cup bread crumbs
3 tbsp. milk
salt and pepper
nutmeg
4 tbsp. ketchup
cooking oil
sauce
* 100ml consomme soup
* 4 tbsp. ketchup
* 2 tbsp. Worcestershire sauce
1 tbsp. butter
potato
carrot
broccoli

Directions:
1. Soak bread crumbs with milk.
2. Heat 1 tbsp. of cooking oil in a frying pan and cook the chopped onion until tender. Then set aside to cool.
3. Put ground beef and pork mixture in a bowl and knead well by hand until smooth. *in this way it is easy to shape and becomes juicy when simmered.
4. Add salt, pepper, and nutmeg, then mix well by hand until all ingredients are combined and smooth.
5. Add onion, bread crumbs, and ketchup, then mix well again. Divide it into 4, then form each into flat heart shape.
6. Cut out potatoes and carrots into heart shape. Then cook in boiling water until done. Cook broccoli in boiling water as well.
7. Heat cooking oil in a frying pan and cook on medium until golden brown. *they are going to be simmered, so they don't have to be cooked thoroughly.
8. Add the sauce, cover and cook on low for 10 minutes. Add butter to finish.
9. Serve on a dish and garnish with vegetables.

Heart Shaped Rice Rolls (Sushi Idea)

Difficulty: Easy
Time: 15min
Number of servings: 1 roll (3 pieces)

Ingredients:
100g (3.5oz.) cooked Japanese rice (short-grain rice)
Furikake (rice seasoning) of your choice
1/2 Nori seaweed sheet

Directions:
1. Place cooked Japanese rice in a bowl. Add Furikake (rice seasoning) while the rice is hot and slice through rice using rice paddle to separate the grains. (Cool the rice before you use.)
2. Place a piece of plastic wrap on top of a bamboo sushi-roll mat. Place the seasoned rice, then wrap and shape it into a drop shape. Cut it into half.
3. Place 1/2 Nori sheet, shiny side down, on a bamboo sushi-roll mat. Remove the plastic wrap from the rice and place the rice in the center of Nori sheet.
4. Wrap the rice with Nori sheet. Then gently press the mat around the roll to shape it (do not squeeze).
5. With a moistened knife (bread knife cuts well) cut the roll into 3 pieces (re-wet as needed. don't push but pull to cut).

Easy Tiramisu

Difficulty: Very Easy
Time: 15min + cooling time
Number of servings: 2

Ingredients:
100ml whipping cream
2 tbsp. granulated sugar
100g (3.5oz.) mascarpone cheese
Coffee Syrup
* 2 tsp. instant coffee
* 1 tbsp. granulated sugar
* 50ml hot water
6 biscuits * ladyfingers (Savoiardi), sponge cake, or Kasutera are okay
unsweetened cocoa powder

Directions:
1. Mix the Coffee Syrup ingredients together. Place the biscuits in a flat container and pour the syrup over them.
2. Beat whipping cream and granulated sugar with an electric mixer until creamy.
3. Add mascarpone cheese and mix with a spatula.
4. Layer the cream and biscuits in serving cups (about 3 layers). Keep in the fridge for at least two hours (or overnight) to set.
5. Sprinkle with cocoa powder before serving.

Chocolate Ganache Spoons

Difficulty: Super Easy
Time: 15min
Number of servings: 12 spoons

Ingredients:
100g (3.5oz.) milk chocolate or chocolate of your choice
2 tbsp. whipping cream
1 tbsp. unsalted butter
sprinkles

Directions:
1. Place the chocolate in a bowl and melt over hot water. Add butter and whipping cream, then mix well. *you can add rum if you like
2. Transfer to the pastry bag with a star tip, then cool in the fridge until you can pipe it out.
3. Pipe it out onto the spoons, decorate them with sprinkles and cool in the fridge to set.

Animal Chocolate Tarte

Difficulty: Easy
Time: 1hr
Number of servings: 6

Ingredients:
((Kit Includes…))
40g (1.4oz.) sweet chocolate
40g (1.4oz.) white chocolate
12 sweet chocolates for ears
6 petit tartes
2 bags sprinkles (chocolate mints and craft sugar)
2 chocolate pens (milk and white)

((What You Need…))
4 tbsp. whipping cream

Directions:
1. Place sweet chocolate and white chocolate in bowls, add 2 tbsp. of whipping cream in each bowl, place them over hot water, then melt the chocolate. *you can add rum if you like
2. Spoon the chocolate mixtures in petit tartes.
3. Place the chocolates for ears and cool in the fridge to set.
4. Draw the face parts with chocolate pens and decorate with sprinkles.
5. Cool in the fridge to set.

Happy Animal Chocolate Truffles

Difficulty: Need Patience
Time: 2 hrs
Number of servings: 9

Ingredients:
((Kit Includes…))
70g (2.5oz.) white chocolate
30g (1.0oz.) milk chocolate for coating
30g (1.0oz.) pink chocolate for coating
30g (1.0oz.) yellow chocolate for coating
1 milk chocolate pen
1 white chocolate pen
1 pink chocolate pen
1 yellow chocolate pen
10 gift bags
5 ties

((What You Need…))
2 tbsp. whipping cream

Directions:
1. Place whipping cream in a bowl, place it over hot water, add white chocolate, then melt the chocolate.
2. Place the bowl over iced water. Mix with a spatula until thick.
3. Spoon the mixture on a plate lined with plastic wrap and cool in the freezer until you can handle them.
4. Quickly make them into balls and cool in the fridge.
5. Melt the chocolates for coating in small bowls.
6. Coat the ganache balls in the melted chocolates and cool in the fridge.
7. On a parchment paper, draw face parts with melted chocolate pens and cool in the fridge.
8. Attach and draw the face parts with chocolate pens and cool in the fridge to set.

Mini Strawberry Roll Cake (Swiss Roll) using Frying Pan

Difficulty: Easy
Time: 30min
Number of servings: 3 pieces

Necessary Equipment:
18X13cm Tamagoyaki Nabe (rectangular omelet pan)

Ingredients:
((Sponge Cake))
1 egg
1 tbsp. granulated sugar
2 tbsp. cake flour
1 tbsp. cooking oil
((Strawberry Sauce))
2 strawberries
1/2 tsp. granulated sugar
((Filling))
whipped cream
3 cut strawberries

Directions:
((Sponge Cake))
1. Put the egg and granulated sugar in a bowl. Beat with an electric mixer until white and fluffy.
2. Sift in cake flour and mix with a spatula until combined. Then mix in cooking oil.
3. Heat cooking oil in a Tamagoyaki Nabe (rectangular omelet pan). Pour in the batter, cover with aluminum foil, and cook on low for 5~6 minutes. When the surface becomes dry, remove from the pan, wrap with plastic wrap, and cool completely.
((Strawberry Sauce))
1. Strain 2 strawberries through a coarse sieve.
2. Mix in granulated sugar.
((Filling))
1. Cut off one end of the sponge cake diagonally.
2. Spread some strawberry sauce. Spread some whipped cream. Then place some cut strawberries.
3. Place the cut side on the other side, and roll up the cake. Wrap in plastic wrap and cool in the fridge to set.
4. Cut off both ends and cut into 3 pieces.

* Place the cake in the fridge for a few hours ~ a day. The cream will set and you can cut the cake easily. Eat within the next day.

How to Make Soft and Chewy Chocolate Chip Cookies - Video Recipe

Many people requested me to make chewy cookies, so I am finally making this tutorial.

Soft and Chewy Chocolate Chip Cookies

Difficulty: Very Easy
Time: 30 min
Number of servings: 18 big cookies

Ingredients:
110g (3.8oz) unsalted butter *room temperature
50g (1.8oz.) granulated sugar
100g (3.5oz.) brown sugar
1 egg *room temperature
1 tsp. vanilla extract
170g (oz.) all purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
100g (3.5oz.) chocolate chips
80g (2.8oz.) walnuts

Directions:
1. In a large bowl, cream the butter, granulated sugar, and brown sugar until white and fluffy.
2. In a different bowl, beat an egg and vanilla extract.
3. Add the egg mixture into the large bowl little by little, and mix well.
4. Sift in flour and baking soda, then add salt, and mix with a spatula until combined. *DO NOT overmix
5. Mix in chocolate chips and walnuts.
6. Preheat the oven to 170C (338F). Drop the cookie dough (about 4cm balls) using a small ice cream scooper or spoons onto the baking sheet lined with parchment paper. Cookies should be about 2 inches apart.
7. Bake at 170C (338F) for 10 minutes. Cool the cookies on the baking sheet or a wire rack.

Make sure you don't overcook, otherwise they will become crisp. baking time is the key!

You can keep the cookies in an airtight container or a Ziploc bag for a week.

How to Make EASY Checkerboard Cookies (Ice Box Cookies) - Video Recipe

Just make sure you harden it up in the freezer before you cut. Then you can make this easy and beautiful cookies with no worries ;)

Checkerboard Cookies

Difficulty: Easy
Time: 2hrs
Number of servings: about 40 cookies

Ingredients:
((Vanilla Dough))
50g (1.8oz.) butter *room temperature
2.5 tbsp. granulated sugar
1/2 beaten egg *room temperature
100g (3.5oz.) cake flour
a few drops of vanilla extract
((Chocolate Dough))
50g (1.8oz.) butter *room temperature
2.5 tbsp. granulated sugar
1/2 beaten egg *room temperature
85g (3oz.) cake flour
15g (0.5oz.) cocoa powder
a few drops of vanilla extract

Directions:
((Vanilla Dough))
1. Cream the butter and sugar in a bowl until white and fluffy.
2. Add beaten egg little by little and mix well.
3. Add a few drops of vanilla extract and mix well.
4. Sift in cake flour, then mix well with a spatula. When the dough starts to crumble, use your hands to mix tougher until formed. Then form into an inch and a half square rectangular stick. Wrap in plastic wrap and cool in the freezer for about 30 minutes to set and chill.
((Chocolate Dough))
1. Cream the butter and sugar in a bowl until white and fluffy.
2. Add beaten egg little by little and mix well.
3. Add a few drops of vanilla extract and mix well.
4. Sift in cake flour and cocoa powder, then mix well with a spatula. When the dough starts to crumble, use your hands to mix tougher until formed. Then form into an inch and a half square rectangular stick. Wrap in plastic wrap and cool in the freezer for about 30 minutes to set and chill.
((Molding)
1. Slice each dough lengthwise into 3 pieces. Swap the middle dough. Then Slice each set lengthwise into 3 pieces and swap the middle dough again. *slightly defrost the dough if they are too hard to cut.
2. Wrap in plastic wrap again and cool in the freezer for about 15 minutes to set and chill. *you can keep the dough in the freezer up to a week
3. Preheat the oven to 170C (338F). Slice the dough into 5mm (0.2 inch) thick. Place them on a baking sheet lined with parchment paper.
4. Bake at 170C (338F) for about 15 minutes. Cool the cookies on the baking sheet or a wire rack.
