Ingredients:
1 Japanese cucumber
4 tbsp. well drained canned tuna
1 tbsp. mayonnaise
1/3 tsp. salt
pepper

Directions:
1. Slice the cucumber into thin rounds (you can use a vegetable slicer if you have). Sprinkle with a bit of salt. When they become limp, drain well and gently squeeze with a paper towel. *Removing excess water from the cucumber will keep the salad from becoming wet.
2. Combine cucumber slices, tuna, mayo and pepper in one bowl to finish.

Ingredients
1 cabbage leaf
bacon or sausage
1 egg
salt and pepper
cooking oil
toast optional

Directions:
1. Shred the cabbage.
2. Thinly slice bacon or decorative cut sausages.
3. Heat cooking oil in a frying pan, cook bacon or sausage and cabbage, then season with salt and pepper.
4. Shape the cabbage mixture into nest and break an egg into it.
5. Add 2 tbsp. of water around the nest, cover and cook on low until desired doneness.

Yasai no Nikumaki (Pork Vegetable Rolls Recipe)

Ingredients:
10 thin pork slices
20 potato strips
20 carrot strips
20 green beans
3 tbsp. soy sauce
3 tbsp. Mirin (sweet Sake)

*If you don't have Mirin, use 3 tsp of sugar instead to add the sweetness. To remove the smell, adding grated ginger is perfect!

Directions:
1. Place the vegetables (2 strips each) on the end of the pork close to you and start rolling. Repeat with the remaining ingredients.
2. Place the rolls in the pot, add water until cover, bring to a boil and remove the foam.
3. Add soy sauce and Mirin, cover with a drop-lid, and allow to simmer for about 15 minutes until cooked through.

How to Make Katsudon (Pork Cutlet Rice Bowl) Recipe | VR180 Cooking | Japanese Recipe Video

Katsudon is a popular Japanese rice bowl (as seen in YURI ON ICE), made with rice topped with Tonkatsu coated with savory tasty eggs. You can simmer the Tonkatsu in the eggs but to enjoy crispy Tonkatsu, pour the simmered eggs over the Tonkatsu. Yummy!!!

Time: 30min
Number of servings: 1

Ingredients
((Tonkatsu))
1 (100g) boneless pork chops
salt and pepper
* flour
* beaten egg
* Panko (bread crumbs)
vegetable oil for deep frying
((Katsudon))
1 Tonkatsu
1 egg
30g (1/6) onion
* 75ml (1/3 cup) water
* a pinch of Hon-Dashi (packaged Dashi powder)
* 2 tsp. soy sauce
* 2 tsp. Mirin (sweet Sake)
* 1 tsp. sugar
Mitsuba (Japanese wild parsley) if you have
1 bowl of cooked white rice

Directions:
((Tonkatsu))
1. Slash the fat rimming of pork chops in several places to keep the meat from curling or shrinking when deep-fried. Pound the pork chops with a meat mallet or a rolling pin to make them tender. Season both sides with salt and pepper.
2. Flour the pork chops lightly, dip in beaten egg, then coat with Panko. Use one hand for coating flour and Panko, and use the other to dip in egg to keep one of your hands dry.
3. Deep fry them in oil at 170C (340F) until thoroughly cooked golden brown. (Turn the pork over to cook evenly.) Remove the Tonkatsu from the oil and drain.
((Katsudon))
1. Cut Tonkatsu into small pieces. Slice the onion. Chop Mitsuba (Japanese wild parsley) into small pieces.
2. Put water, Hon-Dashi (packaged Dashi powder), soy sauce, Mirin (sweet Sake) in a pan and bring to a boil.
3. Add onion slices and simmer on low heat for a few minutes until tender.
4. Beat an egg, bring the soup to a boil, pour the egg over the onions, then lightly mix with the chopsticks. Quickly add Mitsuba leaf (Japanese wild parsley), cover, then turn off the heat.
5. Put steamed rice in a rice bowl, place Tonkatsu pieces, pour the simmered egg on top.

Number of servings: 2 servings
16cm (6inch) Frying Pan

Ingredients:
1 cup (125g) all purpose flour
100ml milk
1 tbsp. butter
1 tbsp. sugar
a pinch of salt
1 tsp. dry yeast

Directions:
1. In a microwavable bowl, put butter and milk, microwave on medium for 20 sec, and mix well.
2. Add dry yeast, sugar, and salt, then mix well.
3. Sift in all purpose flour, then mix well.
4. Knead well, divide it into 6 pieces, then make small balls.
5. Line the frying pan with a piece of parchment paper, place the dough, cover, put on low for 30 sec, stop the heat, then leave for 20 minutes until they have doubled or tripled in size.
6. Put on low for 15 minutes.
7. Stop the heat, do NOT open, and leave for 15 minutes (cook with the remaining heat to finish).

Ingredients
((Sushi Rice))
340g (12oz.) cooked Japanese rice
2 tbsp. vinegar
1.5 tbsp. sugar
1/2 tsp. salt
((Fillings))
Tamagoyaki (2eggs/1 tbsp.milk/1 tbsp.sugar/a pinch of salt)
cucumber
Shiso leaves
avocado
Ikura (salmon roe)
Ebi (cooked shrimp sashimi)
Maguro (tuna sashimi)
smoked salmon
sausages
Kanikama (crab meat)
mayonnaise
Natto (fermented soybeans)
((Finish))
condiments of your choice (chopped onions, sesame seeds, etc)
5 Nori seaweed sheets
Wasabi (Japanese horseradish)
soy sauce

Directions:
1. Mix vinegar, sugar, and salt very well to make Sushi vinegar.
2. Add the Sushi vinegar while the rice is still hot and slice through the rice using a rice paddle to separate the grains. Let the rice cool.
3. Cut Nori sheets into quarters. Prepare your fillings in thin 3-4-inch strips.
4. Place a sheet of Nori on your hand. Place Sushi rice, fillings, and condiments of your choice. Then roll it into a cone shape. Eat with Wasabi soy sauce!

For kids, you can secure the end of the roll with a piece of rice.
If you want to make a larger Temaki (roll more fillings), cut Nori into half.

Ingredients:
((Curry Flavored Rice))
300g (10.6oz.) cooked Japanese rice (short-grain rice)
120g (4.2oz.) chopped sausages
80g (1/2) chopped onion
2tsp. curry powder
1/3 tsp. salt
pepper
2 tbsp. butter
((White Sauce))
3 tbsp. butter
3 tbsp. flour
300ml soy milk or milk
1/3 tsp. salt
pepper
((Meat Sauce))

Directions:
1. Heat butter in a frying pan and sauté the chopped onion until tender. Add and heat chopped sausages, then add rice. Season with curry powder, salt and pepper.
2. Put butter in a small pot, sift in flour, and cook on low very well mixing constantly. Add soy milk, put on medium. When it becomes to a boil, turn down to low, add salt and pepper, and cook until thick mixing constantly.
3. In a pie dish, put the curry flavored rice, white sauce, pizza cheese, and meat sauce. Cook in the oven until the cheese melts and golden brown.

Ring Cookies 💍 | Japanese Cooking Video Recipe

Delicious crisp golden butter cookies are perfect for kids' treat 😋 I made this with my daughter 💕

Difficulty: Very Easy
Time: 30min + cooling time
Number of servings: about 40 rings

I used 3cm (1.2 inch) and 2cm (0.8 inch) round cookie cutters, then the ring became big for kids (perfect for adults). You may want to use smaller cookie cutters for kids 😅

Ingredients:
200g (1 cup) cake flour *all purpose is OK
100g (1/2 cup) unsalted butter *room temperature
60g (1/2 cup) powdered sugar (confectioner's sugar)
a pinch of salt
1/2 beaten egg *room temperature
a few drops of vanilla extract
white chocolate pen
sugar toppings

Directions:
1. Cream the butter with a whisk in a bowl. Sift in powdered sugar, add a pinch of salt, then mix well until smooth.
2. Add beaten egg little by little and mix well. Mix in vanilla extract if preferred.
3. Sift in flour then cut through with a spatula to mix and form it into one. Using a plastic wrap, spread out the dough into a flat sheet. Put in the fridge to set for 30 minutes.
4. Cut out the dough while cold. When the dough becomes warm and soft, put in the fridge. Cold dough is easy to handle.
5. Bake in the oven at 170C (340F) for 12 minutes. Place the cookies on a wire wrack to cool.
6. When the cookies are cold, attach the rings using white chocolate and sprinkle with the sugar toppings. (see the video)

Number of servings: 4

Ingredients:
2 bacon strips
200g (7oz.) potato
100g (3.5oz.) onion
4 cups (800cc) water
2 tbsp. Miso
2 tsp. Dashi powder

Directions:
1. Cut bacon into small pieces. Slice potato into quarter-rounds. Slice the onion.
2. In a large pot, put water, Dashi powder, potatoes and onions. Bring to boil, then remove the foam (to remove the bad taste). Add bacon, cover, and cook on medium for 3 minutes.
3. Check if the potatoes are done. Turn down to low and dilute Miso with a little hot broth and then mix it back into the soup. Heat until hot to finish.

EASIEST EVER PURIN (Japanese Crème Caramel) 😆💖




Crème caramel (flan) is called Purin (プリン "pudding") in Japanese.

3 Ingredients Japanese Crème Caramel (EASY Purin Recipe)


Difficulty: Very Easy
Time: 30min + cooling time
Number of servings: 4 100ml Microwavable Glass Cups

Ingredients:
2 eggs
250ml milk
3 tbsp. sugar

If you need caramel, mix 2 tbsp. sugar and 2 tbsp. water in a saucepan by tilting the pan. Simmer until the sauce is browned. (Do not mix with a spoon or the sugar will recrystallize.) Add 1 tbsp. water to stop hardening.

Directions:
1. Mix all ingredients in a spouted measuring cup or a bowl. Add vanilla extract if you prefer.
2. Strain through a strainer into the cups.
3. Cover with aluminum foil (or plastic wrap is ok).
4. Add water in the pan (just about a half-inch across the bottom of the cups).
5. Cover the pan and bring to a boil. When it becomes to a boil, turn down to low and cook for 10 minutes. Stop the heat (do not open the lid) and steam for 10 minutes with the remaining heat.
6. If you need caramel, you can put it on top then put in the fridge until cold.

Note: If you want to slip out the Purin, grease the cups with some oil or butter.

Number of servings: 1 small pizza

Ingredients:
1 instant Ramen noodles
shrimp
broccoli
grape tomatoes
80g (10 tbsp.) pizza cheese for crust
pizza cheese or grated parmesan cheese for topping

Directions:
1. Cook the ramen noodles in a boiling water for 2 minutes. Drain well in a strainer.
2. Mix 1/2 packet of seasoning powder and 40g (5 tbsp.) pizza cheese.
3. Place 40g (5 tbsp.) pizza cheese in a frying pan. Cook on medium low for 2 minutes until crisp golden in the bottom then flip it over. Place the noodles, press flat, flip it over, and cook on medium for 3 minutes. Flip it over, place the toppings, cover and cook on low for 10 minutes.

Tonpeiyaki (QUICK Okonomiyaki) 5 MIN Recipe | Japanese Cooking Video

Tonpeiyaki is a quick style of Okonomiyaki (Japanese savory pancake), kind of Japanese pork piccata!

Tonpeiyaki is a very popular Teppanyaki in Kansai area. You can also find this dish at Izakaya restaurants in Japan.




You can add more ingredients to arrange this recipe but simple is delicious!

Tonpeiyaki (QUICK Okonomiyaki) 5 MIN Recipe


Difficulty: VERY Easy
Time: 5 min
Number of servings: 1

Ingredients:
60g (2.1oz.) thinly sliced pork rib
2 eggs
handful of shredded cabbage
salt and pepper
1 tbsp. chopped green onions
1 tbsp. Tenkasu (Tempura scraps)
* Okonomiyaki or Tonkatsu sauce
* mayonnaise
* Katsuobushi (bonito flakes)
* Aonori (green laver)

Okonomiyaki Sauce from scratch:
2 tbsp. Worcestershire sauce + 2 tbsp. ketchup + 1 tsp. honey (or sugar)

Directions:
1. Cut pork into bite-size pieces. Cook in a frying pan, season with salt and pepper, then set aside.
2. In the same frying pan, pour in beaten eggs, when the eggs are half done, place the cabbage, cooked pork, green onions, and Tenkasu (tempura scraps if you have it makes the dish very tasty). Fold in half and cook thoroughly.
3. Cut into bite-size pieces, place them on a plate, top with Okonomiyaki sauce, mayonnaise, Katsuobushi, and Aonori to finish.

350g (12oz) chicken breast (no skin)

* 1 tbsp. soy sauce
* 1 tsp. grated garlic
* 1 tsp. grated ginger
* 1 tbsp. sake
* 1 tsp. sesame oil
* salt and pepper
batter
* 4 tbsp. flour
* 4 tbsp. katakuriko (potato starch or corn starch)
1 egg
vegetable oil for deep frying
ketchup, mustard, mayonnaise, lemon juice if preferred

Directions:
1. Remove skin of the chicken. Make incisions to flatten chicken. Then slice.
2. Mix the seasonings, place the chicken, and marinate for 15 minutes or more.
3. Mix the batter in one bowl, beat 1 egg in another bowl.
4. Dust the chicken with batter, dip in beaten egg, then dust again with batter.
5. Pour about 2cm/1in oil into a frying pan. Put on medium (the temperature is at about 180C/350F), cover, and cook for 3 minutes. Open the lid, flip them over, cover again and cook for another 3 minutes. Then open the lid, put on high and cook for 1 minute until crisp golden.
6. Drain well, place on a dish, serve with some ketchup, mustard, and lemon juice if preferred.
