Miso Potato (Vegan Poutine-Like Dish) | Japanese Cooking Video Recipe

Very tasty crunchy yet delicious deep fried potatoes with Miso sauce. 



Originated in Chichibu city of Saitama prefecture in Japan. It is a very popular school lunch menu in Japan 😋 Perfect for snack time ❤️


Miso Potato (Japanese Vegan Poutine-Like Dish)

---------------------------------

Miso Potato


Difficulty: Very Easy
Time: 15min
Number of servings: 4

Ingredients:
500g (1.1lb) potatoes
80g (2.8oz.) flour
100ml water
deep frying oil
* 3 tbsp. Miso
* 2 tbsp. sugar
* 1 tbsp. Mirin (sweet Sake)
* 1 tbsp. Sake

Directions:
1. Mix Miso, sugar, Mirin, and Sake in a bowl. Cover and microwave on medium for a minute.
2. Peel the potatoes and cut them into bite-size pieces. Place them on a microwavable dish and microwave on medium for 5 minutes.
3. Mix flour and water in a bowl. Quickly add it into the potatoes and coat them. *Please deep fry immediately. Do not leave long or they stick together.
4. Deep fry in oil for 2~3 minutes until golden brown.
5. Drizzle with the Miso sauce to finish.

Aquarium Field Trip Bento Lunch Box (Easy Kawaii Onigiri Idea) | Japanese Cooking Video Recipe

This video will show you how to make quick and cute Aquarium Field Trip Bento lunch box.



My son went to Yokohama Hakkeijima Sea Paradise Aquarium from his kindergarten, so I made this Bento. Easy for moms to make in the busy morning and easy for kids to eat outside with their friends :)

How to Make Tonjiru (Miso Soup with Pork and Vegetables) | Japanese Cooking Video Recipe

Tonjiru (sometimes called Butajiru) is a Japanese pork and vegetable Miso soup. Remarkably delicious family meal 😋 



Some people cut vegetables into quarter round. Some people cut into chunks. It is up to you. Vegetables become very tasty by slowly cooking in pork Miso soup. It takes a bit time to cook but worth the time 😉

Tonjiru (Miso Soup with Pork and Vegetables)


Difficulty: Easy
Time: 1.5hr
Number of servings: 4

Ingredients:
100g (3.5oz.) thinly sliced pork rib
1 tbsp. ginger juice
150g (5.2oz.) Daikon radish
150g (5.2oz.) carrot
1/2 Gobo (burdock root)
200g (7oz.) Konnyaku (yam cake)
200g (7oz.) potatoes
4 Shiitake mushrooms
1 long onion
4 tbsp. Awase Miso
1/2 tsp. sugar

Directions:
1. Cut pork into an inch long pieces.
2. Slice Gobo   and soak in water for 5 minutes. Tear Konnyaku into small chunks. Cut Daikon, carrot, potatoes, long onion, and Shiitake mushrooms into small chunks. *Cut all the vegetables about the same size.
3. In a large pot, put pork, ginger juice, and 800ml water. Bring to a boil, turn down to low, and remove the foam.
4. Add Daikon, carrot, burdock root, and Konnyaku, then cook on medium for 15 minutes, removing the foam. 
5. Dilute the Miso with the cooking liquid, add half of it, add potatoes, then cook for 20 minutes.
6. Add Shiitake mushrooms and long onion, and simmer for 15 minutes. Add the rest of the Miso and sugar to taste. Cook until hot to finish.

Difficulty: Easy
Time: 30min
Number of servings: 8 medium (2.4inches/6cm) baking cups

Ingredients:
4 (400g/14oz.) peeled ripe bananas
300g (10.5oz.) hot cake mix

Directions:
1. In a large bowl, mash the bananas with a fork until mostly smooth. Some lumps are okay. 
2. Add hot cake mix and mix well. If the batter is thick, you can add a bit of water or milk.
3. Spoon the batter into the baking cups.
4. Bake in the oven at 180C (350F) for about 20 minutes.

Easy Halloween Sushi Layer Cake (Recipe) | Japanese Cooking Video

Orange and black Halloween colors are pretty gorgeous 🧡🖤



Salmon and salmon roe goes perfect together. Sweet shredded egg crepe and crunchy toasted black sesame seeds makes it very tasty yet addictive. You must try out this simple Sushi cake 😉

Easy Halloween Sushi Layer Cake (Recipe)


Difficulty: Easy
Time: 30min
Number of servings: 4 people = 11cm (4.3inch) round cake pan

Ingredients:
700g (1.5lb) cooked Japanese short grain rice
Sushi vinegar as directed on its package (mine was 6 tbsp.) 
((Kinshi Tamago: shredded egg crepe))
1 egg
1 tsp. sugar
a pinch of salt
((Toppings I used))
smoked salmon
toasted black sesame seeds
Nori art or simple shredded Nori sheet is OK
boiled eggs
sliced cheese
grape tomatoes
boiled eggs
Ikura (salmon roe)

Directions:
((Sushi Rice))
Add the Sushi vinegar while the rice is still hot and slice through the rice using a rice paddle to separate the grains. Let the rice cool. Use a fan to cool the rice if available to create an added shine on your Sushi rice but it is optional.
((Kinshi Tamago: shredded egg crepe))
Season an egg with sugar and salt. Strain with a strainer. Heat cooking oil in a frying pan and make a thin omelet. Leave to cool on a plate, then cut into thin strips. 
((Sushi Cake))
Wet the cake pan (or line with plastic wrap). Place the Sushi rice and press down flat with a rice paddle or a spoon. Sprinkle with toasted black sesame seeds (make sure you cover the edges). Place the Sushi rice again. Place smoked salmon, Sushi rice, black sesame seeds, and Sushi rice one after another and flatten as well. Turn the cake pan upside down onto a plate to remove the rice.
((Toppings))
Spread Kinshi Tamago (shredded egg crepe) over the rice. Be creative and decorate the Sushi cake with any black and orange food ingredients. Simple toppings are absolutely Okay.

Keema curry using ground soy meat and minced vegetables. Tasty yet delicious way to intake a lot of vegetables 😋

Vegan Soy Meat Keema Curry and Rice Recipe


Difficulty: Very Easy
Time: 30min
Number of servings: 4

Ingredients:
100g (3.5oz.) dried soy meat mince
200g (7oz.) minced onion
150g (5.2oz.) minced Shimeji mushrooms
100g (3.5oz.) minced carrot
300g (10.5oz.) diced tomatoes
* 1 tbsp. grated ginger
* 1 clove grated garlic
* 2 tbsp. curry powder
* 2 tbsp. Awase Miso
* 1 tbsp. soy sauce
* 2 tbsp. tomato ketchup
* 2 tbsp. water
1 tbsp. olive oil
4 servings of cooked rice

Directions:
1. In a boiling water, cook dried soy meat mince for 3 minutes. Or as directed on its package. Wash well (change water for a few times) to remove the bad smell, then drain well.
2. Mince the vegetables. Mix the seasonings in a bowl.
3. Heat olive oil in a deep frying pan or a pot. Saute the minced onion until soft.
4. Add minced Shimeji mushrooms, minced carrot, diced tomatoes, and soy meat mince, and cook until heated.
5. Add the seasonings and simmer for about 10 minutes.
6. Serve the curry on a hot bed of rice.

You can rest in the pan for over an hour or keep in the fridge overnight, so that the vegetables can absorb the flavor. You can keep in the fridge for 2-3 days.

Vegan Karaage (Soy Meat Fried Chicken) Recipe | OCHIKERON | Japanese Cooking Video

I made Karaage (Japanese fried chicken) using soy meat chunks. Very juicy, tasty yet delicious! Must TRY 👍

Vegan Karaage (Soy Meat Fried Chicken) Recipe


Difficulty: Very Easy
Time: 40min (incl. marinating time)
Number of servings: 4

Ingredients:
100g (3.5oz.) dried soy meat blocks
* 2 tbsp. soy sauce
* 2 tbsp. sake
* 1 tbsp. grated ginger
* 1 clove grated garlic
* 1 tsp. sesame oil
2 tbsp. Katakuriko (potato starch)
deep frying oil
lemon wedges if preferred

Directions:
1. In a boiling water, cook dried soy meat blocks for 4 minutes. Or as directed on its package. Wash well (change water for a few times) to remove the bad smell, then drain well.
2. Mix the seasonings in a bowl and marinate the soy meat for about 30 minutes. Overnight is okay, longer makes them tasty.
3. Drain lightly (do not squeeze out the marinade liquid), coat with Katakuriko in a plastic bag.
4. Deep fry in oil at 180C (350F) until crisp golden brown.
5. Serve with lemon wedges if you like.

2-Ingredient French Crullers | OCHIKERON | Japanese Cooking Video Recipe

You just need Tempura flour and mayonnaise. 
Double or triple this recipe to make as many as you want 😊



Whipped cream or ice cream filling is really good. It adds vanilla flavor and sweetness. Makes it moist and super delicious. Must try!


2-Ingredient French Crullers

French Crullers are the top-selling donut at Mister Donut (donut shop) in Japan. Simple sugar glaze is my kids' favorite but in this video they ended up playing with the cream 😅

FYI: Tempura Flour (any brand is OK):

2-Ingredient French Crullers


Difficulty: Very Easy
Time: 15min
Number of servings: 3 (3-Inch-round 1.5-Inch-height)

Ingredients:
160g (5.6oz.) Tempura flour
4 tbsp. mayonnaise
100ml water

deep frying oil
powdered sugar (confectioner's sugar)
whipped cream

Directions:
1. Put Tempura flour, mayonnaise, and 100ml water in a bowl and mix well with a spatula.
2. Transfer the batter into a pastry bag fitted with a large (0.6inch) star tip (Do NOT use a round tip or the batter will explode!!!). Pipe out 2 layers of rings onto a parchment paper.
3. Deep fry in oil at 180C (350F) until crisp golden brown.
4. Dust with powdered sugar or drizzle with sugar glaze (mix 3 tbsp. powdered sugar & 1 tsp. water). You can slice and place whipped cream or ice cream between the layers if you like!

I haven't tried but I think you can bake in oven at 180C (350F) for 15 minutes.

Maguro Zuke Don (Marinated Tuna Fish Rice Bowl) Recipe | Japanese Cooking Video


Maguro means Tuna, Zuke means to marinate, and Don is short for Donburi which means rice bowl. Marinated fresh Sashimi-grade tuna served on a rice bowl. Quick yet delicious!


You can of course use Salmon, scallop, or any other Sashimi-grade fish instead! Enjoy :)


Hachibiki (Japanese Rubyfish)

BTW, you can eat Chrysanthemum. For Sashimi you float the petals on soy sauce. For rice bowl, you can sprinkle with the petals if you like.

Difficulty: Very Easy
Time: 15min
Number of servings: 1

Ingredients:
90g (3.2oz) Sashimi Grade Yellowfin Ahi Tuna
1/2 tbsp. Sake
1/2 tbsp. Mirin (sweet Sake)
1 tbsp. soy sauce
Wasabi if you like
1 bowl of rice
Kizaminori (shredded Nori sheet)
green onions and/or Shiso leaf
toasted white sesame seeds

Directions:
1. In a small pot, boil down Sake and Mirin to reduce the alcohol content.
2. Add soy sauce and Wasabi, then mix well. (Wasabi will be not spicy if you mix and leave for a while, so kids can eat it with only nice Wasabi aroma.)
3. Marinate tuna Sashimi and put in the fridge for about 10 minutes. (Do not marinate too long or tuna will be salty.)
4. Meanwhile, put rice in a rice bowl and leave to cool. (Cold rice is better because it won't warm up the fish.)
5. Put Kizaminori on the rice, arrange Tuna sashimi, garnish with green onions or Shiso leaves, and sprinkle with toasted white sesame seeds. You can place a bit of fresh Wasabi on top if you like.

Heart-Shaped Corn Dogs | Japanese Cooking Video Recipe

Basically you just need only 2 ingredients. Hot Cake Mix (Japanese pancake mix) and sausages!


 

I used Hot Cake Mix for the batter to save time. Hot Cake Mix is perfect for corn dog batter. It is a very popular and versatile Japanese pancake mix. You can make cakes, cookies, muffins, or any kind of sweets. 


Hot Cake Mix is available at Asian grocery stores overseas. Morinaga and Showa are popular brands.

 

Adding cocoa powder or Matcha powder to the batter is a great idea 👍

Heart-Shaped Corn Dogs (2 Ingredients)


Difficulty: Easy
Time: 15min
Number of servings: 20 sausages (5cm/2in long) OR 10 sausages (10cm/4in long)

Ingredients:
50g (1.7oz) hot cake mix
50ml water or milk
20 sausages (5cm/2in long) OR 10 sausages (10cm/4in long)
deep frying oil
ketchup if you want

Directions:
1. In a bowl, mix hot cake mix and water very well.
2. Cut a sausage diagonally and join the cut sides reversely to form a heart shape. Put through an uncooked spaghetti piece or a toothpick to hold them together.
3. Dip the heart-shaped sausages in the batter and deep fry at 170C (340F) until golden.
4. Carefully remove the toothpicks. Spaghetti will become soft, so you don't need to remove it. Serve with ketchup.
