How to Make Tonkatsu Sauce (Vegan Cutlet BBQ Sauce) とんかつソースの作り方 | Japanese Cooking Recipe

You can make Tonkatsu Sauce with the seasonings on hand. My kids say homemade one is really good. It tastes better than the store-bought ones 😉

Tonkatsu Sauce


Difficulty: VERY Easy
Time: 1min
Number of servings: 2 servings

Ingredients:
2 tbsp. Kagome tomato ketchup  *Any brand is okay. Tomato Sauce in Australia is ok.
1 tsp. sugar *Any sugar, honey, or syrup is okay to balance out the flavor. If you think your ketchup is too sweet, you can skip it.
1 tbsp. soy sauce
1 tbsp. Worcestershire sauce *You can skip it if you don't have it. It adds sour taste and spicy flavor.
1 tbsp. ground white sesame seeds

Directions:
1. If you have a mortar and pestle, grind white sesame seeds. In this way you can enjoy the peak aroma and flavor.
2. You can measure the seasonings by eye! It won't go too wrong. Mix all the ingredients together.
3. Serve with any deep-fried food.

We got some fresh broad beans from Niigata prefecture. In this video I want to show you how to prepare broad beans. Kids ate very well 😉

Difficulty: Very Easy
Time: 10 min
Number of servings: N/A

Ingredients:
fava beans
2 cups water
2 tsp. salt
1 tbsp. Sake/white wine *optional to remove the smell

Directions:
1. Snap the pod in half and open with your fingers to get the beans out.
2. Once you got the beans out of their shells, make a tiny incision into the opposite side of black line of each beans using the heel of the knife.
3. Bring water to a boil, in a frying pan is okay. Add salt and Sake if needed. Cook for 2 minutes. Drain well and leave to cool. Now the skin should slip off fairly easily by pinching between your thumb and forefinger. 

You can keep in the freezer for about a month.

Quick Sunomono (Japanese Cucumber Salad Recipe)


Difficulty: Very Easy
Time: 5min
Number of servings: 2

Ingredients:
1 Japanese cucumber (fresh one is better)
a dash of sesame oil
toasted white sesame seeds

Directions:
1. Rub cucumber with salt and wash with water to smooth out the prickly surface of fresh cucumber. Simply washing is OK.
2. Cut cucumber into thick slices and add 1 tbsp. Mild Vinegar with Dashi and 1 tbsp. Mizkan Shiro Dashi Sauce Professional Taste, and a dash of sesame oil. You can serve it immediately, but I always leave overnight till the cucumber slices absorb the flavor.
3. Sprinkle with toasted white sesame seeds to finish.

One of my viewers from Taiwan, a mom at my son's kindergarten, asked me the easiest way to make Tamagoyaki. She said she wants to make non-brown, easy yet fluffy Tamagoyaki. I thought everyone already knows this idea. I make this Tamagoyaki in busy morning. No-Fail! 


I used Mizkan Shiro Dashi Sauce Professional Taste

Difficulty: Very Easy
Time: 15min
Number of servings: 2-3 (6 pieces)

Ingredients:
3 eggs
3 tbsp. water

Directions:
1. Beat eggs in a bowl, add the Dashi product and water, and mix well. Strain through a sieve if you can for nice and smooth texture.
2. Heat cooking oil in a Tamagoyaki Nabe (rectangular omelette pan), pour a thin layer of egg mixture in the pan and spread over the surface. Cook until half done, roll up the egg, and move it to one end. Pour in another thin layer of egg mixture and let it flow under the rolled egg also. Cook until half done and again roll up the egg. Repeat this until all the mixture is gone.
3. Wrap the rolled egg while hot in a bamboo sushi roll mat (or plastic wrap) to even out the shape. Allow it to cool and cut it into bite-size pieces.

Vegan Japanese Tofu Curry and Rice (カレーの王子さま) | OCHIKERON | Create Eat Happy :)

We put plenty of star carrots and heart-shaped potatoes. Instead of meat, we used Tofu. Recommended for vegan/vegetarian people 👍

Vegan Japanese Tofu Curry and Rice


Difficulty: Easy
Time: 30min
Number of servings: 6 Servings

Ingredients:
200g (7.0oz.) firm Tofu 
300g (10.6oz.) onion
100g (3.5oz.) carrot
100g (3.5oz.) potato
1 tbsp. cooking oil
500ml water
rice

Directions:
1. Thinly slice the onion. Cut out the potato and carrot with cookie cutters and finely chop the rest. Cut Tofu into bite-sized pieces.
2. Heat cooking oil in a pot and cook the onions and chopped vegetables on medium until tender.
3. Add water and bring to a boil, remove the foam, add tofu and simmer on low for 15 minutes.
4. Turn off the heat, add the roux, leave it for a while and remove the tofu while melting the roux (Tofu was simmered to drain the water, we want to take them out so that they won't crumble).
5. Put on low again and simmer for 5 minutes until thickened.
6. Cook the heart-shaped potatoes and star-shaped carrots in a different pot of boiling water for a few minutes.
7. Put back the cooked vegetables and Tofu in curry and cook until warm.
8. Serve the curry over rice.

2. Heat cooking oil in a frying pan and cook bacon. Add Daikon leaves and cook until soft.
3. Season with soy sauce, salt and pepper to finish.

Time: 30min + soaking time if you have
Number of servings: 2

Ingredients:
1 cup = 150g (5.3oz.) Japanese-style rice
200~220ml water

Directions:
1. Wash rice if necessary. Use pre-washed rice to save water!
2. Put rice and water in a plastic bag and tie securely. Soak for an hour or so for better result. If you are in hurry, you can cook it right away.
3. In a pot, place water and a plate so that the plastic bag won't touch the pot directly. Bring to a boil. Then place the plastic bag and cook on low for about 20 minutes. Stop the heat and leave in the pot for 10 minutes.

Easy Christmas Sushi Layer Cake | Japanese Cooking Video Recipe

Red and green Christmas colors are pretty gorgeous ❤️💚



Salmon and salmon roe goes perfect together. Piped out mashed potato and grape tomatoes make it look just like Strawberry shortcake. You must try out this simple Sushi cake 🎂

Easy Christmas Sushi Layer Cake (Recipe)


Difficulty: Easy
Time: 30min
Number of servings: 4 people = 11cm (4.3inch) round cake pan

Ingredients:
((Sushi Rice)) 
Sushi vinegar (use as directed on its package)
White: 200g (7oz.) Rice + 2 tbsp. Sushi Vinegar
Green: 100g (3.5oz.) Rice + 1 tbsp. Sushi Vinegar + 1 tsp. Aonori (green laver) 
Red: 100g (3.5oz.) Rice + Red Deco Furi (rice seasoning) for the red rice 
((Mashed Potato))
25g potato flakes for instant mashed potato
100ml hot water
you can add, Sushi vinegar or butter, salt and pepper to taste
((Toppings I used))
sliced cheese
Nori art or any Christmas cake topper
grape tomatoes
smoked salmon
Ikura (salmon roe)

Directions:
((Rice))
White Layer:
Add the Sushi vinegar (2 tbsp.) while the rice (200g) is still hot and slice through the rice using a rice paddle to separate the grains.
Green Layer:
Add the Sushi vinegar (1 tbsp.) and 1 tsp. Aonori (green laver) while the rice (100g) is still hot and slice through the rice using a rice paddle to separate the grains.
Red Layer:
Mix 1 package of Red Deco Furi (rice seasoning) while the rice (100g) is still hot and slice through the rice using a rice paddle to separate the grains.
((Mashed Potato))
Place potato flakes in a bowl. Add hot water and mix well. You can add, Sushi vinegar or butter, salt and pepper to taste.
((Sushi Cake))
Wet the cake pan (or line with plastic wrap). Place the Sushi rice and press down flat with a rice paddle or a spoon. Make sure the first layer is white (as a cream). Then place red, white, and green, one after another and flatten as well. Turn the cake pan upside down onto a plate to remove the rice.
((Toppings))
Put the mashed potato in a piping bag with a star tip, pipe out on the Sushi cake. Garnish with grape tomatoes, smoked salmon, and salmon roe. Finish with Christmas Nori Art on sliced cheese. Simple Christmas cake toppers are absolutely gorgeous. Be creative and decorate the Sushi cake.

Vegan Maguro Zuke Don (Tekka Don Rice Bowl) | Japanese Cooking Video Recipe

Tomato looks just like Maguro (Tuna) and Avocado with soy sauce tastes just like Maguro (Tuna) 😋



(Maguro means Tuna, Zuke means to marinate, and Don is short for Donburi which means rice bowl. Marinated fresh Sashimi-grade tuna served on a rice bowl.)


You can either serve on top of regular white rice or Sushi rice. It is up to your preference 😋

Vegan Maguro Zuke Don (Tekka Don Rice Bowl)


Difficulty: Very Easy
Time: 15min
Number of servings: 2

Ingredients:
300g (10.6oz.) tomato
2 tsp. soy sauce
2 tsp. vinegar
1 tsp. sesame oil
1/2 Avocado
cooked white rice or Sushi rice
Kizaminori (shredded Nori sheet)
toasted white sesame seeds
green onions and/or Shiso leaf
Wasabi if you like

Directions:
1. Put tomatoes in boiling water and poke with a toothpick to peel the skin. Place them in cold water then peel.
2. Mix soy sauce, vinegar, and sesame oil in a cooking tray.
3. Cut tomatoes into wedges (remove the seeds) and marinate them for about 10 minutes. (Do not marinate too long or they become waterly.)
4. Meanwhile, put rice in a rice bowl and leave to cool. (Cold rice is better because it won't warm up the vegetables.) Slice Avocado.
5. Put Kizaminori on the rice, arrange marinated Tomato and Avocado, pour over some marinade, garnish with green onions or Shiso leaves if you have, and sprinkle with toasted white sesame seeds. You can place a bit of fresh Wasabi on top if you like.

How to Make Tonjiru (Miso Soup with Pork and Vegetables) | Japanese Cooking Video Recipe

Tonjiru (sometimes called Butajiru) is a Japanese pork and vegetable Miso soup. Remarkably delicious family meal 😋 



Some people cut vegetables into quarter round. Some people cut into chunks. It is up to you. Vegetables become very tasty by slowly cooking in pork Miso soup. It takes a bit time to cook but worth the time 😉

Tonjiru (Miso Soup with Pork and Vegetables)


Difficulty: Easy
Time: 1.5hr
Number of servings: 4

Ingredients:
100g (3.5oz.) thinly sliced pork rib
1 tbsp. ginger juice
150g (5.2oz.) Daikon radish
150g (5.2oz.) carrot
1/2 Gobo (burdock root)
200g (7oz.) Konnyaku (yam cake)
200g (7oz.) potatoes
4 Shiitake mushrooms
1 long onion
4 tbsp. Awase Miso
1/2 tsp. sugar

Directions:
1. Cut pork into an inch long pieces.
2. Slice Gobo   and soak in water for 5 minutes. Tear Konnyaku into small chunks. Cut Daikon, carrot, potatoes, long onion, and Shiitake mushrooms into small chunks. *Cut all the vegetables about the same size.
3. In a large pot, put pork, ginger juice, and 800ml water. Bring to a boil, turn down to low, and remove the foam.
4. Add Daikon, carrot, burdock root, and Konnyaku, then cook on medium for 15 minutes, removing the foam. 
5. Dilute the Miso with the cooking liquid, add half of it, add potatoes, then cook for 20 minutes.
6. Add Shiitake mushrooms and long onion, and simmer for 15 minutes. Add the rest of the Miso and sugar to taste. Cook until hot to finish.

Maguro Zuke Don (Marinated Tuna Fish Rice Bowl) Recipe | Japanese Cooking Video


Maguro means Tuna, Zuke means to marinate, and Don is short for Donburi which means rice bowl. Marinated fresh Sashimi-grade tuna served on a rice bowl. Quick yet delicious!


You can of course use Salmon, scallop, or any other Sashimi-grade fish instead! Enjoy :)


Hachibiki (Japanese Rubyfish)

BTW, you can eat Chrysanthemum. For Sashimi you float the petals on soy sauce. For rice bowl, you can sprinkle with the petals if you like.

Maguro Zuke Don (Marinated Tuna Fish Rice Bowl)


Difficulty: Very Easy
Time: 15min
Number of servings: 1

Ingredients:
90g (3.2oz) Sashimi Grade Yellowfin Ahi Tuna
1/2 tbsp. Sake
1/2 tbsp. Mirin (sweet Sake)
1 tbsp. soy sauce
Wasabi if you like
1 bowl of rice
Kizaminori (shredded Nori sheet)
green onions and/or Shiso leaf
toasted white sesame seeds

Directions:
1. In a small pot, boil down Sake and Mirin to reduce the alcohol content.
2. Add soy sauce and Wasabi, then mix well. (Wasabi will be not spicy if you mix and leave for a while, so kids can eat it with only nice Wasabi aroma.)
3. Marinate tuna Sashimi and put in the fridge for about 10 minutes. (Do not marinate too long or tuna will be salty.)
4. Meanwhile, put rice in a rice bowl and leave to cool. (Cold rice is better because it won't warm up the fish.)
5. Put Kizaminori on the rice, arrange Tuna sashimi, garnish with green onions or Shiso leaves, and sprinkle with toasted white sesame seeds. You can place a bit of fresh Wasabi on top if you like.

Edamame Corn Flowing Somen Noodles (At-Home Fun Party Rainbow LED Machine) Recipe | Japanese Cooking Video

Kids requested me to make Edamame and Corn Nagashi Somen (Flowing Somen). 



Edamame and corn were pretty easy to catch and eat 😉 Kids enjoyed it very much 👍

Somen is perfect refreshing food for hot and humid summer season :)


Sōmen (素麺) is very thin Japanese noodles made of wheat flour. The noodles are usually served cold in summer with a dashi flavored tasty dipping sauce called Mentsuyu (めんつゆ).

Difficulty: Very Easy
Time: 15min
Number of servings: N/A

Ingredients:
((Toppings)) 
frozen edamame and canned kernel corn are OK! (Fibers may get stuck in the machine, so you want to be careful.)
Other Topping Ideas:
cooked shrimp 
goldfish tomatoes (optional)
cucumber slices (or thin strips)
ham
shredded chicken
Yakibuta (braised pork) is good
Shiso leaves
Naganegi (long onion slices)
Aonegi (chopped green onions)
ginger strips
etc...
((Somen Dipping Sauce))
((Somen Noodles))
dried Somen noodles

Directions:
((Somen Dipping Sauce))
I used this Mentsuyu (noodle soup base) btw: ヤマサ ぱぱっとちゃんと これ!うま!!つゆ
Dilute with water as instructed on its package.
((Somen Noodles))
Boil water in a large pot. Add dried Somen noodles in boiling water and gently stir noodles with chopsticks. Cook Somen noodles according to your package (mine was 2 min). Drain the noodles in a strainer and rinse the noodles with hands under running water. 

NOTE: You can put about 100g (usually 2 bundles) of Somen noodles in the machine or the noodles won't flow.

((Somen Dipping Sauce from scratch))
* 300ml Dashi broth (using packaged dashi powder saves time)
* 4 tbsp. Mirin (sweet Sake)
* 4 tbsp. soy sauce
In a pot, bring Dashi broth, Mirin, and soy sauce to a boil. You can also microwave until it comes to a boil. Cool in the fridge until ready to serve.
