Oatmeal Okonomiyaki (Gluten-Free Recipe) | Japanese Cooking Video

Okonomiyaki is a Japanese savory pancake made with flour, eggs, cabbage, and a variety of condiments. In this video, I will share with you how to substitute flour with oatmeal. Healthy yet satisfying 😉

Oatmeal Okonomiyaki (Gluten-Free Recipe)


Difficulty: Very Easy
Time: 20min
Number of servings: 1

Ingredients:
30g (1oz.) oats
100ml water
1/2 tsp. Kombu Dashi powder *other soup stock powder is OK
100g (3.5oz.) shredded cabbage
15g (0.5oz.) chopped green onions
1 tsp. Sakuraebi (dried small shrimp) *if you have is OK
1 egg
50g (1.8oz.) thinly sliced pork rib *bacon is OK
cooking oil
* Okonomiyaki sauce
* mayonnaise
* Katsuobushi (bonito flakes)
* Aonori (green laver)

Okonomiyaki Sauce from scratch (about 2 servings): 
2 tbsp. Worcestershire sauce (or Tonkatsu sauce) + 2 tbsp. ketchup + 1 tsp. sugar (or agave syrup)

Directions:
1. In a large microwavable bowl, mix oats, Dashi powder, and water. Microwave at 600w for 1.5min.
2. Add egg, shredded cabbage, chopped green onions, and Sakuraebi (or any condiments are ok), then mix well until the cabbage gets wilted.
3. Heat cooking oil in a frying pan. Spread the batter in a circular shape, place pork meat on top, cover, and cook on low for about 5 minutes. Then flip it over, cover, and cook the other side for 5 minutes until golden brown.
4. Serve on a plate, and arrange the toppings.

Ingredients:
1 onion (200g/7oz.)
1 tbsp. Katakuriko (potato starch) or corn starch
salt and pepper
sesame oil / olive oil / cooking oil

Directions:
1. Finely chop the onion.
2. Season with salt and pepper and mix Katakuriko (potato starch) or corn starch.
3. Heat sesame oil in a frying pan, spread the onion mixture, cover and cook on low for 5 minutes.
4. Flip it over, cover, and cook on low for another 5 minutes.
5. Eat it with soy sauce, salt, or anything you like!

Catch Fish and Eat Challenge 海上釣り堀 太公望 | Japanese Cooking Video Recipe


Taikoubou is located in Atami-city, 10 minutes walk from Ajiro station. It is a marine fish pond where you can catch fish and eat there. You can choose how you would like the fish to be cooked: Sashimi, Grilled/Broiled, Simmered, or Deep-Fried.


We caught 3 Sea Breams and 6 Japanese Horse Mackerels.




Unfortunately the restaurant was very crowded and we had to wait over 2 hours... so we decided to send the fish home (my mom's house). I asked her to cook it on the next day.

TAKOYAKI Party (Octopus Balls) | Japanese Cooking Video Recipe

How you make the batter is the key. My mom uses Takoyaki flour and tasty Dashi broth, then makes the batter bit loose and less salty. In this way we can eat Takoyaki forever with No Sauce 😂👍



Serving Takoyaki with Dashi broth is our typical family style. Sometimes we put sauce then pour over the Dashi but this time, no one used the sauce because the batter was a success. Making the batter from scratch is not easy for the beginners, so I recommend using Takoyaki flour for No Sauce like this one 😉 https://amzn.to/3nKsbDG


Takoyaki is a popular Japanese ball-shaped snack made of batter, diced octopus, tenkasu (tempura scraps), beni shoga (red pickled ginger), and aonegi (green onion), topped with okonomiyaki sauce, mayonnaise, aonori (green laver), and katsuobushi (bonito flakes). Slightly crispy on the outside and creamy inside.

How to Make Takoyaki


Difficulty: Easy

Number of servings: 40 pieces

Necessary Equipment:
Takoyaki pan
spouted measuring cup
oil brush (you can make it with paper towel, chopsticks, and rubber band)
steel pick (long bamboo pick is ok)

Ingredients:
200g (7oz.) takoyaki flour
2 egg
600cc water
cooking oil
Fillings
* diced boiled octopus
* chikuwa (fish cake) if you like
* beni shoga (red pickled ginger)
* tenkasu (tempura scraps)
* aonegi (green onion)
Sauce
* okonomiyaki sauce
* mayonnaise
* katsuobushi (bonito flakes)
* aonori (green laver)

Directions:
1. In a bowl, mix takoyaki flour, eggs, and water (add little by little).
2. Heat takoyaki pan and grease the molds with cooking oil. 
3. Pour batter into the molds to the full.
4. Put beni shoga, tenkasu, aonegi, and octopus or chikuwa in each mold.
5. Wait a little until batter on the edge of the molds become cooked. 
6. Flip takoyaki with a pick, fix the form by flipping, and cook until golden brown.

How to serve:
1. Place on a plate and top with okonomiyaki sauce, mayonnaise, katsuobushi, and aonori.
2. With dashi broth. (boil 200cc water and 2 tbsp. Kamada dashi soy sauce)
3. With grated radish and ponzu sauce.
4. With sausage. (cut sausage into half. finely cut outer curve of the sausage and cook. place takoyaki and draw face with nori and ketchup.)

Okonomiyaki Cup Set (Fluffy Savory Japanese Pancake) | Japanese Cooking Video Recipe

Cup noodle-like Okonomiyaki Set by Nisshin Flour Milling Inc. It says you don't need many cooking utensils but actually you need a lot of ingredients to get 😅 At least it contains mayo and sauce in addition to the dry ingredients. Anyway, the direction was interesting. Using 14cm (5.5inch) frying pan, no pressing with spatula, resulted satisfying fluffy soufflé texture! I would vote for this trick 👍

Number of servings: 2 (14cm/5.5inch) pancakes

Ingredients:
120ml water
220g finely chopped cabbage
100g (3.5oz.) thinly sliced pork rib
1 egg
cooking oil

Directions:
1. Make Batter: In the cup, put Okonomiyaki flour and water. Mix with a spoon, a bit crumbled is okay, do not overmix.
2. Mix: Add chopped cabbage, Agedama (crunchy bits of deep fried flour-batter) and egg, then mix well. *Thinly sliced cabbage is not easy to mix with a spoon, so this is why chopped cabbage is recommended.
3. Cook: In a 14cm/5.5inch frying pan, heat cooking oil, put half of the batter, and place pork slices. Uncover and cook on medium for 4 minutes. Flip it over, COVER, and cook on medium for 5 minutes. Again, flip it over, uncover, and cook on low for 5 minutes.
4. Finish: Put Okonomiyaki sauce, mayonnaise (if you like), Katsuobushi (bonito flakes) and Aonori (green laver) to finish.

Natto Pizza (Low-Carb Diet Recipe) | Japanese Cooking Video

FYI: Natto is a traditional Japanese food made from fermented soybeans. People say it has strong smell and bitter taste, but give it a try! It tastes pretty good, super healthy and nutritious! It helps prevent clot formation and reduce blood pressure. It may benefit weight loss and offer protection against cancer. Better to love it 👍 Yes it is totally not a food to take it out with you. Something you want to enjoy at home! BTW, once there was Natto with no smell but I don't see it anymore. Maybe people thought they don't want to spend extra budget on it?!

Difficulty: Very Easy

Number of servings: 1~2

Ingredients:
1 big Aburaage (deep-fried Tofu)
1 packages Natto
pizza cheese
chopped green onion

Directions:
1. Mix Natto, Natto sauce, Karashi (Japanese mustard) if you like.
2. Wash Aburaage with running water (to remove excess oil), drain well, and cut into bite-size pieces. 
3. Place Natto and cheese. Bake in the oven until crisp brown. Sprinkle with chopped green onion to finish.

*You can top with shredded Nori sheet and/or Shichimi. You can arrange this in the way you like 😉

Daikon Radish Steak | Japanese Cooking Video Recipe

Juicy tasty yet delicious. Very easy to make. Perfect for vegan/vegetarian people as well. This recipe works with turnip, too. Quick and easy way to use up radishes 😋



Smoky flavor of pan fried Daikon is very appetizing. Better pan fried since soy sauce is easy to burn. Microwave or parboil Daikon first to cook faster 😉

Difficulty: Easy

Number of servings: 4

Ingredients
500g (1.1lb) Daikon radish
A
* 1 tbsp. Sake (or white wine is ok)
* 1 tbsp. Mirin (sweet Sake)
* 1 tbsp. soy sauce
chopped green onion
cooking oil

Directions:
1. Cut Daikon radish into 1.5cm (0.5inch) thick round slices. Make cross incisions on both sides so that they soak flavor well. Microwave at 500w for 5 minutes. You can parboil Daikon with Kome no Togijiru (or water with a tablespoon of rice) for 15 minutes (it makes Daikon clear colored and less bitter). Drain well and remove excess water with paper towel.
2. Heat cooking oil in a frying pan. Cook both sides of Daikon on medium until slightly browned.
3. Dress with A until shiny fragrant (it turns bitter if you burn too much but it is tasty in this way, it is up to your preference).
4. Place on a dish, and garnish with green onions to finish.

* Instead of Teriyaki sauce, you can simply season with salt and pepper! It is delicious, too.

Hokkaido Pork Ketchup | Japanese Cooking Video Recipe

Pork Ketchup is a local gourmet of Hokkaido Sunagawa-city. Simple yet delicious. Easy to eat flavor which goes perfect with white rice and also a perfect dish for Bento lunch box 😋



Tomato Ketchup is going to be the main ingredient, so I wish you can try this dish using Kagome Tomato Ketchup to get this flavor right 😉 But of course your favorite ketchup is ok❣️

Ingredients
450g (1lb) shaved pork meat
250g (1/2lb) onion
1/2 tbsp. cooking oil
A
* 2 tbsp. Sake or white wine
* 1 tbsp. soy sauce
* 1 tsp. grated garlic if you like
salt and pepper
1 tbsp. Hokkaido butter if you like

Directions:
1. Slice onion into wedges. Mix A very well.
2. Heat cooking oil in a frying pan. Add onion wedges and saute until coated with oil. 
3. Add shaved pork meat and cook through.
4. Add A seasonings then cook well to remove the sour flavor.
5. Season with salt and pepper. Finish with butter if you like.

Tortilla de Patatas Española (4-Ingredient Spanish Potato Omelette) Receta | OCHIKERON | Create Eat Happy :)

Dificultad: muy fácil
Tiempo: 30 minutos
Número de porciones: 4

Ingredients:
400g (14oz.) patatas
4 huevos
1/2 cdta. sal
3 cda. aceite de oliva

Directions:
1. Lavar y pelar las patatas y cortarlas en rodajas finas. Revuelve con aceite de oliva dentro de un tazón.
2. Poner en una sartén, tapar y cocinar a fuego lento por 10 minutos. Mezclar una o dos veces mientras se cocina.
3. Machacar un poco y dejar enfriar.
4. Batir los huevos en un bol y ponemos de sal y patatas.
5. Calienta aceite de oliva en una sartén 18cm. Vierte la mezcla de huevo y espera unos segundos a fuego medio hasta que se cocine por los bordes. Tapar y cocinar a fuego lento por 10 minutos.
6. Voltear la tortilla con un plato, dejarla deslizar de nuevo a la sartén, y cocinar a fuego lento por 3 minutos.

Ingredients:
400g (14oz.) potatoes
4 eggs
1/2 tsp. salt
3 tbsp. olive oil

Directions:
1. Wash, peel, and slice the potatoes (using a slicer is easy). Toss with olive oil.
2. Put in a pan, cover, and cook on low for 10 minutes, mix once or twice while cooking.
3. Stop the heat, mash a little-bit to give a flaky texture, then leave to cool.
4. Beat eggs in a bowl, season with salt, then mix in the cooked potato slices.
5. Heat olive oil in a 18cm (7inch) frying pan, pour in the egg mixture and cook on medium. When the edges become dry, cover, turn down to low, and cook for 5 minutes.
6. Stop the heat, lift the edges with a spatula, then quickly flip the tortilla onto the plate. Gently slide tortilla back into the pan and cook until set for about 3 minutes. Slide or flip the tortilla onto a clean plate to serve.

Chive Dumplings (My Mom's BEST Gyoza Recipe)


Difficulty: Easy
Time: 30min
Number of servings: 25 pieces using 3inch Gyoza wrappers

Ingredients:
25 (3inch) Gyoza wrappers
2 bundles (200g/7oz.) Chinese chives
200g (7oz.) onion
150g (5.3oz.) ground beef and pork mixture
1 tbsp. sesame oil
1 tbsp. sugar
salt and pepper
cooking oil
Special sesame sauce:
* 2 tbsp. soy sauce
* 3 tbsp. rice vinegar
* 2 tbsp. ground white sesame seeds
* 1 tbsp. sesame oil
* Karashi (Japanese mustard) if you like

Directions:
1. Chop Chinese chives and onion.
2. Heat cooking oil in a frying pan and saute the onion until soft. Add the ground meat then cook until no longer pink.
3. Mix in sugar to make it tasty. Add the chopped Chinese chives and cook until soft, then season with salt and pepper. Mix in sesame oil and leave to cool.
4. Meanwhile make the sesame sauce.
5. Place the filling in the center of Gyoza wrapper. Put water along the edge of the wrapper by fingers, fold into semi circle, gather the front side of the wrapper and seal.
6. Heat cooking oil if you are NOT using a non-stick pan. Place Gyoza and cook on high heat until the bottoms become brown. Turn the heat down to medium, add 50ml water (or about 1/3 of their hight), cover and steam the gyoza on med-high heat until the water is almost gone. Uncover and cook on high heat until the water is gone and crisp.
7. Dip in the special sesame sauce to eat.

Pari-Pari Baked Potato Chips (Healthy, Crispy yet Delicious) | Japanese Cooking Video Recipe

Pari-Pari means crispy in Japanese.

I think getting an oil spray was my mistake 😅 Spraying will make a mess... You can toss with some oil in a bowl if you like to coat potatoes evenly 👍

Ingredients:
400g (14oz.) potatoes
olive oil or other oil of your choice
500ml water
1 tsp. salt

Directions:
1. Wash, peel, and slice the potatoes (using a slicer is easy). Soak in salt water for 10 minutes to remove excess starch, release moisture, and add salt flavor.
2. Pat dry with paper towels. Place the sliced potatoes on the baking sheet lined with parchment paper. Spray the potatoes with oil OR you can put the sliced potatoes in a bowl, toss them with oil, then place them on parchment paper.
3. Bake in the oven at 200C (400F) until crisp golden brown for about 15 minutes.
4. Remove the brown slices, flip them over if needed, and cook more minutes until crisp golden brown. Keep an eye on them because they will brown up quickly.
5. Evenly sprinkle with salt to finish if needed.

Potato Takoyaki without a special pan (Easy Quick Recipe) | Japanese Cooking Video

Crisp outside and slightly chewy inside, just like Takoyaki. Very easy to make with ingredients on hand without a special pan.

Potato Takoyaki without a special pan (Easy Quick Recipe)


Difficulty: VERY Easy
Time: 30min
Number of servings: 12 pieces

Ingredients:
400g (14oz.) potato
4 tbsp. Katakuriko (potato starch) or corn starch
1/2 tsp. salt
cooking oil
((toppings))
* Takoyaki sauce or Okonomiyaki sauce
* mayonnaise
* Katsuobushi (bonito flakes)
* Aonori (green laver)

Okonomiyaki Sauce from scratch:
2 tbsp. Worcestershire sauce + 2 tbsp. ketchup + 1 tsp. honey (or sugar)

Directions:
1. Peel and cut potatoes into chunks, wash, and boil them on medium until soft (insert a skewer to check if they are done). Drain and mash them while hot. You can also microwave potatoes for 8 minutes to cook.
2. Mix in salt and Katakuriko (potato starch) or corn starch.
3. Roll into about 12 balls. You can put the fillings if you like but not necessary.
4. Heat about 0.1 inch oil in a frying pan, then roll around to cook. More sides you cook, rounder the balls become.
5. Serve on a dish, and top with sauce, mayonnaise, Katsuobushi, and Aonori.

Baked Chicken with Crispy Mayo Potato Flakes (Recipe)


Difficulty: VERY Easy
Time: 40min
Number of servings: 4 servings (20cm/8inch pie dish)

Ingredients:
600g (1.3lb) chicken thigh with no skin
1/2 tsp. salt
pepper
butter or olive oil
Kewpie mayonnaise
50g (US 1cup) potato flakes
parsley flakes

Directions:
1. Cut chicken with no skin into bite-size pieces, and season with salt and pepper.
2. Butter the pie dish and cover the bottom with some potato flakes.
3. Place the chicken. Put the remaining potato flakes on top. Bake in oven at 220C (420F) for 20-30min.
4. Sprinkle with parsley flakes to finish.

5 Ingredients! Ume Shiso Chicken Gyoza Dumplings (梅しそ鶏餃子 Healthy Jiaozi) | Japanese Cooking Video Recipe

Only 5 ingredients 👍 Saltiness of Umeboshi (pickled plums) and flavor of Aojiso (Japanese perilla leaves) are simple, refreshing, yet delicious 😋 Use ground chicken to make it healthy but any meat will do!!!

5 Ingredients! Ume Shiso Chicken Gyoza Dumplings (梅しそ鶏餃子 Healthy Jiaozi Recipe)


Difficulty: Easy
Time: 30min
Number of servings: 25 pieces using 3inch Gyoza wrappers

Ingredients:
200g (7oz.) ground chicken *thigh/breast any portion is ok
100g (3.5oz.) minced onion
4 1-inch Umeboshi (pickled plums)
13 Shiso leaves (perilla leaves)
25 (3inch) Gyoza wrappers

Directions:
1. Wash Shiso leaves and drain well. Cut in half.
2. Remove seeds from Umeboshi and chop.
3. Mix ground chicken, minced onion, and chopped Umeboshi. Divide it into 25 portions.
4. Place Shiso leaf on a Gyoza wrapper. Place the filling on the Shiso leaf then roll. Put water along the edge of the wrapper by fingers, fold into semi circle, gather the front side of the wrapper and seal.
5. Heat cooking oil if you are NOT using a non-stick pan. Cook on high heat until the bottoms become brown.
6. Turn the heat down to medium, add 50ml water (or about 1/3 of their hight), cover and steam the gyoza on med-high heat until cooked. Uncover and cook on high heat until the water is gone and crisp.
7. Serve with ponzu sauce or dressing if you like.

I used my favorite Matsuno Ponzu Sauce to eat. Any dipping sauce is optional.
