Datemaki (Sweet Rolled Omelet) - Video Recipe

Datemaki is one of the dishes I cook for our Osechi-Ryori (traditional Japanese New Year's food eaten during the first three days of the New Year). But it is also great for bento :) It looks like Tamagoyaki (rolled omelet) but the texture is fluffier and tastes bit sweeter. Ready-made ones are very sweet but if you make it at home, you can control the sweetness, which is good for your health!

http://www.youtube.com/watch?v=bi3V_q4dbEQ

Each dishes that make up Osechi-Ryori has a special meaning celebrating the New Year (such as good health, fertility, good harvest, happiness, long life, etc...) and those dishes can last for a couple of days in the refrigerator or at cool room temperature in winter. Usually, they are served in jyubako (重箱: three-tiered bento boxes). In the first tier, we serve colorful festive dishes such as shrimp, black beans, sweet chestnuts, etc... In the second tier we serve sunomono (pickled dishes) and yakimono (grilled dishes). And in the third tier, we serve nimono (simmered dish) called Nishime (simmered Japanese vegetables).

Datemaki is for the first tier. I mixed some leftover minced vegetables from decoratively cut vegetables of Nishime to make them colorful and pretty!

Practice makes perfect, so I hope you learn how to make Datemaki by the end of the year ;)

---------------------------------
Datemaki (Sweet Rolled Omelet)

Difficulty: Easy
Time: 30min
Number of servings: 4

Necessary Equipment:
blender / mixer
tamagoyaki nabe (rectangular omelet pan) regular frying pan is okay if not available
makisu (bamboo sushi-roll mat)

Ingredients:
A
* 4 eggs
* 50g (1.8oz.) hanpen (fluffy white fish cake)
* 2 tbsp. sugar
* 1 tbsp. sake
* 1 tbsp. mirin (sweet sake)
* a pinch of salt
* a bit of soy sauce
B
* 1 tbsp. minced carrot
* 1 tbsp. minced shitake mushroom
* 1 tbsp. minced mitsuba (Japanese wild parsley)
cooking oil

Directions:
1. Place A in a blender / mixer and process until smooth.
2. Add B and gently mix them with a spoon.
3. Heat cooking oil in a tamagoyaki nabe (rectangular omelet pan), pour the mixture in the pan, cover, and cook over low heat for 10 minutes. Check if the bottom is brown or not. If the pan is too hot, cool the pan on a wet towel to prevent burning. After the bottom sets, flip over and cook the other side.
4. Cover the bamboo sushi-roll mat with plastic wrap. While it is hot, score with a sharp knife to prevent breaking, roll the omelet, fasten with rubber bands and allow it to cool until it sets.
5. Cut it into thick slices and serve.

You can bake in the oven, too!

The contest "Cheese-1GP" was organized by Yukijirushi (one of the best known milk and dairy companies in Japan).

「雪印 Cheese-1 GP チーワングランプリ レシピコンテスト」の受賞作品です。最終審査会ではフランス料理の鉄人でも有名な坂井宏行シェフに会いました♪

---------------------------------
Spinach Bacon Crispy Cheeze Gyoza with Balsamic Vinegar

Difficulty: Easy
Time: 20min
Number of servings: 24 dumplings

Ingredients:
200g (7oz.) spinach
100g (3.5oz.) bacon
150g (5.3oz.) onion
salt and cracked black pepper
24 gyoza wrappers
2 sliced cheese or 35g (1.3oz.) pizza cheese or any cheese that melts
180cc water
olive oil
balsamic vinegar

Directions:
1. Boil water in a large pot. Add a pinch of salt in the water (salt removes oxalic acid - bitter taste, and makes the spinach nice and green). Wash spinach and add in the boiling water from the stem side. Boil spinach for about one minute. Drain and soak the spinach in cold water (or use running water) to cool. Drain and squeeze the spinach to remove the excess water (use paper towel if you have).
2. Cut off the root ends of the spinach and cut into small pieces. Cut bacon into small strips. Roughly mince onion.
3. Heat the pan and saute the bacon until oil comes out. Add onion and saute until tender. Then add spinach and season with salt and cracked black pepper. Cool down until you can touch.
4. Place the gyoza wrapper in your palm and place a small spoonful of filling in the center. Put water along the edge of the wrapper by fingers, fold into semi circle, gather the front side of the wrapper and seal.
5. In a microwavable container, put water and cheese (cut into small pieces). Microwave for about 2 minutes until the cheese slightly melts.
6. Heat olive oil in a frying pan, place gyoza, cook on high heat until the bottoms become brown. Turn down the heat to medium, add melted cheese water (5.), cover and steam the gyoza on high heat until the water is gone and cooked.
7. Serve with balsamic vinegar.

It goes great with wine! Perfect for bento, too!

Yakitori - Video Recipe

On the weekend, there was a small festival at our residence (condo) and my darling (chef TJ) was assigned to cook Yakitori. Thanks to my darling, I did nothing but could shoot this video! I hope you like it!!!

This video will show you how to grill Yakitori (skewered chicken) with gas Yakitori grill! Of course you can use your BBQ grill!

how to make Yakitori
http://www.youtube.com/watch?v=_jtgDGMEDxk

It was very interesting to know how to become a Yakitori vendor! hehe

In the very beginning of the video, I will show you what other food stalls were there at the festival! So, please watch carefully ;D

---------------------------------

Yakitori

Difficulty: Very Easy
Time: 10min
Number of servings: as many as you want

Necessary Equiptment:
bamboo skewers
yakitori stove

Ingredients:
boneless chicken thigh (or any meat of your choice)
yakitori sauce or salt

Directions:
1. Cut chicken into bite-sized pieces (remove the skin if you prefer).
2. Thread chicken onto skewers (with long onion if you prefer).
3. Tare (Sauce): Begin grilling the chicken on both sides without the sauce. When the meat is done, dip into the sauce and grill lightly. However, sometimes it gets too smoky if you grill with the sauce, so we didn't grill it with the sauce but dip it into the sauce to finish. Ebara's Yakitori sauce works amazingly delicious in that way!
4. Shio (Salt): Sprinkle some salt on the chicken and grill the chicken on both sides until done.

We used Ebara Yakitori Sauce (エバラ やきとりのたれ) - for professional use
The household use looks like THIS :D

When I was small, I cooked Takoyaki once a month at home. My mom gave me the pan we used then. However, as you can see, the cast iron pan is not easy to use. I recommend you getting a non-stick Takoyaki pan online! It is affordable and saves your time! haha

Asparagus Kanitama

Kanitama (芙蓉蟹) is a Chinese omelette with crab meat topped with sweet and sour sauce. It is very popular home-cooked meal in Japan. You can add any kind of mushrooms and/or vegetables, but today I will show you mine adding asparagus. The rich flavor of asparagus makes it really yummy!!! To make it familiar, I used consomme cube instead of Chinese soup for the sauce.

---------------------------------
Asparagus Kanitama

Difficulty: Easy
Time: 30min
Number of servings: 2

Ingredients:
100g (3.5oz.) asparagus
4 eggs
110g (3.8oz.) shredded crab meat
1 tbsp. sake
75g (2.6oz.) onion
salt and cracked black pepper
vegetable oil
A
* 150cc water
* 1/2 consomme cube
* 1 tbsp. ketchup
* 1 tbsp. soy sauce
* 1 tbsp. rice vinegar
* cracked black pepper
1 tbsp. katakuriko/corn starch mixed with 1/2 tbsp. water

Directions:
1. Mix A in a pan and bring to a boil. Put katakuriko/corn starch mixture in the pan and stir quickly until thick and stop the heat.

2. Put shredded crab meat in a bowl and sprinkle sake.

3. If you have thick asparagus, peel the lower section (hard part) lightly with a vegetable peeler, and boil the asparagus (1-3 minutes depending on size) in the salted water until al dente. Cut the asparagus diagonally into to 2 inch pieces. Chop onion.

4. Beat eggs in a bowl and add crab meat, chopped onion, and asparagus in it. Add a bit of salt and cracked black pepper to taste.

5. Heat vegetable oil in a frying pan over medium high heat. Spoon the mixture (4.) into the hot pan and form a round patty. When one side is done and nicely browned, turn over with a spatula and cook the other side.

6. Reheat the sweet and sour sauce (1.) over low. Serve the omelet on a plate and pour the sauce over. It doesn't matter if the asparagus popped out of the omelette.

Healthy Pan-Fried Minced Cutlet

Thanks to all! Now over 100 people have tried my minced cutlet recipe and said yummy!!! You can find their photos and comments here :)

Do you know minced cutlet? We call it "Menchi Katsu" in Japanese. Well, it is kind of croquette, made from the mixture of ground meat (beef or pork, or both) and minced cabbage, breaded and deep-fried. Certainly my darling's favorite food, but is high in calories!!! Therefore, I came up with this idea. Instead of deep frying, I stuffed the meat in aburaage (deep-fried tofu pouch) and pan-fried it without using oil until crisp! Yummy indeed!!! My darling loves it :D

---------------------------------
Healthy Pan-Fried Minced Cutlet

Difficulty: Easy
Time: 15min
Number of servings: 1

Ingredients:
100g (3.5oz.) ground beef and pork mixture
50g (1.7oz.) cabbage
25g (0.8oz.) onion
A
* 1 tbsp. Panko (bread crumbs)
* 1 tsp. sesame oil
* 1 tsp. soy sauce
* salt and cracked black pepper
B
* 1 tbsp. ketchup
* 1 tbsp. Worcestershire sauce
1 aburaage (deep-fried tofu pouch)
vegetables of your choice

Directions:
1. Mince cabbage and onion.

2. Mix ground beef and pork mixture, (1.), and (A) in a bowl by hand until the mixture comes together and sticky.

3. Pour boiled water over aburaage to remove the excess oil. Drain and dry with paper towels. Place the abura-age on a cutting board, and roll one cooking chopstick over it to make it easy to open. Cut a side of aburaage and gently open the pocket.

4. Stuff (2.) in (3.).

5. Heat cooking oil in a frying pan, place (4.), add 2 tbsp. of water. Cover the pan and steam it on medium heat until the water is almost gone. Then open and cook until the surface is crisp and brown.

6. Cut into bite-size pieces, pour (B) mixture over them. Serve with vegetables of your choice.
