Okonomiyaki Cup Set (Fluffy Savory Japanese Pancake) | Japanese Cooking Video Recipe

Cup noodle-like Okonomiyaki Set by Nisshin Flour Milling Inc. It says you don't need many cooking utensils but actually you need a lot of ingredients to get 😅 At least it contains mayo and sauce in addition to the dry ingredients. Anyway, the direction was interesting. Using 14cm (5.5inch) frying pan, no pressing with spatula, resulted satisfying fluffy soufflé texture! I would vote for this trick 👍

Okonomiyaki Cup Set (Fluffy Savory Japanese Pancake Recipe)


Difficulty: Easy

Number of servings: 2 (14cm/5.5inch) pancakes

Ingredients:
120ml water
220g finely chopped cabbage
100g (3.5oz.) thinly sliced pork rib
1 egg
cooking oil

Directions:
1. Make Batter: In the cup, put Okonomiyaki flour and water. Mix with a spoon, a bit crumbled is okay, do not overmix.
2. Mix: Add chopped cabbage, Agedama (crunchy bits of deep fried flour-batter) and egg, then mix well. *Thinly sliced cabbage is not easy to mix with a spoon, so this is why chopped cabbage is recommended.
3. Cook: In a 14cm/5.5inch frying pan, heat cooking oil, put half of the batter, and place pork slices. Uncover and cook on medium for 4 minutes. Flip it over, COVER, and cook on medium for 5 minutes. Again, flip it over, uncover, and cook on low for 5 minutes.
4. Finish: Put Okonomiyaki sauce, mayonnaise (if you like), Katsuobushi (bonito flakes) and Aonori (green laver) to finish.

Japanese Pickled Daikon Radish (Tsukemono) | Japanese Cooking Video Recipe

Japanese radish (non-spicy) recipe is the perfect compliment to any dish because it's salty-sweet, sour, and crunchy.



Use fresh Daikon when preparing pickles. I used purple Daikon which my daughter grew at kindergarten. You can use regular white Daikon radish, too.

You can keep it in the fridge for a week 😉

Japanese Pickled Daikon Radish (Tsukemono)


Difficulty: Easy
Time: 10min

Ingredients:
250g (9oz.) Daikon radish
2 tbsp. vinegar
1 tbsp. sugar
salt
1.5inch (5cm) Kombu kelp

Directions:
1. Wash and cut Daikon (with skin is ok) into 1/2 or 1/4 slices. Rub with 1/2 tsp. salt and leave for 20 min. Rinse and drain well.
2. In a sauce pan or microwave, heat vinegar, sugar and a pinch of salt until it comes to a boil.
3. Wipe and clean dirts from Kombu kelp.
4. Put all the ingredients in a Ziploc bag and keep in the fridge overnight or more.

Daikon Radish Leaves Furikake (Rice Seasoning Recipe) | Japanese Cooking Video Recipe

Furikake is rice seasoning comes in many different flavors and textures. Soft or crunchy is pretty common. In this video, I want to share with you amazingly delicious soft Furikake using Daikon radish leaves. You can use any similar kind of leaves of course.



Adding Katsuobushi (bonito flakes) or canned tuna is OK. Very tasty yet delicious. Perfect rice topping. My kids (6 years & 4 years) eat very well.

You can keep this dish for 5 days in the fridge. Nutritious lifesaver for daily Bento lunch box 👍

Daikon Radish Leaves Furikake (Rice Seasoning Recipe)

Ingredients:
120g~150g (5oz.) Daikon radish leaves
1 tbsp. sesame oil
1 tbsp. soy sauce
1 tsp. sugar
1 tbsp. white sesame seeds
1 package (2.5g) bonito flakes OR 70g (2.5oz) small canned tuna

Directions:
1. Wash Daikon radish leaves very well then Chop (parboil or microwave to reduce the amount to fit in the pan).
2. Chop into small pieces. Using kitchen shears is easier. 
3. Heat half the amount of sesame oil in the pan then cook Daikon leaves until soft.
4. Add Katsuobushi or tuna, then quickly cook until combined.
5. Season with soy sauce and sugar. Then cook until the liquid is gone.
6. Add sesame seeds and remaining sesame oil. Mix and cook quickly until fragrant then stop the heat.
