Yasai no Nikumaki (Pork Vegetable Rolls Recipe)


Difficulty: Easy
Time: 20min
Number of servings: 4 servings

Ingredients:
10 thin pork slices
20 potato strips
20 carrot strips
20 green beans
3 tbsp. soy sauce
3 tbsp. Mirin (sweet Sake)

*If you don't have Mirin, use 3 tsp of sugar instead to add the sweetness. To remove the smell, adding grated ginger is perfect!

Directions:
1. Place the vegetables (2 strips each) on the end of the pork close to you and start rolling. Repeat with the remaining ingredients.
2. Place the rolls in the pot, add water until cover, bring to a boil and remove the foam.
3. Add soy sauce and Mirin, cover with a drop-lid, and allow to simmer for about 15 minutes until cooked through.

How to Make Katsudon (Pork Cutlet Rice Bowl) Recipe | VR180 Cooking | Japanese Recipe Video

Katsudon is a popular Japanese rice bowl (as seen in YURI ON ICE), made with rice topped with Tonkatsu coated with savory tasty eggs. You can simmer the Tonkatsu in the eggs but to enjoy crispy Tonkatsu, pour the simmered eggs over the Tonkatsu. Yummy!!!

Katsudon (Pork Cutlet Rice Bowl)


Difficulty: Very Easy
Time: 30min
Number of servings: 1

Ingredients
((Tonkatsu))
1 (100g) boneless pork chops
salt and pepper
* flour
* beaten egg
* Panko (bread crumbs)
vegetable oil for deep frying
((Katsudon))
1 Tonkatsu
1 egg
30g (1/6) onion
* 75ml (1/3 cup) water
* a pinch of Hon-Dashi (packaged Dashi powder)
* 2 tsp. soy sauce
* 2 tsp. Mirin (sweet Sake)
* 1 tsp. sugar
Mitsuba (Japanese wild parsley) if you have
1 bowl of cooked white rice

Directions:
((Tonkatsu))
1. Slash the fat rimming of pork chops in several places to keep the meat from curling or shrinking when deep-fried. Pound the pork chops with a meat mallet or a rolling pin to make them tender. Season both sides with salt and pepper.
2. Flour the pork chops lightly, dip in beaten egg, then coat with Panko. Use one hand for coating flour and Panko, and use the other to dip in egg to keep one of your hands dry.
3. Deep fry them in oil at 170C (340F) until thoroughly cooked golden brown. (Turn the pork over to cook evenly.) Remove the Tonkatsu from the oil and drain.
((Katsudon))
1. Cut Tonkatsu into small pieces. Slice the onion. Chop Mitsuba (Japanese wild parsley) into small pieces.
2. Put water, Hon-Dashi (packaged Dashi powder), soy sauce, Mirin (sweet Sake) in a pan and bring to a boil.
3. Add onion slices and simmer on low heat for a few minutes until tender.
4. Beat an egg, bring the soup to a boil, pour the egg over the onions, then lightly mix with the chopsticks. Quickly add Mitsuba leaf (Japanese wild parsley), cover, then turn off the heat.
5. Put steamed rice in a rice bowl, place Tonkatsu pieces, pour the simmered egg on top.

Soft White Dinner Rolls in a frying pan


Difficulty: Easy
Time: 60min
Number of servings: 2 servings
16cm (6inch) Frying Pan

Ingredients:
1 cup (125g) all purpose flour
100ml milk
1 tbsp. butter
1 tbsp. sugar
a pinch of salt
1 tsp. dry yeast

Directions:
1. In a microwavable bowl, put butter and milk, microwave on medium for 20 sec, and mix well.
2. Add dry yeast, sugar, and salt, then mix well.
3. Sift in all purpose flour, then mix well.
4. Knead well, divide it into 6 pieces, then make small balls.
5. Line the frying pan with a piece of parchment paper, place the dough, cover, put on low for 30 sec, stop the heat, then leave for 20 minutes until they have doubled or tripled in size.
6. Put on low for 15 minutes.
7. Stop the heat, do NOT open, and leave for 15 minutes (cook with the remaining heat to finish).

Temakizushi (Hand Rolled Sushi) | VR180 Cooking | Japanese Recipe Video

Ingredients
((Sushi Rice))
340g (12oz.) cooked Japanese rice
2 tbsp. vinegar
1.5 tbsp. sugar
1/2 tsp. salt
((Fillings))
Tamagoyaki (2eggs/1 tbsp.milk/1 tbsp.sugar/a pinch of salt)
cucumber
Shiso leaves
avocado
Ikura (salmon roe)
Ebi (cooked shrimp sashimi)
Maguro (tuna sashimi)
smoked salmon
sausages
Kanikama (crab meat)
mayonnaise
Natto (fermented soybeans)
((Finish))
condiments of your choice (chopped onions, sesame seeds, etc)
5 Nori seaweed sheets
Wasabi (Japanese horseradish)
soy sauce

Directions:
1. Mix vinegar, sugar, and salt very well to make Sushi vinegar.
2. Add the Sushi vinegar while the rice is still hot and slice through the rice using a rice paddle to separate the grains. Let the rice cool.
3. Cut Nori sheets into quarters. Prepare your fillings in thin 3-4-inch strips.
4. Place a sheet of Nori on your hand. Place Sushi rice, fillings, and condiments of your choice. Then roll it into a cone shape. Eat with Wasabi soy sauce!

For kids, you can secure the end of the roll with a piece of rice.
If you want to make a larger Temaki (roll more fillings), cut Nori into half.
