HALLOWEEN Salmon Avocado Rice Bowl (Easy NO KITCHEN Party Recipe)


Difficulty: Easy
Time: 15 min

Ingredients:
smoked salmon
avocado
Ikura (salmon roe)
cooked rice
Nori seaweed sheet
Wasabi (Japanese horseradish)
soy sauce

Directions:
1. Dice avocado into small pieces.
2. Moisten a cup with water, stuff the cooked rice, flip it over into a rice bowl, make sure the rice mountain is popping out from the bowl.
3. Cover the rice with smoked salmon.
4. Put avocado and Ikura around the rice.
5. Make Jack-o'-lantern face with Nori seaweed sheet.
6. Pipe out Wasabi (in tube) to make the pumpkin stem.
7. Drizzle with some soy sauce to serve.

HALLOWEEN Ghost Rice Pizza (No Oven Gluten-Free Recipe)


Difficulty: VERY Easy
Time: 20 min
Number of servings: 15cm (6inch) pizza

Ingredients:
((Rice Pizza Dough))
150g (5.3oz.) cooked rice
1 tbsp. grated parmesan cheese
1 tbsp. pizza cheese
salt and pepper
1 tsp. olive oil
((Toppings))
pizza sauce
mozzarella cheese
grape tomatoes
cooked broccoli
bologna sausage (ham is ok)
Nori seaweed sheet

Directions:
1. Mix cooked rice, grated parmesan cheese, pizza cheese, salt and pepper.
2. Heat olive oil in a frying pan and spread the rice dough. Cook one side for 5 minutes until crisp golden brown.
3. Flip it over, place the toppings, cover, and cook the other side for 5 minutes.
4. Make the cute ghost faces using Nori seaweed sheet.

5 MIN Omurice with Creamy Scrambled Eggs


Difficulty: Very Easy
Time: 5min
Number of servings: 1

Ingredients:
150g (5.3oz.) cooked rice
2 tbsp. well drained canned tuna
2 tbsp. tomato ketchup
2 tbsp. defrosted mixed vegetables
salt and pepper
1 egg
1 tbsp. Milk
1 tsp. mayonnaise
a pinch of salt

Directions:
1. In a microwavable bowl, put cooked rice, tuna, tomato ketchup, mixed vegetables, salt and pepper, then mix well. Microwave for a minute to make it warm.
2. In another microwavable bowl, mix egg, milk, mayonnaise, and a pinch of salt. Microwave on medium for 1 minute, then mix well. You can cook 10 more seconds at a time, until it is cooked to your preference.
3. Serve the rice on a plate, pour over the egg on top, then decorate with ketchup.

Japanese Summer Vegetable Curry (Rokuhoudou Yotsuiro Biyori Inspired Recipe) | Japanese Cooking Video

I made Japanese Summer Vegetable Curry inspired by Manga/Anime (Rokuhoudou Yotsuiro Biyori).


The curry is from scratch using curry powder (no roux). Light, refreshing, and enhances the flavor of vegetables. Increases your appetite in hot summer! Instead of deep frying the veggies, I steamed them in a frying pan. Very simple yet delicious.


This type of curry is called "Dried Curry" in Japan. It is very thick, easy to eat, and satisfying! Give it a try 😉

Japanese Summer Vegetable Curry (Rokuhoudou Yotsuiro Biyori Inspired Recipe)


Difficulty: Easy
Time: 30 min

Ingredients:
((Dried Curry))
300g (10.6oz.) ground beef and pork mixture
3 tomatoes
1 onion
1 tbsp. grated ginger
1 clove grated garlic
2 tbsp. curry powder
2 tsp. garam masala
1 tsp. Salt
2 tbsp. soy sauce
((Vegetables))
Kabocha (Japanese squash)
Okra
red bell pepper
asparagus
lotus root
eggplant
zucchini
((Others))
cooked rice
olive oil or cooking oil

Directions:
((Dried Curry))
1. Finely chop the onion. Grate ginger and garlic together.
2. Drop the tomatoes into the boiling water. Remove them after 30 seconds, when the skins begin to peel. When they become cool enough to handle, peel then dice.
3. Heat olive oil or cooking oil in a frying pan. Stir-fry onion, ginger, and garlic on low, until they turn golden. Caramelized onion adds extra sweetness to curry.
4. Add ground beef and pork mixture and cook until no longer pink. Mix in curry powder. Add the diced tomatoes and cook on medium high until the water is almost gone. Season with garam masala, salt, and soy sauce then cook for about 3 minutes. Be careful, you will lose the flavor of garam masala if you cook too much at the end.
((Vegetables))
1. Wrap Kabocha in a plastic wrap then cook in microwave for 2 minutes, then slice. Cut Okra, lotus root, and eggplant, then soak in water to remove the bitter taste and avoid the color change. Rub Okra with salt to smooth out the hairy surface, then peel the stem (you don't want to cut it off to keep the seeds in). Peel away the tough outer layer of asparagus if needed.
2. Heat olive oil in a frying pan, then steam-cook all the vegetables for about 3~5 minutes.
((Finish))
1. Serve the dried curry over the rice. Arrange the cooked vegetables.

Summer Lemon GYUDON (Japanese Beef Bowl) | Japanese Cooking Video Recipe

Gyudon (literally Beef Bowl), is a bowl of rice topped with tender beef and onions simmered in a tasty soy sauce based sweet sauce.


In this recipe, I will show you how to make it without soy sauce: tasty yet delicious salt flavor with hint of refreshing lemon!!! Perfect for summer hot season 😋 Can't stop eating it. Please give it a try 👍

Summer Lemon GYUDON (Beef Rice Bowl)


Difficulty: Easy
Time: 15 min
Number of servings: 2

Ingredients:
180g (6.5oz.) thinly sliced beef (pork is good, too!)
100g (3.5oz.) 1/2 onion
A
* 1 tbsp. grated ginger
* 1 clove grated garlic
* 2/3 tsp. salt
* 1 tbsp. Sake
1 lemon
2 bowls of rice
1 tbsp. sesame oil
thinly sliced green onions
black pepper

Directions:
1. Make 2 slices of lemon and 2 tbsp. of lemon juice.
2. Season the beef with A.
3. Thinly slice onion.
4. Heat 1/2 tbsp. of sesame oil in a frying pan and sauté the sliced onion until tender. Add the seasoned beef and cook until no longer pink.
5. Stop the heat and finish with 2 tbsp. of lemon juice and 1/2 tbsp. Of sesame oil.
6. Serve the beef over a bowl of rice, place a piece of lemon slice, garnish with thinly sliced green onions and some black pepper.

"Butter Soy Sauce" is a very popular combination here in Japan. We have many dishes using this flavor: chicken teriyaki, grilled mochi, pizza, pasta, stir-fried dishes, popcorn, potato chips, etc...




The rice cooker I use (Panasonic SR-SX102):

Japanese Butter Roasted Corn with Rice (SPEED Recipe)


Difficulty: 15min + cooking time
Time: 30 min
Number of servings: 4

Ingredients:
2 cups (300g/10.6oz.) uncooked Japanese rice
2 corn on the cob
2 tbsp. Butter
2 tbsp. Soy sauce
a pinch of salt

Directions:
1. Wash rice (about 3 times). *If you have time, drain in a strainer, leave for about 30 minutes.
2. Using a knife, slice down along the cob to remove the kernels.
3. Place the rice in a pot, add water to the appropriate level indicated in the pot. Then place the bare corn cobs (juices of the corn transfer to the rice and make the rice very tasty: add Umami). Place the pot into the rice cooker. Cover and press the button to start.
4. While cooking rice, heat butter in a pan, cook until the kernels are tender and bright yellow. Add soy sauce then pan-roast until golden brown.
5. When the rice is done, remove the corn cobs, mix in the roasted kernels. Add a pinch of salt to taste.

Miso Rice Mochi (Chewy Traditional Japanese Snack) | Japanese Cooking Video Recipe

Miso Rice Mochi (Chewy Traditional Japanese Snack)


Difficulty: Easy
Time: 30 min
Number of servings: 3 sticks
Necessary Items: bamboo skewers

Ingredients:
150g (5.3 oz.) cooked Japanese rice
1 tbsp. Miso
1 tbsp. sugar
1 tsp. Dashi soup stock *water is OK
1 tsp. white sesame seeds
cooking oil or sesame oil

Directions:
1. Mix Miso, sugar, and Dash soup stock.
2. Mash the rice with a rice paddle until it gets sticky like Mochi. Divide it into 9 pieces, roll into balls, put onto bamboo skewers, then form them into flat round shapes.
3. Toast sesame seeds in a frying pan to bring out the flavor.
4. Heat cooking oil in a frying pan, cook both sides, brush Miso sauce on one side, then cook again until golden. *Be careful not to burn
5. Sprinkle with sesame seeds to finish.

How to Make Omu Curry (Kare Raisu with Perfectly Soft and Creamy Omelette) | Japanese Cooking Video Recipe

Omucurry (Omu Curry) is short for "Omurice (Omelette Rice) with Curry".


To make Omucurry, you can wrap white rice or chicken fried rice with a thin sheet of fried egg OR soft and creamy scrambled eggs. How you want to make is up to you. In this video I will show you how to wrap white rice with creamy scrambled eggs (some people make creamy omelette then split the middle on top of the rice to cover, scrambled eggs are easier).

How to Make Omu Curry


Difficulty: Easy
Time: 7min + curry cooking time
Number of servings: 1

Ingredients:
2 eggs
1 tbsp. Milk
a pinch of salt
pepper if you like
10g (about 1 tbsp.) butter
1 bowl of rice
curry of your choice

Directions:
1. Put eggs in a bowl and remove the chalaza (to mix smooth).
2. Add milk and salt (pepper if you like), then mix very well with a whisk until the egg white and egg yolk blend together.
3. Heat butter on medium. Pour in the egg mixture. As eggs begin to cook in the bottom of the pan, slowly pull the eggs in big circles, forming large soft curds.
4. While the egg liquid still remains, fill the gaps between the scrambled eggs so that you won't see the bottom of the pan. Place the eggs on top of the rice.
5. Serve curry next to the omelette rice.

Difficulty: Very Easy
Time: 5min
Number of servings: 1

Ingredients:
150g (5.3oz.) cooked rice
2 tbsp. well drained canned tuna
2 tbsp. tomato ketchup
2 tbsp. defrosted mixed vegetables
salt and pepper
1 egg
1 tsp. mayonnaise

Directions:
1. In a mug or in a bowl, put cooked rice, tuna, tomato ketchup, mixed vegetables, salt and pepper, then mix well.
2. Microwave for a minute to make it warm.
3. Mix egg and mayonnaise very well.
4. In a mug, pour in the egg mixture on top, then microwave on medium for 2 minutes. If you want to wrap, cover a plate with plastic wrap, spread the egg mixture, microwave on medium for 1 minutes and 10 seconds. Place the rice in the middle, fold both sides of the egg, then carefully flip it over onto a plate.
5. Put some tomato ketchup on top to finish.

How to Cook Whole Tomato Rice in a Pot - Video Recipe

After sharing the Whole Tomato Rice using a rice cooker, I received many requests using a pot and a soup stock.

Kombu soup stock adds UMAMI. Yummy!!!

Whole Tomato Rice in a Pot


Difficulty: Easy
Time: 1hr
Number of servings: 4

Ingredients:
2 cups (300g/10.6oz.) uncooked Japanese rice
400ml Kombu soup stock (No MSG / No salt added)
3/4 tsp. salt
a bit of pepper
2 tsp. olive oil
1 tomato

Directions:
1. Wash rice (4~5times), drain in a strainer, then leave for about 30 minutes.
2. Place the rice in a pot, add Kombu soup stock and the seasonings, then mix well.
3. Remove the tomato stem (and the bottom if you want) and place it in the pot.
4. Put on medium, when it comes to a boil, cover, turn down to low, then cook for 13 minutes.
5. When it's done, stop the heat, do not open and let it steam for about 15 minutes.
6. Remove the tomato skin if you don't like it, toss the rice lightly using a rice paddle, then serve.

I used Kombu soup stock No MSG / No salt added.

If you want to use the soup stock seasoned with salt, please remove or reduce the amount of the salt in this recipe.

Cup Sushi

Difficulty: Very Easy
Time: 20min
Number of servings: 4 (150ml) cups

Ingredients:
300g (10.6oz.) cooked Japanese rice
2 tbsp. Sushi vinegar
((Fillings and Toppings))
Crunchy Wakame Salad
Tamago Soboro
* 1 egg
* 1 tsp. sesame oil
* 1 tsp. sugar
* 1 tbsp. Mirin (sweet Sake)
* a pinch of salt
Sakura Denbu (pink colored seasoned shredded codfish)
smoked salmon
Ikura (salmon roe)
octopus Sashimi or any Sashimi of your choice
cooked shrimp

Directions:
1. Spoon cooked Japanese rice into a bowl. Add Sushi vinegar while the rice is still hot and slice through the rice using a rice paddle to separate the grains. Let the rice cool.
2. Place all ingredients for Tamago Soboro in a small pot. Put on low then keep stirring with a whisk until the egg turns into crumbles. Let it cool.
3. In a small cup, fill in Crunchy Wakame Salad, Sushi rice, Tamago Soboro, Sushi rice, Sakura Denbu, and Sushi rice in order.
4. Garnish with the toppings.

If you have Ikura, you won't need soy sauce. However, you can eat with soy sauce and/or Wasabi if necessary.

FYI: Ingredients to make Sushi vinegar from scratch.
1.5 tbsp. rice vinegar
1/2 tbsp. sugar
1/2 tsp. salt

Kawaii Animal Onigiri Rice Balls - Video Recipe

You can use plastic wrap to form the rice into animal shapes. However, using the molds saves time ;) Great tool when you have a lot of Onigiri to prepare!

Just press some cooked Japanese rice into the mold.
Decorate with Nori seaweed sheet, ham, cheese, and/or Kinshi Tamago (shredded egg crepes).

Bite-Sized Onigiri Rice Balls Idea for Toddlers - Video Recipe

I make these small rice balls because my daughter does not eat well~ in this way she enjoys eating those with chopsticks or I can put in her mouth while she walks around… haha #2years8months

Bite-Sized Onigiri Rice Balls

Difficulty: VERY Easy
Time: 3min
Number of servings: n/a

Ingredients:
cooked rice
rice seasonings
Nori seaweed sheet cut into small pieces

Directions:
1. Cut Nori seaweed sheet into small pieces then stock them in an air-tight container with a silica gel (desiccant).
2. Place cooked rice on a sheet of plastic wrap to save dish washing. Sprinkle with rice seasonings of your choice, tap a little bit with a rice paddle to mix, then wrap to make a thin roll.
3. Pinch off bite-sized pieces with Nori to make small rice balls. Make as many you want.
