Bacon Potato Miso Soup (EASY BASIC Recipe) | Japanese Cooking Video

If you want to make Miso soup, you don't have to use Japanese ingredients. Any meat and/or vegetables go perfect 👍 Try out the bacon potato idea if you have never tried it 😋

Difficulty: Easy
Time: 20min
Number of servings: 4

Ingredients:
2 bacon strip
200g (7oz.) potato
100g (3.5oz.) onion
4 cups (800cc) water
2 tbsp. Miso
2 tsp. Dashi powder

Directions:
1. Cut bacon into small pieces. Slice potato into quarter-rounds. Slice the onion.
2. In a large pot, put water, Dashi powder, potatoes and onions. Bring to boil, then remove the foam (to remove the bad taste). Add bacon, cover, and cook on medium for 3 minutes.
3. Check if the potatoes are done. Turn down to low and dilute Miso with a little hot broth and then mix it back into the soup. Heat until hot to finish.

EASIEST EVER Japanese Purin Recipe


Crème caramel (flan) is called Purin (プリン "pudding") in Japanese.

Quick, creamy and smooth Purin in a frying pan 🍮

3 Ingredients Japanese Crème Caramel (EASY Purin Recipe)


Difficulty: Very Easy
Time: 30min + cooling time
Number of servings: 4 100ml Microwavable Glass Cups

Ingredients:
2 eggs
250ml milk
3 tbsp. sugar

If you need caramel, mix 2 tbsp. sugar and 2 tbsp. water in a saucepan by tilting the pan. Simmer until the sauce is browned. (Do not mix with a spoon or the sugar will recrystallize.) Add 1 tbsp. water to stop hardening.

Directions:
1. Mix all ingredients in a spouted measuring cup or a bowl. Add vanilla extract if you prefer.
2. Strain through a strainer into the cups.
3. Cover with aluminum foil (or plastic wrap is ok).
4. Add water in the pan (just about a half-inch across the bottom of the cups).
5. Cover the pan and bring to a boil. When it becomes to a boil, turn down to low and cook for 10 minutes. Stop the heat (do not open the lid) and steam for 10 minutes with the remaining heat.
6. If you need caramel, you can put it on top then put in the fridge until cold.

Note: If you want to slip out the Purin, grease the cups with some oil or butter.

Difficulty: VERY Easy
Time: 10 min
Number of servings: 1 small pizza

Ingredients:
1 instant Ramen noodles
shrimp
broccoli
grape tomatoes
80g (10 tbsp.) pizza cheese for crust
pizza cheese or grated parmesan cheese for topping

Directions:
1. Cook the ramen noodles in a boiling water for 2 minutes. Drain well in a strainer.
2. Mix 1/2 packet of seasoning powder and 40g (5 tbsp.) pizza cheese.
3. Place 40g (5 tbsp.) pizza cheese in a frying pan. Cook on medium low for 2 minutes until crisp golden in the bottom then flip it over. Place the noodles, press flat, flip it over, and cook on medium for 3 minutes. Flip it over, place the toppings, cover and cook on low for 10 minutes.

Ingredients:
smoked salmon
avocado
Ikura (salmon roe)
cooked rice
Nori seaweed sheet
Wasabi (Japanese horseradish)
soy sauce

Directions:
1. Dice avocado into small pieces.
2. Moisten a cup with water, stuff the cooked rice, flip it over into a rice bowl, make sure the rice mountain is popping out from the bowl.
3. Cover the rice with smoked salmon.
4. Put avocado and Ikura around the rice.
5. Make Jack-o'-lantern face with Nori seaweed sheet.
6. Pipe out Wasabi (in tube) to make the pumpkin stem.
7. Drizzle with some soy sauce to serve.

HALLOWEEN Ghost Rice Pizza (No Oven Gluten-Free Recipe)

Number of servings: 15cm (6inch) pizza

Ingredients:
((Rice Pizza Dough))
150g (5.3oz.) cooked rice
1 tbsp. grated parmesan cheese
1 tbsp. pizza cheese
salt and pepper
1 tsp. olive oil
((Toppings))
pizza sauce
mozzarella cheese
grape tomatoes
cooked broccoli
bologna sausage (ham is ok)
Nori seaweed sheet

Directions:
1. Mix cooked rice, grated parmesan cheese, pizza cheese, salt and pepper.
2. Heat olive oil in a frying pan and spread the rice dough. Cook one side for 5 minutes until crisp golden brown.
3. Flip it over, place the toppings, cover, and cook the other side for 5 minutes.
4. Make the cute ghost faces using Nori seaweed sheet.

Natto Cheese Omelette (High Protein Keto Diet Recipe) | Japanese Cooking Video

This recipe is not specially made for Keto diet but it is a very common way of eating Natto in Japan 👍 Very high in protein, healthy, and delicious 😋 Perfect food to eat on a Ketogenic diet!

Perfect dish to eat with rice, bread, or for snack.



FYI: Natto is a traditional Japanese food made from fermented soybeans. People say it has strong smell and bitter taste, but give it a try! It tastes pretty good, super healthy and nutritious! It helps prevent clot formation and reduce blood pressure. It may benefit weight loss and offer protection against cancer. Better to love it 👍 Yes it is totally not a food to take it out with you. Something you want to enjoy at home! BTW, once there was Natto with no smell but I don't see it anymore. Maybe people thought they don't want to spend extra budget on it.

Ingredients:
2 eggs
1 tbsp. Milk
1 tbsp. Mayonnaise (helps make fluffy omelette)
a pinch of salt
1 package Natto
1~2 tbsp. pizza cheese
1~2 tbsp. chopped green onion
olive oil

Directions:
1. Mix eggs, milk, mayonnaise, and salt in a bowl.
2. Mix Natto, Natto sauce, Karashi (Japanese mustard if you like), and pizza cheese.
3. Heat olive oil in a frying pan, spread the egg mixture and make a round sheet of egg. Before the egg is fully cooked, place the Natto mixture in the middle. Fold into half, then shape it using the edge of the pan. Carefully flip it over onto a plate.

I receive comments saying "my tempered chocolate does not set up". Sometimes regular chocolate bars may not set up when you did not handle it correctly (timing and temperature due to the low cacao percentage), so it is better to use chocolate for baking because it is easy to handle!

Chocolate Salami with Rainbow Mallows (No-Bake Recipe)


Difficulty: Very Easy
Time: 15 min + cooling time

Use 12oz. measuring cup

Ingredients:
100g (1/2 cup) semi-sweet chocolate for baking
50ml whipping cream
30g (1/4 cup) roasted nuts
25g (1/2 cup) rainbow mallows
2 tbsp. chocolate chips
powdered sugar (confectioner's sugar)

Directions:
1. Chop chocolate then melt it in a double boiler.
2. Microwave whipped cream for 20 sec until warm, then mix it into the chocolate.
3. Add nuts and marshmallows, then mix well.
4. When the chocolate cools and starts to get thick, place it on parchment paper then shape it into a log.
5. Chill in the fridge until firm. Dust with powdered sugar then slice into pieces.

Miso is a traditional Japanese seasoning made from fermented soybeans. It is a umami-rich paste to make a Miso Soup. There are tons of different kinds of Miso pastes in Japan. You can use any of your choice to enjoy this recipe.

5 MIN Vegan Miso Ramen


Difficulty: VERY Easy
Time: 5 min
Number of servings: 1

Ingredients:
1 package fresh Ramen noodles
a bag of bean sprouts (remove the roots and heads if you prefer)
whole kernel corn (canned)
chopped green onion
((Miso Ramen Soup Base))
2 tbsp. Miso
1 tbsp. Soy sauce
1 tsp. Sugar
1 tsp. Kombu kelp Dashi powder
1 tbsp. ground white sesame seeds
1 tsp, garlic paste
1 tsp, ginger paste
1 tbsp. sesame oil
a few drops of La-Yu chili oil if you like
350ml hot water

Directions:
1. Wash the bean sprouts, place them in a microwavable dish, cover, then cook on medium (600w) for 2 min. Drain well, then season with salt, pepper, and sesame oil.
2. In a bowl, mix the ingredients of the Miso Broth, add hot water little by little then mix well.
3. In a pot, boil water. Add fresh Ramen noodles in the boiling water and gently stir noodles with chopsticks. Cook Ramen noodles according to your package. Drain the noodles in a strainer and place them in the soup. Then arrange the toppings.

Ingredients:
150g (5.3oz.) cooked rice
2 tbsp. well drained canned tuna
2 tbsp. tomato ketchup
2 tbsp. defrosted mixed vegetables
salt and pepper
1 egg
1 tbsp. Milk
1 tsp. mayonnaise
a pinch of salt

Directions:
1. In a microwavable bowl, put cooked rice, tuna, tomato ketchup, mixed vegetables, salt and pepper, then mix well. Microwave for a minute to make it warm.
2. In another microwavable bowl, mix egg, milk, mayonnaise, and a pinch of salt. Microwave on medium for 1 minute, then mix well. You can cook 10 more seconds at a time, until it is cooked to your preference.
3. Serve the rice on a plate, pour over the egg on top, then decorate with ketchup.

Japanese Summer Vegetable Curry (Rokuhoudou Yotsuiro Biyori Inspired Recipe) | Japanese Cooking Video

I made Japanese Summer Vegetable Curry inspired by Manga/Anime (Rokuhoudou Yotsuiro Biyori).


The curry is from scratch using curry powder (no roux). Light, refreshing, and enhances the flavor of vegetables. Increases your appetite in hot summer! Instead of deep frying the veggies, I steamed them in a frying pan. Very simple yet delicious.


This type of curry is called "Dried Curry" in Japan. It is very thick, easy to eat, and satisfying! Give it a try 😉

Japanese Summer Vegetable Curry (Rokuhoudou Yotsuiro Biyori Inspired Recipe)


Difficulty: Easy
Time: 30 min

Ingredients:
((Dried Curry))
300g (10.6oz.) ground beef and pork mixture
3 tomatoes
1 onion
1 tbsp. grated ginger
1 clove grated garlic
2 tbsp. curry powder
2 tsp. garam masala
1 tsp. Salt
2 tbsp. soy sauce
((Vegetables))
Kabocha (Japanese squash)
Okra
red bell pepper
asparagus
lotus root
eggplant
zucchini
((Others))
cooked rice
olive oil or cooking oil

Directions:
((Dried Curry))
1. Finely chop the onion. Grate ginger and garlic together.
2. Drop the tomatoes into the boiling water. Remove them after 30 seconds, when the skins begin to peel. When they become cool enough to handle, peel then dice.
3. Heat olive oil or cooking oil in a frying pan. Stir-fry onion, ginger, and garlic on low, until they turn golden. Caramelized onion adds extra sweetness to curry.
4. Add ground beef and pork mixture and cook until no longer pink. Mix in curry powder. Add the diced tomatoes and cook on medium high until the water is almost gone. Season with garam masala, salt, and soy sauce then cook for about 3 minutes. Be careful, you will lose the flavor of garam masala if you cook too much at the end.
((Vegetables))
1. Wrap Kabocha in a plastic wrap then cook in microwave for 2 minutes, then slice. Cut Okra, lotus root, and eggplant, then soak in water to remove the bitter taste and avoid the color change. Rub Okra with salt to smooth out the hairy surface, then peel the stem (you don't want to cut it off to keep the seeds in). Peel away the tough outer layer of asparagus if needed.
2. Heat olive oil in a frying pan, then steam-cook all the vegetables for about 3~5 minutes.
((Finish))
1. Serve the dried curry over the rice. Arrange the cooked vegetables.

Shirokuma Ice Cream is a very popular Japanese shaved ice brand from Kagoshima known nationwide. The original style is Kakigori (shaved ice cream) with condensed milk and colorful fruits: pineapples, yellow peaches, and sweet Azuki red bean. Very simple yet delicious. But now you can find it in many different styles such as ice bar, ice cake, parfait, etc... and in many different flavors. Usually sold at Conbini (convenience stores) and local supermarkets. Eaten year-round 😋👍

Shirokuma Ice Cream (Famous Japanese Condensed Milk Dessert)


Difficulty: VERY Easy
Time: 5 min + cooking time

Ingredients:
200ml (about 3/4 US Cup) milk
3tbsp. sweetened condensed milk
canned pineapples and yellow peaches
canned Azuki red beans
*If you have canned fruit Mitsumame, it has everything in one can.

Directions:
1. Mix milk and condensed milk in a spouted measuring cup.
2. Pour it into the Popsicle molds up to 70% full. Put the fruits cut into small pieces and Azuki beans. Fill up the molds if needed. Insert the popsicle sticks.
3. Freeze for at least 6 hours, or overnight.

Easiest Lemon Meringue Pie from scratch | Japanese Cooking Video Recipe

Quick Lemon Meringue Pie


Difficulty: Easy
Time: 45min + cooling time

16cm (6.3-inch) tart pan with a removable bottom

((Quick Lemon Curd))
1 lemon juice (about 2 tbsp.)
1 egg
6 tbsp. sugar
4 tbsp. (50g) unsalted butter
1. Mix egg and lemon juice. Strain through a sieve into a pot.
2. Add sugar and unsalted butter, put over medium-low heat, stirring constantly, until it thicken (about 7-10 minutes). Egg scrambles over high heat, so be careful.
3. Leave to cool, then put in the fridge until cold.

((Quick No-Bake Sweet Tart Crust))
80g biscuits (graham crackers are OK) https://amzn.to/2ALp4qb
4 tbsp. (50g) unsalted butter
1. Place biscuits in a plastic bag and crush them into very fine pieces. You can easily crush them by rolling over the plastic bag with a rolling pin. Do not bash or hit, or you will make holes.
2. Mix in melted unsalted butter, then press firmly into the tart pan.
3. Chill in the fridge until set.

((Meringue))
2 egg whites
4 tbsp. granulated sugar
1. Place egg white in a small bowl and beat with an electric mixer until foamy.
2. Add sugar 1/3 at a time, beat until stiff glossy peaks form.

((Finish))
1. Spread the lemon curd onto the cooled crust.
2. Spread the meringue over the pie using the back of a spoon to make decorative swirls.
3. Bake in the oven at 200C (390F) for 5 minutes.
4. Cool in the fridge until cold (about 2 hours) then cut (or it breaks easily).

Better make the lemon curd and the crust a night before. Bake with meringue topping in the morning. Then the lemon meringue pie is ready to serve at around the snack time :)
