Crème caramel (flan) is called Purin (プリン "pudding") in Japanese.

3 Ingredients Japanese Crème Caramel (EASY Purin Recipe)


Difficulty: Very Easy
Time: 30min + cooling time
Number of servings: 4 100ml Microwavable Glass Cups

Ingredients:
2 eggs
250ml milk
3 tbsp. sugar

If you need caramel, mix 2 tbsp. sugar and 2 tbsp. water in a saucepan by tilting the pan. Simmer until the sauce is browned. (Do not mix with a spoon or the sugar will recrystallize.) Add 1 tbsp. water to stop hardening.

Directions:
1. Mix all ingredients in a spouted measuring cup or a bowl. Add vanilla extract if you prefer.
2. Strain through a strainer into the cups.
3. Cover with aluminum foil (or plastic wrap is ok).
4. Add water in the pan (just about a half-inch across the bottom of the cups).
5. Cover the pan and bring to a boil. When it becomes to a boil, turn down to low and cook for 10 minutes. Stop the heat (do not open the lid) and steam for 10 minutes with the remaining heat.
6. If you need caramel, you can put it on top then put in the fridge until cold.

Note: If you want to slip out the Purin, grease the cups with some oil or butter.

Daigakuimo: Candied Sweet Potatoes (Traditional Japanese Vegan Snacks) | Japanese Cooking Video Recipe

Crispy outside, soft inside! Usually, we deep fry the sweet potatoes but in this video I will show you how to make it in a frying pan! Quick, Easy, and Delicious 😋

We call this snack Daigakuimo (大学芋) literally "University Potatoes" in Japanese because it was popular among University students in 1900's.

Daigakuimo: Candied Sweet Potatoes (Traditional Japanese Vegan Snacks)


Difficulty: VERY Easy
Time: 15 min
Number of servings: n/a

Ingredients:
400g (about 1lb) Japanese sweet potato
4 tbsp. sugar *regular white sugar, brown sugar, honey, maple syrup, etc... are ok
1/2 tsp. soy sauce
1/2 tsp. vinegar or lemon juice * interfering agent to prevent crystallization
2 tsp. toasted black sesame seeds
4 tbsp. cooking oil

Directions:
1. Wash the sweet potato with the skin, cut into bite-size pieces, soak in water for 5 minutes to remove starch and prevent stop oxidation (color change). Drain well and remove excess water with paper towels.
2. Place the sweet potatoes in a frying pan, add cooking oil, cover and cook on medium for 3 minutes. Flip them over, cover and cook another 3 minutes.
3. Insert a bamboo skewer to check if the potatoes are done. Remove the oil from the pan using paper towels. Add sugar, soy sauce, vinegar or lemon juice. When the sugar melts and coats the sweet potatoes, stop the heat and sprinkle with black sesame seeds.

I receive comments saying "my tempered chocolate does not set up". Sometimes regular chocolate bars may not set up when you did not handle it correctly (timing and temperature due to the low cacao percentage), so it is better to use chocolate for baking because it is easy to handle!

Chocolate Salami with Rainbow Mallows (No-Bake Recipe)


Difficulty: Very Easy
Time: 15 min + cooling time

Use 12oz. measuring cup

Ingredients:
100g (1/2 cup) semi-sweet chocolate for baking
50ml whipping cream
30g (1/4 cup) roasted nuts
25g (1/2 cup) rainbow mallows
2 tbsp. chocolate chips
powdered sugar (confectioner's sugar)

Directions:
1. Chop chocolate then melt it in a double boiler.
2. Microwave whipped cream for 20 sec until warm, then mix it into the chocolate.
3. Add nuts and marshmallows, then mix well.
4. When the chocolate cools and starts to get thick, place it on parchment paper then shape it into a log.
5. Chill in the fridge until firm. Dust with powdered sugar then slice into pieces.

Shirokuma Ice Cream (Famous Japanese Condensed Milk Dessert) | Japanese Cooking Video Recipe

Shirokuma Ice Cream is a very popular Japanese shaved ice brand from Kagoshima known nationwide. The original style is Kakigori (shaved ice cream) with condensed milk and colorful fruits: pineapples, yellow peaches, and sweet Azuki red bean. Very simple yet delicious. But now you can find it in many different styles such as ice bar, ice cake, parfait, etc... and in many different flavors. Usually sold at Conbini (convenience stores) and local supermarkets. Eaten year-round 😋👍

Shirokuma Ice Cream (Famous Japanese Condensed Milk Dessert)


Difficulty: VERY Easy
Time: 5 min + cooking time

Ingredients:
200ml (about 3/4 US Cup) milk
3tbsp. sweetened condensed milk
canned pineapples and yellow peaches
canned Azuki red beans
*If you have canned fruit Mitsumame, it has everything in one can.

Directions:
1. Mix milk and condensed milk in a spouted measuring cup.
2. Pour it into the Popsicle molds up to 70% full. Put the fruits cut into small pieces and Azuki beans. Fill up the molds if needed. Insert the popsicle sticks.
3. Freeze for at least 6 hours, or overnight.

Easiest Lemon Meringue Pie from scratch | Japanese Cooking Video Recipe

Quick Lemon Meringue Pie


Difficulty: Easy
Time: 45min + cooling time

16cm (6.3-inch) tart pan with a removable bottom

((Quick Lemon Curd))
1 lemon juice (about 2 tbsp.)
1 egg
6 tbsp. sugar
4 tbsp. (50g) unsalted butter
1. Mix egg and lemon juice. Strain through a sieve into a pot.
2. Add sugar and unsalted butter, put over medium-low heat, stirring constantly, until it thicken (about 7-10 minutes). Egg scrambles over high heat, so be careful.
3. Leave to cool, then put in the fridge until cold.

((Quick No-Bake Sweet Tart Crust))
80g biscuits (graham crackers are OK) https://amzn.to/2ALp4qb
4 tbsp. (50g) unsalted butter
1. Place biscuits in a plastic bag and crush them into very fine pieces. You can easily crush them by rolling over the plastic bag with a rolling pin. Do not bash or hit, or you will make holes.
2. Mix in melted unsalted butter, then press firmly into the tart pan.
3. Chill in the fridge until set.

((Meringue))
2 egg whites
4 tbsp. granulated sugar
1. Place egg white in a small bowl and beat with an electric mixer until foamy.
2. Add sugar 1/3 at a time, beat until stiff glossy peaks form.

((Finish))
1. Spread the lemon curd onto the cooled crust.
2. Spread the meringue over the pie using the back of a spoon to make decorative swirls.
3. Bake in the oven at 200C (390F) for 5 minutes.
4. Cool in the fridge until cold (about 2 hours) then cut (or it breaks easily).

Better make the lemon curd and the crust a night before. Bake with meringue topping in the morning. Then the lemon meringue pie is ready to serve at around the snack time :)

When I made this castella recipe, I used a very cheap micom rice cooker. not for baking. It damaged the pot a little bit after baking cakes for several times... but it was way better for baking 😅I don't own it anymore tho.

Ingredients:
ice cubes
cola syrup
vanilla ice cream
pop rocks (popping candies) cola flavor

Directions:
Make the shaved ice and serve in a bowl (rice bowl is OK). Drizzle with some Cola syrup, top with a scoop of vanilla ice cream, and sprinkle with popping candies.

NO-Rising Chocolate Cornets! EASY Dairy-Free Soy Custard Tofu Buns Recipe


Difficulty: Easy
Time: 1hr
Number of servings: 4

You can make the "Cream Horn Mold" by rolling a sheet of cardboard into a cone shape, staple together, then wrap with aluminum foil. (See the video)



Ingredients:
((Soy Milk Chocolate Custard Cream))
100ml soy milk
a few drops of vanilla extract
1 egg yolk
1&1/2 tbsp. granulated sugar
1&1/4 tbsp. flour
40g chocolate
((No-Rising Tofu Cornet Buns))
150g (5.3oz.) soft tofu
1 tbsp. olive oil or cooking oil
1 tbsp. sugar syrup or honey
A 200g (1.5 cup) bread flour
A 2 tsp. baking powder
A 2 tbsp. granulated sugar
A a pinch of salt

Directions:
((Soy Milk Chocolate Custard Cream))
1. Put soy milk in a saucepan then heat just until it starts to boil. Season with vanilla extract.
2. In a bowl, mix egg yolk and granulated sugar until white and creamy.
3. Sift in flour and mix well.
4. Add soy milk little by little then mix well.
5. Strain the mixture through a sieve back into the saucepan.
6. Put on low, stir constantly, and stop the heat when the cream starts to thicken. Mix well with the remaining heat. Leave to cool completely.
7. Melt the chocolate over hot water. Mix into the soy custard little by little.
8. Transfer the cream into a pastry bag then chill in the fridge.
((No-Rising Tofu Cornet Buns))
1. Strain Tofu through a sieve into a bowl. Add cooking oil and sugar syrup, then mix well.
2. Sift in A then mix well.
3. Divide it into 4 pieces. Roll into a rope then roll it around a horn mold.
4. Cover with plastic wrap then rest while preheating the oven to 180C (350F).
5. Bake at 180C (350F) for 10~15 minutes.
6. Remove the molds, leave to cool completely then pipe in the soy chocolate custard cream.

Classic Japanese Lemon Pop Candy (Ramune Recipe)


Difficulty: Very Easy
Time: 15 min + drying time
Number of servings: 18 pieces (0.7inch candies)

Ingredients:
60g (6 tbsp.) powdered sugar (confectioner's sugar)
25g (4 tbsp.) corn starch
1/2 tsp. baking soda
1 tsp. citric acid
1 tsp. lemon juice
1/2 tsp ~ 1 tsp. Water

Directions:
1. Mix citric acid and lemon juice in a bowl, until somewhat blended is ok.
2. Add powdered sugar, corn starch, and baking soda in order. (You do not want to let the baking soda touch the liquid or it becomes fizzy.)
3. Mix very well with your hand. If you think you need more water, add little by little. A drop at a time or a 1/2 tsp. at a time. Clasp and unclasp your hand to check if it becomes one but crumbles (Not too moist. If you add too much water, it becomes fizzy and plumps up. See the video).
4. Push into a mold to shape.
5. Dry them out completely for a day.

Number of servings: 15 pieces 2-inch cookies

Use 12oz. measuring cup

Ingredients:
100g (3/4 cup) cake flour or all purpose flour
50g (3 tbsp.) granulated sugar
50g (4 tbsp.) butter *softened
50g (3 tbsp.) nutella
30g (2 tbsp.) chocolate chips

Directions:
1. Mix butter and sugar with a whisk until creamy.
2. Add nutella and mix well with a whisk.
3. Sift in flour and mix well with a spatula.
4. Then mix in chocolate chips.
5. Shape into small balls, place them on a frying pan, then flatten out with your fingers.
6. Cook on the stove on low for 15 minutes. Let cool in the pan until completely cool and set.

Best eaten on the day you make. Keep in an air-tight container with silica gel packets if you have.
