Last time my recipe was featured was in 2008! It has been 5 years! Wow!!!
Believe it or not. My Eho-Maki recipe was featured at that time. Sushi again! hehe

Vegetable Teriyaki Beef Rolls (Korean Style) Recipe - Video Recipe

Last month (2012/1/22), there was a nationwide recipe contest in Japan called レシピの女王 (Queen of Home Cooking). The contest was broadcast on TV in Japan (nationwide) on 2012/2/6! Thanks for those who watched it ;)

Unfortunately, I couldn't go to the next stage but I met Iron Chef Sakai and Chef Chen! They were the judges :D They watched my YouTube video and said I should keep up my work! YouTube was nothing to do with the contest but I appreciate the chance they saw my video. I will do my best.

At the contest, Chef Chen suggested me to season the vegetables, so I modified my recipe!



This dish of course goes great with white rice and perfect for bento :)

Vegetable Teriyaki Beef Rolls (Korean Style)

Difficulty: Easy
Time: 25min
Number of servings: 8

Ingredients:
8 thin slices of beef
16 frozen green beans
16 strips of Konjac
16 strips of potato
16 strips of carrot
60g (2.2oz.) Kimchi (Korean pickle)
salt and cracked black pepper
starch
sesame oil
A
* 1 tsp. soy sauce
* 1 tsp. mirin (sweet sake)
B
* 1 tbsp. sake
* 1 tbsp. mirin (sweet sake)
* 1 tbsp. soy sauce
* 1 tbsp. ketchup
* 1 tsp. sugar
* 1 tsp. Gochujang (Korean red chili paste)

Directions:
1. Defrost green beans. Boil Konjac strips for a few seconds to skim the scum. Place potato and carrot strips on a microwavable dish, cover, and cook in the microwave for 3 minutes (500w).
2. Season 1 with A.
3. Mix B well.
4. Place the slices of beef so that the length of it is running flat and vertically towards you. Sprinkle a bit of salt and cracked black pepper, sprinkle starch (onto one side) and place the seasoned vegetable strips (2.) on the end of the beef close to you and start rolling.
5. Heat sesame oil in a frying pan, place the rolls seam side down, cover, and steam on low heat for about 5 minutes. Then flip the rolls so that all sides are cooked equally.
6. Add 3 and cook on high heat until thick and glossy.

Last month, there was a nationwide recipe contest in Japan called レシピの女王 (Queen of Home Cooking). The contest was broadcast on TV in Japan (nationwide) today (2012/2/6)! Thanks for those who watched it ;)

My Accomplishments

Oops. My June and July accomplishments were missing… why?! because I didn't win that many prizes. haha

On 6/10, my Dashi Omelette Rice was published in a food magazine called Lettuce Club (6/25 issue). I used dashi powder and soy sauce. It's juicy and easy to eat even if you are full ;D

On 6/30, my Yummy Stir-Fried Cabbage won the award for excellence at TAKARA's Shochu (Japanese distilled sake) recipe contest. Sprinkled ground pork gives rich and nice flavor :D

On 7/8, I won the award for excellence at Yakitori Ryuho's (やきとり竜鳳)Yakitori recipe contest. My winning recipe was Yakitori Avocado Egg Sandwich :D They have 3 more contests coming, so I wish to win the grand prize one day!!! I'll try my best.

There were only few contests from April to June after 311 since there has been a mood of voluntary restraint nationwide for such an event. However, July and August are different. I had a lot to apply in July and the same for August!!! Busy in the kitchen creating for contests and also for my YouTube videos. I think I am spending most of the time for YouTube as you know… I try to create 2 videos a week. haha

Anyways, I hope I receive good news someday… since I don't recently. sigh...

My Accomplishments

For those of you who know my routine monthly updates, it's already June!!!

Here are my accomplishments in May :D

On 5/7, my Enoki Tantan Rice Bowl won a grand prix at mushrooms recipe contest. Tantan refers to the sesame based hot foods, such as Tantanmen (担々麺). The smooth texture of enoki mushrooms is amazingly delicious and went well with white rice :D

On 5/10, my Grilled Tuna with Cheese Sauce won a S&B prize at orangepage, where I update my food diary in Japanese :D If you remember from my curry and rice recipe, S&B is a company that makes spice products in Japan.

On 5/10, my Stir-Fried Ginger Pork and Cabbage received the 10th photo report at Cookpad. I already translated this recipe in English. Check it out HERE.




On 5/17, my Crunchy Salad Parfait won the outstanding performance award and was broadcast (5/17 23:30) on TV program called WBS (World Business Satellite)!!! However it was only for a few second, so I took a snapshot of the TV. LoL

On 5/27, my Non-Fried Crispy Croquette using rusk (toast) won a grand prize!!! My darling loves croquette, so this was a good idea to save time ;)




Last but not least, I thank to 250 people (at this moment) subscribing to my YouTube channel!!!

YouTube Medal?!

Yesterday, I saw a gold medal on my YouTube channel "temporarily". LoL



I hope it is not the first and last time to see it. (It always displays in Japanese and can't change the language in my account, maybe because I live in Japan, but do you see my profile in English?!)

I'm not yet pretty sure how the YouTube works. It seems like I need to upload more videos to generate more traffic, but so far, I am happy to hear that my blog buddies enjoy my videos :D

I'm glad I came up to this idea to create videos.

I want to best use my time, while young and vital. hahaha. But one happy thing other than my age is that I used a weight scale that you can measure inside of the body, and my age was 23!!! Amazing huh?!

BTW, yesterday, my darling's research report was quoted on the Yahoo article! Sorry, it's in Japanese, but I'm happy with it ;D

Healthy Microwave Okonomiyaki - Video Recipe

This is an award winning recipe :D

Silicon tools are now popular in Japan. There was a contest using a microwavable silicon pot and I won a grand prize! You can substitute it with a deep microwavable deep dish or container, of course.

I hope all ingredients are available around!

Note: Depending on the heat of the microwave, cooking time may differ.

Healthy Microwave Okonomiyaki

Difficulty: Easy
Time: 20min
Number of servings: 1

Necessary Equipment:
microwavable deep silicone pot, dish or container

Ingredients:
120g (4.2oz.) thinly sliced pork
100g (3.6oz.) shredded cabbage
2 tbsp. tenkasu (crunchy bits of deep fried flour-batter)
A
* 100g (3.6oz.) yam
* 2 tbsp. flour
* 1 egg
* 3g (0.1oz.) katsuobushi (bonito flakes)
B
* okonomiyaki sauce
* mayonnaise
* katsuobushi (bonito flakes)
* aonori (green laver)

Directions:
1. Grate the yam and mix A in a large bowl. Add shredded cabbage and tenkasu, and mix well.
2. In a microwavable deep silicone pot (dish or container), spread 1/3 of the mixture (1.) in a thin layer, then place 1/3 of thinly sliced pork on top. Repeat the steps for 2 more times.
3. Cover the pot (or cover plastic wrap) and microwave for 10 minutes at 500 watts. *Depending on the heat of the microwave, cooking time may differ.
4. When you uncover, be careful as steam and water are very hot. Top with B and serve!

My Accomplishments

Here are my accomplishments in April.

I'm glad I do have some to post since I didn't have enough time to apply for the contests in March because we moved...

The first one was actually the award from 2/15. The result was recently released on the web. My Healthy Steamed Okonomiyaki using a lots of cabbage and grated yam won the grand prize!!! It was a contest to use the silicon microwave steamer (silicon tools are now popular in Japan). I
thought Okonomiyaki is too simple so I'm glad it was accepted :D

On 4/8, my Tuna Mayonnaise Kelp Rice Bowl won a prize at the kelp recipe contest. I used salt flavored kelp, which really makes food tasty and goes good with rice!!! My darling loves this kind ;)



On 4/15, my Okara Dashi Mayo Salad was published in the spring catalog of Kamada (dashi soy sauce products manufacturer). Okara is a bean curd refuse which is very healthy and low in calories. I love it but my darling doesn't like this kind of hard-to-swallow rough food. So I marinated it with mayonnaise and dashi soy sauce like a potato salad and he liked it in this way :D

On 4/15 my Healthy Black Soy Smoothie received a honorable mention at soy milk recipe contest. I love soy milk that I don't even drink a milk these days. I'm glad I'm gonna receive soy milk for a month as a prize. hehe

On 4/23, my Sausage TarTar Rolls won the Primaham Award. I gotta try this contest again since I never won the higher prize at this contest even I think my recipe is good... LoL
