Edamame Corn Flowing Somen Noodles (At-Home Fun Party Rainbow LED Machine) Recipe | Japanese Cooking Video

Kids requested me to make Edamame and Corn Nagashi Somen (Flowing Somen). 



Edamame and corn were pretty easy to catch and eat 😉 Kids enjoyed it very much 👍

Somen is perfect refreshing food for hot and humid summer season :)


Sōmen (素麺) is very thin Japanese noodles made of wheat flour. The noodles are usually served cold in summer with a dashi flavored tasty dipping sauce called Mentsuyu (めんつゆ).

Edamame Corn Flowing Somen Noodles Recipe


Difficulty: Very Easy
Time: 15min
Number of servings: N/A

Ingredients:
((Toppings)) 
frozen edamame and canned kernel corn are OK! (Fibers may get stuck in the machine, so you want to be careful.)
Other Topping Ideas:
cooked shrimp 
goldfish tomatoes (optional)
cucumber slices (or thin strips)
ham
shredded chicken
Yakibuta (braised pork) is good
Shiso leaves
Naganegi (long onion slices)
Aonegi (chopped green onions)
ginger strips
etc...
((Somen Dipping Sauce))
((Somen Noodles))
dried Somen noodles

Directions:
((Somen Dipping Sauce))
I used this Mentsuyu (noodle soup base) btw: ヤマサ ぱぱっとちゃんと これ!うま!!つゆ
Dilute with water as instructed on its package.
((Somen Noodles))
Boil water in a large pot. Add dried Somen noodles in boiling water and gently stir noodles with chopsticks. Cook Somen noodles according to your package (mine was 2 min). Drain the noodles in a strainer and rinse the noodles with hands under running water. 

NOTE: You can put about 100g (usually 2 bundles) of Somen noodles in the machine or the noodles won't flow.

((Somen Dipping Sauce from scratch))
* 300ml Dashi broth (using packaged dashi powder saves time)
* 4 tbsp. Mirin (sweet Sake)
* 4 tbsp. soy sauce
In a pot, bring Dashi broth, Mirin, and soy sauce to a boil. You can also microwave until it comes to a boil. Cool in the fridge until ready to serve.

Potato Somen Noodles Recipe | Japanese Cooking Video

Potato Somen noodles are easy and perfect refreshing idea in hot and humid summer season 😋 Try out with fresh potatoes!



My son and I've been to potato digging and got some potatoes again this year 👍

You can of course add some toppings. It was my son's request that he does not need anything other than potatoes. haha

Sōmen (素麺) is very thin Japanese noodles made of wheat flour. The noodles are usually served cold in summer with a Dashi flavored tasty dipping sauce called Mentsuyu (めんつゆ).

Potato Somen Noodles Recipe


Difficulty: Very Easy
Time: 10min
Number of servings: as much as you want

Ingredients:
potatoes
Mentsuyu (dipping sauce)
condiments of your choice

Directions:
1. Wash and peel potatoes. Put water in a bowl. Using a slicer, slice potatoes into thin strips. Soak in water to remove extra starch.
2. In boiling water, add salt, then blanch the potatoes for 15 seconds. Drain in a strainer and quickly wash with cold water before the potato strips get soft with remaining heat.
3. Dip in diluted Mentsuyu (as instructed on its package) to eat.

I used this Mentsuyu btw:

((Somen Dipping Sauce from scratch))
* 300ml Dashi broth (using packaged dashi powder saves time)
* 4 tbsp. Mirin (sweet Sake)
* 4 tbsp. soy sauce
 In a pot, bring Dashi broth, Mirin, and soy sauce to a boil. You can also microwave until it comes to a boil. Cool in the fridge until ready to serve.

Udon alla Napolitan (Japanese Pasta Recipe) | Cooking Video


NOTE: Spaghetti Napolitan sounds like an Italian dish BUT it is a typical Japanese pasta dish made at home and served at restaurants nationwide. Nothing related to Napolitana and the main seasoning is Tomato Ketchup. It is a must.


Frozen Udon noodles are just perfect! Noodles won't go too soft but very chewy yet elastic even after you pan fry them 👍 


Napolitan is well balanced with meat and vegetables. Easy for kids to eat!

Udon alla Napolitan (Japanese Pasta Recipe)


Difficulty: Easy
Time: 15min
Number of servings: 2

Ingredients:
2 packages frozen Udon noodles
50g (1.8oz.) sausage or ham
100g (3.5oz) onion
50g (1.8oz.) green pepper
1/2 tbsp. olive oil
1 tbsp. Worcestershire sauce or soy sauce
salt and pepper
grated parmesan cheese

Directions:
1. Slice the onion and green pepper. Diagonally slice sausages.
2. Heat olive oil in a frying pan and cook the onion slices until soft. You can cook garlic together if you like.
3. Add green pepper and sausage slices and cook well. 
4. Meanwhile defrost the frozen Udon noodles as directed on its package.
5. Move back to the vegetables, season with tomato ketchup and Worcestershire sauce (or soy sauce). Drain the noodles and mix well. Season with salt and pepper if needed.
6. Serve on a dish and dust with grated parmesan cheese to finish.

Yakisoba Pan (Japanese Stir-Fried Noodles in a Hot Dog Bun Recipe) | Japanese Cooking Video

Yakisoba Pan is a very popular and typical bun in Japan. It is obviously a High-Carb food. Many people love to eat it for lunch or snack! You can put more veggies and/or more meat to balance out the intake of your choice.

Yakisoba Pan (Japanese Stir-Fried Noodles in a Hot Dog Bun Recipe)


Difficulty: Easy
Time: 15min
Number of servings: 4~6 servings

Ingredients:
100g(3.5oz) thin sliced pork or sausages
100g(3.5oz) vegetables of your choice (cabbage, bean sprouts, carrot, green pepper, etc...)
1 tsp. cooking oil
salt and pepper
1 serving Yakisoba noodles
2 tbsp. Tonkatsu sauce or Japanese Worcestershire-style sauce
1 tsp. soy sauce
4-6 hot dog buns *depending on size
butter, mayonnaise, and/or mustard
Aonori (green laver)
Benishoga (Red Pickled Ginger)

Directions:
1. Cut the meat and vegetables into small pieces.
2. Heat cooking oil in a frying pan and cook the vegetables until tender.
3. Add the meat, and cook until no longer pink, then season with salt and pepper.
4. Add the Yakisoba noodles (cut short, easy to eat).
5. Season with Tonkatsu sauce and soy sauce, then stop the heat.
6. Split the top of the bun, apply some butter, mayonnaise, and/or mustard.
7. Place Yakisoba and top with Aonori and Benishoga if you like.

Ramen alla Napolitan (Japanese Pasta Recipe) | Japanese Cooking Video

Sapporo Ichiban Original (we call it Shoyu Flavor in Japan) by Sanyo Foods is a very popular instant Ramen noodle product in Japan. The included soup seasoning packet derived from chicken stock, soy sauce, and mixture of vegetables and spices, makes Napolitan very tasty. Must TRY 😉

Number of servings: 1

Ingredients:
45g (1.5oz.) sausage or ham
100g (3.5oz) onion
45g (1.5oz.) green pepper
1/2 tbsp. olive oil
1 tsp. Ramen soup seasoning
grated parmesan cheese

Directions:
1. Slice the onion and green pepper. Diagonally slice sausages.
2. Heat olive oil in a frying pan and cook the onion slices until soft. You can cook garlic together if you like.

Creamy Ramen Carbonara (One-Pot Pasta Recipe) | Japanese Cooking Video

Sapporo Ichiban Shio Ramen by Sanyo Foods is a very popular instant Ramen noodle product in Japan. The included soup seasoning packet adds rich yet addictive flavor to make Carbonara! You just need a frying pan to cook it. Must TRY 😉


   

Instead of milk, water is OK! Instead of bacon pancetta is perfect. Please make it in the way you think is Right!

*Shio means salt in Japanese but this Ramen is not at all salty but creamy yet tasty!!! 5-year-old and 3-year-old kids liked this idea💕

Creamy Ramen Carbonara (One-Pot Pasta Recipe)


Difficulty: Easy
Time: 10min
Number of servings: 1

Ingredients:
30g (1oz.) bacon or pancetta
1 US Cup (240ml) milk or water
A
* 1 egg
* 2 tbsp. parmesan cheese
* 1 tsp. Shio Ramen soup seasoning
1 tbsp. olive oil
cracked black pepper

Directions:
1. Mix A very well.
2. Cut bacon into lardons (little sticks).
3. Heat olive oil in a frying pan and cook the bacon sticks until slightly crisp or up to your preference.
4. Add milk and simmer till hot (do not boil over). Add the noodles and simmer (shake to separate) until the liquid is almost gone.
5. Stop the heat, add A mixture, and mix well until creamy. No worries, the heat of the pasta can cook the raw egg.
6. Serve on a dish and sprinkle with cracked black pepper to finish.

Vegan Yaki Udon (Stir-Fried Udon Noodles with Vegetables) Recipe | Japanese Cooking Video

My family is not vegan but this Yaki Udon turned out satisfying. Please Try 😉




Yaki Udon is a very basic Japanese stir-fried Udon noodle dish made with lots of vegetables and meat/seafood. We usually make it using the leftover vegetables and thinly sliced pork but I found it without pork is absolutely delicious!

Kombu (kelp) Dashi is a vegan option for Dashi. You can use any Dashi product but so far my favorite to make this dish is this one. RIKEN Kombu Dashi Powder (リケン 素材力だし こんぶだし)

Ingredients
2 packages fresh Udon noodles
400g (about 1lb) vegetables of your choice *I recommend adding some onion slices
5g (1&2/3tsp.) Dashi powder *I recommend RIKEN Kombu Dashi Powder
2 tbsp. soy sauce
1 tbsp. cooking oil
pepper *if you like

Vegetables of your choice ideas:
cabbage, bean sprouts, carrot, green pepper, onion, chive, long onion, Shimeji mushrooms, Shiitake mushrooms, etc... Sometimes I use only bean sprouts and onion slices and it turns out amazingly delicious if you don't care the color of the dish. hehe

Directions:
1. Cut vegetables into bite-size pieces.
2. Wash Udon under running water to separate, then drain well. You can also use boiled frozen Udon.
3. Heat cooking oil in a frying pan and cook the vegetables until tender.
4. Add Udon, season with Dashi powder and soy sauce. You can add pepper if you like.
5. Serve in a dish.

How to Make Yaki Udon (Stir-Fried Udon Noodles) | Japanese Cooking Video Recipe

Simple yet delicious. I will keep the recipe super simple so that you can modify this recipe in the way you like 😉


Yaki Udon is a very basic Japanese stir-fried Udon noodle dish made with lots of vegetables and meat/seafood. We usually make it using the leftover vegetables and thinly sliced pork but getting a package of assorted vegetables and any meat/seafood is OK, too! Take it easy and enjoy!!!




You can use any Dashi product but so far my favorite to make this dish is this one: RIKEN Kombu Dashi Powder (リケン 素材力だし こんぶだし)

How to Make Yaki Udon (EASIEST Recipe Ever to Follow)


Difficulty: Very Easy
Time: 15min
Number of servings: 2

Ingredients
2 packages fresh Udon noodles
100g (3.5oz) thinly sliced pork
300g (10.5oz) vegetables of your choice *I recommend adding some onion slices
1 Chikuwa (fish cake) *If you have OPTIONAL
5g (1&2/3tsp.) Dashi powder *I recommend RIKEN Kombu Dashi Powder
2 tbsp. soy sauce
1 tbsp. cooking oil
pepper *if you like
bonito flakes *if you like

Vegetables of your choice ideas:
cabbage, bean sprouts, carrot, green pepper, onion, chive, long onion, Shimeji mushrooms, Shiitake mushrooms, etc... Sometimes I use only bean sprouts and onion slices and it turns out amazingly delicious if you don't care the color of the dish. hehe

Directions:
1. Cut meat and vegetables into bite-size pieces.
2. Wash Udon under running water to separate, then drain well. You can also use boiled frozen Udon.
3. Heat cooking oil in a frying pan and cook the meat until no longer pink. Then add vegetables and fish cake (if you have) and cook until vegetables are tender.
4. Add Udon, season with Dashi powder and soy sauce. You can add pepper if you like.
5. Serve in a dish, top with bonito flakes if you like.

Rainbow Somen Noodles (Seven Plant Based Summer Somen Noodles "Miwa no Niji") | Japanese Cooking Video Recipe

Kids requested me to make Nagashi Somen (Flowing Somen noodles) again, this time we used Rainbow Somen Noodles called "Miwa no Niji!", which is a popular summer gift in Japan 2020! Colorful, fun, yet delicious! They use some vegetables kids dislike but kids ate very well 😋

Ingredients:

Miwa no Niji (rainbow Somen noodles)

Directions:
((Somen Dipping Sauce))
In a pot, bring Dashi broth, Mirin, and soy sauce to a boil. You can also microwave until it comes to a boil. Cool in the fridge until ready to serve.
((Somen Noodles))
Boil water in a large pot. Add dried Somen noodles in boiling water and gently stir noodles with chopsticks. Cook Somen noodles according to your package (mine was 2 min). Drain the noodles in a strainer and rinse the noodles with hands under running water. Take bite-size portion of the noodles and roll them on your fingers (like you roll pasta on a fork), and place them on a dish. Decorate the noodles with toppings of your choice and keep in the fridge until you serve.

I love using Kayanoya Dashi. Vegan/Vegetarian people can use Kombu or Vegetable Dashi broth for the dipping sauce 👍


You can also dilute Mentsuyu to make Somen dipping sauce but make sure you dilute as instructed because the level of concentration vary from product to product.

How to Make Kitsune Udon (juicy and tasty deep-fried Tofu) Recipe | Japanese Cooking Video

Light, fluffy, and juicy Aburaage (salty sweet tasty deep-fried Tofu pouch) makes Kitsuneudon absolutely delicious 😉 You don't need to simmer it down. This is the BEST recipe you may want to follow 👍




Kitsune Udon literary means "fox Udon" in Japanese. Because Aburaage is fox's favorite food in the folktale.


Simple yet delicious, typical kids' meal as well 😋

How to Make Kitsune Udon (juicy and tasty deep-fried Tofu) Recipe


Difficulty: Very Easy
Time: 20min
Number of servings: 2

Ingredients
2 frozen Udon noodles *I used TableMark (Katokichi), any brand is OK
2 Aburaage (deep-fried Tofu pouch)
A
* 100ml Dashi broth (using packaged dashi powder saves time)
* 1 tbsp. Mirin (sweet Sake)
* 1 tbsp. sugar
* 1 tbsp. soy sauce
Kaketsuyu (Udon soup)
* 500ml Dashi broth (using packaged dashi powder saves time)
* 2 tbsp. Mirin (sweet Sake)
* 1 tsp. soy sauce
* 1/2 tsp. salt
chopped green onions
Shichimi-togarashi (seven flavor chili pepper) if you like

Directions:
1. In a pot, make 600ml Dashi broth: 100ml for Aburaage, 500ml for Kaketsuyu. I used Kayanoya Dashi
2. Cut Aburaage into half. Put Aburaage in boiling water for 3 minutes to remove the excess oil. Drain in a strainer, when it becomes cool enough to handle, press with your hands to drain well. By removing excess oil, Aburaage becomes very light and soaks the seasonings very well.
3. In a small pot, put A and Aburaage, then cover with Otoshibuta (wooden drop-lid or you can substitute it with a small plate). Simmer for 7~8 minutes then stop the heat. Do not simmer it down to make it juicy and fluffy.
4. Put Kaketsuyu (Udon soup) in a pot then bring to a boil.
5. Bring water to a boil in a large pot, if your pot is small cook Udon 1 serving at a time, cook Udon on medium high heat as directed on its package. (Cooking time was 1 minute for TableMark frozen Udon) You shake the noodles in boiling water then stop the heat when they are separated.
6. Wash with cold water to remove the slimy texture. Put Udon again in boiling water to make it warm. Using the edge of a serving bowl, slide in the noodles.
7. Pour in some Kaketsuyu (Udon soup), place Aburaage, and garnish with chopped green onions. Put some Shichimi-togarashi (seven flavor chili pepper) if you like.

I love using Kayanoya Dashi. Vegan/Vegetarian people can use Kombu or Vegetable Dashi broth for the dipping sauce 👍
