How to Prepare Sushi Shrimp (Ebi Nigirizushi Recipe) | Japanese Cooking Video Recipe

How to Prepare Sushi Shrimp (Ebi Nigirizushi Recipe)


Difficulty: Easy
Time: 30min

Ingredients:
((Sushi Shrimp))
10 whiteleg shrimp
10 bamboo skewers
500ml water
2 tsp. salt
((Sushi Rice))
350g (12oz) cooked Japanese short grain rice
1.5tbsp.~2tbsp. rice vinegar
0.5tbsp.~1.5tbsp. sugar
1/2tsp. salt
((Ebi Avocado))
avocado slices
onion slices
mayonnaise
((Others))
soy sauce
wasabi

Directions:
((Sushi Shrimp))
1. You can devein the shrimp when the head is removed (do not peel and leave the tails). Put through bamboo skewers along the legs to straighten the shrimp.
2. Boil 500ml water, add salt, then cook the shrimp for about 3 minutes.
3. Leave to cool in the cooking water.
4. When the water is completely cool, peel from the triangle part of the tail (leave the tail). Then cut the stomach side to the back until you reach the vein but not all the way through, so that it opens up wide. If the shrimp is not perfectly deveined you can wipe off or wash lightly.
((Sushi Rice))
1. Mix vinegar, sugar, and salt very well to make Sushi vinegar. You can microwave for a few seconds to mix well.
2. Add the Sushi vinegar while the rice is still hot and slice through the rice using a rice paddle to separate the grains. Let the rice cool. Use a fan to cool the rice if available to create an added shine on your Sushi rice but it is optional.
((Ebi Avocado))
1. Form the Sushi rice into an oval shape. Top with Ebi, avocado slices, onion slices, and mayonnaise.
2. Serve with soy sauce or wasabi soy sauce.

How to Prepare Sushi Rice / Shari (Recipe) | Japanese Cooking Video Recipe

Here I will share with you the proportion of ingredients to make Sushi rice. You can adjust the amount of vinegar and sugar to your taste depending on the toppings. Apple cider vinegar is a tasty alternative 👍 


Apple cider vinegar helps boost your immune system 😉



Sushi-oke (a wooden bowl for Sushi rice) is not necessary. If you don't have it, you can use a little larger bowl.

FYI 1: Sushi Rice prepared for Sushi is called "すしめし Sushi-Meshi". When the rice is formed into a small oval shape for Nigiri, it is then called "シャリ Shari".

FYI 2: Sushi rice is perfect for Nigirizushi (hand-pressed Sushi), Temakizushi (Sushi hand rolls), Chirashizushi (scattered Sushi), Makizushi (Sushi rolls), etc...

Directions:
1. Mix vinegar, sugar, and salt very well to make Sushi vinegar. You can microwave for a few seconds to mix well.
2. Add the Sushi vinegar while the rice is still hot and slice through the rice using a rice paddle to separate the grains. Let the rice cool. Use a fan to cool the rice if available to create an added shine on your Sushi rice but it is optional.

How to Make Chicken Nanban (Popular Japanese Recipe) | OCHIKERON | Create Eat Happy :)

Fried chicken soaked in sweet and sour Nanban sauce topped with tasty tartar egg sauce.




Originated in Kyushu island Miyazaki prefecture, it is a popular home-cooked meal nationwide nowadays.

How to Make Chicken Nanban


Difficulty: Easy
Time: 20min
Number of servings: 4 servings

Ingredients:
2 chicken thigh or breast with no skin (about 1.2lb)
Tartar Sauce
* 2 chopped boiled eggs
* 1/8(0.8oz) chopped onion
* 3 tbsp. mayonnaise
* 1 tbsp. milk
* 1 tsp. lemon juice
* salt and pepper
* parsley flakes
Batter
* flour
* 1 egg
Nanban Sauce
* 2 tbsp. rice vinegar
* 2 tbsp. soy sauce
* 2 tbsp. sugar
deep frying oil
lettuce
tomato wedges
cucumber slices

Directions:
1. Mix Tartar sauce ingredients put in the fridge if you prefer it cold.
2. Chicken breast, make incision in the center and open it up being careful not to cut through. Season with salt and pepper and dust with flour.
3. Put 1/2 inch oil in a frying pan. Dip the chicken in beaten egg. Deep fry in oil on medium for 5 minutes. Flip the chicken over then deep fry on high for 3 minutes until crisp golden brown. Remove from the oil and drain well.
4. Clean the frying pan, place the ingredients for Nanban sauce and bring to a boil. Coat the fried chicken in the sauce.
5. Cut the chicken into bite-size pieces. Place the chicken on lettuce, garnish with tomato and cucumber, drizzle with leftover Nanban Sauce, then drizzle with tartar sauce to finish.

Ingredients:
450g~550g(1~1.1lb) Chinese Napa Cabbage
1/2 tsp. salt
1 (80g=2.8oz) canned tuna
1/2 tbsp. Dashi powder
2 tsp. sugar
2~3 tbsp. mayonnaise
1 tbsp. ground white sesame seeds

Directions:
1. Wash and slice the cabbage, place it into microwavable bowl, and microwave at 600w for 4 minutes.
2. Sprinkle with salt, when cool enough to handle, drain well with paper towels.
3. Toss with drained tuna, Dashi powder, sugar, mayonnaise, and ground white sesame seeds.

Basic Chahan (Japanese Fried Rice 炒饭 Recipe) | OCHIKERON | Create Eat Happy :)

In Japan, we make Chahan (fried rice) at home using leftover ingredients in the fridge 😋


I hope this very basic recipe will give you an idea to make your fried rice 👍



TIPS: Adding rice at room temperature makes rice drier (not too sticky). Hot or cold is not recommended. To make your rice drier, cook 2 servings at once. Too much rice makes the fried rice moist and sticky.

Number of servings: 2 servings

Ingredients:
300g (10.5oz.) cooked rice
50g (1.7oz.) Char Siu or ham
2 eggs
1/2 long onion
1 tbsp. cooking oil
salt and pepper
1/2 tbsp. Chinese soup stock powder
1 tsp. soy sauce

Directions:
1. Chop Char Siu and long onion. Beat 2 eggs.
2. Heat 1 tbsp. of cooking oil in a frying pan, quickly cook Char Siu and long onion until fragrant. Turn the heat to high, add beaten eggs and spread in the pan. Add rice and cook until eggs are crumbled (dry and cooked thoroughly).
3. Season with Chinese soup stock powder, salt, and pepper. Then last but not least, add soy sauce from the edge of the pan to finish.

How to Make Basic Inarizushi (Inari Sushi) | OCHIKERON | Create Eat Happy :)

In this video, I will show you how to make very basic Inarizushi with plain Sushi rice. Easy yet delicious, perfect for party, picnic, or any kind of event!




Inarizushi (Inari Sushi) is Sushi rice stuffed in tasty Aburaage (Fried Tofu pouches).


In Japan, Inarizushi can be widely found at restaurants, supermarkets, conbini (convenience stores), and etc... Sometimes store-bought ones are too sweet but this one is very mild. Homemade is the best 😉

How to Make Basic Inarizushi


Difficulty: Easy
Time: 1hr + cooling time
Number of servings: 20 pieces

Ingredients:
660g (1.5lb.) cooked Japanese rice (short-grain rice)
A
* 3 tbsp. rice vinegar
* 3 tbsp. sugar
* 1 tsp. salt
10 square Aburaage (deep-fried tofu pouches)
B
* 4 tbsp. soy sauce
* 4 tbsp. Mirin (sweet Sake)
* 4 tbsp. sugar
* 400ml Dashi broth
4 tbsp. roasted white sesame seeds

Directions:
1. Place the Aburaage on a cutting board and trace the Aburaage with a chopstick to make it easy to open. Cut into half and open. If you are using square Aburaage (deep-fried tofu pouches) cut diagonally into half to get 2 right-angled triangles. If you are using rectangular Aburaage, cut into half to get 2 squares.
2. Put Aburaage in boiling water for a minute to remove the excess oil. Drain in a strainer and wash with warm water. Stack up 3-4 pieces at a time, then press with your hands to drain well.
3. Put B and Aburaage in a pot, then bring to a boil. Turn the heat down to low and cover with an Otoshibuta or a wooden drop-lid (you can substitute it with with a sheet of aluminum foil and use any small lid or a plate as a weight if needed) and simmer for 20 minutes. Stop the heat and let them cool completely for a few hours or overnight is OK.
4. Make Sushi vinegar by mixing A (or use store-bought Sushi vinegar). Add the Sushi vinegar while the rice is hot and slice through the rice using a rice paddle to separate the grains. Mix sesame seeds in the Sushi rice. Divide the rice into 20 equal portions. Wet your hands and make small balls of Sushi rice.
5, Take a piece of Aburaage and lightly press with your hand to remove the excess liquid. Stuff a ball of Sushi rice and close the pouch. *Please see the video for details.

How to Make Scrambled Tofu / Iri Dofu (VEGAN Scrambled Eggs Recipe Idea)

Ingredients:
350g(12oz) Momen-dofu (Cotton Tofu)
50g (1.8oz.) onion
60g (2.1oz.) carrot
80g (2.8oz.) Shimeji mushrooms
60g (2.1oz.) frozen unshelled Edamame (green soybeans)
Seasonings
* 1/3 vegan Kombu kelp Dashi powder
* 1.5 tbsp. soy sauce
* 1 tbsp. sugar
salt
1 tbsp. sesame oil

Directions:
1. Wrap Tofu in paper towers, place it on a dish, and microwave for 3 minutes to drain water from Tofu. Defrost Edamame and remove the edamame beans from the pods.
2. Thinly slice onion. Cut carrot into thin strips.
3. Heat sesame oil in a frying pan, add onion, carrot, and Shimeji mushrooms and cook until tender. Add Tofu (break into pieces with hands), add seasonings, and cook until Tofu water is gone. Add edamame, season with salt to finish.

How to Make Rose Gyoza Dumplings (Ebi/Shrimp/Prawn Filling Recipe)

Number of servings: 12 roses

Ingredients:
24 gyoza wrappers
A
* 100g (3.5oz.) chopped prawn
* 100g (3.5oz.) ground pork
* 1/4 chopped onion OR 1/4 chopped long onion
* 1 tbsp. ginger juice
* 2 tsp. sesame oil
* 2 tsp. soy sauce
* 1/4 tsp. salt
* pepper
1/2 tbsp. cooking oil
1/2 tbsp. sesame oil
baby leaf salad
grape tomatoes
sweet chili sauce if preferred

Directions:
1. Mix A very well.
2. Attach two Gyoza wrappers with water, each overlapping 1/2" over the other. Place the filling thin in the middle of the wrappers. Fold in half horizontally to create two semicircles. Roll the dumplings from one side to the other to create a rose. Repeat with the remaining wrappers and filling. *Watch the video
3. Heat cooking oil in a frying pan. Place the rose gyoza and cook on high heat until the bottoms become brown. Turn the heat down to medium, add 100ml water, cover and steam the gyoza on med-high until done. Uncover and cook on high until the water is gone and the bottoms of the gyoza are crisp. Sprinkle with sesame oil to give a tasty flavor.
4. Serve rose gyoza on top of baby leaf salad, garnish with grape tomatoes, and finish with sweet chili sauce if preferred.

Sukiyaki is traditional and popular Japanese hot pot (nabemono) cooked with thinly sliced beef and some vegetables in soy based broth. It is usually cooked at the table and dipped into beaten fresh raw eggs to eat.

Ingredients:
250g (8.8oz.) thinly sliced beef
150g (5.2oz.) Yaki-Dofu (grilled tofu)
100g (3.5oz.) onion
4 Shiitake mushrooms
150g (5.2oz.) Shirataki (translucent Konnyaku noodles)
a bundle of watercress
1.5 tbsp. cooking oil
Warishita (Sukiyaki sauce) seasonings
* 3 tbsp. Kombu Dashi broth (or water)
* 3 tbsp. Sake
* 3 tbsp. Mirin (sweet Sake)
* 3 tbsp. soy sauce
* 2 tbsp. sugar
2 bowls of rice
Onsentamago (Soft-Boiled Eggs) or hard boiled eggs

Directions:
1. Cut Yaki-Dofu into bite sized pieces. Cut onion into wedges. Remove stems of Shiitake mushrooms and cut into half. Cut watercress into 4cm (1.5inch) long pieces.
2. Boil Shirataki 2-3 minutes in order to remove bad smell if necessary.
3. Mix Warishita (Sukiyaki sauce).
4. Heat cooking oil in a frying pan, cook the onions until tender. Add beef and cook until no longer pink.
5. Pour in Warishita (Sukiyaki sauce), add Yaki-Dofu, Shiitake mushrooms, hard part of watercress, and Shirataki. Cover and cook on medium for 5 minutes until everything is cooked. Add watercress leaves and cook until wilted for 3 minutes.
6. Serve on top of hot bed of rice with Onsentamago (Soft-Boiled Eggs) or hard boiled eggs.

Omurice is a very popular home cooked meal in Japan. It is a tomato ketchup fried rice wrapped with a thin sheet of crepe-like fried egg. HOWEVER, many people dislike using a lot of ketchup, so I used Pomodoro sauce instead. YES! it works 😉

Zombie Omurice (Japanese Omelet Rice Using Pomodoro Sauce) Halloween Recipe


Difficulty: Easy
Time: 20min
Number of servings: 2

Ingredients:
300g (10.5oz.) cooked Japanese rice (short-grain rice)
75g (2.5oz.) smoked chicken or ham cut into small pieces
6 tbsp. pomodoro sauce
4 eggs
cooking oil
tomato ketchup
salt and pepper
10 sausages for Zombie fingers
cooked broccoli *if you like

Directions:
1. Heat pomodoro sauce in a frying pan, add rice and meat, mix well, then season with salt and pepper.
2. Peel the tip of the sausages to make nails, then cook. Beat 2 eggs (1 serving) in a bowl.
3. In another frying pan, heat cooking oil, spread the egg mixture and make a round sheet of egg. Before the egg is fully cooked, place the seasoned rice in the middle. Fold up both sides of the egg, then shape it using the edge of the pan. Carefully flip it over onto a plate. *You can use a paper towel to help shape it.
4. Make holes in Omurice and place the sausage fingers. Decorate with ketchup and garnish with cooked broccoli if you like.

Spinach Ohitashi (Japanese Spinach Salad) is a very typical Japanese side dish, perfect for any meal (breakfast, lunch, or dinner) and Bento lunch box. Tasty yet addictive 😋




Cooked spinach seasoned with soy sauce is NOT Ohitashi. Soaking into Dashi Soy Sauce is Ohitashi 👍

Spinach Ohitashi (Japanese Spinach Salad Side Dish Recipe)


Difficulty: VERY EASY
Time: 5min
Number of servings: 4

Ingredients:
200g (7oz.) Spinach
salt
* 2 tbsp. Dashi broth
* 1&1/2 tbsp. Soy Sauce
* 1 tsp. Mirin (Sweet Sake) *1/3 tsp. sugar is OK
Katsuobushi (bonito flakes)

Directions:
1. Cut off the root of the stem and make a cross cut (if the stem is dirty), then wash. In this way you can wash away soil easily but if your spinach is clean then you can simply wash.
2. Boil water in a large pot. Add a pinch of salt in the water (salt removes oxalic acid - bitter taste, and makes the spinach nice and green).
2. Add spinach in the boiling water from the stem side.
3. Boil spinach for about 15~30 seconds. Drain and wash with running water to cool. Squeeze the spinach to remove excess water (use paper towel if you have).
4. Cut into 1.5 inch (4cm) long pieces.
5. Mix Dashi broth, Soy Sauce, and Mirin, then soak spinach for a while.
6. Serve on a dish, garnish with Katsuobushi (bonito flakes) to finish.

How to Make Oyakodon (Japanese Chicken and Egg Rice Bowl) | Japanese Cooking Video Recipe

Oyakodon is a very popular Japanese rice bowl. Chicken and egg seasoned in soy sauce based broth, and served on top of a bowl of rice. Juicy and delicious rice bowl dish we Japanese make very often at home.

Oyakodon (Japanese Chicken and Egg Rice Bowl)


Difficulty: Very Easy
Time: 15min
Number of servings: 1

Ingredients:
100g (3.5oz.) chicken thigh
50g (1.7oz.) onion
A
* 60ml Dashi broth (you can use Dashi powder to make it)
* 1 tbsp. soy sauce
* 1 tbsp. Mirin (sweet Sake)
* 1 tsp. sugar
2 eggs
2 Mitsuba (Japanese wild parsley) if you have
1 bowls of steamed rice
Shichimi Togarashi (seven flavor chili pepper) if you like

NOTE: you can substitute 1 tbsp. of Mirin with 1 tsp. of sugar (which means you need 2 tsp. of sugar for this recipe)

Directions:
1. Cut chicken into small pieces. Slice the onion. Cut Mitsuba (Japanese wild parsley) into an inch long pieces.
2. Mix A very well. Beat eggs in a bowl.
3. Put A in a frying pan and bring to a boil. Add chicken and onions, then cook for 5 minutes until the chicken is no longer pink.
4. Pour in the beaten egg from the center to the edges of the pan (because the center cooks slowly). Add Mitsuba, cover, and turn off the heat after a few seconds when the eggs are half-cooked (or as you prefer is ok).
5. Serve on the rice in a bowl. Sprinkle with Shichimi Togarashi if you like.

Matcha Mille Crepe Cake (EASY No-Bake Recipe) | Japanese Cooking Video Recipe

Matcha Mille Crepe Cake (EASY No-Bake Recipe)


Difficulty: Easy
Time: 45min
Number of servings: 15cm (6inch) mille crêpe cake

Ingredients:
80g (2.8oz.) all purpose flour
1 tbsp. Matcha powder
2 tbsp. granulated sugar
a pinch of salt
2 eggs *room temperature
2 tbsp. melted butter
160ml warm milk
a few drops vanilla extract *if you like
((Matcha Cream))
* 200ml whipping cream
* 2 tbsp. granulated sugar
* 1 tbsp. Matcha powder

Directions:
((10 Crêpes))
1. Sift in flour and Matcha powder in a bowl. Add sugar and salt, then mix well with a wire whisk.
2. Add beaten egg little by little and mix well.
3. Add melted butter and mix well.
4. Add warm milk little by little and mix well. Mix in a few drops vanilla extract if you like, and strain through a sieve. Then cover with plastic wrap and leave the batter to stand at room temperature for 30 minutes.
5. Use a nonstick pan, or wipe the surface of the frying pan with a thin layer of cooking oil using a paper towel. Heat the pan on medium, pour half a ladle of the batter into the pan, slowly move the pan in a circular motion to spread the batter evenly.
6. Cook until the edges begin to dry, then flip it over and cook the other side for about 10 seconds.
7. Leave them to cool completely.
((Matcha Cream))
1. Place whipping cream and granulated sugar in a dry clean bowl. Sift in Matcha powder. Float the bottom of the bowl in ice water, then whisk the cream until it forms a soft peak.
((Decoration))
1. Place 1 crêpe on a plate, spread some whipped cream, then place another crêpe on top. Repeat to complete.
2. Place the cake in the fridge for a few hours ~ a day. The cream will set and you can cut the cake easily. Eat within the next day.
3. Dust with Matcha powder to finish.

1 bag Edamame (250g/0.5lb)
1 tsp. salt
180ml water

Directions:
1. Wash Edamame, drain well in a strainer, and coat with salt.
2. Put Edamame in a frying pan, add water, cover, and put on high. When it comes to a boil, turn down to medium, and cook for 5 minutes.
